In this episode of Take-Away with Sam Oches, Sam talks with Brandon Landry, the founder of both Walk-Ons Sports Bistreaux and Smalls Sliders, two restaurant franchises that have each grown to dozens of locations across the country. Walk-Ons, which is a full-service sports bar, was Brandon's first concept, launched in 2003 as part of a business plan that he hatched while a business student and walk-on basketball player at LSU. The quick-service Smalls came later, in 2018, but already expects to have over 100 locations open by next year, with fast growth possible due to the concept's modular, pre-fabricated build-out that leverages shipping containers. Brandon joined the podcast to talk about the similarities in growing both Walk-Ons and Smalls, the key ingredients to scaling restaurants no matter the concept, and about how Smalls is adapting to meet franchisees' evolving needs. In this conversation, you'll find out why:If you're opening new units quickly, you must also learn from your mistakes quickly Customers shouldn't have to work hard to understand your menuThe coffee players are just the tip of the drive-thru icebergGreat concepts start with great peopleHave feedback or ideas for Take-Away? What if becoming more human is the real challenge of the technological age?In this episode of Alternate Futures, Kestral Gaian and I explore the intersection of science fiction, software, ethics and imagination. Drawing on decades in the technology industry, Kestral discusses the human side of software development, the ethics of programming, the culture of Silicon Valley, the power of marketing to shape society, and why today's AI tools may be far less intelligent—and far more influential—than many people believe. Together we explore creativity in an increasingly automated world, the value of making imperfect art, and why science fiction remains one of humanity's best ways of exploring uncertain futures. We delve into Kestral's new science fiction series, The Reality Quake Saga, beginning with The Boy From Elsewhere, leading to discussions about alternate realities, hidden histories, worldbuilding, and the enduring influence of classics TV science fiction such as Sliders and Crime Traveller. We also discuss how science fiction helps us grapple with the unknown; gender, reproduction, long-term space settlement; and what the future of human society might look like.As always, there are the Big QuestionsBooks of his we discuss: The Boy from Elsewhere (Reality Quake Saga)https://kestr.al/alternatefutures.substack.comalternatefutures.co.uk
The Big Bang Theory has this new spin-off that asks the question: What if The Big Bang Theory, but Sliders? That is to say that new show Stuart Fails To Save The Universe is bizarre. It's a pretty bold swing. So, as Dan and Simon review the show, their attention turns to other weird TV spin-offs over the years.

We're back Monday April 20. Spice Girl Melanie C and Ronan Keating joined us on St. Patrick's Day and immediately got into a debate about whether they're called "slides" or "sliders" (UK says sliders, we called them idiots, Americans call them flip-flops, and Aussies call them thongs which confused everyone). Ronan revealed his breakfast radio survival trick was plunging his face in a bowl of ice water every morning at 5am because seven years of early mornings made him look 60, Melanie's touring Australia for the first time as a solo artist in November hitting the Enmore Theatre, and Ricki had a full fangirl meltdown admitting she learned every Spice Girls dance move from the Live in Istanbul concert.See omnystudio.com/listener for privacy information.
This week we dive into another work by Marcus Lowth, The Electric People. He documents the stories of "SLIders", or Street Light Interference experiencers. From simple accounts of lights flickering when passed by, to more profound electrical abnormalities, he ties them all in to possible UFO/UAP connections, and the broader paranormal field as a whole. To wrap things up, they break down food labels (Clean Label vs. Organic) and debate which one matters more and which they'd prefer to eat. Kelly and Lizz are continuing getting ready for football season and to route for the Detroit Lions. Kelly is even wearing her new gear to get ready for the big game. Turns out Carpool Country is also Lions Country. But are they more excited for the game or the food? There's a lot of controversial opinions the ladies need to discuss today. First, Gen Z is now saying leggings are over but they're gonna have to take them from Lizz's cold, dead body. Why do we have to yuck someone's yum? Then, it's time to once again dive into the buying used vs. new convo. But that's not the only car controversy they need to discuss as Kelly has some hot takes on the Ford Expedition that everyone needs to hear. Base Model Luxury is back and Kelly will explain why cleaning out your fridge is the ultimate flex. This leads into a snack hack that Kelly discovered recently and Lizz is ready to make it the rule in her home... that is when she can get back in it. How life will change when this remodel is over! The biggest piece of Industry News this week is all about the groundbreaking interview just posted on the Car Mom Facebook page. Plus, is Jeep getting their stuff together? We're rooting for them! Finally, it's a comfort staple from the early days of newlywed bliss for Kelly that is the perfect fall meal.
