A couple of months ago I ate at Locavore Studio and it was glorious. For a start, the dining room is beautiful with its cathedral ceiling and rich and textural nature mural by local graphic artists Sonsie Studios. Head chef Ryan Lynch is putting up delicious dishes that reflect the seasons and the region. Most memorable was the mushroom anolini that was like a warm hug in its cosy, savoury goodness. There's a lot going on out there with the providore, the cafe, the coffee roastery out the back and catering. While I was out there, I briefly met owner and chef Jessie Rae Crossley and absolutely wanted to go back and hear more about her time cooking on yachts in the south of France and around the world as well as how, at a relatively young age she has built up such an impressive business. This conversation is everything I love about hearing chefs' stories and more. Jessie has cooked for the likes of Harvey Weinstein and the Kardashians and once worked 102 days straight cooking three meals a day of guests and three for crew. I can absolutely imagine Jessie's adventures in cinematic form, and you should absolutely head out to Locavore and experience al the goodness for yourself.
Originally from Nelson in Aotearoa, New Zealand, head chef Ryan Lynch is doing creative things out in the Yarra Valley at Locavore Studio. I was lucky enough to be invited to dinner out there and the way he treats local produce is glorious. I was sure Ryan would have some things to say about truffles and I was not disappointed.
I recently saw an Instagram post from Robert at GGs Gourmet Food where he was heralding truffle season. It got me thinking. I don't know much about truffles but they do seem to cause a stir in certain circles. Some refer to them as black gold, others as a culinary treasure. I wanted to find out what makes them so special, so I had a chat to Dion Range at Stonebarn Truffles in WA. He gave me the very well told back story to truffle cultivation, which was fascinating. Then I got in touch with some of the lovely chefs I have spoken to in the past to hear how they use truffles. A big thank you to Julian Hills at Navi, Anni Smithers from Du Fermier in Trentham, Mark Ebbels at Re'Em in the Yarra Valley, Jordan Clay at Pipi's Kiosk, Jason Staudt at Stokehouse, Gabriele Coniglio at Officine Gastronomica Italiana and Ryan Lynch at Locavore Studio. Unfortunately and embarrassingly, I had some technology challenges and my excellent conversation with Julian was lost. Julian loves truffles and knows a lot about them. He runs a month of truffle dinners in July where each course celebrates a truffle from a different region of Australia, and he talks through the importance of terroir in their aroma and flavour with the lucky diners. This is definitely a dinner to look out for and secure a booking. I really enjoyed putting this series together. It's a new concept for me and I'd love to hear your thoughts. The Third Millennium Alliance has accepted the challenge of Protecting & Restoring The Most Endangered Rainforest On Earth. Ryan Lynch is the executive director of the Third Millennium Alliance (TMA). Ryan is joining on the podcast to discuss this challenge.TMA began when conservationists Isabel, Jerry, and Bryan met in South America during the first years of the new millennium. They were three idealists in their late 20s facing the prospects of a biosphere headed toward collapse. Together they set out to directly engage the greatest challenge of our times: steering humanity onto a path of sustainability and ecological resilience.In 2007, they founded TMA and took the first step toward creating what is now the Jama-Coaque Reserve (JCR). They raised $16,000 from friends and family, established a nonprofit organization, and purchased 100 acres of unprotected rainforest at the very peak of Ecuador's coastal mountain range—in the heart of the Pacific Forest.In the beginning, they camped in the forest, lived off of bananas and soggy bread, and slept in leaky tents while exploring the beauty and biodiversity of this special place. During the years that followed, they learned by doing. They practiced permaculture, experimented with reforestation, and built a collaborative relationship with their neighbors and people throughout the region. Meanwhile, TMA continued to grow as an organization. Hundreds of people from dozens of countries came to JCR to work in the rainforest and join the effort.Fourteen years later, JCR protects 1,500 acres of rainforest. It is equipped with a scientific research center that attracts biologists from around the world. Apparently, the majority of surfers are nature-lovers. Afterall, they fell in love with the ocean first before the sport. Ryan Lynch was one of them. His memories of the ocean remains vivid and thrilling until today. As he became deeply exposed and involved with sustainable development in Oregon, his passion to help save the Earth became stronger. One way he could do so is by reducing as much of the carbon footprint released into the ocean. He founded Timber Surf Co., a company that creates intricately designed hollow wooden surfboards.Ryan gives an interesting walk through in the making of his unique surfboards. The boards are so robust that the quality cannot be questioned. The custom designs were so intricate as well, that it takes a month to finish a single product. As the master shaper, Ryan himself looks into every single detail- planning, choosing of materials, designing, creating and “testing” of the boards. His boards were awarded a gold star or Level One surf board by the ECOBOARD Project this year, proving to the high-performance and sustainability of his boards. For Ryan, sustainable surfing is a way of taking care of the ocean that we love. However, saving the earth cannot be done by just one or a few individuals.
