Today we're going to look at typicity. Typicity can be seen as what is ‘typical' for a wine's origins - geography, terroir, varietal type, even viticulture and winemaking. But what does it mean when applied to champagne? I cannot think of anyone more qualified to talk about this concept of typicity than my guest today, Marcell Kustos PhD, who has built an impressive career as a fine wine and hospitality consultant, working with some of Australia's best restaurants including the multi award-winning Restaurant Botanic. After obtaining a qualification in food engineering and winemaking operations, Marcell started his career as a food product developer before turning his hand to wine. Working as a sommelier while undertaking a Master's degree in gastronomy, he went on to complete a PhD in food, wine and emotional pairing at the University of Adelaide in collaboration with Wine Australia and UC Davis. He is the recipient of the ASVO Advanced Wine Assessment Course Scholarship, Wine Communicators Australia Wine Industry Mentor Program, Vinitaly International Academy Italian Wine Ambassador Scholarship, Sommeliers Australia Education Scholarship and Wine Australia Research Scholarship. He has also been a contributing author in several academic and industry journals and continues to evolve as a wine judge. It was my privilege to interview him for this podcast.

This episode features Hailey Culmone, a Certified Sommelier in Atlanta, GA who works in wine distribution and hosts private tasting events. She grew up working in restaurants, but it wasn't until a 6-month trip abroad between undergraduate and graduate school working on a coffee farm led her to fall deeper in love with wine. We talk about how she started to notice the nuances of both coffee and wine, the similarities, and the importance of place. Upon her return to Atlanta, she worked at East Pole Coffee Co. and simultaneously returned to Cooks & Soldiers to continue her wine education. Erin Bose was such a wonderful guest!!! I loved hearing about her story as she brought our conversation to such a point of intimacy when she shared her battle with anxiety. It was not surprising to me that she originally didn’t think that the MLM business model would take her to where she is today, and it was refreshing to hear about her corporate structure analogy. I felt such a kinship with Erin when she talked about social media and having the confidence to put yourself out there—and how she supports her team with those everyday challenges with hesitancy. The World Bank reported that China is set to produce twice as much waste as the US by 2030, and we ask ourselves: where will that all end up? Today, I'm joined with Jonathan Cruysberghs, Co-Founder of Feibao to discuss waste recycling in China and what we can do to help out. Feibao is a passion project that he co-founded in Shanghai in 2016 with Clement Saint Ellier. It links the waste we want to recycle with someone in the city who picks it up and will dispose or reuse it. It offers bins and containers for waste storage to offices, schools and compounds. Feibao has gained traction in Shanghai as it serves a dual purpose, while it is environmentally friendly, it also connects local collectors to a new income stream.
