Cathy Corison is a legend, pioneer, and true trailblazer in the California wine industry. In the 1970s, when most women were limited to lab work, Cathy set her sights on winemaking. She earned her place at Freemark Abbey and Yverdon, eventually becoming head winemaker at Chappellet in 1980. While the wine world leaned toward big, bold, hedonistic Napa Cabernets, Cathy stayed true to her vision—crafting restrained, elegant wines that initially flew under the radar of critics like Robert Parker. Today, under her own label, Corison, Cathy is celebrated as one of California's most respected producers. Joining the conversation is Grace Corison, Cathy's daughter and the future face of Corison Winery. Grace played a key role in getting their vineyards certified organic—a recognition of practices they'd followed for years. She recognized the importance of official certification for transparency and for connecting with a younger generation of wine drinkers. Also joining us is Anna Brittain, Executive Director of Napa Green, who organized the annual RISE Symposium, where both Cathy and Grace will serve as keynote speakers this year. Two years later she graduated, and two days after that, arrived in the Napa Valley, bent on making wine. A master's degree in Enology at UC Davis followed. She made wine at Chappellet Vineyard for the 1980's. In 1987, toward the end of her tenure at Chappellet, there was a wine inside her that she needed to make and she began to buy grapes and barrels. Using other wineries' facilities, she was able to create the wine of her own.She founded her own winery, Corison Winery, in 1987. The winery is located in St. Helena, California in a barn built by Corison's husband, William Martin. They have two daughters, Grace and Rose, who are poised to take the reins in the future. Grace Corison Martin earned a BFA in Acting from Syracuse University and then worked in restaurants in NYC. Jeremy Carter of Tarpon Cellars is more than just a winemaker; he is a student of taste, and he built his palate first in the South. A Georgia native, Jeremy attended Florida State University before moving to the Napa Valley in 2007 for an internship at his uncle's winery in Rutherford. He would soon hone his winemaking acumen through various positions at Luna, Chappellet, and Duckhorn while also studying winemaking at UC Davis. We recorded this interview during the Charleston Wine + Food festival, and this week, Jeremy was named one of the VinePair 50, a big accolade from the publication that is recognizing talented individuals doing great things to make the drinks space better and more creative. As VinePair writes, “Carter's goal is to introduce American wine lovers to grapes prominent in international regions but uncommon in California markets.” And I'd add that he is creating wine that pairs perfectly with cuisine and climate in the South. For Jeremy, it's beyond the bottle to the sustainability, the community, and the communing around the table.

James sits down with Chairman Cyril Chappellet and winemaker Philip Corallo-Titus to talk about the Napa Valley winery's 2019 vintage. "It's like two great vintages back to back," Philip says in comparing 2019 and 2018. "The '18s were just very forward, big, structural wines and were just heralded as this great vintage, and it is. And then the '19 came along, and my opinion is that ... it's like a 'Do you like John Lennon or Paul McCartney?' kind of thing. And I've always been a little bit of a fan of this '19 vintage because of this real focus that it has, and there's just a depth and concentration and center of gravity, but not on a big scale of tannins."

Bertus and Alli are the owners and winemakers of Belong Wine Co. based in Napa Valley making Rhône and fringe varietals from the El Dorado Foothills. He has worked in the cellar at Deetlefs Estate, Rupert & Rothschild Vignerons, Glen Carlou, Hess Collection, Chappellet, and Regusci and has been in his current position as the winemaker for James Cole, Tank Garage, and T-Vine wineries since 2012. His happy place has always been out in the vineyards, where he can be found in short shorts. Alli still doesn’t know what she wants to be when she grows up. She has always found great joy in the creative process and is a Jill of many trades. She went to the Harvard of the west, Chico State, where she studied Sociology and learned the beauty of work/life balance. Alli moved to Napa in 2010 with her sister, Holly, who was already working in the wine industry. After managing a wine bar downtown for four years she transitioned to her current role at Whetstone Wine Cellars where she gets to wear many hats, including graphic design, hospitality, events, and marketing.

In this episode of the Grape Miniseries, we discuss Pineau de la Loire, a.k.a, Chenin Blanc! This white grape is one of the most versatile in terms of wine styles it can make – from floral sparkling, to stunning dry and off dry versions to unctuous dessert wines. Chenin is underrated, not always treated with regard, but it has a pedigree and a class that can’t be doubted. After hearing about all it has to offer, you’ll want to run out and get a bottle ASAP!   Here are the show notes: What Is Chenin Blanc? It’s a high acid, white grape that makes everything from sparkling to dessert wines. When it’s grown poorly, it’s a boring neutral grape that’s used for its acidity but when grown in the right places, it can create a wine with great depth, character DNA: Chenin is related to Jura’s Savagnin – parent + unknown grape French grape scientist – Pierre Galet – Chenin Blanc started in Anjou in the 9thc, moved to Touraine by the 15thc 1520 – 1535 -- Grapes planted at Mount Chenin in Touraine by the Lord of Chateaux de Chenonceau and the Abbot of Cormery   Flavors of Chenin Chenin can express terroir, winemaker ideas, vintage but at its core it has a floral, mineral, honey note. Its nuances are determined by terroir, soil type and style With botrytis the wine is like peaches, honey, apricots, marzipan, quince Dry or off-dry from Loire: apple, chalk that turn into honey and quince – off dry can age New World, especially South Africa: tropical fruit notes, good acidity   Viticulture: Need ripeness and good control over its vigor to get depth and complexity New clonal research is being done to delay budding because the grape is prone to spring frost, increase sugar development Vintage variation: growers decide on a day by day basis what style and dryness of Chenin blanc they could make   Winemaking New World: Can be blended or do well alone, some skin contact to get different aroma, soften with malolactic, lees contact, tropical notes bc of cooler temps of fermentation Old World – fermentation temps – higher (60-68˚f. 16-20˚c) so they won’t get those tropical fruit flavors that come out with cooler temps (50˚/10˚C) – no new oak/toastiness Loire:Made like German white wines – low, slow fermentations in large old oak or stainless steel, no malolactic fermentation, no barriques   Wine regions Loire, France  Sweet appellations:Coteaux du Layon, Bonnezeaux, Quarts de Chaume, Vouvray Dry:Saviennières (Nicolas Joly) – concentration, flavor, longevity, climate change has made dry wine possible in most areas – although some is off-dry, tryig to become a Grand Cru of the Loire Range of sweetness levels, from dry to semi-sweet to sweet: Anjou, Crémant de Loire, Coteaux de l'Aubance, Jasnières, Montlouis, Saumur, and Vouvray Varied:Saumur, Vouvray, Anjou –Vouvray Moelleux wines:Sweet but can be artificially sweetened, so you need a good producer – Vouvray and Quarts de Chaume the best Demi sec: great acidity, with a touch of sugar sometimes seem dry b/c of the acidity Languedoc: Crémant de Limoux, Chenin must account for at least 20% and up to 40% of the blend with Mauzac, Pinot Noir, Chardonnay   South Africa Most in Western Cape: Stellebosch, Paarl and then Swartland, Olifants River Good acidity in a hot climate Swartland Top Producers: Badenhorst, Mullineux, Eben Sadie (blends Stellebosch Top Producers: Ken Forrester, De Morgenzon   United States California: Used it for jug wine because it had acidity, irrigated to the hilt – high yields, 4x as high as in Loire Clarksburg AVA plus, Chappellet in Napa, Leo Steen in Sonoma/Santa Ynez, Foxen in Santa Barbara Washington: Yakima Texas High Plains (a few hundred) Long Island, New York: Paumanok   Other wine regions: Australia,New Zealand, Argentina blended with Chardonnay, Mexico and Canada, and India and Thailand grow it too!   Thanks to our sponsors this week: Thanks to YOU! The podcast supporters on Patreon, who are helping us to make the podcast possible and who we give goodies in return for their help! We couldn’t be more excited than to sit down with Chuck McKahn, partner and winemaker at a McKahn Family Cellars here in the Livermore Valley. Chuck’s career as a winemaker is in the Napa Valley. His career began with an epic opportunity to work harvest at Chappellet on Pritchard Hill under the mentorship of the one and only Philip Titus. It was here that Chuck got hands on experience crafting some of the most sought after wines in the world. Chuck used this opportunity and climbed the ladder after being offered a full time job after his first harvest. It wasn’t long before Chuck had earned the assistant winemaker position which opened the doors to a head winemaker opportunity at William Harrison in the heart of Rutherford.  Chuck has helped the winery Garner a better reputation and reach a total output that has put the winery in a stronger financial position. In addition, he has helped re-shape the winery’s production program to achieve new heights in quality. The Titus brothers, Phillip and Eric.From a young age, Eric worked in the family vineyard in Napa Valley with his brothers and father and continued the tradition until he left for college to earn his doctorate degree in Biology where he was drawn to the dynamics of marine science and toxicology. Following this path, he worked around the world as a researcher and an envi- ronmental consultant throughout the 1990’s.In 1997 he returned to St. Helena to help with the harvest at Titus Vineyards. The family business was growing, and Eric decided to devote himself to return to the winery full time in 2002 to help with management of the burgeoning family business. Today he is General Manager and Vineyard Operations Manager of the winery.In the vineyard, Eric has adopted green practices that support sustainable farming. His aim is to farm with tech- niques that ensure minimum impact on the local environment. Eric’s goal is to have as light a footprint as possible in the vineyard. Nearly all vineyard work is done by hand; row by row. He collaborates with Winemaker brother Phillip to ensure that vineyard practices deliver expressive and focused fruit from their two estate vineyards. An estate-based winery allows for harvesting each row at the right moment for each wine.Eric has served as President of the Napa Valley Grape Growers Association and is active with both the St. Helena Viticultural Society and Appellation St. Helena. He is committed to preserving agricultural land and the local ecosys- tem in Napa Valley. Eric works along with the local viticultural community to promote the Napa Valley as a world- class winegrowing region.From the age of 12, Phillip took an interest in viticulture and worked with his father and brothers in the family vine- yards in Napa Valley. His introduction to fine wine was at the family dinner table when his father shared Bordeaux, California Cabernet Sauvignon and Zinfandel from his cellar. Many of these formative wines were intriguing varietal and field blends.In college, Phillip studied agronomy, viticulture and enology at the University of California at Davis. He also traveled to Burgundy and Bordeaux to gain more exposure to great European wines. After graduation, he began his career working at Quail Ridge Winery, Stratford and Chappellet. In 1990 he was named Winemaker at Chappellet and continues to make the wines there today. That same year he also became Winemaker at his family’s Titus Vineyards.Phillip focuses on harvesting the grapes at optimal maturity, whereby showcasing the unique characteristics of each lot and vineyard block. His intimate knowledge of the two-family estate vineyards since childhood helps him to guide the creation of superior wine from the individual blocks. His wide-ranging experience with exceptional vine- yard sites large and small across Napa Valley inspires his acute blending sensibilities. His books include "The World Atlas of Wine," "A Life Uncorked," "Hugh Johnson's Pocket Wine Book," "Hugh Johnson On Wine," and "Wine". He also hosted and produced the PBS TV program "Vintage: A History of Wine".
