Home-Style Chinese Food 家常菜:外国人最容易爱上的中国味道如果问外国人最喜欢什么中国菜,很多人可能会首先想到烤鸭、宫保鸡丁之类的famous dishes (知名菜肴)。但Kevin来到中国以后,反而发现自己最喜欢的,是一些非常普通的home-style dishes (家常菜)。Selah说:Before coming to China, he thought his favorite foods would be famous dishes or tourist foods.“来中国之前,他以为自己最喜欢的会是那些著名的、游客常吃的食物。”但几天之后,他发现自己真正喜欢上的,反而是那些中国人平时经常吃的家常菜。比如:干煸豆角、锅包肉、红烧茄子……这些菜可能并不是外国游客来中国之前最期待的,但对很多中国人来说,却是从小吃到大的味道。Home-style dishes (家常菜) 通常给人一种很舒服、很熟悉的感觉。它们可以说是:comforting (让人感到舒适、熟悉的)而且不需要什么特别的仪式感,普通的一顿饭,就可以吃得很好。所以,有时候真正让外国游客爱上的,并不是最有名的中国菜,而是:The food people eat every day (人们每天都会吃的食物)。除了家常菜,还有一种中国食物,几乎很难不提:饺子!外国主播分享到:I don't think I've ever met a foreigner who doesn't love jiaozi.“我好像从来没遇到过不喜欢饺子的外国人。”饺子当然好吃,但它对中国人来说,又不只是“food”。尤其是在中国北方,春节一家人一起包饺子,是非常重要的传统。Making dumplings together is almost as fun as eating them.“大家一起包饺子,乐趣几乎和吃饺子一样多。”所以,一盘饺子背后,其实还藏着family memories (家庭记忆) 和cultural traditions (文化传统)。02. Hot Pot & Mala Xiang Guo 火锅和麻辣香锅:自己搭配,才是乐趣除了家常菜和饺子,还有两种中国美食,非常容易让外国游客“上头”:麻辣香锅和火锅。Kevin就特别喜欢麻辣香锅。它有一个很特别的地方:You get to build your own meal (自己搭配一顿饭).你可以自己选择蔬菜、肉、豆腐、蘑菇、面条……Whatever you like! (你喜欢什么就选什么!)然后让店家把这些食材和麻辣调料一起炒出来。这种吃法对外国游客来说很有意思,因为它既有一种熟悉的“自己选择”的感觉,又有非常独特的中国味道。所以,This is a fan favorite (这是很多人的心头好)!而说到中国美食,当然不能不提:火锅(hotpot)!火锅之所以很容易让外国游客喜欢,可能不仅仅是因为味道。Hot pot is not just about the food — it's the whole experience.“火锅不只是吃什么,更重要的是整个用餐体验。”大家围坐在一张桌子旁:Everyone sits around the table, cooks together, talks together, and shares everything.大家一起煮、一起聊天、一起分享。这其实非常符合中国人的一种用餐文化——吃饭本身就是一种social experience (社交体验)。所以,如果有人第一次来中国,问“我只能选一种中国美食体验,该吃什么?”Selah的答案可能就是:Hot pot!因为你体验到的不只是中国食物,还有中国人一起吃饭、聊天、聚会的方式。03. Chicken Feet, Century Eggs & Stinky Tofu 鸡爪、皮蛋和臭豆腐:真的有那么可怕吗?当然,中国美食里也有一些东西,外国游客第一次看到时,可能会忍不住问:“Wait... people actually eat these?”比如:Chicken feet (鸡爪)。这对很多美国人来说确实有一点挑战。Selah说,很多美国人第一次看到鸡爪的反应都是:“Wait... people actually eat these?”“等等……这个真的有人吃?”因为在美国,很多人从小并没有吃鸡爪的习惯,所以看到完整的鸡爪时,首先产生的可能不是“好不好吃”,而是:“This is unfamiliar (这个我不熟悉) .”但有意思的是,一些外国人真正尝试以后,反而会喜欢上它。因为食物的魅力有时候不只是flavor (味道),还包括texture (口感)。接下来是另一个让外国人有点犹豫的:Century eggs (皮蛋)。光是英文名字就很容易让人误会。很多人听到“century egg”,真的会以为这是“放了一百年的蛋“。其实当然不是!It doesn't mean the egg is a hundred years old.“century egg”只是皮蛋的英文叫法,并不是说它真的有一百年历史。而且很多外国人真正尝过之后,会发现它的味道其实没有想象中那么“吓人”。当然,也有人会说:“I actually have never tried it, and I'm okay with that! ”这里还有一个必须提到的“挑战选手”:Stinky tofu (臭豆腐)。它最大的特点就是:The smell definitely scares people away.“它的味道真的很容易把人吓退。”但中国人有一句特别经典的话:“闻起来臭,吃起来香!”所以Selah也会告诉外国朋友:“Don't judge it by the smell! ”“不要只根据它的气味来判断它!”有些外国人吃一口之后:“I love it! ”还有一些人:“One bite is enough for a lifetime.”“这一口,吃过一次就够我记一辈子了。”这就是食物最有意思的地方——每个人的反应都可能完全不同。04. Duck Blood & Organ Meats 鸭血和动物内脏:为什么有些外国人不敢吃?如果说鸡爪、皮蛋、臭豆腐已经让一些外国游客犹豫,那么接下来这些食物,可能会让他们更紧张:Duck blood (鸭血) 以及:Organ meats (动物内脏)。比如猪脑、猪肝、猪肠等。鸭血在中国火锅里非常常见,但对很多美国人来说,仅仅是听到名字,就已经有一点挑战了。原因其实并不一定是:“It looks disgusting.” 而更多是:“I've never eaten that before.”也就是说,它们最大的障碍可能是:unfamiliarity (陌生感)。很多西方人从小就没有吃动物内脏的习惯,所以第一次接触的时候,自然会觉得有些陌生。但这并不意味着他们认为这些食物一定“不好吃”。They're just unfamiliar. (他们只是不熟悉而已。)而这其实是一个很有意思的文化差异。因为如果换一个角度,我们也会发现:每个国家都有一些自己觉得非常正常的食物,放到另一个文化里,可能同样会让人觉得奇怪。比如,美国人很喜欢:Peanut butter sandwiches (花生酱三明治)Sugary breakfast cereal (甜味早餐麦片)以及:Giant cups of soda (超大杯汽水)。如果一个从来没接触过美国饮食文化的人第一次看到这些东西,说:“Do Americans really eat this?”其实也完全可以理解。所以,旅行的时候,我们可能需要学会一件事:Don't judge someone else's food culture.不要轻易评价别人的饮食文化。05. Food Is Cultural 食物背后,其实是成长和文化为什么同一种食物,有人爱得不得了,有人却完全接受不了?很大程度上,是因为:Food is such a personal thing.食物其实是一件非常个人化的事情。因为:It depends on how you grew up.它取决于你的成长环境。如果你从小吃着饺子长大,那么饺子可能代表的是home (家)、family (家人) 和memories (回忆)。如果你从小没有吃过鸡爪,那么第一次看到鸡爪时觉得奇怪,也非常正常。所以,旅行的时候,真正重要的也许不是:“我一定要喜欢所有当地食物。”而是:“I'm willing to try something new.”“我愿意尝试一些新的东西。”因为:You don't have to love everything, but you'll never discover your new favorite food if you don't try it.你当然不需要喜欢所有食物,但如果连尝试都没有过,你也永远不会知道,自己会不会因此发现一种新的最爱。Kevin就是一个很好的例子。所以,中国美食真正吸引人的地方,也许正是它的丰富和多样。Regional cuisines (地方菜系)、不同的食材、不同的味道,以及每一道菜背后的文化和故事。无论你喜欢辣的、清淡的、面食、饺子还是烧烤,There's something for everyone. Today, Jane Z. sits down with award-winning poet and art critic John Yau, who curated the exhibit “Home Cooking,” now live at the LaiSun Keane Gallery in Boston until December 5. John Yau has published over 50 books of poetry, fiction, and art criticism. Born in Lynn, Massachusetts in 1950 to Chinese emigrants, Yau attended Bard College and earned an MFA from Brooklyn College in 1978. His first book of poetry, Crossing Canal Street, was published in 1976. Since then, he has won acclaim for his poetry's attentiveness to visual culture and linguistic surface.
