One of the main reasons I've stayed in the hospitality industry is the comradery and sense of family that are the backbone of every level of restaurant. I was fortunate to find something very similar in the podcasting world. When I first contacted Eric Cascciatore he was very open and giving to a new and less experienced podcaster. I remember him saying “after listening to a few episodes I may not have started my podcast because I didn't think I could do it as well” So, after being a guest on my podcast, he wanted to get me to do an episode on his. Of course I agreed and here is the result. I'll be posting the video version in a week or two after he gets it loaded to his You Tube channel. He created a podcast that actually earns income. But it wasn’t easy. Success never is. “My mantra is: ‘Ain’t nothing to it but to do it.’ You just go," Eric said. You don’t get to be one of the top restaurant podcasts without hard work, dedication, and passion. Identifying a need When Eric Cacciatore got into podcasting years ago he quickly realized there was a glaring lack of podcasts in the restaurant and hospitality space. “That was my first hint right there that the hospitality industry hadn’t quite caught up yet,” Eric Cacciatore said. “We’re late adopters in this industry, typically.” That’s one of the reasons Eric wanted to make a podcast about restaurant owners for restaurant owners. Hospitality is in people’s blood, whether you’re on the media side or the restaurant owner side. Eric Cacciatore’s parents owned a restaurant so he grew up in the industry. His dream was to always open a restaurant. Eric found a different and innovative way to make his mark on the industry. He started his own restaurant podcast. That meant leaving behind the start of his aviation career and fly into a completely new territory. “I was leaning into my strengths.” He knew his dreams would come true if he took time to try and help others. “The whole idea is how to become unstoppable. How to make your restaurant dreams unstoppable,” he said about naming his podcast Restaurant Unstoppable. Podcasting takes hard work To make it as a podcaster or as a restaurant owner you have to have stamina. Few, if any, make it overnight. It takes years of sweat. “I started this thing seven years ago and I’ve published 2 to 3 episodes a week.” There are few podcast hosts who can claim such an achievement. It takes a really strong drive to continue against all odds to make a successful podcast. Dream Guest Work. With Just Showing Up. Welcome to a very special episode! Back in February 2015 when I started this podcast, I spent a great deal of time figuring out my core values. Face-to-face interviews? Check. Community focus? Check. Dream guest? That one was easy. Gabrielle Hamilton of Prune in NYC is #1 on my laminated list, both for her otherworldly food but even more so for her panache with food writing. Ever since I devoured her Mind of a Chef episodes and her memoir, Blood, Bones, & Butter: The Inadvertent Education of a Reluctant Chef, I've been praying to the podcast gods to somehow, some way talk with this woman who writes likes I want to write and cooks the food I want to eat. In this episode, I traveled to Merroir in Topping, Virginia to record her event with Chef Dylan Fultineer of Rappahannock in Richmond - a lunch completely foraged in and around the restaurant. Oysters, rockfish, trout, and greens. Softshell crab and sweet potatoes. Hyperlocal and cooked simply over a grill. With minimal ingredients, so the main one shines through. Around 50 people attended this event as part of Richmond's 4th Annual Fire, Flour, & Fork festival which is quickly becoming one of my favorite food gatherings of the year. Listen and you'll see why. Picture a perfect 80-degree sunny day, no humidity or wind, with only the seagulls, lapping water, and crunching oyster shells underfoot and the happy smiles of other diners as your companions. Gaze at the pictures in my Facebook album as you listen. It's almost as if you are there. Speaking with Chef Hamilton was a dream come true, a major career highlight. Great things happen when you choose to show up for your life. The 2016 NRA Show in Chiacgo was attended by over 45,000 people.     We spent 3 packed days looking for the best products, ideas and inspiration to help you grow your business.  There was so much to see - but here are some of the edited highlights. We visit 2 great Chicago restaurants -  Nick's Pizza and Pub and Au Cheval with Eric Cacciatore from Restaurant Unstoppable. We finally get to experience the amazing In n Out Burger - the iconic Burger business. What was the surprising thing about Bubba Gump? We discuss some of the reason YOU should go to the NRA show and how it will help you grow your business. There are a lot of suppliers who have a great story - that story can and should become part of your story.  It helps create the experience and where there is experience there's margin! We discuss Kimbal Musk from The Kitchen and the way he creates a great story about his suppliers, Denny Post and the importance of a Signature meal- even if it isn't that popular, as well as a great discussion between Jon Taffer from Bar Rescue and Robert Irvine from Restaurant Impossible. Are you doing coffee in your Restaurant?  Is it great coffee?  What impact would making your restaurant someone's regular coffee spot make to revenue?  We talked to the team from Vittoria coffee.  (It was easily the best coffee at the show!) The Urban Cultivators look great and if you are creating a fresh and green brand, these are perfect for really highlighting what it is that you are doing for your customers (and how much of a difference would cheap, fresh herbs make?) Why was it we visited the Aussie Pie Kitchen in LA? We also look at Torta Bianca - a great ingredient for your cocktail list. We finish of with esoteric wine varietals and how they can help you with your wine list and profits and lastly a warning about spending the wrong way with your social media marketing. These are ujust some of the examples of what we picked up from the show.  If you have an idea for a restaurant in mind, or already have a concept, there are hundreds of ideas and products there that you can find to help to tell a better story, find productivity gains or increase margin with better and more interesting menu items. I have focused too much on productivity, because I am not very good in the kitchen, but I think there was just as many interesting products for HOW you do in the kitchen as there was for WHAT you do in the kitchen. We talked about how you as the indepenent restaurant/pizzeria owner can stand out against the big brands.  I recently read a Fox News article Tech is killing off America’s independent pizzerias, says industry report  that talked a lot about how “Big Brands” are using tech to steal customers away from who otherwise would have called the local Ma and Pop pizzeria.   It talked about how the younger generation really want to use online ordering for it to be as easy as possible to order. These brands are doing a great job of that and sadly, the locals are not.   We talked about this on our mastermind group and I’m still amazed at how many independent pizzeria owners are not using things like: Online ordering Email Marketing  Instagram Snapchat It’s crazy!   If you’re going to make your business not only survive but thrive over the next 5-10 years, you need to start understanding how these platforms work and how to use them to engage with your audience.
