Pesticides, violence policière, mensonges, incompétence face aux crises sanitaires, sociales et financières, redistribution des richesses inacceptable, musellement de la presse, incapacité face à l’urgence climatique, révérences aux lobbyistes et multinationales. Ni la rue ni les urnes n’ont eu raison d’eux. Mes jeunes années de cuisinier m’ont fait prendre des chemins fleuris d’insouciance, d’espérance, de beauté, d’humanité. Croyant être libre, j’ai bâti à la sueur de mon travail d’indépendant jours après jours un espoir. Un espoir de sable, balayé par le moindre souffle de vent. Soucieux depuis plus de 20 ans du monde qui nous entoure, de la dégradation de notre alimentation, de la perte d’un patrimoine gustatif et d’une biodiversité sacrifiée au nom des grandes distributions et lobbies des semenciers, qui favorisent une culture de la mort : mort de nos sols, mort des semences devenues stériles et par conséquent toxicité de ce que nous trouvons dans nos assiettes, j’ai fait comme beaucoup d’autres le choix de travailler avec des femmes et des hommes respectueux d’un savoir faire originel, gardiens de notre culture alimentaire de qualité à travers les semences de population, le vin vivant, la pêche durable, le bien-être animal et les races locales. Sans compter mes heures, j’ai rencontré, écouté, défendu ces humains, ces idées et ces valeurs, je me suis levé, relevé quelques fois, j’ai crié NON très souvent en espérant que les choses bougent. Beaucoup d’entre nous n’ont pas attendu les beaux discours présidentiels, des actions existent déjà, nous devons les exposer, les partager et les développer. Ces sentiers escarpés, souvent difficiles, m’ont appris à prendre le temps et m’ont offert de multiple rencontres. Cette diversité humaine m’a Nourri, Soigné, Eduqué, Cultivé et Enrichi. Mon espoir d’un monde nouveau a grandi, de toutes ces forces, ces collaborations, ces échanges, je sais aujourd’hui que nous avons la capacité et les clés pour s’emparer de notre colonne vertébrale politique : l’alimentation, la santé, l’éducation, la culture et l’économie. Notre force, c’est les autres. Si nos sociétés humaines ont réussi à avancer dans le temps, c’est par la transmission des savoirs et la coopération entre les hommes. J’ai rencontré Patrice Gelbart le 18 juin 2019 au théâtre de Gennevilliers.Comme vous le percevrez aisément à l’oreille, nous avons enregistré dans la salle de son restaurant Youpi au théâtre, à la fin du service, au moment où le calme revient peu à peu, mais où on s’active encore beaucoup en arrière-cuisine : tintements de verres, bruits de rangement divers et variés vous mettront dans l'ambiance...Patrice Gelbart est une personne assez exceptionnelle ;  il fait partie de ces gens très sympathiques qui mettent sans réserve toute leur énergie pour défendre les causes auxquelles ils croient. Après avoir été chef étoilé de son restaurant gastronomique dans le Tarn, il est venu s’installer à Paris, et après plusieurs expériences parisiennes à succès et des rencontres inspirantes, il a pris les commandes de la cantine du théâtre de Gennevilliers. Assumant différentes fonctions, Patrice Gelbart est notamment co-président de l'Alliance Slow Food des Cuisiniers, association au sein de laquelle il développe de très belles actions.Nous avons évoqué son parcours et ses motivations profondes, bien sûr, mais aussi son engagement et son investissement toujours plus fort dans le respect du vivant. Patrice est un pionnier qui a toujours été sensible au produit, à son origine et à ceux qui le produisent. Il m'a aussi parlé de son engagement dans la défense des semences paysannes et de l’importance de les protéger, il a été question de culture culinaire et de gastronomie populaire, et puis de différents projets en cours, plus ou moins aboutis : si certains s'inscrivent dans un temps plus long, il est en ce moment particulièrement investi dans l’Université de la Gastronomie qui ouvrira prochainement à Plouhinec en Bretagne.Juste avant l'enregistrement, Patrice m'a montré les toits terrasses du théâtre, espaces dédiés au potager en permaculture qu'il cultive avec l'aide de Valéry Tsimba. C'est un magnifique potager urbain, destiné à devenir une véritable terrasse nourricière dans les prochaines années. Potager des toits-terrasses du théâtre de Gennevilliers. Enfin, je suis revenue sur le tour du monde effectué par Patrice cet hiver, et malheureusement ce sont surtout les trop nombreuses aberrations écologiques qu’il a pu voir un peu partout dans le monde qui l'ont marqué.
