It's the UK vs US in a saison double header. Don't get to do back-to-back saisons very often. This is a real surprise. The Kernel is one of the UK's best producer of traditional style beers. They do a lot of traditional ipas, porters, table beers, saisons and more. Foeder Beer Mosaic is a farmhouse ale made with mosiac hops fermented in red wine barrels. At only 5.4% ABV, it's a light refreshing farmhouse ale that's light on the funk. Jester King is Texas premiere wild ale makers. Super Ultramega Hyperforce is a 4.5% ABV farmhouse ale made with ginger, salt, tarragon and refermented with cataloupe. Next up in our series of interviews from the 2023 Foeder for Thought festival, Kate Bernot is talking to Matt Manthe from Odd Breed Brewing in Pompano Beach, Florida. Most of the locations of the brewers we speak to at Foeder for Thought come from far and wide, and usually from places with more mild climates than Florida has to offer. So Matt and Odd Breed adapt their process and expectations to that reality, working with yeast strains and styles that provide the nuanced results they're looking for. He also talks about what it takes to help grow the audience for these beers in Florida, which is a younger scene that markets like California or the Northeast. One of the methods Matt enjoys most is fresh hopping his wild ales for a somewhat hybrid style of IPA and wild and sour beer that is delighting his fans.

Unless you've been listening to older episode of the GBH Podcast, you may not have heard my voice in awhile. I've been working on some new projects this past year or so that I'm excited about, but if there's one thing that pulls me out of semi-retirement each year, it's the Foeder for Thought festival in St Petersburgh Florida every March with Green Bench Brewing Company, and here we are again on the cusp of that annual gathering of wild and spontaneous beer producers gathering. This year its on Friday March 8th, and in the run-up to that event where I get to sit down and chat with a few leading producers in the category about their trajectory and the future the envision. I'm releasing last year's talks as a way to sort of get people excited again and remind them of some of the aspects of Foeder for Thought that make it so special. First of all, it's a small event but there's some serious work and care put in that makes it fantastic. Khris Johnson and his team at Green Bench pull out all the stops for this thing. They get Web's City Cellar, their companion bar, primed and ready to welcome fans of wild and spontaneous beer to what I consider one of the best beer bars in the country. And I'm certainly not alone in the opinion—this year the James Beard Awards nominated them for the Outstanding Bar category. That's big time stuff. This year they're featuring Northern California's Russian River, Threes Brewing in New York, Keeping Together in New Mexico, Suarez Family Brewery in the Hudson Valley, and The Referend Bier Blendery from Kutztown, Pennsylvania It's going to be a fantastic time - and I hope to see you there. Now, let's talk about 2023's lineup of guests that you'll hear in these episodes, hosted by myself and Good Beer Hunting's Kate Bernot. We're talking to folks from de Garde Brewing in Oregon, Fox Farm Brewery in Connecticut, Off Breed Wild Ales in Pompano Beach Florida, Primitive Beer in Colorado, and Scratch Brewing in far Southern Illinois. As per usual, it was an inspired lineup of beers and the producers behind them. All connected through their love of wild and spontaneous beer making, but also unique in their own rights—serving unique audiences and geographies, adapting to the realities of climate change and a shifting market, and finding their own way even as they hold the ancient traditions of these beers in a kind of reverent state.

Like many craft brewers, Zach was a home brewer, but unlike most home brewers, he competed at the top of the game in the Boston Beer Longshot challenge and won. Riding that boost of confidence, he and his partner bought a 1960s dairy barn and renovated it to create a humble but beautiful destination for what would quickly become one of the ties premier beer destinations. That confidence turns to some measure of humility however when we talk about his venture into wild and spontaneous brewing where he feels they'll still finding their way and making a name.

After taking a short break for a St. Pete-style rain to pass through, the crowd at Foeder for Thought gathered in the courtyard at Green Bench again, dried off some seats and got a beer to listen to our second chat featuring Brandon Boldt from Primitive Beer in Colorado. A well-respected and novel producer of wild ales, Primitive is perhaps more widely known for their packaging style, putting uncarbonated wild ales into a bag and box serving package. These still beers provide a profoundly different drinking experience—without the carbonation, the flavors and textures move over the palate entirely differently than a beer in a thick glass bottle with those highly pressurized tiny bubbles. Since me and Brandon spoke at Foeder last year, they closed up shop in Longmont Colorado and starting making a big move to a new location—in an annex at New Image Brewing in Wheat Ridge Colorado.

In this episode of the 2023 Foeder for Thought festival, Kate Bernot is talking to Trevor Rogers from de Grade Brewing, a geographical outlier like many of these producers, based in Tilamook, Oregon. de Garde was part of the avant garde in American wild ales, founded in 2012 with his partner Linsey, considered by many to be one of, if not THE first producer of these styles of beer in the US. Part of the legend of de Garde comes from its methods of collecting wild yeast along multiple locations in the Pacific Northwest coastal region, and that influenced a generation of wild ale producers across the US who were looking for the courage to try these traditional Belgian methods in untested areas of the country.

Tucked away in far southern Illinois, Scratch has made a name for itself with foraged ingredients, ancient methods of brewing, such as hot stone and campfire heating, as well as a culinary program at the brewpub that delivers a similarly-minded approach to cooking. We talk a lot more these days about the connection between agriculture and brewing, but in this conversation with Aaron, you'll hear something more akin to a naturalist or a conservationist obsessed with his land and the surrounding forests, and how he makes world class beers from those unlikely resources.

Come and share a brew with Our Mutual Friend I once heard a story that when a mobster introduces someone to another mobster they're introduced as "a friend of ours" if that person is also in the mob.  I was excited to think that Our Mutual Friend Brewery had some mob ties but, unfortunately, the name simply refers to beer being something everyone can enjoy, a mutual friend. Despite my extreme disappointment we still had an amazing conversation with Head Brewer Jan Chodkowski.  He's pretty laid back and he likes beer.  I can appreciate that.  Jan was even a good sport as we bantered about Cold IPA and my argument that it's not a real thing.  He defended talking something about the brewing methods and all that making it unique.  I'll admit he had a strong case, and he's a fan of the style. With the Great American Beer Festival coming to Denver soon Our Mutual Friend has a little party of their own planned.  Gratitude 9 is a thank you to the community and a special beer release.  Sounds like a great way to pre-game for the madness of GABF. Jan is also a fan of saisons and mixed fermentations and Brett and foeders.  He's quickly becoming our favorite person.  OMF (we can call them that now 'cause we're tight like that) used to do some spontaneous brewing but they like the results they get better with a bit more control. Kros Strain Brewing Co. shows us what's happening in Nebraska beer We met the crew from Kros Strain Brewing Co. when they visited Atlanta for The Juice Strikes Back festival in 2019.  This invitational beer fest brought some amazing beers to Georgia and introduce a lot of new breweries to the Peach State.  We chatted at the time about getting together for a show and it's only taken us three years to make it happen. Better late than never. Co-founder Bobby Kros and Head Beer Pusher Jeff Hardy sat down with us this week to share a few beers and tell us about their brewery.  As we sip their Fairy Nectar (the #1 IPA in Nebraska) I get chastised for mentioning loose meat sandwiches.  Hardy tells me that's an Iowa thing and I better recognize the Runza.  Where I grew up in the little town of Norfolk, NE we had the loose meat sandwich.  Perhaps we were infiltrated, indoctrinated by those dirty Iowans.  My life is a lie, my lesson was learned, it won't happen again. Kros Strain joins us this week hot off a World Beer Cup medal win for Saison 635 in the Brett Beer cateogry.  We learn about the beer, talk about Brett, bringing back saison, and the "big barrels" that are foeders and what happens with the ones at Kros Strain.  We talk about beer in green bottles and the joys of intentionally skunking your funky saisons, micheladas and more lager talk.  Why they're popular and what American brewers might do with these classic styles over time. The podcast is joined by a certified saint in the church of oak, founder and co-owner of St. Louis' Foeder Crafters. Foeder Crafters came out of nowhere to become THE foeder fabricator in the US. We trace back to when Matt, "a maker of things", was in the early stages of opening a brewery with a Cy Young Award winner when a brewer casually asked if Matt thought he could make a giant oak vessel for him. Instead of being a brewer, Matt was catapulted down a meteoric path of both trailblazing and perfecting the craft of domestic foeder production. He talks about how the industry was simply starved for innovation, the tight-lipped and stale culture in more seasoned foeders, and laments the huge challenge of sourcing *just* the right type of oak for his tanks. Matt also explains how the endlessly challenging process of foeder building has allowed his company to effectively hold a monopoly on the industry in America, sings of the value in sucking on every piece of oak he receives, and points out the subtle but critical differences between CRAFTsmen and CRAPsmen. This way a blast of a conversation to have with one of the nicest people on Earth (unless you're competition) laden with a glut of knowledge regardless of your familiarity with the King of Wood.

Hopefully distance does make the heart grow fonder, because Matty and Noah have found themselves alone once again. We reflect on the handful of guest conversations we've been privileged to over the last five weeks, but end up back where we always do: Allagash. Jason Perkins brought Brettanomyces to the forefront of Matty's mind via thoughts of Allagash's almighty Bret Michaels. So he uses a recent BBB3R release - Fire Road - to set the stage for a conversation all about the most misunderstood yeast in the game. We talk about the seemingly infinite kinds of flavors that Brett can leave its mark through and try to go further than the grossly overused note of "funk" and "horse blanket", seriously questioning the percentage of the beer-drinking populus that has ever come within 100 feet of an actual barnyard. Noah also shares the brewery's method to try to actually become familiar with sensory "notes" commonly associated with Brett fermentations, like mango, passionfruit, lemongrass (Spoiler alert - the trick is to smell and taste the real thing). We also get into the rationale behind dry-hopping a mixed-ferm beer like Fire Road, the effect dry hops can have on the finished product, and the status of his quest to develop a true house culture for the brewery.Regardless of its many, many different possible attributes, the overall "wild" character Brettanomyces can add to a beer is described as such for a reason, and this is not the first nor the last time we'll dive into a conversation exclusively about this beautifully confusing microorganism. Even so, it felt like we made some modicum of process...If not, at least the Three Bay is fun............................. ................................................. ......................................... This week we have a special preview episode for you. Last year, you may recall we led a series of discussions at Foeder for Thought, the festival for wood-aged and sour beers by Green Bench brewing in St Petersburg Florida, as part of the Tampa Bay beer week festivities. Well, it was a blast, and the team at Green Bench has invited us back to the party to do it again this year, and I’m very excited to get down there and see their cellar expansion. They’ve been busy collaborating with a bunch of folks, and producing some of the best mixed-culture beers in the country. And Foeder for Thought is a celebration of those beers, their friendships, and their professional admiration of others. Also, it’s just a killer time. Orpheus Brewing and The Woodlands talk sour and wild beers Wild and sour beers continue to grow in popularity.  From "simple" sour beers like Berliner Weisse and Gose to complex, spontaneously fermented ales with funky, earthy, cheesy character.  There's a huge variety out there. When you think of SweetWater Brewery, you may not think of sour beers - but you should.  Nick Burgoyne, Lead Brewer and Blender at SweetWater's The Woodlands focuses on brewing wild, sour, funky and barrel-aged beers.  He recently won a Silver Medal for Cambium (an American Wild Ale) at the US Open Beer Championship. Orpheus Brewing opened in Atlanta in 2014.  Brewmaster and President Jason Pellett had a goal to introduce an approachable, sour beer that anyone could afford and his Atlanta (Tart Plum Saison) did just that.  In the past 4 years, Orpheus has brewed many more sour beers, and recently won Bronze for Lambic-style Ales at the Great American Beer Fest. Burgoyne and Pellett join us this week to talk about the adventure of expanding the acceptance of sour beers.  We talk simple kettle sours like Berliner Weisse and Gose, and more complex sours like Lambic and Gueze.   We also discuss the challenges facing American brewers as they mimic these styles and try to name them without offending traditional Belgian brewers, and how that brought about the move towards the Méthode Traditionnelle under the guidance of HORAL (High Council for Artisinal Lambic Beers).  As we sip through several beers, the conversation moves to the process of traditional spontaneous brewing and blending sour beers.
