Heute geht's mit Lou und Jonas mal wieder nach Österreich – zumindest im Glas. Denn in dieser Folge dreht sich alles um Rotwein aus der Alpenrepublik und darum, wie man ihn auch bei warmem Wetter stilvoll und entspannt genießen kann. Dafür ist Sandra Scheidl zu Gast: Sie ist eine der spannendsten Köchinnen Österreichs, Preisträgerin beim Wettbewerb „Junge Wilde“ und wurde 2024 von Forbes in die Liste „30 unter 30“ aufgenommen. Mit ihrem Projekt „Culinary Arts“ realisiert sie Fine-Dining-Erlebnisse und weiß genau, wie man österreichische Weine ideal zu Pilzgerichten, kräftiger Jause, Entenbrust oder einem gemütlichen Grillabend kombinieren kann. Gemeinsam klären die drei, welche Rotweinsorten typisch für Österreich sind, was sie geschmacklich ausmacht und wie man sie im Sommer am besten serviert. Ein charismatischer Speisenbegleiter zu Wildgeflügel, Pilzgerichten oder geschmortem Gemüse. Tipp: Etwas Luft tut ihm gut und leicht gekühlt zeigt er sein ganzes Potenzial. Bründlmayer Brut Rosé Der Bründlmayer Brut Rosé beweist eindrucksvoll, dass das Weingut auch die hohe Kunst der traditionellen Flaschengärung meisterhaft beherrscht. Aus besten Trauben von Pinot Noir und St. Laurent entsteht ein Schaumwein, der bereits im Glas mit feiner Perlage und intensiven Aromen von roten Beeren und Kirsche auf sich aufmerksam macht. Am Gaumen zeigt er sich subtil und feincremig, überzeugt mit dichter Struktur und langem, eleganten Nachhall. Ein Rosé mit Stil und Strahlkraft. Weinlexikon: S wie Sekt aus Österreich Österreichischer Sekt hat in den letzten Jahren enorm an Profil gewonnen und sich zu einer echten Alternative zum Champagner entwickelt. In allen Weinbaugebieten des Landes entstehen heute hochwertige Schaumweine, die durch Finesse, Struktur und Herkunft überzeugen. Erkennbar sind die besten ihrer Art an der rot-weiß-roten Banderole auf der Kapsel – dem Siegel für „Sekt Austria“. Diese Schaumweine werden ausschließlich nach der traditionellen Methode der Flaschengärung hergestellt und müssen mindestens 9 Monate auf der Hefe reifen. Wer mehr Tiefe sucht, greift zu einem „Sekt Austria Reserve“, der mindestens 18 Monate Hefelager aufweist. Die Spitze bildet die „Große Reserve“, die mindestens 36 Monate auf der Hefe liegt und damit eine besonders komplexe Aromatik entwickelt. Typische Rebsorten für österreichischen Sekt sind Chardonnay, Pinot Noir (Spätburgunder) und der heimische Grüne Veltliner. Bei Reserve- und Großer-Reserve-Qualitäten ist der Restzuckergehalt streng begrenzt – mit maximal 12 g/l sind sie ausschließlich als Brut Nature, Extra Brut oder Brut erhältlich. Courtney DeGraff, Executive Director of Anderson Valley Winegrowers, is our guest on California Wine Country with Steve Jaxon and Dan Berger. They are putting on the International White Wine Festival, for the fifteenth year, on February 15 and 16 at the Mendocino County Fairgrounds. It used to be called the Alsatian White Wine Festival. The name change opens the festival to feature a wider variety of wines, such as Grüner Veltliner and Chardonnay. Dan Berger will be in charge of the Rieslings. The in-person Grand Tasting is at the Fairgrounds in Booneville, on Saturday. Early access from 11 to 12 and general access from 12 to 3. Anderson Valley is growing in Chardonnay production. Most of the fruit used to go to sparkling wines but they are also producing some very nice still Chardonnays now. Scharffenberger Sparkling Wine Barry Herbst has brought a Scharffenberger sparkling wine, which he considers to be a great value. They make six or seven different kinds of sparkling wine. It is also a beautiful property to visit, in Philo. Dan calls it more persistent in its flavor profile, with more structure. It's $21.99 at Bottle Barn. The winemaker Jeffery Jindra came over from Husch Vineyards. Dan Berger reports that there are several Napa valley growers who are also buying property in Anderson Valley. It is a more relaxed setting. It's definitely worth a visit. There are also other attractions like beer and cheese making. Bottle Barn is in the process of putting out the San Francisco Chronicle Competition winners. They will have about a hundred different awarded wines. After that, the Press Democrat limited competition (north of the Golden Gate) takes place. Barry's other wines today are the Maggy Hawk Chardonnay, a Gewurtztraminer from Husch and a Goldeneye Brut Rosé. They are all pictured in the top illustration and are also all available at Bottle Barn.

Pumpkin spice season, New York's month-long 'restaurant week' and summer menu pricing

On this week's podcast, Pat Cobe, senior menu editor of Restaurant Business, and Bret Thorn, senior food & beverage editor of Nation's Restaurant News and Restaurant Hospitality, discussed pumpkin spice season, which is upon us in August just as it is every year, despite annual complaints that it arrives too early. But as Pat observed, operators know when their customers want to start buying those autumnal items, and that time is now.  It's also “Restaurant Week,” in New York City, which now lasts for a month, and Pat made it to a long-standing Jean-Georges Vongerichten restaurant, Perry Street, where son Cedric Vongerichten helms the kitchen. For dinner, she had great pea soup, fried chicken with sweet corn sauce and molten chocolate cake, paired well with sparkling wine, Grüner Veltliner and a berry-flavored spritz-like dessert cocktail. All in, it was $60 for dinner and another $40 for the pairings. That's a good value in New York City, but Pat also took a trip to the Berkshires in Massachusetts, a popular summertime getaway for New Yorkers and Bostonians, and was surprised and delighted to find that entree prices there were considerably lower than at other seasonal resorts in the Hamptons and Cape Cod. Bret stayed local, but enjoyed a good $12 cocktail at his favorite bar, Logan's Run in the Brooklyn neighborhood of Park Slope, and reported in Restaurant Hospitality's New on the Menu column about a cocktail that was a cross between a spritz and an Espresso Martini. The podcast guest this week was Paco Moran, who won season 52 of the TV competition show “Chopped” and is also the executive chef of Loreto, a Mexican seafood restaurant in Los Angeles. Moran's a native Angelino whose parents are from El Salvador, and he started working in restaurants at age 17, when he had a child on the way and needed to make money. He worked hard in professional kitchens at a time when those environments could be quite harsh, and Moran has taken a different approach in managing his own restaurant. He said the cruelty of the past isn't necessary and he wants his restaurants to be fun to work in. That's especially true since his son, now aged 16, is working for him too. That has taught him and his crew patience, both to their benefit and to that of the young cooks who are joining his team. Although he is now an executive chef, Moran loves to get back on the line and cook.

I moved to Paso Robles from the Bay Area in 2017 with the burning desire to learn the art of winemaking. For the last few years, I have gained an invaluable amount of knowledge from various respected winemakers/mentors who have eagerly welcomed me to this community. Fast forward 6 years, I am about to release my fourth vintage of Ulloa Cellars. Established in 2019 my journey started with the creation of my first wine, Grüner Veltliner. There's a saying that wine is art in a glass. For 5th generation vintner Darcie Kent, that's always been true. Darcie has helped shape the modern Livermore Valley, California wine scene, first with her wine and her paintings, then with a live music venue. For one, she's championing Livermore Valley Grüner Veltliner. And, she's working to bring in new folks into wine, whether through art, music, or, yes, cannabis. We first met Darcie Kent, her husband David and daughters Kailyn and Amanda more than 20 years ago, filming a story with them about their new wine label, Darcie Kent Vineyards, for our NBC TV show In Wine Country. Back then, Darcie was "Almost Famous," thanks to her first wine release of a Livermore Valley Merlot. Her own grapevine painting adorned the label. Fast forward to 2023 and we are so happy to be back with Darcie at Darcie Kent Estate Winery in Livermore Valley. Her girls are grown -- they are 6th generation vintners! The family has a few new ventures in addition to wine! Darcie moved her winery's home base to a spot in the heart of Livermore Valley - famously owned by Bing Crosby - where she combines her wines, her art and a stand alone dispensary. She and her family also opened the Almost Famous Wine Company, a live music venue where wine pairs perfectly with local and national bands.
