Today, they dive into the blade vs grinder debate and share which one is best.  They talk through the pros and cons of burr grinders, explaining the difference between conical and flat, and covering the subject of grind speed. They also look at dosing vs non-dosing grinders, step vs stepless, and Puqpress vs tamping of espresso shots by a barista.  They round discussion out by talking all things hand grinders. They explain why the right grinder plays such an important role in the quality of coffee you can make. There are several fantastic tips in this episode that you are not likely to have heard before. They also share details on the best grinder for home users. Kenneth and Matt look at how the heat generated by the grinding process impacts the coffee as well as the subjects of clumping, static buildup, and grind speed.  KEY TAKEAWAYS  A good grinder should be the first thing you buy. Their discussion provides “behind the scenes” insight into what it takes to source the best beans from sustainable sources. Then roast them in a way that keeps as much goodness as possible in the product and do so consistently, so the customer always enjoys the taste they are expecting.They also share low-cost ways to get started with making good quality coffee at home. In 2011, Matt was head trainer at the Arabian Nights Dinner Theatre where he restructured the equestrian production's dressage, liberty, western, and reining acts. Matt has continued to hone his skills as a trainer, clinician, and performer by learning and adapting techniques gleaned from training experiences as well as his work with industry notables in the dressage, western, and trick training disciplines.Matt has successfully trained horses through Grand Prix Dressage that have gone on to compete nationally and internationally as well as multiple horses finished in haute école including Capriole, Courbette, and Levade. Veteran real estate agent Matt McLaughlin reached more than $1 billion in career sales in September after some 22 years as an agent for F.C. Tucker. It's a milestone the firm's CEO, Jim Litten, called "one of the most challenging to attain in our industry." And yet McLaughlin said it was not particularly a goal and he wasn't fully aware he was approaching it until the folks in his office mentioned it earlier this year. Host Mason King sat down with McLaughlin to learn how he closed so many sales (he attributes some early success to the gray hair he had as a young man), what makes his approach different (he still dresses up for clients) and what he thinks about central Indiana's red-hot real estate market (it's not a bubble). A hospitality operator is pushing to get extra security across Wellington city by summer, but the council isn't so sure.Matt McLaughlin is the owner-operator of Hoff Hospitality Group, and knows first-hand how chaotic Courtenay Place and Cuba St can be.Violent crime in Wellington city has steadily risen over the past five years with police data showing sexual assaults increased by almost 50 per cent. In the same time period, the number of acts intended to cause injury rose by 35 per cent, and the number of patched and prospective gang members has almost doubled.Throughout 2020 multiple violent incidents made headlines, and city councillors said they no longer felt safe on the central city streets.McLaughlin says throughout winter and Wellington's most recent lockdown, the disorder dissipated – but now he's noticed it creeping back to where it was in the summer of 2020 and he wants to bring more security onto the streets.He's proposing a solution - a team of security liaison officers, akin to roaming bouncers, who could intervene in escalating situations on the streets to defuse them before police are necessary."We've asked the council to look at it straight away – I'd like to think it could help out to have a roaming patrol of not security guards, because they'd have no real power, but people who could monitor situations, liaise between bar staff, customers and police and diffuse situations before it becomes an issue."McLaughlin believes having a set of people who were not fully uniformed could help engage those causing trouble."We're working really hard to make the streets safer because the problem isn't on the licensed premises – it's on the streets."Ideally, he wants these security officers in place by December 1 as the party season begins to heat up."We've pushed it through and we've asked council and said we need this in place by level 1 – whatever that may look like."McLaughlin's call for extra security comes just days after dozens of police flocked to Manners St in the city centre following reports of disorder.A spokesperson told the Herald the incident on Friday arose when a group of around 20 people tried to stop officers arresting two others."Their behaviour was unacceptable and the deployment of additional police resource quickly mitigated any risk to police and the community."But Wellington City councillor Iona Pannett isn't so sure extra guards and police are the solution - at least not in the long term."We don't create safety by just having more police or more cameras around - we create safety by encouraging a respectful relationship between people and making it clear discrimination is not acceptable."She says there needs to be "a very big culture change" and some of the things that could contribute to that is better funding for consent programmes like Don't Guess the Yes, and designing public spaces to be inclusive of everyone."For example, [Courtenay Place] not being a space that's just for drinking heavily - it needs to be a place that's active and inclusive all day and night."However, Pannett says in the short-term extra security could be helpful if it's done right."Some of those practical initiatives may help in the short term, but we really need to address our booze culture – and really that's the city and country's failure."At the end of the day, she says there are "no easy answers"."It's difficult and we have a booze culture and an intolerant attitude towards certain groups of people – these are deeply ingrained issues that need long term solutions."Detective Senior Sergeant Warwick McKee told the Herald police want everyone to feel safe across the city, no matter what time of day.To try to achieve this, police will deploy extra officers to patrol high-risk areas of the CBD."We also continue to prioritise the monitoring of the city's Alcohol-free Zones and educate people about where they can and can't drink in the city."Police would not comment directly on McLaughlin's pro...

In today´s episode, It is our pleasure to welcome Sam Rutherford from the UK and Belgium. For those who may not know about him, his flying career started at age 13 and pushed him to be commissioned officer at the Royal Military Academy Sandhurst in 1991. Born a pilot, Sam qualified as an Army helicopter pilot and left the British Army as a Flight Commander after eight years of service. Later, he became an FAA/EASA commercial helicopter and airplane pilot. He logged more than 3500+ hours Total time, delivering aircrafts worldwide since 2008 as a ferry pilot and organizing Air Trophies and Air Rallies. But Sam is more than a pilot. At ease in all societies and cultures, he is proven ability to work in international environments using more than five languages. Managing Director of Prepare2go, he led multiple trips with groups of light aircrafts (Cape Town and return five times, Trans-Atlantic 15 times, Libya, Algeria, Turkey, North Pole, Niger, Russia etc. etc.). More recently, he created and ran the first ever beach STOL competition in Belgium: the “Zoute Air Trophy” as well as the first “Greenland Air Trophy” where two teams, Europe and North-America, meet in south Greenland for a STOL competition. He also created and ran the first ever event “Vintage Air Rally”, 22 teams from 17 countries – traversing Africa with vintage biplanes from Crete to Cape Town. A certified Rescue Diver, Alpine Ski Instructor, Royal Yachting Association Skipper and also Chairman of the Royal Geographical Society “Vehicle Dependent Expeditions” Panel; Sam Rutherford is for sure different! McLaughlin hopes to become an army medical officer after finishing medical school. Originally a commercial editor at a boutique post production house she felt the need to get out of the edit bay and have a more varied working environment. I’ve known Tiffany for 3 years originally through Acres and it’s creatives. Her wit and sharp commentary have always been a joy to witness. Now that she lives abroad it has been great getting to hear her stories and compare/contrast with the experience I had living in Brazil for two years. Our similar experiences were the reason why I wanted to sit down for an episode as I know many freelancers who have contemplated working and living abroad.

Matt McLaughlin is the co-owner of the production company Acres in New York City. He serves as both executive producer and media strategist working with brands, political campaigns and organizations. Their work on the Bill de Blasio mayoral campaign in NYC is notable as it helped transform his poll numbers and gave Acres large scale publicity. Now a young and successful company, they support a small roster of directors out of an office space in TriBeCa. I first met Matt when working with Acres’ director Shal Ngo. Matt’s a warm and welcoming guy with a sharp wit. Always eager to get into deeper conversation about complex issues, it has become clear to me that these interests act as a guide for where he sees Acres going as a company. Always interesting speaking with people who are more on the commerce side of this ongoing discussion. Matt is unique in that he straddles the line, truly making art out of the commerce. Speaking with him I hear the same passion akin to a director or cinematographer, except our conversations are about brand identity, financial distribution models and the importance of relationships.
