In de nieuwe podcast Wijnzaken (Afl. 3) praat ik met Petro Kools, de bevlogen eigenaar, maître sommelier en gastheer van restaurant Da Vinci in Maasbracht. Voor sommigen beter bekend als ‘de man van Margo Reuten', de enige vrouwelijke sterrenchef van Nederland. Petro Kools loopt al heel wat jaartjes mee in de wereld van de gastronomie. Heeft alles gezien en meegemaakt en zit val met geweldige anekdotes. Hij begon zijn carrière als leerling-gastheer bij het beroemde sterrenrestaurant Juliana in Valkenburg. Daarna ging hij werken bij diverse toprestaurants in Nederland om in 1993 samen met Margo een eigen zaak te beginnen in Maasbracht. Dat werd en is nog steeds een groot succes! Petro is net als ik een enorme wijnfreak, de wijnkaart is een bijbel (van zeer betaalbaar tot de absolute top), de wijnkamer (Vinoteca) is een paradijs op aarde met duizenden flessen op voorraad. Om te kwijlen zo mooi, we hebben er drie geproefd tijdens de podcast. Een klassieke Bordeaux van La Tour de By (2000), want Petro is fan van geouderde wijnen. We proefden een waanzinnige Meursault van Domaine Fabien Coche (2017) en de Cuvee Terlaner van Kellerei Terlan (2021) uit Alto Adige is de ultieme tip voor de luisteraar. Het was een leuk en eerlijk gesprek met Petro, waarin hij ook sprak over de bedreigingen voor de gastronomie, zoals het nijpende tekort aan personeel. Bordeaux of Bourgogne? Wat vindt hij van de huidige generatie sommeliers? En welke fles neemt Petro mee naar een onbewoond eiland? Deze en nog vele andere vragen komen aan bod in het gesprek. Na afloop werd ik nog getrakteerd op een fantastisch lunch. Wat een heerlijke gerechtjes, wederom met een aantal parels van wijnen om te proeven. Da Vinci, waar ik als journalist lang geleden al kwam (bij het bereiken van de 2e Michelin Ster) heeft een eigen stijl met kleurrijk servies, moderne kunst en architectuur. Gerechten worden vaak gemaakt met producten uit de omgeving en het gastheerschap staat hier oog in het vaandel. Wat een feest! Zeker als wijnliefhebber kan je je lol op. Veronica put her skates on and rolled out onto the floor of the rink. She looked just terrific, skating around the rink as if she were the only one on it, and to my eyes she was. I couldn't really imagine why she was taking lessons. What could any lessons teach her beyond the things she was doing already? She wore a tiny skater's dress that hugged her at the top but had a skirt that flew outward whenever she turned, displaying her legs and her panties. I tried to maintain an appearance of detached interest in the sport without betraying the uneasy feeling I got each time Veronica skated backwards past us with her little skirt flipped up over her little bottom. As she skated, I began to understand what Porky had meant when he had said that she was quite a little number, and I began to understand that Veronica was growing up in a way that I wasn't. At the same time, I became more and more convinced that I would be able to acquit myself quite well when I went out onto the rink. I began to wonder why I had ever worried about being able to skate. Watching Veronica, I could see that it was so much easier than I had imagined, and it was clearly lots of fun, such a delight to zip around like that, to whirl, to spin, to glide along with one leg stretched out in the air behind you. I was going to have a ball. Then Veronica's teacher arrived. As soon as I saw him, I knew that he was Jack, the Jack who had been forced to hide in the storage area under the eaves in Veronica's parents' bedroom. It took a moment longer for me to recognize that he must be Stretch Mitgang's older brother. I couldn't have estimated his age then, but I would guess now that he was twenty-two. He had jet black hair, heavy eyebrows, a clear and piercing gaze, a craggy jaw, a heartwarming smile, and straight teeth. Just watching him glide across the rink made me feel confident; surely Jack must have taught Stretch to skate. Mrs. McCall put her hand on my knee. “Oh, here's Jack,” she breathed. “Hi, Jack!” she called out. She waved at him with her other hand, and squeezed my knee so hard that I turned toward her with some alarm, wondering what I had done to upset her. “Isn't he cute?” she whispered to me. He didn't seem at all cute to me. After all, he was a grown man. “He's handsome,” I said. “Veronica's cute.” I paused. Distractedly, I corrected myself. “She's more than cute, if you know what I mean,” I said. “She's quite a little number.” Mrs. McCall looked at me. She seemed to be noticing me for the first time. “Why, you're right,” she said. “She is, isn't she?” She looked out across the rink. For quite a while she said nothing, just watched Jack and Veronica. Jack swooped up behind Veronica and gave her a pat on the rump. Mrs. McCall muttered, “My God.” For several minutes, we watched Jack and Veronica cavort around the rink. Jack would grasp Veronica between the legs, his large hand forming a seat for her, her tight nates settling into his palm, his fingers reaching up toward the small of her back. I thought that Mrs. McCall might pass out. She breathed in short, shallow draughts, and she had begun languidly to massage my knee, as if she were trying to make up for the pain she had inflicted earlier. At last Jack put Veronica down, and he began directing her through a series of slow, precise exercises. Mrs. McCall sighed and said, “I'm going outside for a cigarette. You want to come?” “Sure,” I said. When we reached the parking lot, Mrs. McCall took a package of Kools from her handbag, and asked, “Do you smoke?” Before I could speak she put a hand to her forehead and shook her head. “Of course you don't smoke,” she said. “What am I thinking of? I must be losing my mind. You're a little boy.” I looked at the ground. “Oh, I didn't mean it that way,” she said. “Peter?” I looked up. She let a long stream of smoke out through her puckered lips. She took another long pull at her cigarette and let the smoke out. “You're very—advanced—for your age,” she said. “Well, I read a lot,” I said. She smiled and patted me on the shoulder. “So you think Veronica is quite a little number, do you?” “Yes,” I said. I felt my ears redden. “And Jack is handsome,” she added. “Right,” I said. “What about me?” she asked. She raised her eyebrows and tilted her head, waiting for an answer. I knew the answer, if only by imitation. It was a statement that had shocked me when I heard my mother repeat it one Sunday morning at breakfast. She and my father had gone to a party, some couple's anniversary party, the night before, and my mother was in an effervescent mood that Sunday morning. She actually danced around the kitchen while she made breakfast, humming and singing, and she recounted the entire evening, while my father stared at the paper and drank his coffee and I watched and listened wide-eyed and open-mouthed. I caught my mother's delight in the memory of the evening before, the dancing, the toast with real champagne, the canapés, the high spirits, the flirting, and though I was shocked I was also proud and pleased when she repeated, giggling, what a man, some other woman's husband, had said to her. “You look sexy in that sweater.” Mrs. McCall choked and burst out laughing. “Oh, thank you, Peter,” she said. It was the truth. She was, I guess, about thirty-five at the time. She had dark hair and large, bright eyes. She was voluptuous. Her lips were full, and she used a bright red shade of lipstick. She had large breasts, a rounded belly, wide hips, and a lively bottom that could have been the inspiration for the tight skirts that came into fashion a year or two later. The sweater she was wearing, a white cardigan, very snug, with the top buttons open to display her cleavage, did make her look sexy. It was the truth, but I didn't understand why it was the truth; my notion of sexy went no further than the décolletage of the sweater. I had no appreciation of what the décolletage was designed to inspire, what ultimately it was intended to offer. I wished that I had said nothing. I wished that my mother had said nothing. I wished that I could go home. Veronica called to me. She was standing in the doorway of the plywood entry. The countdown to Monday's NHL Trade Deadline continues and with things heating up we start the pod off talking wheeling and dealing...well after some disappointing news with Kools men's league team losing 2-0.The first deal we start with has the Montreal Canadiens trading Ben Chiarot to the Florida Panthers (1:55) in exchange for forward Tyler Smilanic, a 1st-round pick in 2023, and a 4th-round pick in 2022 (via New York Rangers). Kulvarn Atwal is the headteacher - or rather, head learning leader - of two schools in Essex, and the author of The Thinking School. Kulvarn completed his doctorate in 2016, His thesis focuses on the factors that impact upon teacher engagement in professional learning activities, with a particular focus on action research - a topic close to my heart that we barely even touch upon in this conversation. His research draws on theories of workplace learning to provide a practical, powerful, proven framework for school improvement. His ideas are now being used by schools throughout the UK and Europe. In this installment of "Apocalypse Party" by Sean Gilbert, difficult questions are asked and answered and argued about, such as which section of a human centipede would you rather be? Here's a taste: “You are out of your mind!” I told Alicia. “It’s obvious that C would be better!”“I thought you said A was better!” she contradicted.“Everyone knows A is best! That’s not in question. Beyond that it’s just a matter of whether you’d rather be B or C.”“Then it’s definitely B!” Alicia insisted.“You’re insane. B gets it on both ends. That’s the worst of all!”“But at least B gets to dish it out!”“You’re disgusting.”“At least that way you’re not a total victim. You get to shit in someone else’s mouth.”“Why would you want to shit in someone’s mouth?” “I’m just saying, if someone’s shitting in my mouth...”“You’re terrible,” I declared piously. I have no tolerance for mouth-shitters. ENTER: STEFAN Every now and then there’s a drunk guy so unbelievably obnoxious it’s kind of endearing. That night it wasn’t me. I’m a sweetheart on my worst night compared to Stefan. He was a four foot German who approached our table inexplicably and was just as inexplicably pissed off at the whole of existence. All attempts at conversation ended in bile. He looked confused and disheveled. We were so amused at the idea of him that we didn’t even notice that his right hand was covered in dried blood. Considering he chose to stand in such close proximity with no stated purpose, I decided to extend a greeting.“What’s up?”He moved between me and Dane to sit on a stool near Charlotte. His surly countenance softened somewhat at the sight of her.“Vhat’s up vith you?” he asked of her instead of answering me. “I am Stefan.”“Where are you from?” she humored him. The novelty of any new experience is enough to make it acceptable to the inebriated.“Vhere ze fuck do you sink I’m from?” he said sharply.“Doucheland?” Tracy asked. He had a distinct German accent.“Deutschland!” he corrected her, which was unnecessary since the mispronunciation had been deliberate.“Whatever,” said Tracy, unfazed at the admonishment.Dane decided to try his hand, asking Stefan: “Did you come here for SCAD?”The little man snorted indignantly.“Do I look like a fucking art student?” he complained.“Yes,” I told him. He absolutely did.“Do you like it here?” Charlotte asked him, at this point making conversation out of pure fascination.“No, I fucking hate it here!” he barked angrily, as if all questions were infuriating.“Then what the fuck are you doing here?” I asked him with annoyance. I meant it in every applicable way.“I don’t fucking know!” he admitted.“Well, how’d you get here?” I pressed him.“How did you get here, asshole?” was his curt rejoinder.Without asking, Stefan took a cigarette from the pack of Kools and used my lighter to light it. Scowling at the flavor, he examined the pack with disgust.“I hate fucking Kools!” he spat out with rage.“Sorry, Stefan,” I said insincerely, “they were out of Marlboros.”“I hate fucking Marlboros too!” He took offense at this even though we never offered him a cigarette at all. He was beside himself with anger at the prospect of settling, and banged his tiny fist on the table in defiance. We took no offense, mostly because we couldn’t stop laughing. Stefan was a treasure, an unexplainable force of nature. Like an angry little gnome sent to entertain us with his ire. The conversation tapered off, and after introductions were made Stefan couldn’t remember anyone’s name so he decided to call every-one Ross. Except me. Me he continued to call Asshole.
