This year (as eggs are currently selling for $4.95 a dozen on average), the pressure's on to sustain beloved family traditions while also ensuring that none of those precious Easter eggs go to waste.   This sounds like a challenge for the Lutheran Ladies ...  In their latest Iron Ladle Challenge, Erin, Sarah, and Rachel are cooking with eggs — both raw and hard-boiled. Rachel offers a fresh take on the classic seven-layer salad with her nine-(or-ten?-)layer Cobb salad; Sarah whips up a Paleo-friendly, coffee- and cardomom-infused, almond-milk baked egg custard (from scratch!); and Erin digs deep into her own family history to serve up a literal golden oldie, Egg  à la Goldenrod.    Spring is the air — and eggs are on the table — in this delectable episode.   Rachel's Many Layered Cobb Salad  In an 11 x 15 pan, layer (in order):  1 head chopped iceberg lettuce  1+ cup chopped celery  1+ cup frozen baby peas, cooked and cooled  Dressing: 1(ish) pint mayonnaise, mixed with 1 packet Hidden Valley Ranch seasoning  1+ cup thin sliced grape tomatoes  1 diced chicken breast (rotisserie, roasted, or fried)  5+ chopped hard boiled eggs  ½ pound crumbled bacon  Shredded Colby-jack cheese to taste  (Optional extra layers: diced onions, chopped avocado; may substitute bleu cheese for Colby-jack.)  Dairy-Free Baked Egg Custard (from Sarah) (paleopantry.org/dairy-free-baked-egg-custard-made-with-almond-milk) 600ml almond milk 1 vanilla pod (or 1/2 teaspoon vanilla extract) 4 egg yolks, plus 2 whole eggs 3-4 tablespoons honey (to taste) 1 whole nutmeg, for grating Preheat the oven to 150°C/300°F. Pour the milk into a saucepan. Slit the vanilla pod in half length ways. Scrape out the seeds with the tip of the knife and add to the milk, along with the pod. Heat slowly over a gentle heat to just below boiling point, until you see small bubbles barely breaking the surface. Expect this to take at least 10 minutes, and stir frequently with a whisk or wooden spoon. Take off the heat. Fish out and discard the vanilla pod. Whisk the eggs and honey until fully blended. Gradually pour the hot milk over the eggs in a thin stream, whisking constantly to prevent the hot milk from curdling the eggs. Keep whisking until fully blended. Push through a fine-mesh sieve to remove any lumps. Pour the custard into 4 ramekins with a capacity of at least 200ml, or one large dish – the recipe makes about 800ml. Finely grate the nutmeg, then sprinkle over the top (you may have more nutmeg than you need, but personally I go for a generous dusting). Arrange the ramekins / dish in a deep roasting tray, leaving space around the sides. Pour in just-boiled water from the kettle, until it reaches half-way up the sides of the ramekins. Transfer to the lowest shelf of the pre-heated oven, where the heat is gentlest. Check after 30 minutes for ramekins / 1 hour for a large dish. The custard should be just set. Test for doneness by giving a gentle shake – if there is a slight wobble in the centre of an otherwise solid mass then it is done, otherwise return to the oven and re-test in another 5 minutes. Either leave to cool for 30 minutes and serve warm, or cover with plastic wrap and refrigerate to serve chilled. The custard will keep well for up to 3 days in the refrigerator. For best results, remove from the refrigerator half an hour before serving. For a refreshing breakfast, serve with tart berry fruits. Note: Sarah substituted maple syrup for honey and extremely fine-ground cardamom coffee grounds for nutmeg. Egg à la Goldenrod (from Erin) Serves 3-4 ½ c butter ½ c flour 1 t salt 1 t pepper 3 ½ c milk 5 eggs, hardboiled Biscuits for serving (at least 6, but make 12) Peel the eggs and remove the yolks, whole if possible. Reserve the yolks. Cut the whites into small, bite-size pieces. Heat butter in a saucepan over low heat until melted. Stir in flour, salt, and pepper. Cook over low heat, stirring constantly, until smooth and bubbly. Gradually add in the milk, stirring (yes, constantly). Once it is all incorporated, simmer and stir (!) for 1 minute. Mix in the egg whites. Grate the egg yolks with a fine grater into a small serving dish. This is the Goldenrod! Serve the egg gravy over biscuits. Top with the egg yolk Goldenrod and a sprinkle of paprika. (Adam@TheWorldview.com) By Jonathan Clark Muslims slit throats of Christians in Mozambique, Africa Barnabas Aid reports that fighters from the terrorist group called “ISIS Mozambique” killed four Christians in northern Mozambique this month. In one incident, Muslim militants slit the throats of Christians they described as “infidel Christians.” They killed another Christian in a machine gun attack.  Militants began an insurgency in the southern African country in 2017, killing thousands of people since then.  Mozambique is ranked 39th on the Open Doors' World Watch List of nations where it most dangerous to be a Christian.  Christians oppose Britain's End-of-Life Bill Christian leaders sent a letter to the United Kingdom parliament, opposing a proposed End of Life Bill. The measure would allow terminally ill adults to seek assistance in ending their own lives. The bill moves forward with a second reading on Friday. The recent letter warned, “This bill, in our view, undermines the value of life and lacks the safeguards needed to protect those most at risk from being coerced into premature death.” Trump threatens tariffs on Canada, Mexico, & China until illegals & drugs stop In the United States, President-elect Donald Trump announced his plans for tariffs on Monday.  The plan affects America's primary trading partners—Canada, Mexico, and China. At the start of his second term, Trump said Canada and Mexico will face a 25% tariff until they curb the flow of migrants and drugs across the border. Trump also announced a 10% tariff on Chinese goods, in addition to any other tariffs on the country, until it deals with fentanyl smuggling.  Trump picks Scott Turner for Sec. Housing and Urban Development Last Friday, President-elect Trump nominated Scott Turner to lead the Department of Housing and Urban Development. Turner played football in the NFL before serving in the Texas House of Representatives. He worked in the first Trump administration, and is an associate pastor at Prestonwood Baptist Church in Plano, Texas.  Turner responded to the nomination on X. He wrote, “Thank you, Mr. President. I am thrilled to continue the outstanding work we began in your last administration at HUD with an incredible team. … I would also like to express the sincerest of gratitude to my mentor, Secretary Ben Carson. … We have an important mission ahead. To God be the glory. Let's get to work!” Target fired Christian who wrote “Trust in Jesus” on Target nametag KVLY-TV reports that Target has apologized for firing an employee over Christian messaging on her name tag.  Denise Kendrick worked for a Target store in Fargo, North Dakota. She said she was fired earlier this month for writing “trust in Jesus” on her Target nametag. A manager told her that she couldn't wear the nametag. Kendrick replied, “Well, I've seen people with rainbows on theirs. I'm going to continue to wear this nametag,”  And then they said, “Well, you can't work here anymore.” After the incident, a Target spokesman said, “Upon learning of the situation, we conducted a review and determined that the team member should not have been terminated. We apologized to her and offered to reinstate her immediately.” In Matthew 10:32, Jesus said, “So everyone who acknowledges Me before men, I also will acknowledge before My Father who is in Heaven.” Walmart rolls back Diversity, Equity, and Inclusion policies On Monday, Walmart announced it is rolling back its diversity, equity, and inclusion policies.  It's the latest large company to do so. The world's largest retailer will no longer participate in the Human Rights Campaign, the largest lobbying group for sexually perverted lifestyles in the U.S.  Robby Starbuck is a conservative activist who has been calling out companies for their diversity, equity, and inclusion initiatives. After talking with Walmart, he wrote on X, “This is the biggest win yet for our movement to end wokeness in corporate America.” World's oldest man died And finally, the world's oldest man died in England on Monday. He was 112 years old. John Alfred Tinniswood was born on August 26, 1912, just months after the Titanic sank. He lived through both world wars and served in the British Army Pay Corps during World War II.  Tinniswood's family said he was active in retirement. He volunteered as an elder in this local church where he gave sermons. He said moderation was important to a healthy life.  Tinniswood is survived by his daughter, Susan, four grandchildren, and three great-grandchildren. Literature Review Week Why do some people react to mosquitoes so vigorously? There is fascinating data for me in the Nature article, as I see lots of kids that react strongly to mosquitoes while others do not at all. A hyper primed immune reaction makes a lot of sense as the immune system is extra sensitive to the insult in individuals that have chronic allergic phenotypes. They are in effect polarized to see the outside world through an irritant lens and thus react in a more robust way. The cell called GD3 releases Interleukin 3 or IL-3 which is a cytokine signaling molecule that tells skin based sensory neurons to become more sensitive to allergens like house dust mites, environmental molds, and in this case mosquito saliva. Thus, the mosquito saliva induces more of the itch scratch cycle. The effect is to increase the gain sensitivity on the skin to 10. This is likely a main reason why having an allergic child take immunotherapy against allergens that they react to lowers the rheostat for all irritants. It is like a global check on the sensory system. This is another reason to consider SLIT and or SCIT immunotherapy in allergic children... Shannon Hiott was 29 when her ex-boyfriend, Chance Donohoe, broke into her home in August 2023 and stabbed her 37 times.
