In “A Tale of Two Laredos,” Gravy producer Evan Stern visits Laredo, Texas, which shares history, culture, and memory with its sister city across the border, Nuevo Laredo. For decades, Mexican border towns were renowned for refined, white tablecloth restaurants where jacketed waiters served a café society that transcended international boundaries. Among the most celebrated was Nuevo Laredo's Cadillac Bar, which opened in 1926 and grew famous for delicacies such as frog legs and Ramos Gin Fizzes until it was forced to close in 2010. Chosen for its location on the river we now call the Rio Grande, Don Tomas Sanchez established Laredo as a ferry crossing in 1755. After the Mexican-American war of the mid-19th century, the land was ceded to the U.S. Some long-time residents moved across the river into Mexican territory and founded Nuevo Laredo, while others remained in what became Texas. Laredo has evolved into a bustling and fast growing center of trade that's now the largest inland port in the United States. Yet the border has hardened in ways that have vastly altered these neighboring cities' social dynamics. On the American side, 9/11 spurred a wave of counterterrorism and immigration policies that have slowed the process of entry. In Mexico, the 2003 arrest of cartel leader Osiel Cardenas Guillen spurred a protracted turf war amongst rival factions for control of Nuevo Laredo's prized point of entry. March of 2022 saw gunmen fire shots at the American consulate, whose workers are forced to adhere to curfews and movement restrictions. The US State Department advises against travel there altogether. For Laredoans, movement across the border into Nuevo Laredo—once a part of daily life—has all but ceased. In Laredo, Stern searches for traces of the Cadillac Bar's influence on the American side. He hears memories from native residents including Elsa Rodriguez, who shares firsthand how the border's hardening has altered the region's cultural fabric. He also visits with Margarita Araiza, chair of the Webb County Heritage Foundation, who discusses how Laredo and Nuevo Laredo were founded as one city in the 1700s and remain inextricably linked. Newspaper veteran and longtime journalism professor Wanda Garner Cash tells of her grandfather, Mayo Bessan, who, sensing business opportunity, fled Prohibition Era-New Orleans to open the Cadillac Bar with gambling winnings. Stern also gets a taste of Laredo's current dining scene through a visit to the Border Foundry, whose owner Pete Mims once hosted a dinner that featured a tasting menu entirely comprised of recipes from the Cadillac. Also on hand to mix an award-winning cocktail is Cesar “Cheese” Martinez, manager of the new Bar Nido, who was named Best Bartender by readers of the Laredo Morning Times.
In September 2022, Adrián Michalčík earned the title of Diageo World Class Global Bartender of the Year. Colloquially, this achievement is known as the Best Bartender in the World. That's a bold and weighty mantle but as you'll learn during this conversation, Adrián is humble and focused on his team and guests. Adrián is the director of mixology at the award-winning Pier 42 inside the Amerikalinjen hotel in Oslo, Norway. The bar has been recognized by the World's 50 Best and has won Best Bar of Norway twice. In addition to taking home the title of 2022 Diageo World Class Global Bartender of the Year, Adrián has won several bartending competitions throughout the years. In this episode, I interview Karuna long. Long is the owner of Oliver's Twist, a hip cocktail bar located in Seattle's Phinney Ridge neighborhood. He took over in 2017 after working there or 4 years serving the neighborhood signature cocktails and earned the title of "Seattle's Best Bartender" in 2018. We talked about his humble beginnings coming from Long Beach to moving to Seattle and his love for music. What makes Oliver's Twist extra special is that he and his family decided to add khmer food to their menu and and instantly became a big hit in the neighborhood. The idea came from their family pop ups and it help them get through the pandemic. Also the support from the community has been tremendous as they help reach their gofundme goal to keep Oliver's Twist open during the peak of the pandemic. Karuna hopes to inspire others to keep khmer cuisine alive and push the culture forward, while supporting other small businesses. Today's #SurpriseGuest is David Rios who shares his #HospitalitySecrets with us. With a long history in #HospitalityIndustry , David shares a lot of secrets with us, so this episode is a bit longer that usual (1h 41min). With a long background as a football player, David started working in the Hospitality Industry as a bar owner. Soon he realizes that there are a lot of things to learn in this industry. In his first days behind the bar, he was learning how to mix drinks from his guests. They were telling him what to pour. Slowly he felt in love with this job and he started learning the craft of mixing drinks. After a while, David started participating in Cocktail Competitions. His motivation was to learn more from his competitors but to his surprise, he managed to win a few competitions. His participation in Cocktail Competitions culminated with winning the title of Best Bartender in the World in 2013 at the World Class competition. The word that stands out from my chat with Anthony Power of Pilgrim in Liverpool is fun. Anthony has been involved with a lot of projects and businesses and life adventures and he describes them all as fun. And I believe him. He exudes a palpable appreciation of life and the many opportunities he has been offered and has seized in both hands. He has worked in Canada, New Zealand, Mexico, London and now Liverpool. He was one of the first 30 Mo Bros who launched Movember back in 2003. He has also authored a cookbook and was a founding member of Root+Bone magazine. He is back in his home town of Melbourne for one of those opportunities; a chance to work in with chef Paolo Arlotta from Herbivorous Nights, Orlando Marzo, the 2018 World’s Best Bartender and Liinaa Berry, sommelier. This gun team are, over two weekends at the end of March, curating a pop-up seven-course tasting menu at Young Bloods in Fitzroy, inspired by the ancient pilgrimage through France and Spain called the Camino de Santiago.

The gimlet (pronounced with a hard ‘g’) is a cocktail typically made of gin, lime juice, and simple syrup. A 1928 description of the drink was: “gin, a spot of lime, and soda”. While originally an English cocktail, as esquire.com points out, the gimlet today has closer connotations to the hard boiled detectives and gangsters of Raymond Chandler novels. In a sense, Chandler’s character, a hard-boiled detective named Marlowe, did for the gimlet what James Bond did for the martini, according to The World’s Best Bartender’s Guide. Gimlet Recipe: 2 OUNCES GIN ¾ OUNCE LIME JUICE 3/4 OUNCE SIMPLE SYRUP GARNISH: LIME WHEEL Add all ingredients to a cocktail shaker. Add ice and shake until chilled. Strain into a chilled coupe or cocktail glass, or over ice into a rocks glass, if you prefer. Garnish with a lime wheel. Leave us some feedback, and share with your hard-drinking or sailing buddies.
