On the cover this year is Rare Society, a neighborhood steakhouse from Brad Wise, chef and owner of Trust Restaurant Group. Brad is originally from New Jersey, and he made a name for himself in San Diego's food scene with Trust and Fort Oak, which both specialize in open-flame cooking. He's since expanded with The Wise Ox Butcher and Cardellino. We're here to learn more about his new projects (Rare Society and Wise Ox are both expanding to North County!), and how he's overcome current challenges, like understaffing. On this episode we show Brad the cover of the September issue, and he walks us through the dishes we featured. Also joining us is Lauren Winget, one of our former podcast hosts! She is now working at Trust Restaurant Group. Listen in on the behind-the-scenes talk. In Hot Plates, the Mingei International Museum in Balboa Park is reopening tomorrow after a three-year renovation, and with it will come new eateries: The Craft Café in September, and Artifact later this fall. Carlsbad Aquafarm, an oyster farm in North County, recently opened the property to the public for tours and oyster tastings. Andrew Bachelier, the former chef of Jeune et Jolie, posted on Instagram that he has a new restaurant, but the post left us with more questions than answers—listen to find out what Brad has to say. You wouldn't normally associate the super-speedy Sonic the Hedgehog with anything "low or slow," but that's exactly how the legendary video game character's 2020 movie blockbuster came to be. There's so much that happens behind-the-scenes of any business before the consumer ever experiences the final product. In the case of the Sonic the Hedgehog movie, while the animated hero might zip along at a quick rate, the movie he stars in took dj2 Entertainment and others involved in its production more than a decade to make. https://youtu.be/szby7ZHLnkA “Sonic took almost a decade,” notes Dmitri M. Johnson of dj2 Entertainment and special guest on the Digital Hospitality podcast. “We were told ‘no’ a couple times and went through a couple CEOs. We went from one studio to another studio and went through a couple of writing themes." "That was a process and a lesson: to keep pushing for almost a decade of your life.” Sonic the Hedgehog became a huge hit because the people who were behind its creation made sure it was the best movie they could make for long-time fans and new appreciators of the spiky haired blue character. Just like Cali BBQ's barbecue, the path to producing Sonic the Hedgehog was low and slow for Dmitri M. Johnson and his dj2 Entertainment production company. Founding dj2 Entertainment: In 2011, Dmitri founded dj2 Entertainment. Since its beginnings, Dmitri and his team have worked tirelessly to acquire IP and rights from video games and other properties to story tell and create feature films and shows. His mother’s ultimatum that he double majored in business alongside film has since paid off in his professional life. “A skill set that I assumed I would never have to use came in quite handy,” says Dmitri on his business degree. “There's a lot of business legal fires that have to be put out long before you get to have fun on the creative part.” As always, mother knows best. At dj2 Entertainment, Dmitri and his team have had to do their creative cooking low and slow just like Cali Comfort BBQ. Case in point, his acquisition of the Sonic the Hedgehog rights for this year’s blockbuster hit was years in the making. As Dmitri alluded to, lots of legal work had to be done before the creative fun started. Once the IP was acquired, the process pulled out the inner child of all involved. “At the script level, it was important to us to be as authentic as we could be,” says Dmitri M. Johnson about co-producing Sonic. “You want this to be something that kids can enjoy with their family.” Mission accomplished. Sonic Movie a Huge Hit: Responding to criticism of the online trailer and undertaking a redesign, Sonic the Hedgehog is a modern case study on flexibility and flourishing. Humbly listening to the core audience and adjusting accordingly, the Sonic feature film was retooled. The result? It absolutely smashed at the box office and broke records by grossing an estimated $85,000,000. “We wanted to make sure that we were honoring people like us who grew up loving it,” Dmitri told Shawn Walchef on Digital Hospitality. “We always want to honor the existing audience as much as we can, and we also want to make it accessible to someone who may not come in with that built-in knowledge. I always try to wear the hat of the fan. If I were coming to this, how would I feel? Would I be super excited?” Excitement showed in the early critique, and it more so showed in the final product. He created a podcast that actually earns income. But it wasn’t easy. Success never is. “My mantra is: ‘Ain’t nothing to it but to do it.’ You just go," Eric said. You don’t get to be one of the top restaurant podcasts without hard work, dedication, and passion. Identifying a need When Eric Cacciatore got into podcasting years ago he quickly realized there was a glaring lack of podcasts in the restaurant and hospitality space. “That was my first hint right there that the hospitality industry hadn’t quite caught up yet,” Eric Cacciatore said. “We’re late adopters in this industry, typically.” That’s one of the reasons Eric wanted to make a podcast about restaurant owners for restaurant owners. Hospitality is in people’s blood, whether you’re on the media side or the restaurant owner side. Eric Cacciatore’s parents owned a restaurant so he grew up in the industry. His dream was to always open a restaurant. Eric found a different and innovative way to make his mark on the industry. He started his own restaurant podcast. That meant leaving behind the start of his aviation career and fly into a completely new territory. “I was leaning into my strengths.” He knew his dreams would come true if he took time to try and help others. “The whole idea is how to become unstoppable. How to make your restaurant dreams unstoppable,” he said about naming his podcast Restaurant Unstoppable. The Spring Valley Tailgate and BBQ Festival started as an idea — a way to give back to the community. After 10 years it grew into something much bigger. This special episode of the Digital Hospitality podcast was recorded live on the main stage of the 10th annual Spring Valley Tailgate and BBQ Fest with event organizers Shawn Walchef and Derek Marso. Get the inside story of #SVBBQFEST and how it evolved into a huge charitable BBQ block party that became bigger than Cali Comfort BBQ, bigger than Valley Farm Market, and bigger than either Shawn Walchef or Derek Marso could have imagined. Shawn (Cali BBQ Media) and Derek (Valley Farm Markets) previously co-hosted the Behind the Smoke: BBQ War Stories podcast, which wrapped up its 100 episode run in 2019. Derek Marso also co-hosted the #BETonBBQ episode of Digital Hospitality, featuring Chef David Rose. Later in this Digital Hospitality podcast episode, Shawn and Derek are joined by Behind the Smoke’s original producer Cory Wagner (Wvfrnt Media) to talk about the significant planning, organization, digital marketing, and teamwork it takes to host a successful yearly event for charity. “This is where it all started,” said Derek Marso as the SVBBQFEST amateur BBQ teams and vendors were setting up along the street outside Cali Comfort BBQ in Spring Valley. “It’s cool how it’s grown, and what we’ve done.” In 2009, a year after Cali Comfort BBQ opened, Shawn hadn’t met Derek, but knew of his nearby Valley Farm Market. When the idea for the Spring Valley BBQ Fest was dreamed up more than a decade ago, Shawn said the small team had to sit down and figure out exactly how to plan a festival, which takes lots of logistics and help to pull off. “You need sponsors, you need people to buy into the vision. Derek not only bought in. He’s all in,” Shawn Walchef said about his former podcast cohost and fellow event organizer. “It was the start of a friendship.” When Shawn came to Derek all those years ago asking him to sponsor the Spring Valley community event, Derek said he was interested in more. “I said ‘Dude, I don’t want to sponsor. I want to be a part of that. How can we make this thing grow,” Derek Marso said. “And here we are 10 years later. Shawn Walchef is a restaurant owner, digital entrepreneur and a proud father. Since 2008, Shawn has owned Cali Comfort BBQ in San Diego County. In order to survive, Shawn knew early on to operate his family restaurant and sports bar like a tech company. Now whether it’s his annual #BETonBBQ “Turf and Surf” tasting event in August or his expanding catering empire in San Diego, Shawn’s many business ventures all incorporate technology, especially the kind you use everyday on your cell phone. That’s how he discovered podcasting. Since Shawn first started a business and BBQ-themed podcast almost three years ago, he’s watched podcasting grow, with many shows popping up that he’s helped inspire. Shawn has played a big part in getting so many fellow BBQ business owners into podcasting. He wasn’t gonna pay me back the money, and he was going to keep the liquor licence. And you know, at that point, I had never been spoken to like that in my life. I had trusted him. My business partner, Corey, my best friend at the time, we had trusted him, we had put all of our hopes and our dreams into this restaurant business. To learn more, visit: WomenBuildingWealth.net.     Worst investment ever Grandfather trusts him to run real estate business Shawn never knew his father, but learned a great deal from his medical doctor grandfather, who raised Shawn with of course the help of his grandmother and mother. From a very early age, his he taught Shawn that hard work is good, but that hard work and education would get you ahead in life. Shawn grandfather also sent him to university in Colorado and Alicante in Spain. During his time abroad, his grandfather asked him to return to San Diego as he had been made the trustee for grandpa’s estate as Shawn was the only person he trusted. After his grandpa retired as a medical doctor, he had started investing in real estate. So he needed help with his real estate business so Shawn transferred to the University of San Diego. This allowed him to spend time with his grandfather, to help him write his memoir, and to just be there to learn from him, about his life and business. Attempts to enter law schools fail Shawn thought he was going to be an attorney, so he took the L-sat, studied very hard, and applied to law school. He was rejected by all three of San Diego’s law schools, which hurt a great deal. Then his best friend who was with him in Spain moved to San Diego and Shawn suggested Corey help Shawn manage his grandfather’s real estate, which they did around 2006. Early on invested eatery with liquor license Grandpa had purchased a property in East County, San Diego that had an existing restaurant, which had a liquor license, a type-47 liquor license, which allows you to sell beer, wine, spirits at an existing restaurant space. The license is very valuable in the San Diego market. They thought, if someone wants to open a bar, or restaurant, anywhere, the profit is in the liquor, which was a very attractive proposition for the two budding business partners. They decided to purchase the license for their grandfather. So at the time was valued at US$75,000, but they bought it for $50,000. They also raised another $50,000 so that they get into the restaurant that was being operated by a man named Howard. He had been operating a breakfast restaurant and Shawn and he had become friends. Howard was looking to expand his business so the boys said they would add the liquor license and help by including a dinner service and turn it into a sports bar. Boys take 49% share in restaurant with ‘Howard’ The deal was this: Howard would run the restaurant and he would have majority interest, a 51% ownership stake in the company. Shawn and Corey had 49%. Young and naïve, and not knowing Howard nearly as well as they should, the boys started working, making capital improvements to the business, adding flat screen TVs, adding products so that they could create a dinner menu, and adding staff. Howard goes on rant about spoiled brats and hard work But Howard didn’t like many of their actions, and one day after the boys had been installing some TVs, Howard blasted Shawn in front of customers, staff members and Corey. He accused Shawn of being lazy, being inexperienced and spoiled. He regretted bringing in the liquor license and the partners, said he wasn’t going to pay him back the money invested and that he was at the same time going to keep the liquor license. Shawn had never been spoken to like this and he and Corey had trusted the guy, and had put all their hopes into the restaurant business. But they had done it in a way that they had no control. While they did it with the best of intentions, ultimately they were at the mercy of Howard, who held the majority stake. Shawn turned bad to good, ends up recovery all Even though this was the worst investment in his life, he turned everything, including an abusive voicemail, to his benefit. He kept the voicemail, played it, added it to his iPod and used it as his workout mixtape. For Shawn, it became just motivation. Fortunately, Shawn filed a lawsuit against Howard to recover only the money he and Corey had invested but he was able to recovery everything, including the money and the license. After a year or so, Howard failed in the location and Corey and Shawn took over that location, which then became Cali Comfort Barbeque, which was the start of the businesses they are running now. The voicemail that Howard left became the intro to the first 30 podcasts episodes of Behind the Smoke. Shawn says if you’re going to be in the business, if you’re going to invest in things, you have to understand that there’s the human element, and there’s a human element that you can’t control. All you can do is do your best and you need to put yourself in a position where you can control the narrative. “So my workout mixtape was this man screaming at me telling me that all I’d never worked a day in my life and that I’m worth nothing.” Shawn Walchef   Lessons learned Make sure you get majority control if you really want to run a business If you really want to play a part in a business, and it’s a business or investment you truly are interested in, get executive control. Make sure you and you alone or you and a trusted partner are the running the business. Never put yourself in a position of being without a majority stake and without control. I understand a lot of times, you have to raise capital and do things, so that you could get any business open. When you don’t have control, you don’t have creative flexibility. Adapt to survive, pivot to thrive If you don’t or are unwilling to change (in your business dealings or investments) it will be very difficult to operate any business, especially restaurants or bars. In hospitality, invest in making memorable experiences Restaurants are risky investments but food of course is a necessity. Every village needs the local pub, every village needs the local eatery. It doesn’t matter where you are in the world, there’s a place that you love, that your family loves, that when it’s your birthday, your grandmother’s birthday, that’s where she wants to go, you have a special table, somebody makes you feel a way that’s memorable. “If you’re going to invest in a restaurant, invest in the jockey, don’t invest in the horse. The jockey is the person that’s really the visionary behind it, the person that’s going to no matter if they get knocked down 20 times they’re going to get up 25 times.” Good hospitality partners will always ask: “How do I improve this business?” “How do I make this business work?” “How do I shift?” “How do I do something?” “How do I do online delivery now that that’s important?” “How do I keep my staff engaged so that they take care of the village and that people are excited and they want to come back?”     “If you’re going to be in the business, if you’re going to invest in things, you have to understand that there’s the human element, and there’s a human element that you can’t control. All you can do is do your best and you need to put yourself in a position where you can control the narrative.” Shawn Walchef     Andrew’s takeaways Collated from the My Worst Investment Ever series, the six main categories of mistakes made by Andrew’s interviewees, starting from the most common, are: Failed to do their own research Failed to properly assess and manage risk Were driven by emotion or flawed thinking Misplaced trust Failed to monitor their investment Invested in a start-up company Andrew says Shawn’s case features most common mistake No.2 “Failed to properly assess and manage risk” When we get excited about the returns and the opportunity, we often ignore the risks. Now Shawn having experienced what is truly at stake understands the risks a lot better now. And Mistake No. 4: Misplaced trust Whenever we go into business, we usually have to do it with other people. We must ideally want to find people that we trust. The most important thing Andrew has learned about trust is there is no shortcut to building it. Ultimately, trust takes time. Remember, it’s actually a bit of a dilemma because looking at a business idea, entrepreneurs want to jump in, and often need to act quickly also, but you can’t act rashly. By the same token you also can’t wait too long. But never forget that ultimately, you’re trusting the people around you to you know, to work with you, to get where you’re going. Great idea to use failure and rejection as motivation Success can be motivating, but being told you can’t do something or you get rejected, it can really put a fire in your soul. If you don’t iterate, you die eventually A good entrepreneur knows that changing, pivoting or iterating must be almost constant in the quest to discover what really works in a business, and most importantly, what works for your customers. James Floros - CEO/President of The San Diego Food Bank - San Diego, Ca - @sdfoodbank Summary: James Floros is the C.E.O. of the San Diego Food Bank and has worked for non-profit organizations for 34 years! He has helped to feed millions of people in their most dire time of need. James and the San Diego Food Bank are working towards societal change to break the cycle of poverty. Of San Diego County’s 3.3 million residents, 494,439 people face food insecurity every day.* Of this number, 164,137 are children.* Food insecurity means that little or no food is available at home, and those who are food insecure do not know how they will get their next meal. Currently, 1 in 6 people; 1 in 7 adults; and 1 in 5 children are food insecure in San Diego County. The Jacobs & Cushman San Diego Food Bank and our North County Food Bank chapter feed 370,000 people per month in partnership with 400 nonprofit community partners that operate feeding programs. There are 1.5 million pounds of food raised through local food drives. In 2017, the San Diego Food Bank produced more than 26M pounds of food. 9M of that was fresh produce. James Holtslag - The Heart and Trotter Butchery - North Park, San Diego @heartandtrotter James Holtslag grew up in the Virginia countryside, hunting and fishing learning how to prepare meats from a young age. After graduating college he worked in the corporate world longing for something more. He decided to gather family and friends and pursue his passion by opening his own butcher shop here in San Diego. The Heart and Trotter is owned and operated by James Holtslag and Trey Nichols. James and Trey created the Heart and Trotter after recognizing the need for a healthy, local alternative to the meats that are being offered in San Diego. Though many business gloat “local meat” the two found that was not always the case. The large companies were hiding behind a local warehouse or plot of land to create the sense of a “local” company. Most of the production was done hundreds of miles away or in other states. With much determination and 3 years of searching, James and Trey found ranchers that were up to their expectations and creating a product that was not only sustainable and humane but also on a different level of flavor. James and Trey personally inspect all of the ranches used at The Heart and Trotter. The Heart & Trotter butcher shop in North Park opened in 2014 and has grown to success by being transparent and honest with their customers. James and Trey’s love for what they do show in the amazing products that they sell. James tells his story of opening his Butcher shop and what is takes to grow a business the honest way. Sam started with short segments on a local news station and moved to a spot on a county television channel leaving a dishonest boss behind. Not having a liquor license really hurt them.  BBQ and Beer go together well, duh Half of the battle is just getting the doors open. Once you get the doors open, it's really game time, where's all your money? Culinary school doesn't teach you the nitty gritty of running a business.  PB Jackass, John Noble, an old grumpy man who owns all the property in Pacific Beach. Primitive Smoke BBQ opened in just 4 months.  It's about DETERMINATION. Making things happen to get those doors open! Don't try and be something or someone you aren't Akaushi Briskets at VFM sometimes have to be pulled off the smoker at 180 degrees, you can't just rely on putting it on at 200 degrees and expect it to be good. Scott is also a commentator for Westwood One radio. Prior to beginning his career as a broadcaster, Scott was a placekicker at the University of Pittsburgh. While at Pitt from 1988 to 1992, Scott was the team’s leading scorer for three seasons. Scott is still an avid athlete and competitor. For many years, Scott participated in the Million Dollar Challenge, cycling over 600 miles from San Francisco to San Diego, and helping raise over 5 million dollars for Challenged Athletes Foundation. In 2010, Scott completed the ‘toughest endurance race in the world,’ the Ironman World Championship in Kona, Hawaii. In 2016, Scott was part of a 12 man cycling team that competed in The Race Across America, an ultra-marathon cycling race, from Oceanside, CA to Annapolis, Maryland. The team completed this grueling, cross-country, around the clock race in 6 days. Scott is involved with various San Diego area charities, including Computers to San Diego Kids (C2SDK) and Juvenile Diabetes Research Foundation.
