Although calcium hardness, total dissolved solids, salt levels in salt pools, stabilizers, and borates do not necessarily need to be tested as frequently, they should still be checked regularly to maintain and manage proper water chemistry. If you encounter any issues such as algae, staining, etc., requiring you to dose products for treatment, you need to test the water frequently before dosing. 13:30 Frank dislikes using untestable chemicals or additives without a measurable effect or concentration. 17:15 When testing the chlorine levels in a pool, it's important to measure both free and total chlorine levels, especially when there is a swimmer load on the pool. Chloramines are formed when chlorine oxidizes ammonia, nitrogen, or carbon-based contaminants in the water. They are disinfection byproducts (DBPs) that should be eliminated by using additional oxidizers. Eliminate chloramines by achieving breakpoint chlorination through additional oxidizers. OTO chlorine tests do not provide information about the amount of combined chlorine. Chloramines can be irritating and are not as effective at oxidizing as pure chlorine. If you only measure the total chlorine levels in your pool or spa, you may get an inaccurate idea of its oxidizing capabilities. It's recommended to measure both free and combined chlorine levels separately for a more accurate reading. 24:25 To effectively manage your pool's chlorine, you need to determine your CYA or stabilizer level. If your pool has borate levels of 40 to 50 ppm, then maintaining 5% of your CYA level in free chlorine consistently is necessary. However, if you do not use borates, you must maintain 7.5% of your CYA level. Note that this percentage can vary if you also use ozone, UV, AOP, or mineral purification systems. 32:20 pH levels have a significant impact on the effectiveness of chlorine. Lower pH increases its effectiveness, while higher pH decreases its effectiveness and reduces the UV protection of CYA on chlorine. Waterfalls and turbulence from returns hitting the surface increase the rate of your pH rise and increase evaporation. If you have a dramatic pH rise from week to week, consider dosing acid for your pH on a more frequent basis. 39:00 It is crucial to conduct thorough testing and accurate calculations when determining the appropriate dosage of chemicals. 44:55 When testing alkalinity, subtract 1/3 of CYA from the test results to get adjusted alkalinity. Use this adjusted value for dosing. 46:20 Manage your CYA properly by taking steps to lower it, using borates to reduce the need for stabilized chlorine, and avoiding overuse of stabilized chlorine. Do not use stabilized chlorine when water temperatures get below 65 degrees in the off-season. 49:00 Hypochlorites, liquid chlorine, and cal hypo are high pH. However, it is not necessary to dose extra acid when using these products. 50:40 It is not recommended to use dichlor shock in trichlor pools as it can cause excessive CYA levels in the pool.

Frank and Jacque discuss conserving poo heat with solar covers, solar rings, and liquid solar blanket and cold water balance. poolwerx.com ipssa.com 00:00 - introduction 07:50 – solar blankets, liquid blankets, solar rings to reduce heat loss and evaporation. Solar blanket does actually transfer some heat into the water, but we believe the biggest benefit is it reduces heat loss by reducing evaporation. Frank has a problem with solar blankets because he believes that increase the possibility of drowning risk. Small children and animals are more likely to step onto solar covers. When they do they can easily fall between the edge of the pool and the cover. Once under the cover they panic and can't get out. If you have a solar blanket, please have extra barriers to prevent animals and small children from getting to the pool. Pool guys typically despise solar covers. They are a pain to deal with when servicing swimming pools. Some studies show that a solar cover can prevent around 75%-90% of heat loss and evaporation if they are properly fitted for the pool. Solar blankets can be a complete pain in the butt to put on and take off. 14:15 – solar rings are smaller sections of solar material, typically with a rigid border, that can be placed on the surface of the pool. You can use several of these at a time to achieve as much complete coverage as you wish. These can also transfer heat from the sun to the water. Since rings do not completely cover the surface of the pool, they are less beneficial for reducing heat loss and evaporation. 14:50 – liquid solar blanket are chemicals you add to the pool that create a layer on the surface of the pool that reduces evaporation which reduces heat loss. There are several different brands of liquid solar cover available. These are an inexpensive easy way to reduce heat loss and evaporation, but some studies show they are 25%to 40% as effective as an actual solar cover. These are typically less effective in windy or rainy conditions or on pools that have a lot of surface disturbance due to waterfalls or other features. 17:02 – break 17:50- water balance (LS)I is affected by water temperature. The colder the water the is the more aggressive the water is. When maintaining pool water in the winter you may find that running a little higher pH or alkalinity to keep the LSI in a proper range. In areas with low calcium issues, you may want to increase your calcium levels when the water is colder. For about every 10 degrees Fahrenheit drop in water temperature your LSI will drop about .08. So during the winter, if your water temperature drops 50 degrees, you can expect about a .4 drop in your LSI. So with that considered, all other factors remaining the same. If you were keeping your LSI at 0.0, and the water temperature dropped 50 degrees, then your water is going to be aggressive and can damage your pool surfaces and equipment. 24:00 – adjusting pH. Pool pros and pool owners need to understand what chemicals you should primarily use to raise pH. There appears to be some confusion. Sodium bicarbonate (baking soda) should be primarily used to raise alkalinity. It will raise pH a little bit, but it is best used to raise alkalinity. Sodium carbonate (soda ash) is best used to raise pH. It will raise alkalinity a little bit, but it has a much greater effect on pH. Using the proper pool chemical for the proper purpose is extremely important. Using the wrong chemical can easily cost you money, time, and possibly require you to use excessive chemicals to achieve your goals of properly balanced and sanitary water.

This is a malt centric episode at the intersection of brewer curiosity. In a moment I'll be talking with Chris Cates of Little Animals Brewing, Brent Manning of Riverbend Malt House, and Andrew Zinn of Leveller Brewing.A year ago, Cates visited Belgium and came back inspired. After visiting through some of the worlds best breweries, drinking classic and carefully crafted saison, he wanted to make a beer that not only paid homage to those beers but to also impart a sense of place from Eastern Tennessee. After trying a few recipes that didn't yield the results he wanted, Cates reached out to Riverbend Malt House in neighboring North Carolina to help him create a pilsner malt that would mimic those from Belgium. The idea, he said was to a local malt “tailored for diastatic and mixed fermentations, with higher protein and beta-glucans and built in minerality and buffering capacity.” Riverbend achieved this by creating a water profile that was rich in minerals that was used during the malting process. Manning of Riverbend says the results yielded a malt that resists ph drop slightly better than usual, and allows for additional laxtic acid and potential ester precursors. We'll weave the whole story from start to finisih as Cates and Manning join the show with Andrew Zinn of Leveller Brewing, who has also been brewing with the malt. Travis Fritts didn't set out to brew hazy IPA. In fact, the initial plan for Old Nation (https://oldnationbrewing.com) was far more conventional—brew traditional American craft beer styles like stout and pale ale, with some European standards like altbier and weizenbock, make the beers good, slap some cool branding on them, and wait for the sales to come. But it was 2015, and craft beer consumers had other ideas. To survive, Old Nation starting looking at new and evolving styles, while trying to understand (from a technical perspective) how they worked. The project ultimately led to the beer M-43, a hazy IPA that is now a mainstay of Old Nation's production and which now sees distribution to upwards of twenty states. In this episode, Fritts recounts that process of reverse engineering as they set out to understand what makes hazy IPA tick, and later touches on his approach to brewing helles. Along the way, he discusses: why biotransformation isn't all that important to the style how the lipids in oats provide an important building block for haze stability the contribution of London Ale III yeast to mouthfeel dialing in the perfect water chemistry nailing a pH of 4.4 for longer stability and to underscore fruit flavors in hops building just the right “snap” from bitterness giving each hazy beer small amounts of eccentricity through smaller left-field hop additions helles passing the "sauf test" And more. Sometimes success comes quickly, and sometimes it's the result of years and years of working, training, and improving to get to the point where that success comes. In the case of Roaring Table (https://roaringtable.com) out on the northwestern edge of the Chicago metro area, founded by husband and wife team Beth May and Lane Fearing, it's a bit of both. Their recent string of successes—a Craft Beer & Brewing beer of the year, and a World Beer Cup medal—may seem sudden, but Fearing started laying the groundwork back in 2007 when he attended the Siebel Institute. He worked for another Chicago-area brewery for almost a decade before he and May felt ready to tackle the brewery challenge on their own. Today, he approaches their beer with an earnest energy, enthusiasm, and humility that's refreshing to see in someone who has worked a brew deck for so long. In this episode, May and Fearing discuss their approach to brewing and business, including: Building a specific water profile for hazy IPA that optimizes mouthfeel Dialing back non-barley grains for ease of brewing without sacrificing haze Colder fermentation in hazy IPA to reduce esters and improve hop expression Considering the difference between final gravity and perceived sweetness Patient fermentation with longer lag times Using modern hop products like Incognito and Lupomax pellets at various stages of brewing Employing IPA whirlpool hopping techniques with lagers Taking a pragmatic approach to lager brewing without sacrificing quality And more.
