When we started out making a show about New Orleans business, people – even in the business community – said, “Well that’s great, but what are you going to do after 6 weeks?” That was 2011. We’ve recorded a new episode of Out to Lunch almost every week since then. And we still haven’t run out of guests. In fact, there are so many people doing interesting things in New Orleans business that we rarely have anyone on the show more than once. But, once in a while, we like to check in on some of our earliest guests and see what they’re up to. Back in 2012, in our first year on the air, we met a young man by the name of Kenneth Purcell. Kenneth had some ideas that bridged the gap between the real world – that most of us lived in in those days – and the virtual world, that was beginning to stagger to its feet. To put this in context, in 2006 Apple launched a music player called the i-pod. In 2007 they launched the iPhone. In 2010 they launched the iPad. Locally, before all that, in 1999, Kenneth launched a company called iSeatz. iSeatz wasn’t a device, it was a then-revolutionary new way of making a reservation at a restaurant: Online. I won’t go through every twist and turn in the story, but basically, Kenneth’s company, which is still called iSeatz, went on to pioneer the back-end of online travel and financial services. Among other accomplishments, iSeatz was the company that came up with the idea of using air-miles to buy things other than air tickets. Today, iSeatz creates and provides the online travel engine for companies like Expedia, Trip Advisor, Avis, Hertz, Wyndham Hotels, and American Express. In 2014, at the Idea Village Entrepreneur Week, we met a young woman called Catherine Todd. Catherine and her partner had founded a business called Where Y’Art that had just won Idea Village’s entrepreneur prize for an arts-based business pitch. It was a then-innovative online art gallery: A curated marketplace where selected local artists would be introduced to people who buy art. Today, the company is called Where Y’Art Works and is focused on providing local art to organizations that want to decorate. Where Y’Art Works collaborates with interior designers, facilities teams, set designers, and industry professionals to put original art by local artists in spaces in New Orleans, Baton Rouge, North Louisiana, and the Mississippi Gulf Coast. To date they’ve completed over 325 commercial projects - including putting art on the walls in the Sheraton Hotel, Fidelity Bank, and Ochsner and LCMC facilities. In the process, they’ve paid local artists, framers and installers over $6.5m. If we had to pin an exact date on the birth of New Orleans and give it an astrological sign, the city is probably Gemini. The twins. I say that because there seem to be two co-existing versions of the city. One is the city that never changes. You can leave for years and when come back, your favorite people and your favorite dishes at your favorite restaurants are still be here. The other New Orleans is the city that is constantly changing. New brass bands, new Mardi Gras parade groups, new types of king cakes, and new businesses that are growing, or getting bought and sold. Catherine and Kenneth have a foot in both camps. Their businesses are still growing, they’re changing and adapting, but they've been at it now for long enough to become local institutions. And even though they're still both young, they’re the entrepreneurial OG generation – the inspiration for a whole new generation of entrepreneurs. I sat down with Cheryl Luckett, founder and principal designer of Dwell by Cheryl Interiors, for a much-needed round two—this time in person after a tech issue cut our first conversation short. Amanda ("Mandy") Osgood and Tracy Lindberg of Graze Acadiana join Discover Lafayette to discuss their love of creating beautiful food presentations and what it is like to open your own small business. A mother–daughter team who have brought the art of grazing to Lafayette since 2019, this episode is presented in partnership with Lafayette Travel and Eat Lafayette as we spotlight locally owned restaurants and eateries. Located at 113 Arnould Boulevard in Lafayette, Graze Acadiana was built upon the Australian concept of gather and graze, which connects people with beautiful, high-quality food and creating shared experiences around the table. Building a Business Together Mandy reflected on what it means to run a business with her mom: “We spend every single day together and call each other a million times. Building this business together brought us closer. And we just have a really close friendship. So it's been great. And being business partners, I know a lot of people can't manage that with family, but it's been really good for us.” The two are originally from the Mississippi Gulf Coast. “We're both actually from the Gulf Coast in Mississippi, the Biloxi/Ocean Springs area. And we moved here… Mom moved here about 15 years ago, and I moved here about 13 years ago,” Mandy explained. “I had my first child and she needed to be closer to her grandson. So here we are.” Mandy Osgood and Tracy Lindberg, owners of Graze Acadiana They quickly felt at home. “We fell in love with Lafayette. It's just so family oriented. Family friendly. Of course, the food's wonderful and the people are wonderful. And so it was really a place that I wanted to raise my family and wanted to be closer to." Mandy describes herself as “the creative one” while Tracy brings her restaurant management background and entrepreneurial mindset. “We both love entertaining. We love gathering people together and just making beauty out of simple things,” Mandy added. The Early Days of Grazing Before “charcuterie” was a household word, Tracy and Mandy were already creating lavish spreads. “Back in the day, friends and family would have us do weddings and birthdays and stuff like that. We used to make these massive grazing spreads. We didn't even know they were called that at the time. We put gorgeous food on the table.” In 2018, they saw the grazing trend explode in Australia. “There were about five places in the entire United States that were doing the grazing thing at that time. Like big cities—Austin, New York. My mom was like, let's do it.” From the start, they chose to run things professionally. “So from day one, we started in a commercial kitchen. We didn't do it out of our house,” Mandy explained. But that came with hurdles. Tracy recalled: “What really surprised me… was when we went down to the health department and found out that we had to have the commercial kitchen, and then we had to have a grease trap. Normally people make things at home, but incorporating this in the way we wanted to do it—right or not do it at all—cost tens of thousands of dollars.” Mandy added: “I don't think any of us knew that we were going to know this much about a grease trap at this point in our lives. My mom scoured plumbing department rules and laws… because grazing was such a new concept. There were no set standards for that. We had to figure all that out.” Surviving COVID By 2019, Graze Acadiana had opened its first storefront off Kaliste Saloom Road. “Things were booming and going and we were growing… educating people what the charcuterie world was about because it just wasn't that popular here,” Amanda recalled. Then the pandemic hit. Their tagline had been “Gathering Grapes.” Amanda laughed: “And Covid said, no, you don't. So we had to start changing our concept and work with that.” They shifted from large spreads to individual options. “We started doing petite boxes,

New Orleans tends to pull more media attention this time of year than towns along the Mississippi Gulf Coast, but that doesn't mean we've forgotten them

On August 25th, 2005, Hurricane Katrina crossed over South Florida and into the Gulf, where it quickly strengthened into a massive category 5 storm. Gulf Coast residents watched with increasing alarm as it became obvious that Mississippi was in the crosshairs of this once-in-a-generation weather event.   As President George W. Bush declared a state of emergency and evacuations were ordered for New Orleans and the Mississippi Gulf Coast, emergency crews, equipment, and supplies, were prepositioned for the rescue and recovery efforts that would follow.   Key to those efforts would be the Mississippi National Guard. Already stretched thin due to deployments in Iraq and Afghanistan, Adjutant General Harrold "Hac" Cross knew we would need assistance from other states to meet the moment.   When the storm made landfall near the Louisiana-Mississippi state line early on the morning of August 29, those who were unable or unwilling to evacuate experienced sustained winds of 120 miles per hour and a 27 foot wall of water. Many clung to trees or floating debris, desperate to survive.   By the time Hurricane Katrina left Mississippi, no part of the state was left untouched. All 82 counties were declared disaster areas. On the Gulf Coast, some 90% of the buildings within a half mile of the shoreline were wiped away, leaving 238 people dead, 67 missing, and billions of dollars in damages.   As massive as the storm itself was the rescue and recovery efforts. Relief agencies and philanthropic groups from around the world descended on Mississippi with truckloads of food, water, and other desperately need supplies. Rescue and relief would take weeks, recovery efforts would take years.   Even before the power was fully restored, the Center for Oral History and Cultural Heritage at the University of Southern Mississippi began planning for an oral history project to preserve for future generations, the shared impact of what our people had just experienced. Over the next five years, the Center would collect some 400-plus interviews to be used for museum exhibits, presentations, books, radio programs, and even a stage play.   In this four-episode podcast series, produced by the Center for Oral History and Cultural Heritage, and the Center for the Study of the National Guard at USM, with support from the Mississippi Humanities Council, we will mine that collection for stories of survival and resilience.
