Tonight we are testing the differences between a French Sancerre and a New Zealand Sauvignon Blanc.Sancerre is one of the most famous French white wine regions, and the top region for Sauvignon Blanc. According to the Oxford Companion to Wine, it has quadrupled its output during the past 50 years. It is known for its bright and complex wines, and for pairing with locally made goat cheeses. On the other side is the Wairau Valley, New Zealand. Sauvignon Blanc has made New Zealand famous for wine around the world. New Zealand is known for producing bright and fresh wines. Tonight, we are tasting a: 2023 Wairau River Sauvignon Blanc purchased from Costco for $11.99. The wine is produced in Marlborough, New Zealand. This wine scored an 85 from the Wine Enthusiast. They called it green and a touch underripe; with sulfuric, onion, lime, and passion fruit aromas. Tastes are better with tangy lime zest and a slightly chalky texture. Acids keep it fresh.2022 Domaine des Cotes Blanches Sancerre purchased from Costco for $23.99. Sancerre comes from the Loire Valley, France. I've read that Sancerre is Taylor Swift's favorite wine. The vineyard practices organic farming. They don't use pumps in the winery and rely on gravity systems exclusively. The name “Cotes Blanches” pays homage to the stony white soils gracing the slopes of Sancerre. It has a color of Pale yellow with notes of light flint, plum, peach, and citrus fruit. Round with a nice mineral finish. Pairs with light appetizers, grilled fish, poultry, and goat cheese.Next week, we will have a blind tasting, so the wines will be unknown. Lawrence Mayhew, the EarthWorks Chemist, is a perennial favorite on the podcast. In this episode, we talk about the value of using strong acids to remove soil bicarbonates from the soil surface of a golf green or sports field. Bicarbonates are one of the “first limiting factors” when it comes to growing quality turf. They will restrict the flow of air and water by creating a seal on the soil surface, affecting the proliferation of soil microorganisms. When microbes are restricted in a soil it can become hydrophobic, leading to localized dry spots. A domino effect will then ensue that impacts the plant's ability to take up nutrients and water. This situation is particularly problematic in western soils, where bicarbonates dominate the irrigation waters. One solution for removing unwanted bicarbonates is the use of strong acids and hydrogen peroxide. Lawrence explains the chemistry of these products in the soil, and discusses some of the limiting factors that their continued use may have on soil biology. As soil biologists we are concerned that these programs can cause a weakness in the biological profile over time, so we discuss solutions to overcome the potential drawbacks. The conversation also turns to the subject of weeds and the story they can tell us about soil chemistry and biology. By targeting their primary mode of transmission, air sampling could enable earlier detection and persistent monitoring of such pathogens. As part of our work on sampling strategies for early detection of stealth pathogens, we performed a comprehensive review of air sampling, which has now been published as a preprint on SSRN. In our review, we examine the sources and composition of viral bioaerosols, evaluate the benefits and drawbacks of sampling technologies, and lay out strategies for effective implementation of air sampling programs. We find that: Both PCR and metagenomic sequencing have detected a wide range of human viruses in indoor air, including respiratory RNA viruses and skin-borne DNA viruses. Sampling viruses in air remains challenging, largely due to the difficulties in efficiently collecting ultrafine viral aerosols. However, recent advancements in sampling technologies, such as condensation-based methods and wetted-wall cyclone sampling, have shown promising results in effectively capturing these viral particles. HVAC systems and high-traffic locations like airports and hospitals are particularly promising sampling sites for aggregating airborne material, including viral pathogens, from many individuals. Passive sampling approaches, such as sampling vacuum dust collected in buildings, also show potential but remain underexplored. While we believe more research on air sampling would be valuable, we're not currently planning on prioritizing it at the NAO, as we want to focus our limited resources on wastewater and swab sampling. As we travel the country lecturing about Biological Soil Management one of the most common questions asked at our meetings is on the topic of humic acids. When classes are asked “what are humic acids,” one of the most common carbon inputs in turf fertility products today, few can give much detail as to why they are so common and what they do for our soil programs. In an early EarthWorks Podcast we interviewed our chemist, Mr. Lawrence Mayhew, who is a world renowned expert about what he refers to as humic substances. Humic acids were the original “snake oil” when we started EarthWorks back in the late 1980's but today there are few fertilizer companies that are not incorporating some form of humate in their products. In this podcast Lawrence helps explain what a humic substance really is, and talks about the many materials that are not humic substances at all but are being sold as humic acids. A good example is a manufacturer that describes their humic acids as being derived from humus! You would need a mountain of humus to get a few drops of humic acid. They are not food sources for microbes, but instead a complete finished carbon material. Very interesting application - Buffers - Goes tot he phosphate well again. Amazing math describing how powerful buffers can be - Big picture the closer the pKa is to the starting pH the better buffer, i.e. it can absorb lots of OH or H without appreciably changing pH - HCO3 CO2 system - H2CO3 to H + HCO3 has a PKA of 2.72 but then lots of Math and the bicarb buffer system has a pKa of 6.1 - But the real power of the bicarb buffer is that it is not a sealed system. The ability to ventilate and keep CO2 constant increases the buffering efficiency by 11 fold and the ability to lower the CO2 below normal increases 18 fold. - Isohydric principle - There is only one hydrogen ion concentration and since that is a critical part of the buffer equation, all buffer eq are linked and you can understand all of them by understanding one of them. So we just can look at bicarb and understand the totality of acid base. - Bicarb is the most important buffer because - High concentration in plasma - Ability for CO2 to ventilate - Other buffers include - Bone - Bone is more than just inorganic reaction - Live bone releases more calcium in response to an acid load than dead bone - More effect with metabolic acidosis than respiratory acidosis - Hgb - Phosphate - Protein
