What happens when people with chronic, unstable diabetes eat food grown in local, regenerative farms? Erin Martin talks to the Accidental Gods podcast about the dramatic and spectacular improvements in health her group FreshRxOK saw in Oklahoma when they instigated a 'Food as Medicine' programme, offering real food with good nutrient density to diabetic patients in some of the poorest communities.An Oklahoman on track to be a lawyer, Erin's first job in a retirement community inspired her to pursue a degree in gerontology instead. During her Masters program at USC, Erin ran a team of advocates serving over 700 low income older adults in the Southern California area. She was troubled by how little support people get as they age. So Erin founded Conscious Aging Solutions, a company dedicated to helping older adults navigate health and social systems so they can age successfully. As Erin's work focused on strategies for longevity, she found that food—access to quality food—had an enormous impact on our life spans.As her interest in food grew, she became certified in Regenerative Soil Advocacy. Erin moved back home to Tulsa during the pandemic to find that the supply chain disruptions had only intensified what was already a food system problem in the city. Lack of access to nutritious foods was contributing to poor health outcomes and high mortality rates for Tulsans, especially those with chronic conditions.In 2021, Erin co-founded a prescription produce program called FreshRx Oklahoma. The program's success has launched her onto the national stage. Certified in Regenerative Soil Advocacy, she ardently advocates for soil health's impact on human well-being. Jimmy Emmons leads Trust In Food's Partnerships for Climate-Smart Commodities Connected Ag Project, America's Conservation Ag Movement and Trust In Beef, coalition-driven conservation programs developed to accelerate the adoption of conservation agriculture at scale. Jimmy and his wife, Ginger, own and operate Emmons Farm in Leedey, Okla., where they farm 2,000 acres and have 5,000 acres of rangeland where they run 300 head of cows and calves in an integrated row-crop and livestock operation that optimizes water resources, reduces erosion and improves organic material in the soils. He is a public speaker, educator, mentor and advocate for conservation management practices to improve producers' resiliency to weather, operational efficiency and profitability. Emmons most recently served as coordinator for mentoring for the Oklahoma Conservation Commission. Prior to that, he was regional coordinator for USDA's Farm Production and Conservation, where he supported operational and business functions across the Farm Service Agency (FSA), Natural Resources Conservation Service (NRCS) and Risk Management Agency (RMA). From there we work to not disturb the soil, reducing and eliminating both mechanical and chemical disruption. Next, we focus on armoring the soil by keeping it covered at all times. As well as keeping a living root in the soil to feed that soil biology. Then we add diversity, including diversity of plants, insects, microbes, wildlife and finally adding livestock to the land. From understanding water and mineral cycling, to how energy flows Monte says often, the practices may vary from location to location but the principles remain the same. Mike committed his life to following the Lord Jesus Christ in 1976. Since then, he has served the local church in a variety of capacities, but his heart has always been in personal evangelism and teaching the Scriptures. His goal has been to emulate Ezra, the priest and scribe of Israel, who set his heart to study the Law (Word) of God, to practice it, and to teach others also (Ezra 7:10). Mike resides with his wife of nearly forty-nine years, Brenda, in Lititz, PA.
