The Pre-Shift Podcast is back!Tom Schmidt, co-owner of Salt + Smoke BBQ, talks with host D.J. about shifting from hands-on restaurant work to leading an eight-location, 550+ employee business, a transition he says truly began around the fourth location and felt like a “phantom limb” loss of how he measured success. He explains how delegating to partners and leaders—especially co-owner Haley, a director of operations, and later hospitality, HR, finance, and catering roles—enabled growth while preserving culture and “magic,” in part by creating advancement paths for ambitious managers and chefs.Schmidt describes systematizing communication through agenda-driven meetings and cascading updates to stores, and relying on 7shifts Manager Log Books and Shift Feedback to surface real issues and protect culture. He also discusses saying no to new concepts, using forecasting and KPI-based bonuses tied to food, liquor, and labor costs, and shares the ongoing challenge of producing signature cheddar-and-bacon popovers.Key TakeawaysThe Desk Shift Nobody Talks About: Hear Tom's candid account of what it  feels like to trade the floor for a desk — why operators retreat to what they're good at, and why that instinct can stall your growth. The 4-Location Wall: Discover why the jump from one to four restaurants demands a completely different version of you as a leader.Building a Team That Outgrows You: Learn how Tom and co-owner Haley Riley turned retention risk into a growth strategy by creating new leadership roles that gave a path to their best people.Getting Out of Your Own Head: Find out how they cascade decisions from a Wednesday corporate meeting all the way to weekend front-of-house staff — and why Tom credits structured meetings (despite hating them) with keeping eight locations aligned. The Feedback Loop That Builds Trust: Hear how 7shifts' shift feedback tool gives every one of their 550 employees a direct line to the top — and why Tom refuses to filter what comes back.Telling the Story Through Briskets: Understand how Tom connects labor and food cost numbers to something tangible — like seventeen lost briskets a week — to help managers act on the data in front of them.Resources MentionedSalt + Smoke: https://www.saltandsmokebbq.com/Send us Fan Mail

In this episode of Smart Franchising, Dan Rowe sits down with Chris Gannon, founder of Bolay Fresh Bold Kitchen and son of Outback Steakhouse co-founder Tim Gannon, to explore the critical question: should you franchise your restaurant concept? With 22 locations across Florida, Bolay Fresh Bold Kitchen represents a "better for you" fast-casual concept focused on scratch-made, chef-driven bowls with craveable flavors. Chris shares invaluable lessons from his restaurant DNA—including working his way up from busser at Outback despite being the founder's son, his experience at PDQ, and the challenges of maintaining quality and consistency while scaling. The conversation dives deep into operational realities that prospective franchisees need to understand: the complexity of scratch cooking, the relentless focus required for training, the critical importance of site selection (with unique tips like consulting local police officers who truly know communities), and why "the best site you'll ever select is the one you say no to."Chris reveals Bolay Fresh Bold Kitchen's growth strategy of seeking experienced multi-unit, multi-brand operators (MUMBOs) as franchise partners—not traditional QSR franchisees or first-timers—who understand that building top-line sales through hospitality and quality drives bottom-line success. He emphasizes that successful franchising requires treating partners like marriages, maintaining culture at scale, and resisting the temptation to cut food quality for margin optimization. Dan and Chris discuss industry challenges including skyrocketing build costs, the over-saturated restaurant market, the need to master off-premise channels, and why strong unit economics are non-negotiable in today's environment. For anyone considering franchising—whether as a franchisor or franchisee—this conversation offers hard-earned wisdom on site selection, people selection, maintaining standards across multiple units, and the fundamental trade-offs between corporate growth versus franchise partnership models.

This week on aBlogtoWatch Weekly, Rick is joined by Ariel, Ripley, and David, the latter of whom is in an automotive showroom eating tiramisu and waiting for his car to be repaired. Ariel muses about why watch repair shops don't have waiting rooms, to which Ripley replies, "That would be a six-month rental." It's been a busy week in watch world, particularly for Ariel and David, who are fresh back from Geneva Watch Days. There was a heatwave in Geneva, and Ariel proclaimed Czapek & Cie to have won the sweat-resistant bracelet contest. David's take on GWD is that it was fun but way too much to take in during the time allotted. The guys get down to business with a look at the new H. Moser & Cie x Studio Underd0g collab, which Ariel thinks was designed in bright colors to attract insects and birds more than people. Rick simply doesn't get it, and David doesn't disagree. They then turn their attention to the new Konstantin Chaykin concept watch, ThinKing, the "world's thinnest mechanical watch." There's not a lot of traction among the team for this watch, either — but remember, it's a prototype. Rick has asked ChatGPT, "Which watch brand collaborations does no one want to see?" and the answer is the best possible argument against AI. Next up, Speake Marin has a new watch, the Ripples Skeleton, that the team has no truck with for various reasons discussed at length. All in all, it's been an iffy week of new watches. The question is, where does this desire for a simpler way of riding become #underbiking? Armchair Adventure - A rookie first attempt at ultra-cyclingFor many gravel and adventure riders, the decision to enter a 720km long bikepacking event which contains a mighty 19,000m of climbing would be one that was taken after a lot of careful consideration and only with the right preparation in place. For Valerio Stuart though, the decision was made on the spur of the moment after some holiday plans fell through. With barely any time for preparation and a mountain of untested kit, would he survive or would he end up scratching?

Frankie Goes To Hollywood, Billie Holiday, N.W.A, Serge Gainsbourg og Jane Birkin, The Bloodhound Gang og selveste Peter Belli. As a watch enthusiast, it's tough not to utterly admire what Max Busser has brought to the industry. Not just his products, but his approach to business and collaboration as a whole. He and I certainly share the mindset of such platitudes of "A rising tide lifts all ships" and knowing it "takes a village" so to speak. And it is his love of community that originally sparked my interest in his company, MB&F (Max Busser & Friends). There's some interesting background on him naming his company, as well. Max's professional journey is fascinating, and though he warned me that he tends to ramble, his talking really only exposed how much about him I didn't already know. He has a wonderful way of articulating why his company is the way it is, and so much so, he often answered questions before I even asked them! I'm proud to share this as I haven't heard Max speak this openly about his company, including the advantage of being scared and welcoming competition. I think you're really going to appreciate what he has to say. When we wrap things up bringing cars into the mix, Max shares his passion for hand-built cars. Though I guess I shouldn't have been surprised, it's also not every day one discusses the likes of TVR Griffiths & Wiesmans. This conversation was such a pleasure to take part in, and I couldn't be thankful for Max and his time. We actually chatted for about 15 minutes after ending the podcast portion where Max asked me questions about STANDARD H - clearly illustrating his openly caring nature. I may be biased, but I feel like the world needs more creative, outside-the-box, thought-provoking business owners who actually care about others and aren't so insular and selfish in their thinking. In other words, more people like Max. In today's interview we are lucky enough to take a fascinating journey into the mind of an inventor.  Not just any inventor though, a farmer who sees problems, visualizes ways to solve them and then follows through.....all the way through. Monte Busser has a list of 8,100 ideas that can make life better for farmers and everyday people.  Looking at all the patents he already has filed, all of the work he does outside of inventing and the processes he has in place to make his inventions commercially available you might euphemistically say that he has been "struck by lighting".  However, when I asked him when he remembers first creating and improving things, he thinks back to a time when he was actually struck by lightning at ten years of age.  Fortunately the lighting bolt first hit a transformer, then arced and struck him while he was riding his bicycle on rubber tires.  His parents actually saw him be struck by the lighting, but he was not hurt, he just started riding faster.  And since that day, he has been inventing and improving. In today's episode we focus on five of Monte's patents that are featured on Google Patents.

As we heard last episode, Argentinian businessman Senor Davidoff had chartered a boat to take 41 of his men to South Georgia to salvage metal and other materials from abandoned whaling stations. The had not reported to the British head of a scientific mission at the port of Grytviken despite being told to. It was March 1982 and the Bahia Buen Suceso had dropped off the scrapmen on the island who were breaking down the abandoned buildings. They'd also been joined by a French film crew who were forced to seek shelter at South Georgia. After they fixed up the broken tiller and mast, they sailed to Leith Bay from Grytviken to film the scrapping – having decided to forego their planned trip to the Antarctic which had almost ended in catastrophe. On the 23rd March, Lord Carrington the British Foreign Secretary sent an even stronger message to Buenos Aires. If the Bahia Buen Suceso was not ordered back to remove the 41 Argentinian workers left on South Georgia, the Royal Marines would do this forcibly. Endurance was now ordered to head straight for South Georgia and arrived there on the 24th March, then the crew awaited further orders. By the evening of the 23rd March, Admirals, Lombardo, Allara and Busser were gathered at Puerto Belgrano. The all-important army General Garcia was at V Corps HQ only 37 kilometers away. These men communicated and drew up a rushed plan by the evening of the 25th March. Junta leader Galtieri was told the invasion of the Falklands could begin on the 1st April, with a South Georgia operation planned for the same day.The Falkland's plan was simple. First they'd capture Stanley with its airport and Royal Marines barracks. Then they'd focus on the second largest settlement at Goose Green. The Argentine navy would carry out these invasions which was partly dictated by the amphibious nature of the operations.  Get bonus content on Patreon Our GDPR privacy policy was updated on August 8, 2022. A lot of sites will point you to a form on their site, but they almost always redirect to Aramark, Xanterra or Delaware North. So here is what you need to know to get a job and get in the national park that you want to visit. Remember, at the core of this experience the work comes second ;)At the top of this episode we talked a little bit about our OK trip which was ok... not amazing. But definitely pretty memorable. Sorry to the poor saps in rural Oklahoma. We start talking about how to get a park job at 16:52 There are of 25,000 jobs open for you to be the perfect fit. These include Culinary, Grill Cooks, Food Service Workers, Bar Back and Bartender, Hostesses/ Hosts, Guest Services, Barista, Cocktail Server, Busser, and even Dinner Theatre?!?Make sure you pick one that is hourly or seasonal and don't get trapped with a vague title or you'll be stuck washing dishes like our boi Kyle.To find a job that fits you, go here: Aramark, Xanterra.Do some research on the restaurant you really want to work in. Here is a good place to start. We compiled a few tips on how to survive in the craziness of the national park job hunt. Apply for multiple positions at the same locationHave a back up park in mindApply in the spring (now)Lie on your resumeAlways say you can work the entire summerPrepare to be working as early as MayIf you get to the parks early you have better opportunities for a better jobBe patient. There are a bunch of applications each year and they have to sort through them all. They may take a month to message you backDon't be afraid to ask for a better position or schedule when at the parkExpect to be busy at work (parks are more populated than ever)Request time off in advanceBe prepared for dorm style livingYou will most likely have one to two roommatesThey will probably give you a recommended packing list when you get hiredPlan on showing up early on your check in day so you can get settledDON'T SKIP ORIENTATION It is mandatory and you may have to wait a week to start working (or maybe that's what you want to do)Pack for cold weather no matter the parkIf you are under 21 be smart You are not working for NPS you are working for a large company (Which has its pros and cons) but if you are fired you can be kicked out of the park. As soon as you are not an employee you are a tourist and have to abide by the parks rulesGirls, be smart and be safe. Most park employees are great people and interesting characters but there are creeps. Companies have a strict sexual harassment policy but things will slide under the radar.
