In this episode Justine interviews the legend that is Wolfgang Puck as he shares about his 29 years of catering the Oscars and so much more. A name that is synonymous with the best of restaurant hospitality and the ultimate in all aspects of the culinary arts. The famed 2-Michelin star chef has built a brand encompassing three companies. Puck is also more widely known of late as the official chef catering for the Governors Ball, the Academy Award's post-Oscars celebration, which he has been doing for 29 years.Puck began cooking as a child, at his mother's side. She was a chef in the Austrian town where he was born, and with her encouragement, Wolfgang started his formal training at fourteen years of age. As a young chef he worked in some of France's greatest restaurants, including Maxim's in Paris, the Hotel de Paris in Monaco, and the Michelin 3-starred L'Oustau de Baumanière in Provence.In 1975, Wolfgang went to Los Angeles and very quickly garnered the attention of the Hollywood elite as chef of Ma Maison in West Hollywood. His dynamic personality and culinary brilliance that bridged tradition and invention made Ma Maison a magnet for the rich and famous, with Wolfgang as the star attraction.From Ma Maison, Wolfgang went on to create his first flagship restaurant, Spago, originally located in West Hollywood on the Sunset Strip. From its opening day in 1982, Spago was an instant success and culinary phenomenon. His early signature dishes, such as haute cuisine pizzas topped with smoked salmon and caviar, and Sonoma baby lamb with braised greens and rosemary, put him and Spago on the gourmet map, not just in Los Angeles but throughout the world. Joining me on today's episode are Coworth Park's executive chef, Adam Smith, and Director of Food and Beverage, Jonathan Ellson. Adam grew up in Birmingham, starting his culinary career as a pot wash at his local pub aged just 13. After joining The Ritz in 2004, he rose up the ranks and won numerous awards including the Roux Scholarship in 2012. Three years at The Devonshire Arms followed before Adam joined The Dorchester Collection's only county house hotel, Coworth Park in 2016. The following year he was named Master of Culinary Arts – the UK's highest culinary and hospitality honour.Jonathan started his wine career at Majestic, where he undertook his WSET Diploma before joining Virginia Water-based independent wine retailer and restaurant, The Wine Circle. We met at the Dorchester Collection's country outpost, Coworth Park in Ascot. Martin Hulbert Design has been instrumental in its rebirth from a dilapidated private house to a sumptuous hotel and polo venue. Their most recent tweaking has been to the Adam Smith restaurant, Woven, which is pure MHD - a cosy and imaginative interior with original artwork and clever lighting. Martin and Jay share stories of creating the interior from finding a paper-maché sculptor for serving tables, to the carrot and turnip-strewn plaster-cast artwork (which involved a trip to the local vegetable market). Il s’agit de consommateurs qui mangent des aliments en tenant compte de leur empreinte carbone et de leur niveau d'émission. Ainsi, ils s'en tiennent aux fruits et légumes de saison produits dans leur région, évitent la viande provenant d'élevages industriels (ils ne sont donc pas végétariens mais privilégient plutôt l’agneau et le poulet plutôt que le boeuf) et recherchent des ingrédients locaux parce qu'ils ont une empreinte carbone plus faible.Pour faire leurs choix, les climatariens peuvent même s’appuyer sur une appli spécialement conçue pour eux : Kuri, qui propose des recettes climatariennes. Aux Etats-Unis, des chaînes de restaurants fast-casual comme Just Salad ou Chipotle, marquent sur leurs menus les articles qui s'inscrivent dans ce régime (voir par exemple ici et ici).Il existe également des marques qui se disent respectueuses du climat, comme Moonshot, qui fabrique une gamme de crackers à partir d'ingrédients cultivés de manière régénérative et qui met en avant son bilan carbone neutre. De son côté, Bright Future Foods (filiale de Post Holdings) s'est récemment associée à la société EverGrain pour créer Airly Oat Cloud, qu'ils décrivent comme le “tout premier snack climatiquement positif”. L’article précise également qu’Unilever, Mondelez International et Oatly envisagent tous un étiquetage carbone.Les Français couvent leurs œufsLSA, Les œufs séduisent toujours les Français, 20/05/2021Les oeufs font partie des grands gagnants de la pandémie de Covid-19.En effet, pendant le 1er confinement de mars 2020 les ventes d’oeuf ont explosé (il s’est vendu 611 millions d’œufs de mars à avril 2020, soit 185 millions de plus qu’à la même période en 2019). Au global, sur toute l’année 2020, la France a produit 15,7 milliards d’œufs (en hausse de 4,9 % par rapport à 2019).Et, comme l’explique LSA, 90 % des consommateurs qui ont augmenté ou maintenu leur niveau d’achat d’œuf pendant la crise, envisagent de le conserver. Les ventes d’oeufs sont d’ailleurs toujours en progression en ce début d’année 2021 avec une hausse de 4% sur les mois de janvier et février par rapport à janvier-février 2019.Autre fait notable observé sur ces deux premiers mois de 2021 : les ventes d’œufs standards sont en baisse de 13,2% par rapport à 2020 alors que les œufs issus d’élevage au sol sont en progression de 30,2 % en volume, ceux de plein air de 15,8 %, les bio de 3,8 et les Label Rouge de 2,1 %.L’article précise également que la filière a atteint plus rapidement que prévu son objectif de 1 poule sur 2 en mode d’élevage alternatif. How will the luxury hospitality sector fare post-crisis? Helen Smith, Chief Customer Experience Officer of Dorchester Collection, joins David and Catherine to discuss this in the latest episode of The Future of Travel. While Helen acknowledges that the sector will undoubtedly take a hit through this crisis, she explains that there will always be consumers who crave and seek out a luxury experience. These could be travellers who desire the traditions and the emotional engagement luxury offers or—perhaps most—the relationships it engenders between guests and staff. In the case of some loyal guests, she added, these are relationships that have been built up over many years. Helen stressed that the Dorchester Collection, like any brand, must remain flexible going forwards, but without losing sight of the core of the brand and its culture, because this is what guests love and come back for.
