Erika's Gold Award project combined her passion for dance with her desire to work with children, leading her to teach dance to underserved kids in Chicago. This experience not only fulfilled her goal of exposing children to the arts but also taught her invaluable lessons about love, leadership, and the impact of creative outlets on mental health. Erika opened up about her personal struggles with clinical depression, bipolar disorder, and anxiety, which she has been dealing with since childhood. Her journey through these challenges led her to become an NBA cheerleader for the Chicago Bulls, a role that played a significant part in her path to recovery. I started my account about 3.5 years ago as a creative outlet for me as a way to share recipes that I loved and adored but made with simpler and healthier ingredients. I had just quit my dream of pursuing a career in modeling and was trying to navigate what a healthy relationship with food looked like for me. In order to book jobs in the modeling industry, I was instructed by agents that I needed to lose a lot of weight, which I did. But in turn I developed a really unhealthy and restrictive relationship with food. When I started my account I was fully vegan because it was a way for me to restrict the foods that I loved, I thought the less that I was allowed to eat then the more weight I would lose. For the first two years working on Lovely Delites I shared full vegan and gluten-free recipes even though behind the scenes, I was working with lifting all restrictions on my diet. Since then, I have started to share non-vegan recipes too, however my page still remains with an emphasis on vegan and gluten-free recipes. This is because cooking this way makes me feel good and also it's very inclusive for anyone and any diet. Even if you are not v/gf you can still enjoy these types of recipes. Since I've adapted into more of a flexitarian diet, I have fully healed my relationship with food and now I share online with my audience that you can also still include your favorite foods into your diet and still live a healthy and balanced lifestyle. I no longer restrict anything, I honor my cravings and I am the healthiest I have ever been in my life. My goal is to hopefully inspire anyone who may be dealing with a restrictive diet that it's okay, there is a light at the end of the tunnel and that you can truly have both.
