She has run a nutritional consultancy practice for over 25 years working with schools, colleges and organisations looking at ways to nourish well being. Through inspiring projects, courses and events, Greencuisine Trust works to improve the knowledge and understanding of the inter-relationship between food, culture, biodiversity, agriculture and the environment. To connect with Daphne:https://www.greencuisinetrust.org/Nettle recipes!Nettle pesto150g nettle tops (top5/7 leaves)25g shelled hemp seeds2 cloves garlic finely chopped or handful wild garlic chopped1 tablespoon nutritional yeast flakes (optional)approx 200ml olive oilsalt & black pepperBring a pan, large enough to take the nettles 1⁄2 filled with water to the boil. Add the nettles bring back to the boil and cook for 30 seconds. Drain through a sieve over a bowl to save the cooking water.Immediately plunge the nettles into very cold water. As soon as they are cold, remove and squeeze them dry.Put the nettles into a food processor along with the garlic. Process together for 30 seconds then slowly trickle in enough oil to make a soft paste. Stir in the nuts and optional yeast flakes. Season your pesto with salt and pepper to taste. Will keep well in the fridge for a couple of weeks.The reserved nettle water is a nourishing drink.Nettle soupserves 4400g nettle tops200g floury potatoes peeled if necessary & roughly chopped1litre well flavoured vegetable stocksalt & black pepperPlunge the nettle tops into boiling water for 30 seconds. Drain through a sieve over a bowl to save the cooking water for a nourishing herbal tea. Immediately plunge the nettles into cold water to refresh, drain and set aside.Put the potatoes and stock into a pan and gently simmer with the lidon until tender. Add the nettle tops to the pan, cook for a further 3 minutes, remove from the heat, cool slightly then blitz in a food processor. Return to the pan and gently bring back to the boil. If it seems too thick add a little more stock. Season as necessary with salt & black pepper.Potato & nettle rosti6 medium well scrubbed potatoes2 large handfuls of nettle topsolive oilsalt and pepperPlunge the nettles into boiling water for 30 seconds, strain (reserving the water to drink) and refresh the nettles in cold water. Strain and with your hands squeeze the nettles dry then roughly chop.Grate the potatoes onto a tea towel and gently wring out any excess moisture. Season well with salt pepper and mix in the nettles. Gently heat the oil in a frying pan. Pile in the potato mixture and press down well. Over a moderate heat cook until golden brown, about 15 minutes. Flip over and repeat on the other side. This year (as eggs are currently selling for $4.95 a dozen on average), the pressure's on to sustain beloved family traditions while also ensuring that none of those precious Easter eggs go to waste.   This sounds like a challenge for the Lutheran Ladies ...  In their latest Iron Ladle Challenge, Erin, Sarah, and Rachel are cooking with eggs — both raw and hard-boiled. Rachel offers a fresh take on the classic seven-layer salad with her nine-(or-ten?-)layer Cobb salad; Sarah whips up a Paleo-friendly, coffee- and cardomom-infused, almond-milk baked egg custard (from scratch!); and Erin digs deep into her own family history to serve up a literal golden oldie, Egg  à la Goldenrod.    Spring is the air — and eggs are on the table — in this delectable episode.   Rachel's Many Layered Cobb Salad  In an 11 x 15 pan, layer (in order):  1 head chopped iceberg lettuce  1+ cup chopped celery  1+ cup frozen baby peas, cooked and cooled  Dressing: 1(ish) pint mayonnaise, mixed with 1 packet Hidden Valley Ranch seasoning  1+ cup thin sliced grape tomatoes  1 diced chicken breast (rotisserie, roasted, or fried)  5+ chopped hard boiled eggs  ½ pound crumbled bacon  Shredded Colby-jack cheese to taste  (Optional extra layers: diced onions, chopped avocado; may substitute bleu cheese for Colby-jack.)  Dairy-Free Baked Egg Custard (from Sarah) (paleopantry.org/dairy-free-baked-egg-custard-made-with-almond-milk) 600ml almond milk 1 vanilla pod (or 1/2 teaspoon vanilla extract) 4 egg yolks, plus 2 whole eggs 3-4 tablespoons honey (to taste) 1 whole nutmeg, for grating Preheat the oven to 150°C/300°F. Pour the milk into a saucepan. Slit the vanilla pod in half length ways. Scrape out the seeds with the tip of the knife and add to the milk, along with the pod. Heat slowly over a gentle heat to just below boiling point, until you see small bubbles barely breaking the surface. Expect this to take at least 10 minutes, and stir frequently with a whisk or wooden spoon. Take off the heat. Fish out and discard the vanilla pod. Whisk the eggs and honey until fully blended. Gradually pour the hot milk over the eggs in a thin stream, whisking constantly to prevent the hot milk from curdling the eggs. Keep whisking until fully blended. Push through a fine-mesh sieve to remove any lumps. Pour the custard into 4 ramekins with a capacity of at least 200ml, or one large dish – the recipe makes about 800ml. Finely grate the nutmeg, then sprinkle over the top (you may have more nutmeg than you need, but personally I go for a generous dusting). Arrange the ramekins / dish in a deep roasting tray, leaving space around the sides. Pour in just-boiled water from the kettle, until it reaches half-way up the sides of the ramekins. Transfer to the lowest shelf of the pre-heated oven, where the heat is gentlest. Check after 30 minutes for ramekins / 1 hour for a large dish. The custard should be just set. Test for doneness by giving a gentle shake – if there is a slight wobble in the centre of an otherwise solid mass then it is done, otherwise return to the oven and re-test in another 5 minutes. Either leave to cool for 30 minutes and serve warm, or cover with plastic wrap and refrigerate to serve chilled. The custard will keep well for up to 3 days in the refrigerator. For best results, remove from the refrigerator half an hour before serving. For a refreshing breakfast, serve with tart berry fruits. Note: Sarah substituted maple syrup for honey and extremely fine-ground cardamom coffee grounds for nutmeg. Egg à la Goldenrod (from Erin) Serves 3-4 ½ c butter ½ c flour 1 t salt 1 t pepper 3 ½ c milk 5 eggs, hardboiled Biscuits for serving (at least 6, but make 12) Peel the eggs and remove the yolks, whole if possible. Reserve the yolks. Cut the whites into small, bite-size pieces. Heat butter in a saucepan over low heat until melted. Stir in flour, salt, and pepper. Cook over low heat, stirring constantly, until smooth and bubbly. Gradually add in the milk, stirring (yes, constantly). Once it is all incorporated, simmer and stir (!) for 1 minute. Mix in the egg whites. Grate the egg yolks with a fine grater into a small serving dish. This is the Goldenrod! Serve the egg gravy over biscuits. Top with the egg yolk Goldenrod and a sprinkle of paprika. Food utensils that have been purchased or received from a gentile require Tevila (immersion) in a Mikveh before they may be used for preparing or eating food. The question arises as to how this Halacha is applied in cases of electrical appliances such as an urn, which will likely be ruined as a result of immersion in water. In some instances, manufacturers tell consumers that immersion will not ruin the appliance if it is left to dry for several days afterward. In other cases, immersion will likely harm the appliance even if one waits several days before using it, and the question thus arises how the obligation of Tevila would apply to such a utensil. Chacham Ovadia Yosef writes in "Halichot Olam" that in such a case, one should transfer ownership over the utensil to a gentile, and then ask permission to borrow the utensil. According to Halacha, a utensil that one borrows or rents from a gentile does not require immersion. Thus, one can circumvent the obligation of Tevila by legally giving the item to a gentile, and then using it only in the capacity of borrowing. Do the grates of one's oven and stove require immersion? One might argue that although generally they do not come in direct contact with the food, nevertheless, since one occasionally toasts bread and the like by placing it directly on the grates, they should require Tevila. However, Chacham Ovadia rules that in determining a utensil's status with regard to Tevila, we follow its majority usage. Since grates are much more commonly used in a manner that does not involve direct contact with food, they do not require Tevila, even if on occasion one places food directly on the grates. It should be noted, however, that the grate of a barbeque, which is intended for direct contact with food, indeed requires Tevila. Summary: If one purchases an electrical appliance used for preparing food, and it will likely be ruined as a result of immersion in a Mikveh, he should formally transfer ownership over the item to a gentile and then ask to borrow it, so that it will not require Tevila. Grates of stoves and ovens that do not normally come in direct contact with food do not require Tevila, whereas barbeque grates do require Tevila.

In this episode we get into the a proper grasshopper. It's a surprisingly crushable drink if you follow Brad's lead. This drink has roots that seem to come from everywhere, and Uncle Brad get's into it. Jules puts a grinchy spin on it with mezcal and fernet – yikes! Nah, it's actually pretty good ;-)   Grasshopper Glass: Coupe  Garnish: shaved chocolate  Directions & Ingredients  In mixing glass add:  .75 oz. Chef Joyce Doughty has some delicious twists on Thanksgiving side dishes.( Joyce Doughty, 123rf)“Isn't it warm? Isn't it cozy? Side by side … by side.”Those famous lyrics from Stephen Sondheim might readily be borrowed each Thanksgiving Day, because while the turkey may be the centerpiece of the table, it's the side dishes that see the most traffic.“You want your plate to be beautiful,” said Joyce Doughty, celebrated chef and bestselling cookbook author. “And so, I always think we need something red on the plate.”Which led a delicious conversation with Morning Edition, as they dove into cranberries, a holiday twist on coleslaw, green beans, a game-changing sweet potato dish, and a secret ingredient to add to her pecan pie recipe.“I couldn't believe how fantastic that pie was,” said Doughty.The chef also brought along some items to taste and brought along a couple of recipes which we're sharing below.Sweet and Moist Cornbread  1 cup milk 1 cup cornmeal ½ cup butter, room temperature ½ cup sugar 2 eggs (beaten) ½ teaspoon salt 2 teaspoons baking powder ½ cup flour Combine milk and cornmeal in bowl and let sit for at least 30 minutes, stirring occasionally.In another bowl cream together the butter and the sugar, then add the beaten eggs and all the remaining ingredients, including the cornmeal mixture. The mixture will be on the thin side.Pour into a 9x9 of 7x11 inch greased pan and bake in a preheated 350 oven until toothpick inserted in the center comes out clean.Cream Cheese Biscuits (with variations) This will become your go-to recipe for a quick bread.  The biscuits also make the perfect base for shortcake.  The recipe doubles easily. 2 cups flour 1 tablespoon sugar 1 tablespoon baking powder ¾ teaspoon salt ½ teaspoon baking soda ½ stick (4 tablespoons) chilled butter 4 ounces chilled cream cheese 1 cup buttermilk In a large bowl combine dry ingredients, PLUS any extras you may wish to include (see note below). Grate cold butter over dry ingredients (on largest holes possible) and toss gently to coat and separate butter with flour. Then add the cream cheese, breaking into small pieces. Work with fingers to break pieces down further and incorporate throughout the flour, creating a crumbled mixture with both larger and smaller crumbles. Do not overwork. Pour the buttermilk over the crumbled mixture and gently stir and work with hands in the bowl until the dry ingredients are wet and gather into a ball. Do not knead. Simply press firmly into a ball and then take to a floured counter.For nine larger biscuits, shape the dough into a square about one inch thick. Press evenly across the thickness and try and create the squarest corners possible. Cut the square into thirds (both lengthwise and crosswise) to create nine portions. For 12 portions shape into a slightly larger rectangle and cut 3x4 strips.Place onto baking sheet and brush with some melted butter or cream. Bake in the center of the oven for 12-15 minutes depending on the size of the biscuit you have cut. Try not to over bake.Serve immediately or store in an airtight container and serve at room temperature. Biscuits can also be frozen but be sure and bring to room temperature before serving. They can also be warmed gently in the microwave.Herbed biscuits:  Add two tablespoons of fresh herbs, finely minced) to the dry ingredients.  Thyme and parsley are my favorites.  Rosemary is nice as well but use a little less and make sure it is very finely minced.  Feta and green onion:  Add ½ cup thinly sliced green onions (or ½ cup minced chives) to the dry ingredients and ½ cup crumbled feta cheese when adding the cream cheese.  The grated rinds of oranges and lemons can be added to the flour mixture.  Cranberries and nuts are a festive change, and all should be added with the dry ingredients first.  Parmesan, Garlic and Maple Roasted Sweet Potatoes  2 large orange-fleshed sweet potatoes (about one pound each and even in shape, if possible) 3 tablespoons butter, melted ¾ cup grated parmesan (or shredded parmesan chopped a little more finely) ½ teaspoon black pepper ¾ teaspoon salt 2 teaspoons Italian seasoning 1 tablespoon brown sugar 2-3 large cloves garlic, finely minced (or pressed) ¼ cup maple syrup 2 ounces thin bacon, sliced thinly (or ¼ cup real bacon bits) Combine parmesan, salt and pepper, Italian seasoning and garlic in small bowl and mix well. Set aside.Wash and dry the sweet potatoes (peeling is optional). Slice into 1/8-inch rounds, discarding ends. Shingle on parchment-lined baking sheet, overlapping slightly. Brush with melted butter.Sprinkle the cheese mixture evenly over the potatoes and then drizzle with the maple syrup.Take to preheated 400-degree oven and bake for 15 minutes. While that is baking for the first period, cook the bacon pieces in a small pan and cook maybe halfway (enough to remove most of the fat) and drain off the fat. After the potatoes have cooked for the first period, remove from oven and sprinkle with the bacon bits. Return to oven and bake an additional 10 minutes.Transfer shingled potatoes to a shallow serving dish, stacking layers of shingles on top of each other as needed. Mix it all together with a spoon until you get a homogeneous mass. Apply the mix to your face with gentle circular movements. Whisk the egg white to a foam consistency. Grate the cucumber using a fine grater (you'll need to produce 2 spoonfuls of cucumber pulp). Then add the cucumber pulp to the egg white foam, and stir the ingredients well. Whisk the egg white. Add the rest of the ingredients to the egg white foam, and stir everything well. To make the mix more viscous, try adding ground oat flakes. Whisk the oatmeal in a blender, and then grate the apple. Take 3 small bowls. Use the first bowl to mix the ground oatmeal and olive oil. Mix the ground apple pulp and honey in the second one. In the third bowl, mix the yogurt and lemon juice. Mash the avocado (either using a blender or manually with a fork) until you get a smooth pulp. Put the avocado purée, the turmeric, and the yogurt in a small bowl and stir everything thoroughly. Put the oats in a blender. Then put the ingredients into a small bowl, and stir them together using a spoon or a spatula. While applying the mask, follow the facial massaging lines, starting from the bottom part of the face and moving upwards. The first stage of mask application should begin at the chin and finish in the forehead region. Once the mask is applied, it's best to lie down, close your eyes, and relax. Ideally, you should apply facial masks in the evening before going to bed. The water temperature should be the right for your skin type. Oily skin dislikes hot water, and dry skin only feels comfortable after a warm wash. Oh, and when it comes to the actual cocktails, let's just say that if this episode were a performance review of 3Q3D's mixology, the 3Q3D crew would be getting promoted. DRINKS IN THIS EPISODE: TEXAS SIPPER COCKTAIL >> 1 ½ oz vodka, ½ oz St. Germain elderflower liqueur, 1 ½ oz fresh grapefruit juice. Mix ingredients in a cocktail shaker with ice and pour into a rocks glass with ice. Top with soda water and a mint sprig, and toast to your recent promotion. GRASSHOPPER COCKTAIL >> 1 oz green creme de menthe; 1 oz white creme de cacao; 2 oz heavy cream. Add the green creme de menthe, white creme de cacao and heavy cream into a shaker with ice and shake vigorously until well-chilled. Strain into a chilled cocktail glass. Grate nutmeg over the top of the drink, if desired. The kid's got moxie, I tell ya.  GIBSON MARTINI >> 2 ½ oz Dingle gin; ½ oz dry vermouth; pickled cocktail onions. Mix gin and dry vermouth with ice in a cocktail shaker and shake like you mean it. Pour into a martini glass and add 3 cocktail onions on a toothpick.
