In Episode #187 I sit down with Megan Lee, BPsychSc, to talk about food and mental health. Megan is a career researcher, scientist, and academic at Bond University on the Gold Coast here in Australia. She has a Bachelor in Psychological Science (with Honours) and her PhD in nutritional psychiatry is currently under examination. She has published research on food and mood, body image, disordered eating, dietary patterns, and mental health, and occupational stress in academia.There's an interesting backstory as to how this exchange came about. [01:30] When You're Scared of Fat, You'll Be Hungry For Processed Foods We are kept on an island of unhealthy seed oils by traumas around saturated fat and cholesterol. When you're scared of traditional fats, then that opens you up to being hungry for whatever the processed food companies want to feed you. Processed foods always have a lot of seed oils in them. Seed oils are truly toxic. [06:50] The Differences Between Monounsaturated, Saturated, and Polyunsaturated Fats Monounsaturated is the main fatty acid in olive oil. The most common fats in seed oils are polyunsaturated. Saturated fats are the most common fat in coconut oil. It's also the most prevalent fat in butter. The difference between these fats chemically is the stability to heat. Saturated fats are the most stable and have an antioxidant effect. Polyunsaturated fatty acids oxidize and create oxidative stress. [12:40] The Metabolic Pathway For How Dietary Linoleic Acid Omega-6 Ends Up In The Membranes and Inner Fat Cells You swallow a potato chip, and it gets broken up in your stomach a few hours later. Then it shows up in your intestinal tract where enzymes from your pancreas break apart the fats in there. Most of the fats are in the form of triglycerides. We have to use lipases in our pancreas to break it up. From there, it goes into the intestinal cells. Later, it gets picked up from your liver. The liver takes it all apart and repackages it in this thing called low-density lipoprotein. [21:50] How Seed Oils Can Stay In Your Body For Extended Periods of Time Linoleic acid in our fat cells has a long half-life. Body fat is stuck with us until we use it. If you've been eating seed oils your whole life, it will take a couple of years for it to be gone. If you aren't metabolically healthy or fit, you shouldn't do extended fasts because they're releasing so many pro-inflammatory oils all at once. [27:35] Should I Avoid Peanut Oil or Eat More Peanut Oil? Peanut oil is okay if it's unrefined. In fact, peanut oil is actually good because it's a traditional fat. Some peanuts have oil profiles that are more like olives. There's a lot of variables with plants, so it's hard to be absolute about anything. The best quality peanuts are the larger ones, and they do have a better fatty acid profile. [33:15] Why Do Some People Think That Seed Oils Are Good For You? The American Heart Association pumps out 13 journals either weekly or monthly. They're putting out hundreds of articles every year, funded by Procter & Gamble and other companies selling junk food and seed oils. The American Heart Association is giving out the wrong information. Dietitians are doing their homework; their job is to read the wrong pile of articles. The American Heart Association is the biggest fake news organization out there. [36:30] Effects of Fatty Acids on Mitochondria: Implications For Cell Death Read the article Effects of Fatty Acids on Mitochondria: Implications For Cell Death: https://pubmed.ncbi.nlm.nih.gov/12206909/ This study explains why people who have PUFA in their body fat will feel tired when they go on a diet. PUFA is a terrible fuel for your body cells. The mitochondria will stop producing energy when their fuel is PUFA. When people go on a diet, they feel like they can't do it anymore because they are so tired. Energy loss is a huge part of obesity. [44:55] Why Ketones Are A Great Energy Source For The Mitochondria Ketones are designed out of your body fat. When you're burning your body fat, and your liver is healthy, it makes ketones for you. Ketones are like predigested fuel. Ketones are a better fuel, and our cells actually work better when they have access to that better fuel. Hearts that have access to ketones can actually pump 30% harder than hearts that don't. [47:45] The Brain Needs Omega-3 and Omega-6: Here's What You Need To Know Your brain needs omega-3 and omega-6. However, your brain needs longer omega-3 and omega-6. Only fish and animal products can have long versions of omega-3 and omega-6. You have to have these enzymes that elongate them. If you've been eating too much seed oil, your enzymes are not functional, and they don't work very well. Fatty liver is such a devastating disease because it cannot elongate these fatty acids. As the name states, the primary characteristic of NAFLD or FATTY LIVER is too much fat stored in liver cells. The problem is, most do not have many if any symptoms though their liver is significantly affected, inflamed and may later lead to cirrhosis and liver failure if nothing is done about it. This is TRAGIC as it is PREVENTABLE and REVERSIBLE through simple changes that most health care providers, including many physicians are unaware of or do not seem to promote. If you've followed the NBT podcast for a while you probably heard Dr. Malcolm Kendrick talking about the tenuous connection between cholesterol levels and cardiovascular disease. Malcolm has published with The International Network of Cholesterol Skeptics on this topic, including a recent review paper entitled LDL-C does not cause cardiovascular disease. In the paper, they include both total cholesterol and LDL-C in their discussions, and if you look at epidemiological data, I think they make a good point. For instance, total cholesterol had almost no effect on mortality in the HUNT-2 study in Norway, and higher levels were associated with lower mortality risk in women. Or the ESCARVAL-RISK study, where higher LDL-C is associated with lower all-cause mortality until it's well above 200 mg/dl. Or the In-Chianti study, where people over 64 had the lowest mortality rates if they had an LDL-C greater than 130mg/dl. The question then becomes, if not cholesterol, then what? To answer that we must resist monomania and acknowledge the very notion of causation in a complex system is suspicious. Ask not what but how. Malcolm argues in his new book The Clot Thickens that if you maintain metabolic health, manage stress, and mind your endothelial function, cholesterol levels become largely irrelevant. Simple enough, but as you'll discover in this interview, the devil is in the details. Have you ever wondered what food has to do with inflammation? Listen in on Fresh Focus Dietitians with fellow Dietitian and Integrative and Functional Nutrition Certified Practitioner Nancy White to find out answers surrounding fighting inflammation with food. Chronic inflammation causes our body to stop functioning in a healthy way. This can lead to the development of chronic diseases such as heart disease and diabetes. Chronic inflammation can also worsen pain levels and have a negative impact on nearly every body system. What we eat has the power to reduce that inflammation with antioxidants, vitamins, omega 3 fatty acids, and other nutrients. Building an anti-inflammatory nutrition plan is simple when following the plate method. · Fill up half of the plate with non-starchy vegetables such as leafy greens, Brussels sprouts and carrots, or red peppers. Remember to include all the colors throughout the week in the vegetable category. You can add spinach and mushrooms to an omelet, grill peppers and onions on kabob sticks, or munch on carrots and celery as a snack. Fruits are also anti-inflammatory foods. With fruit we want to keep our portions small at meals and snacks. Consider adding berries to oatmeal or yogurt, dipping apples in peanut butter for a snack, or enjoy frozen grapes after dinner. Be wary of fruit juice or smoothies with added sugars. · Fill up one-fourth of our plate with carbohydrate items such as sweet potatoes, quinoa or wild rice, or black beans will provide anti-inflammatory nutrients. Keep portion control in mind for your starchy foods but don't avoid them completely. · Fill up the other one-fourth of our plate with protein. Fatty fish such as salmon or sardines or plant-based proteins such as lentils or edamame are the best anti-inflammatory options. You can include smaller amounts of lean animal protein throughout the week as well. · Don't forget to include anti-inflammatory fats. Cooking with extra virgin olive oil is a great way to get started. Adding avocado to a variety of dishes such as sandwiches, burrito bowls, and soup is another way to increase healthy fats. Nuts and seeds make great snacks and toppings to salads or cereal. Following these anti-inflammatory nutrition tips can help you feel better and obtain health improvements. You can consider adding one new anti-inflammatory food a week to get started. Remember its about progress not perfection when it comes to eating healthy.

Have you ever wondered if the food you are eating is causing you pain due to inflammation? If so, stick around and listen in on how nutrition and what we eat day to day can influence inflammation and could be causing an increase in your pain level. Inflammation is the body's protective response against injury, infection, stress, or foreign substances. In episode 42 of Fresh Focus, Megan goes through some of the food items that could be causing an increase in inflammation. Food items that cause increase in inflammation include a diet full of highly processed foods, high sugary foods, or typical junk food, sometimes referred to as the Standard American Diet. Top 9 types of foods that are the big contributors of inflammation. 1. High-sugar foods2. High-fat foods3. Foods that promote bacterial overgrowth of the small bowel: This includes simple sugars and complex carbohydrates that are quickly digested. Such as bakery items, juice, soda, and really any food item with added sugar. 4. Low fiber intake: Not eating enough fiber, can also cause inflammation. One of the purposes of fiber is to pull and remove toxins from the gastrointestinal tract. For your reference, the Academy of Nutrition and Dietetics, rec0mmends 25 grams of fiber for women and 38 grams of fiber for men each day. 5. Insufficient phytonutrients: Not eating enough colorful fruits and vegetables. 6. Vitamin and mineral deficiencies: Women should consume at least 1 ½ cups of fruit and 2 ½ cups of vegetables each day. Men should consume at least 2 cups of fruit and 3 ½ cups of vegetables each day. 7. Fatty acid imbalances: Not enough Omega-3 fatty acids and Omega-6 fatty acids, along with too much saturated fat and trans-fats from processed foods. 8. Insufficient exercise: Getting enough physical activity is effective in reducing adipose tissue and the amount of fat in your body.9. Tobacco use and excessive alcohol use: Can damage the body's cells and trigger an immune response of inflammation. Keep in mind that you do not need to try out all of these suggestions at once. By knowing what causing inflammation that can help us with making diet changes to help with pain and overall health and wellness. Remember, small steps are better than not trying at all.
