She has run a nutritional consultancy practice for over 25 years working with schools, colleges and organisations looking at ways to nourish well being. Through inspiring projects, courses and events, Greencuisine Trust works to improve the knowledge and understanding of the inter-relationship between food, culture, biodiversity, agriculture and the environment. To connect with Daphne:https://www.greencuisinetrust.org/Nettle recipes!Nettle pesto150g nettle tops (top5/7 leaves)25g shelled hemp seeds2 cloves garlic finely chopped or handful wild garlic chopped1 tablespoon nutritional yeast flakes (optional)approx 200ml olive oilsalt & black pepperBring a pan, large enough to take the nettles 1⁄2 filled with water to the boil. Add the nettles bring back to the boil and cook for 30 seconds. Drain through a sieve over a bowl to save the cooking water.Immediately plunge the nettles into very cold water. As soon as they are cold, remove and squeeze them dry.Put the nettles into a food processor along with the garlic. Process together for 30 seconds then slowly trickle in enough oil to make a soft paste. Stir in the nuts and optional yeast flakes. Season your pesto with salt and pepper to taste. Will keep well in the fridge for a couple of weeks.The reserved nettle water is a nourishing drink.Nettle soupserves 4400g nettle tops200g floury potatoes peeled if necessary & roughly chopped1litre well flavoured vegetable stocksalt & black pepperPlunge the nettle tops into boiling water for 30 seconds. Drain through a sieve over a bowl to save the cooking water for a nourishing herbal tea. Immediately plunge the nettles into cold water to refresh, drain and set aside.Put the potatoes and stock into a pan and gently simmer with the lidon until tender. Add the nettle tops to the pan, cook for a further 3 minutes, remove from the heat, cool slightly then blitz in a food processor. Return to the pan and gently bring back to the boil. If it seems too thick add a little more stock. Season as necessary with salt & black pepper.Potato & nettle rosti6 medium well scrubbed potatoes2 large handfuls of nettle topsolive oilsalt and pepperPlunge the nettles into boiling water for 30 seconds, strain (reserving the water to drink) and refresh the nettles in cold water. Strain and with your hands squeeze the nettles dry then roughly chop.Grate the potatoes onto a tea towel and gently wring out any excess moisture. Season well with salt pepper and mix in the nettles. Gently heat the oil in a frying pan. Pile in the potato mixture and press down well. Over a moderate heat cook until golden brown, about 15 minutes. Flip over and repeat on the other side. For instance,… if you live in Florida, South Texas, Mexico, or Southern California… Your kits may not change as much as let's say… those of us living in the mid-west or the northern states, or Canada… And the same theory goes for Europe, and parts of Asia and Africa… and… the southern hemisphere… like most of South America, Southern Africa, Australia, and New Zealand. The more drastic your climate conditions change for each season, the more drastic your changes will be for your Preps and Kits.If your location experiences seasonal affects like Wild Fires, Flooding, Hurricanes and tornados, Blizzards, High Winds, and Dust Storms… Well… you'll need to gear up for those as well. And all though Earthquakes and Volcanoes are not affected by the changes in seasons… those of you living within these threat zones should be prepared for them as well.And Yes… we have Volcanos in the US… If you asked most Americans how many active volcanos are located in the US,.. you'll most likely get an answer like this… oh  5 to 10… maybe 15… Would they be correct…? No… Not even close… The USGS is currently monitoring 169 active volcanos in the US and it's territories. Medical expert Dr. Kevin Most joins the Steve Cochran Show to discuss how to choose the best allergy medicine for yourself, new blood thinners medication that will prevent clots without the risk of bleeding, and Dr. Most highlights a promising biopsy test that could offer individuals early indications of Parkinson's disease. Dr. Kevin Most's Steve Cochran Show Notes: Blood thinners Many people take medications termed "Blood thinners" These medications don't actually "thin" the blood, they just impact the clotting mechanisms Many take these medications to prevent clots that may cause heart attacks or strokes Because of this, current medications often cause bleeding problems Now new drugs will prevent clots without the risk of bleeding The body makes two types of clots- good ones that that stop bleeding from external injury and bad ones that grow in arteries and veins where they serve no function but increase risk to other issues Current medications focus on stopping both types of clots, so there is a high risk of bleeding with these medications These medications must be titered and monitored to make sure the fine balance is kept We have many clotting factors, proteins that trigger the formation of clots There is a specific factor , Factor XI that causes more clots internally and has little impact on clots needed for external bleeding The premise is that if we can impact Factor XI, we can minimize the impact on external clots and slow internal clots. Several drugs are being looked at now in clinical trials that impact only Factor XI If these drugs can come to market they will be blockbusters, as the current drugs now have a $20 billion market, and that is with many patients refusing to take blood thinners because of the risk of blood thinners It is expected that over 10 million individuals will need these medications by 2030.  Chicago- Air pollution At one point last year Chicago had the poorest air quality among the recorded 95 cities worldwide Part of this was due to Canadian wildfires but vehicle exhaust and industry emissions cause the problems In 2023 Chicago was ranked No 2 for worst air pollution among major US Cities The health impact is noted in our lungs and eyes, but it also has more long term effects as well, It does have an impact on those with asthma, COPD and heart disease  Individuals with these medical conditions should consider air purifiers in their homes and bedrooms Drier and hotter conditions will continue to lead to large wildfires8. With the impact on Children, schools should also look at ways to improve air quality in the class room Parkinson's  Disease Diagnosis normally made with symptoms News in Jama this week highlighting a biopsy test that may allow for identification of individuals who will end up with Parkinsons Parkinsons thought of as a disease of older individuals, remember Michael J Fox was diagnosed at age 29 This test will identify Parkinson's years before symptoms begin Cost is currently $1500 Allow doctors to diagnose based on biology not symptoms The biopsy looks for a specific abnormal protein that impacts nerves This protein is also being looked for in spinal fluid, blood, nasal swabs There currently is no cure for Parkinsons, just medications that manage some of the symptoms As the disease progresses the medications become less effective Companies are now looking at treatments that target the abnormal proteins Early diagnosis will hopefully allow for more options for treatment in the future.
