Even though the United States is the wealthiest country in the world, we have a glaring problem with accessibility to healthy food. According to the USDA, over 35 percent of households with incomes below the poverty line faced food insecurity in the year 2020. Rates of food insecurity were significantly higher than the national average for single-parent homes, as well as Black and Hispanic families.  Additionally, a 2019 study showed that suboptimal diets were responsible for over 11 million deaths around the world. There's clearly a huge disconnect between having the access and the knowledge to efficiently fuel our bodies. This is a complex issue and there's not a straightforward solution. This week, I spoke to Kevin Curry, founder of FitMenCook. FitMenCook is an online community that inspires men and women to eat healthily and stay fit by providing healthy recipes. Kevin prides himself in creating recipes that are, in his words, “never, ever boring.” Kevin's mission is to not only help people live healthier but also to be happier. Kevin is a many-sided man who is on a mission to become a household name. He also founded the FitMenCook app, which has garnered more than 7,000 five-star reviews on the Apple App Store. He also published his first cookbook in 2018, which reached the top of Amazon's fitness category within a month of going on sale. His latest venture is the launch of his spice and tea product lines; the spices are designed to meet all recipe needs, while the teas are designed for various wellness goals. His journey to the success of FitMenCook started about nine years ago when he found himself back at his parent's home with a master's degree from Harvard, yet he was jobless and broke. He had to rely on government assistance programs such as food stamps for feeding; hence he had to learn how to eat healthy while on a budget. He decided to share his creative discoveries with the world on his blog. In August of 2018, Russell Barlow went on vacation with friends for the sixth year in a row. He found himself drinking to blackout for most of it, in the throes of a deep depression.At one point, he even thought “I don't need to be here anymore.” That was the only time he ever had that thought, which was not about the vacation he was not enjoying. It scared the shit out of him.Following that trip, Russell was diagnosed with Bipolar 2, or as he calls it, “Bipolar Lite.”He was put on medication.What followed was a several-year process of waking up. Working in a toxic environment at the time, he began to value his personal well-being in ways he hadn't before. He left.That was just the first step to a constant process of evolution and change.In this episode of the Get the F*ck Off Podcast, we talk very intimately about Bipolar 2, mental health, and the stigma associated with it.We talk about the pandemic, and the necessary pause that allowed for a respite in the American obsession with constant motion; a pause that allowed for some to experience a much-needed break from the assault of grueling jobs where they were undervalued.We also talk about the importance of well-being.Russell and I both worked in the hospitality industry for a large portion of our lives, which we use as a lens to examine the importance of work-life balance. He took that as evidence that the medication was working, and he says that was his first step to 1. stepping out of the toxic work environment he'd been in for many years and 2. the shift in his thinking because as he says, he was experiencing clarity he did not have previously.15:30We discuss drinking to medicate and hypomania, which is associated with Bipolar 2. 16:00We discuss how a person can know if they are self-medicating. Russell recommends the book Less Than Crazy: Living Fully with Bipolar 2 by Karla Dougherty20:35The stigma of mental health is a serious problem, and Russell expresses being thankful for the fact that it's becoming more readily discussed. We recorded this podcast during mental health awareness month, so there was a lot of discussion about it at the time, which was great.22:23Unlike many people during the pandemic, Russell found the pause to be extremely useful for his mental health. Unlike life within the constant motion and assault of the grueling hospitality motor, he was able to slow down, connect, and reflect.He began taking care of yet more aspects of his well-being that he had been neglecting30:00Russell went back to work for a brief time during the pandemic and opened a restaurant. The opening was long hours with unappreciative guests. One day on his way back to the city just following the opening, he was waiting for the train when he got the call that he would be laid off for the second time.He made the realization that he was completely replaceable and shifted his priorities to things that were more self-serving.With his parents getting older, and New York feeling less like home, he began taking micro-steps to make the move to Austin, TX. 36:20The Hospitality Industry employee shortage is a problem in America.Noting that the common theme amongst people in the industry is “I value myself too much to do this anymore,” that is a huge indicator that something needs to change.41:30Russell discusses his experiences applying for hospitality jobs in Austin, and the problems/red flags he experienced at the outset which are often far too common.53:20We discuss the nationwide restaurant employee shortage, and how while people do want to blame it on enhanced unemployment, there are a magnitude of other contributing factors.We discuss the basic needs of a human being that often go neglected in the food, beverage, and hospitality industry, two of which are proper nutrition and sleep.58:00Russell gives his advice for people feeling undervalued and/or stuckWe finish the episode looping back to mental health, and the importance of finding someone to talk to. The amazing Kevin Curry of "Fit Men Cook."  He says: "I think we’ve all been there. My “ah-ha” moment happened when I saw a photo of myself on my friend’s Facebook page.  My initial reaction was a mixture of denial, surprise and quite truthfully, a little shame for letting myself go as much as I had.  I was overweight and felt sluggish, and to compound the issue, my physician told me my blood pressure was steadily rising. So, I did what most people try to do— I started exercising to try to “out train” a poor diet. "I was wrong.  There was not enough cardio or weights in the world that could get this fat off my back. I realized that if I was going to accomplish my fitness goals, it would have to be through a steady, healthy diet, complemented by hard work in the gym. "So, I went to a half price book store, bought every single book about dieting and started studying nutrition.  Shortly after, I got started cooking.  I did not have much money so I started experimenting in the kitchen with different proteins and veggies in order to make simple, relatively inexpensive items, taste great.  I vowed that I would never eat another boiled chicken breast again unless I had to! "Fitness is a lifelong journey and I could not imagine a life of eating boring, bland food just to be healthy.  Now more than ever, I firmly believe that healthier food options do not have to be boring. Ever. In fact, they are pretty tasty.  And even better, the lifestyle changed worked. The amazing Kevin Curry of "Fit Men Cook."  He says: "I think we’ve all been there. My “ah-ha” moment happened when I saw a photo of myself on my friend’s Facebook page.  My initial reaction was a mixture of denial, surprise and quite truthfully, a little shame for letting myself go as much as I had.  I was overweight and felt sluggish, and to compound the issue, my physician told me my blood pressure was steadily rising. So, I did what most people try to do— I started exercising to try to “out train” a poor diet. "I was wrong.  There was not enough cardio or weights in the world that could get this fat off my back. I realized that if I was going to accomplish my fitness goals, it would have to be through a steady, healthy diet, complemented by hard work in the gym. "So, I went to a half price book store, bought every single book about dieting and started studying nutrition.  Shortly after, I got started cooking.  I did not have much money so I started experimenting in the kitchen with different proteins and veggies in order to make simple, relatively inexpensive items, taste great.  I vowed that I would never eat another boiled chicken breast again unless I had to! "Fitness is a lifelong journey and I could not imagine a life of eating boring, bland food just to be healthy.  Now more than ever, I firmly believe that healthier food options do not have to be boring. Ever. In fact, they are pretty tasty.  And even better, the lifestyle changed worked. If you want to do Big Things in your life, you have to put yourself in a position to do so. That means having the time, energy, focus, money, or other resources to dedicate towards your goal. One way to put yourself in a position to do great things is to meal prep. Meal Prep: Preparing your meals in advance (breakfast, lunch, dinner, or snacks) for an extended period of time (a few days, 1 week, 1 month, etc). Why Do It? Fuel your body with good, wholesome food! When you dedicate time to plan your meals, you are much more likely to prepare healthy good that will give you clean energy and help you stay on track from a health standpoint, including weight control, blood sugar, and others. Save money!  Where I live and go to school, meal prepping costs me half of what it would cost to eat out. HALF! Saving money by meal prepping allows you to put more resources towards things like books, classes, investments, savings, and many other value-building assets. Save Time! By spending 1-2 hours in an afternoon to make your food for the week, you avoid standing in lines, trying to decide what to make for dinner, or waiting for food to be delivered. Instead, you have the freedom to eat when you need to, and spend more time investing in yourself, family, or others around you. Tips: Get some good containers. There are many out there, so find some that work for you.  Here are a few that I like - Glass Containers, Sterilite Plastic Containers Get some good recipes. Meal prepping doesn’t have to be boring! Check out Kevin Curry’s website www.fitmencook.com for great inspiration! Set aside time to do it. You will likely need about 1-2 hours to prepare all of your weekly food. But it will be worth it! The time you save during the week and more importantly, the momentum you will be able to maintain through the week because you aren’t having to prepare meals will allow you to focus more on what matters for you.
