HRV gets thrown around a lot in the health and fitness world, but most people either don't fully understand it or they're obsessing over daily numbers instead of looking at the bigger picture. We break down what HRV actually is, what it's measuring, and why it matters as a reflection of your autonomic nervous system — not just as a fitness metric.We get honest about wearables too. Are they even accurate? (Spoiler: most of them aren't great.) We talk about which devices actually give you reliable readings, why body position and timing matter more than you think, and how to use this data to make real lifestyle changes instead of just feeling anxious about a number on your wrist.The second half gets into the stuff that actually moves the needle on your HRV — sleep quality, alcohol, circadian rhythm, and stress management. I finally caught up with Chef Morris Danzen Catanghal at a Boodle Brunch during the Melbourne Food & Wine Festival, after circling this conversation for months. A boodle brunch is based on a traditional Filipino way of eating: food laid out generously on banana leaves, eaten together, by hand. It's casual, communal, and built around connection rather than ceremony, and for Morris, it's a reflection of how he grew up eating. The brunch was also a collaboration with Filipino food content creator Abi Marquez, for whom the day marked a personal milestone; her first time cooking service in a professional restaurant kitchen. Morris was clearly proud to be part of that moment, guiding her through the intensity of cooking for a room full of people while watching her passion translate from screen to service. The food stayed true to its Filipino roots, with gentle nods to Australian produce, making the whole experience feel generous and thoughtful. Morris moves between kitchens and cultures with ease. He cooks modern Italian at Buono in Parkdale, while CMD Supper Club gives him the freedom to explore Filipino flavours, techniques and stories on his own terms. Talking to Morris at the end of the service, what came through most clearly was his gentleness and generosity as well as a genuine pleasure in cooking for and alongside others. Now, I do just need to say I chatted to Morris while the café was being packed up, so there's tables being dragged across the floor, and excited post-event chatter and occasional shrieks. So it's absolutely real and you are now very much a part of it!

But, well, it's still really new to me, and maybe I need some more time before she asks me loads of questions.""Like 'are you being careful?'" I sympathized."Exactly."The look in Beth's eyes changed to one I was starting to become familiar with. "Anyway," she murmured, "I want you all to myself for a while yet."I leaned over to kiss her. "You've definitely got me, love."From somewhere an idea dropped into my head. "I know, why don't we go away somewhere for a few days? We can say it's a last trip before we have to put our heads down and study."Beth's eyes lit up. "Perfect."I could see her beginning to try out different possibilities in her mind. Then she was out of sight, and I walked the rest of the way with what must have been a distracted smile on my face, anticipating our holiday.My father was at home when I arrived, and when I explained our plans, he just nodded. "Make the most of the weather while you're free, I hear it gets quite misty in the autumn where you two are going."He glanced at the sky. "Talking of which, can you give me a hand with the lawn? If we're lucky, I'll only have to do it a couple more times this year."I spent the day helping in the garden, though I didn't say it, I could tell that Dad was slowing down a little, and it'd be no bad thing if I got some of the heavier jobs out of the way for him before I was away most of the time. Lunch was sandwiches, and when Mom got back from work she looked at the garden, then at two obviously hungry men. "I think you've earned pizza," she grinned."Tim's got some plans to tell you about," Dad dropped into the conversation, and I explained about our trip. "Oh, I remember that place," Mom nodded. "It'll be handy for the craft place, and wasn't there an Indian restaurant somewhere nearby?"I'd forgotten about the restaurant, and I chuckled. "Beth'll be pleased, she loves Indian food."We sat in the lounge to enjoy our pizza, and finally I stretched, covering a yawn. She must have set her computer to answer calls from me automatically, and my screen lit to show her standing by her bed putting things into a suitcase.She glanced towards the camera, and quickly closed the suitcase lid. "A girl has to have some secrets, you know," she grinned.She came to sit down in front of her desk. "How was the rest of your day?"I ran through what I'd been up to. "The garden looks a lot tidier, anyway. How about you?"Beth gave me a wry smile. "Mom did try fishing a little when she got back, especially when I told her about our trip. But I managed to steer the conversation in a different direction."She glanced towards the bed. "I know we've only had a couple of nights together so far, but I'm already going to miss you.""I know, love."I thought for a moment. "Why don't we both go through our usual routine, but stay on here, then it'll feel like we're together, sort of."Beth nodded. "I like that idea. "Um, wish you could taste this," she breathed.I fanned my face. "Goodness, Beth, you've really got me going."Beth grinned wickedly. "Why don't you do something about it, then."I blinked. Parliamo di Stefano Buono, co-founder e CEO di newcleo.Fondata nel 2021 insieme a Luciano Cinotti ed Elisabeth Rizzotti, newcleo sviluppa reattori nucleari di ultima generazione destinati a produrre energia pulita, sicura e sostenibile. In modo del tutto innovativo, i reattori di newcleo utilizzeranno le scorie nucleari come combustibile eliminando la complessità dello smaltimento dei rifiuti derivanti dall'energia nucleare. In un solo anno newcleo ha raccolto 400 milioni di euro con round partecipati anche da Exor, Liftt e Club degli investitori, e nel 2023 ha lanciato un aumento di capitale da 1 miliardo di euro.Ma questa non è la prima esperienza imprenditoriale di Stefano, nel 2002 Stefano fonda con Paolo Pomè l'Advanced Accelerator Applications per commercializzare un brevetto sviluppato durante gli anni al CERN insieme a Carlo Rubbia e sviluppare prodotti di medicina nucleare per la diagnostica PET e SPECT e la terapia oncologica. Nel 2017 viene registrato il Lutathera, un medicinale per la cura dei tumori dell'intestino, dando inizio alla crescita esponenziale del mercato dei prodotti radiofarmaceutici. Advanced Accelerator Applications è stata quotata al Nasdaq e poi venduta a Novartis per 3.9 miliardi di dollari ma la crescita è ancora strabiliante, contando 1100 dipendenti, sedi in 11 paesi e una rete di distribuzione in 30 paesi.La passione per la scienza e lo spirito imprenditoriale sono sempre stati centrali nella vita di Stefano.Ascoltando Stefano capirete infatti che ha l'ambizione di un imprenditore ma l'anima di uno scienziato interessato ad impatto e risultati.
