Pre-heat the oven to 200CTrim and chop bok choy into (roughly) 4cm pieces, cut 1-2 spring onions into matchsticks, set aside.In a small bowl, 1tbs miso paste, 2tbs butter, and 1tbs mirin, mix to combine, set aside.Set out 4 pieces of 30cm baking paper.4 x 120g-150g white fish fillets, eg., Ling.Divide the fish pieces and 100g mushrooms (eg., shiitake) plus the prepared veg among the 4 pieces of paper.Drizzle with the miso dressing and 2 addition tablespoons of water.Wrap well. Bake for 12-14 minutes. Allow to rest for a couple of minutes. Unwrap at the table with great theatricality and enjoy getting involuntary twinkle hands! A LOT has happened in my world since we were last connected, as I'm certain has been the case for you too. It feels natural to share the momentous moments of the last 18 months (give or take) since I was generously sharing with you. A reintroduction to the familiar ears and a big 'hello, this is me' if you've just found my work. Any great change in life comes with many growing pains, big learnings and of course letting go of a whole lot, all of which were the medicine of 2023. In this episode I fill in the gaps from when I was last here up until Nov/Dec 2023. From moving interstate, to purchasing an online business that later became a retail store, to moving house and our life in Byron, I share it all here. Laced with sweet lessons and bountiful gifts, 2023 was *monumental* in forging a new path for myself and my family. Então nós combinamos que só íamos nos mudar para uma casa maior quando nosso primeiro filho nascesse. Como o pequerrucho estava para nascer, tinha chegado a hora. Encontramos um apartamento de que gostamos e já fizemos a vistoria. Assinamos o contratopara um ano e tudo já estava marcado, quando apareceu um probleminha. Tínhamos que empacotar e encaixotar tudo e depois definir como levar tudo para a nova casa. Primeiro o transporte. A tia da minha esposa tem uma picape velha, e minha esposa disse que ela lhe emprestava o veículo. Era grande, mas não era nenhuma caminhonete, então além da gente ter que erguer peso e baixar peso, ainda vai ter que rezar para que a picape não arreie com a carga. Propus então que contratássemos uma empresa de mudança. Era uma ideia que me rodeava havia um tempo. Além da transportadora cuidar do óbvio, que era o transporte, ainda podia ajudar na arrumação. Minha esposa ficou dando tratos à bola até que, por fim, disse que tinha uma alternativa melhor. Ela ia chamar a galera dela no dia da mudança. Ela preparava um almocinho para todo mundo, e eles com certeza iam socorrer a nós dois nesse momento de precisão. Aceitei de muito malgrado, mas aceitei. Ia fazer o quê? Depois, as embalagens. Comprei plástico bolha, fita adesiva, caixa de papelão, caixotes e outras coisinhas para armazenartudo em segurança. Era tarefa descomplicada, dava para eu mesmo fazer. Entretanto, minha esposa se meteu no meio. “Mas ainda não pode guardar nada! A gente vai continuar morando aqui até dia vinte!” Tudo bem, fazia sentido, mas resolvi deixar tudo espalhado do jeito que estava – caixas, fitas – para ficar em ponto de bala. Aproveitei para ir guardando aquilo que não tinha serventia. Assim que chegasse o dia, pã, começávamos imediatamente e teríamos menos trabalho. E por fim o desligamentodos serviços. Pedi para cancelarem a internet, porque íamos mudar de casa e já tinha solicitado a mudança do endereço de correspondência. Estava tudo prontinho, perfeito mesmo, até que, na última hora, foi um desmarca daqui, foi mal dali e ninguém veio. E era o último dia do nosso contrato na nossa casa atual. Então tive de correr da perna. Foi um guarda que guarda, embala que embala, liga para a tia para pegar a picape, carrega e descarrega e conseguimos terminar tudo a tempo.
