This is a variation on the classic Caesar Salad, with grilled radicchio replacing the traditional romaine. By grilling radicchio, a red-leafed chicory, you lose some of its slightly bitter taste. You can also pansear it, if you like. The radicchio is best grilled shortly before serving. The croutons and cheese, though, can both be prepared ahead of time. And even if you are not all that keen on anchovies, try the croutons once. You won't believe the amount of flavor they add to a salad.

In our cookbook, which you can buy here, I have a recipe for 'Wedding Guest Croutons' - theory being that the perfect crouton should be like the perfect wedding guest: Immaculately behaved and never overshadowing the real stars of the show ( - the bride, the mother-of-the-bride, the flower girls and the SALAD or the PASTA ON WHICH IT SITS). Phew!Being low-key obsessed with croutons, I had to share this recipe for Anchovy Croutons which I'm making ALL THE TIME.ANCHOVY CROUTONS1/2 loaf of sliced, good-quality sourdough bread, stale is ok1/3 cup olive oil100g jar or tin of anchovies, including the oilMETHODCombine the oil with the anchovies in a tiny saucepan. Meanwhile warm the oven to 140C and prepare a couple of baking sheets.When the anchovies start to "melt", encourage their disintegration with a wooden spoon until they form a muddy riverbed silt. Lightly brush this mixture over one side of each piece of sourdough bread until it's all used up.Cut the bread into cubes. (I like mine slightly bigger than 1cm but don't overthink it. Just cut.)Mop up any leftover anchovy mixture with cubes of bread then spread them over the 2 baking sheets, and bake for 10 - 15 mins.Turn them well, bringing to corner croutons into the middle of the pan and rotating the middle-pan ones out to the edges.Cook for another 15 until the croutons are smelling toasty, changing colour to golden, and are crunchy when you try them.Allow them to cool before storing in an airtight jar.Serve on salad, with burrata, or atop a red spaghetti. In an empty large salad size mixing bowl, add the below. Let the mixture soak in the olive Oil, while you cut the bread. Cut bread in strips one way, then across to make 1/2 inch cubes. The below recipe is designed for 1.5-2# of bread. All breads soak up the seasoned olive oil mixture differently, but you'll need a full large loaf. Or if you only have half of a loaf, then you can make the seasoned olive oil mixture and save 1/2 of it to use later. It will last for months on the counter, and makes a great base for a stir fry or salad dressing. Olive Oil ¼ cup Dried Basil 3 Tablespoons, or 6 leaves of fresh basil finely chopped Garlic Powder 1 Tablespoons Ground Rosemary 1 tsp, may sub thyme or herbs of choice Salt 2 tsp Pepper 1 tsp Cut up two pounds of bread cubes. Add the bread cubes, and toss to combine. There should be the seasoned oil mixture coating on all the bread cubes but not too much oil. You do not want the bread crumbs to get soaked in oil. Too much oil will prevent a nice crunchy crouton, and too little is a flavorless crouton. I would toss by hand to get a real feel for the amount of bread cubes to add. There should be no oil left over in the bottom of the bowl, and a slight residue on your hands. Spread the oiled croutons onto a cookie sheet into an evenly distributed one layer. Do not double croutons on top of each other or they won't bake properly. Bake at 350 degrees for ten minutes, then flip the croutons with a spatula, bake another ten minutes.
