Together, David and I explore the numerous innovations and transformations that have helped solidify Silver Oak's remarkable legacy over the past 50 years. Bardstown Bourbon Company is known for it's collaboration series. For this week, we taste and review TWO of the newer offerings in this series. The first, Silver Oak, is a collaboration between BBC and Silver Oak Wine makers in California. To make this batch, an eclectic blend of 6 different straight bourbon whiskeys was finished in Silver Oak Cabernet barrels for 17 months. The result...well...you'll have to listen. The second, Amrut, is a collaboration between BBC and the Amrut Distillery which is a famed single malt maker in India. To create to collab, rye was first finished in used Amrut barrels and then blended with bourbon. Do you think we liked this one? Silver Oak Cellars was founded by two people on a handshake in 1972. Ray Twomey Duncan was a visionary Colorado entrepreneur who saw potential investing in California farmland to grow grapes. Justin Meyer was a winemaker and Christian Brothers member. They built a legendary wine focused solely on Cabernet Sauvignon from Alexander Valley and Napa. Barry, Moret & Dan. Moret Brealynn from Morét-Brealynn Wines is our guest on California Wine Country with Steve Jaxon and Dan Berger. Barry Herbst is also in today from Bottle Barn, to describe their current Rosé promotion. Moret started working in a tasting room and noticed that there was more to wine than just that. So she started taking classes in winemaking, first at Santa Rosa Junior College. She interned at the SF Chronicle wine competition. She went from Silver Oak to Kosta Browne working on promotions, tastings and shipping wine. This was her first exposure to production. At Silver Oak everyone is a specialist but at KB people wear different hats so she learned a lot of different jobs. See this page of the Morét-Brealynn website for her whole story. The winery also supports animal shelters. In her career before wine Moret was Teen Center director for the city of Davis, in charge of park activities for teens, which is the job that later brought her to Sonoma County. Dan's cellar wine of the week, Baileyana 2013 Chardonnay. Dan Berger's cellar wine this week is a 2013 Baileyana Chardonnay that was made to have good acidity. It has been in a good cellar at a steady 55 degrees too, so it is in great condition. Stray Cats They taste the Morét-Brealynn 100% Muscadelle called Stray Cats. The fruit comes from the Sonoma Valley. There is a case on sale at Bottle Barn now. Dan mentions that Muscadelle is usually blended with Sauvignon Blanc and Semillon to make a white Bordeaux blend. Dan has never seen it before all alone, as a varietal. The orange kitty on the label is her cat Simba. Next they taste two Rosés, a 2021 and 2022, and she describes her process of making each one. Moret compares them to sisters. They were both bottled in December in neutral barrels, but they come from different vineyards. The last two tastings are her two Pinot Noirs. They are made with 60% new French oak, 30% whole cluster. It has got some pretty high ratings. Dan mentions that we only have about a 10-year history of aging big red wines with screw caps, and it will take 10 or 20 more years to reach the 30-year threshold.

This has driven David and Silver Oak to pursue many sustainability investments, including being the 1st existing winery and new build winery to be LEED Platinum certified and be at the forefront of energy efficiency for the last 20 years. Col Stuart Scheller was the Battalion commander for ITB-East before making a social media post about holding senior officers accountable for the Afghanistan withdrawal, including the Chairman of the Joint Chiefs of Staff and the Secretary of Defense. Recently I traveled into Alexander Valley and enjoyed some time with Nate Weis at Silver Oak's new state of the art winery .I was amazed at the entire estate and loved my time there.Today we have a new two part feature with Nate Weis and Silver Oak.First we will look at their website,and gather some history and great facts about the two featured wines from the fabled winery. Silver Oak began over a handshake between two friends with a bold vision: focus on one varietal, Cabernet Sauvignon, aged exclusively in American oak and worthy of cellaring for decades to come. Over the next two decades, Silver Oak grew in popularity. Our Napa Valley and Alexander Valley Cabernets sold quickly upon their release from the winery and became a sought-after staple on restaurant wine lists around the country. After selecting Daniel Baron to succeed him as winemaker in 1994, Justin retired, selling his share of Silver Oak to the Duncan family in 2001. In 2006, a fire destroyed our historic Oakville winery. It was a difficult and emotional event; but in hindsight, a blessing in disguise. When we regrouped on the morning of the fire, we knew we had to rebuild, and it wasn't long before the excitement of a new, state-of-the-art winery overcame our sense of loss. Today, we are applying this experience from our LEED Platinum Oakville winery toward a new winery in the Alexander Valley. Set amidst 70 acres of estate vineyards along the rolling foothills of the Mayacamas mountains, our new Alexander Valley winery – set to open for harvest 2017 – will push industry design and innovation standards through alternative energy sources, innovative water reuse systems and reclaimed building materials. Today, we farm more than 400 acres of vines in Napa Valley and Alexander Valley with a leading-edge approach toward precision viticulture, allowing us to give our vines exactly what they need, when they need it. All of our estate vineyards are certified under California's Sustainable Winegrowing program. In 2014, Nate Weis joined us as only the third winemaker in our 45-year history. Nate worked side-by-side with Daniel Baron, just as Daniel worked with Justin Meyer before his retirement. These overlapping tenures ensure the handing down of our commitment to continuous improvement and the wisdom that our best wines are still ahead of us. We have two great wines to discuss.starting with the 2014 Napa Valley Cabernet. The 2014 Napa Valley Cabernet Sauvignon has an opaque crimson color with a purplish hue. The alluring nose draws you in with notes of cassis, black cherry, pipe tobacco, salted caramel, cocoa beans and fresh strawberry. This full-bodied wine enters with a depth of flavor and offers mouth-coating, velvety tannins and flavors of cream soda and red fruit. Black currant and vanilla notes crescendo through the palate to the lengthy finish. This wine is drinkable upon release, but given proper cellaring conditions, can be enjoyed through 2040. we also will open the great Alexander Valley Cabernet from Silver Oak! Located 10 minutes east of downtown Healdsburg at 7300 Hwy 128 in Sonoma County, our new, state-of-the-art winery is now open for walk-in tastings, guided tours and food and wine pairings. Designed to “Frame the Vineyard”, the winery features panoramic views of the Alexander Valley bench and our surrounding 113 acre estate and 75 acres of prime Cabernet Sauvignon vineyard. Miro Tcholakov Miro Tcholakov from Miro Cellars is our guest today on California Wine Country with Steve Jaxon and Dan Berger. Joy Sterling from Iron Horse is also staying in the studio, from the previous hour. Miro Tcholokov has won many awards for Miro Cellars wines. He has been the full-time winemaker at Trentadue Winery since 1999. This is his 31st year as a winemaker in California. He came to the US as an exchange student and worked at Dry Creek Vineyards for 9 years after that before joining Trentadue. Miro says that the uncertainty about the quality of this year's harvest, with the threat of smoke taint, has at least driven prices up for bulk wine of 2019 and 2018. There was one vintage, 2008, mostly Mendocino, that had to declassify its wines. Some wines that would have sold for $50 had to sell for $15. But Dan Berger remembers that some wines from 2008 aged well, and the smoke flavor dissipated. There is one lab in Napa with only 2 machines for testing, and they are testing 24 hours a day. The demand for testing is very high. Miro Cellars started with its first vintage in 2001 which was released in 2003. He made only Petit Syrah from Dry Creek at the time. It's a dry farmed vineyard, sustainably grown. The vines are about 50 years old. He always wanted to keep his production small, which he did, about 500 cases, but he added 4 more varietals so it's about 2500 cases. The taste a 2017 Trentadue L'Astoria Merlot, which Dan says is in the "big" style of warmer climate Merlots, balanced with good acidity. Joy says it's "yummy" and every one agree. Dan Berger says these old vines really do deliver and Miro agrees it's the soil and the terroir too. As usual, the subject of Merlot reminds everyone of the aftermath of Sideways, when there was a glut of poorly made Merlot. Today it's different, grown in the right place and done right. Miro Cellars wines can be purchased online and some at Bottle Barn, and also in some local restaurants. Next they taste a 2017 Cabernet Sauvignon that he makes from (mostly) Alexander Valley grapes. (It is actually 75% Cabernet, with some Merlot and Malbec) His Cabernet has won a litany of golds and 90 point scores. It will be priced in the low 30s at the most, says Miro. Says Dan Berger: "Juicy and flavorful with noticeable notes of dried thyme in the aftertaste and the aroma as well, because the wine does have a real honest to goodness Cabernet Sauvignon lilt to it." Miro Tholakov says, "I like varietal aromas. People are afraid to shoe the variety specificity of Cabernet, for some reason, the herbaciousness that may come out. In California especially, they just over-ripen a lot of times to get away from even the slightest level of pyrazenes." Dan Berger tells that one of the people who discovered what Cabernet really does in Alexander Valley was the late Justin Meyer from Silver Oak. In the late 60s, he noticed that the varietal components always showed through no matter how late you picked the fruit.  That was why Silver Oak was famous for their Cabernet. Next they taste a Montepulciano. Miro says there were 11,000 tons reported harvested in Sonoma County. He is surprised because Trentadue has about 7,000 of those tons. Who else is growing it? The vineyard is young, it is an Italian clone. 9 year old vines, they have to thin it a lot. It ripens late, 2 weeks after Cabernet even. Miro says that Montepulciano is a Tuscan variety. There is a town called Montepulciano but is it surrounded by Sangiovese. It's grown more in the south, because it ripens late. It has lots of 95 points, best of class and Double Gold scores. Dan says the tannins are not aggressive or bitter. Joy loves the brightness of it. It is hard to find.

Miro Cellars wines can be purchased online and some at Bottle Barn, and also in some local restaurants. Next they taste a 2017 Cabernet Sauvignon that he makes from (mostly) Alexander Valley grapes. (It is actually 75% Cabernet, with some Merlot and Malbec) His Cabernet has won a litany of golds and 90 point scores. It will be priced in the low 30s at the most, says Miro. Says Dan Berger: "Juicy and flavorful with noticeable notes of dried thyme in the aftertaste and the aroma as well, because the wine does have a real honest to goodness Cabernet Sauvignon lilt to it." Miro Tholakov says, "I like varietal aromas. People are afraid to shoe the variety specificity of Cabernet, for some reason, the herbaciousness that may come out. In California especially, they just over-ripen a lot of times to get away from even the slightest level of pyrazenes." Dan Berger tells that one of the people who discovered what Cabernet really does in Alexander Valley was the late Justin Meyer from Silver Oak. In the late 60s, he noticed that the varietal components always showed through no matter how late you picked the fruit.  That was why Silver Oak was famous for their Cabernet. Next they taste a Montepulciano. Miro says there were 11,000 tons reported harvested in Sonoma County. He is surprised because Trentadue has about 7,000 of those tons. Who else is growing it? The vineyard is young, it is an Italian clone. 9 year old vines, they have to thin it a lot. It ripens late, 2 weeks after Cabernet even. Miro says that Montepulciano is a Tuscan variety. There is a town called Montepulciano but is it surrounded by Sangiovese. It's grown more in the south, because it ripens late. It has lots of 95 points, best of class and Double Gold scores. Dan says the tannins are not aggressive or bitter. Joy loves the brightness of it. It is hard to find.

Brian Demay and sommelier Steve Tartaglia tackle the origin and history of oak aging. From oak casks which transported wine in horse-drawn carriages across Europe to the oak barrels which traversed the ocean, it has played a huge part in the story of wine. Brian considers it a "happy accident" that we used oak to store wine, considering how it is the perfect vehicle to smooth out the flavors and introduce just enough oxygen to age it gently. The differences between French and American oak are also discussed, and we taste two examples of Cabernet from Sonoma's Alexander Valley, one which utilizes only American oak barrels (Silver Oak 2014 Cabernet) and one which uses 100% French oak barrels (Stonestreet 2015 Cabernet).

Tom Simoneau this week has brought two guests from Silver Oak Cellars, David Duncan, proprietor, chairman and CEO and Nate Weiss, vice president of wine growing. Barry Herbst is also in. Tom says Silver Oak is maybe the original cult Cabernet Sauvignon producer in the Napa Valley. 1972 was the first vintage. They made the 1972 through 1976 before they started selling the 1972. (They still wait 4 years to release so they just released their 2014.) Their 1974 vintage won a Gold Medal at the California State Fair in 1979. This news came out before wine critics were so influential and it is what put them on the map. They use American oak for all of their Cabernet. As their founding winemaker Justin Meyer thought American oak tasted good. Justin Meyer was much under the influence of André Tchelistcheff and Buena Vista. Their wines get 2 years in barrels, then 2 in bottle and are “deliciously drinkable upon release.” They own their own cooperage now, in Missouri. It’s called the Oak Cooperage. Some wineries in Europe also have cooperages but they believe they are the only American winery that does. David Duncan tells the story of his father’s friendship with Jack Novak. They bought a vineyard in Alexander Valley called Los Amigos vineyard in 1970. In 1972 Justin Meyer was a brother at Christian Brothers winery working under a winemaker named Brother Timothy. Then he met a woman named Bonnie, left the order, married Bonnie and met his dad all in about five months time. Justin wanted to make Cabernet and age it in American oak with a long aging program. David Duncan offered hi 50-50 partnership and they founded the winery over a handshake. They had a wonderful friendship and collaboration for many years. Justin sold to the Duncan family in 2001 when and they are still very close friends. David majored in English then went to business school and wrote a project about a business model for Silver Oak. He moved from Denver to California when his dad asked him to come run the winery. His brother Tim has been the Silver Oak sales guy since 1986 and David manages finance and growing. Nate Weiss grew up in Napa and Sonoma Counties. His dad has been a winemaker at Mondavi since the late 1960s and followed his father’s vocation. Twomey began in 1999 with Soda Canyon Ranch vineyard, making a Pomerol style red wine like the one he learned when he interned in France. The next year they acquired a Pinot Noir vineyard then Sauvignon Blanc in 4 vineyards, two in Napa and two in Sonoma. Tom says there is a lot of SB in that area. It’s the perfect wine to go with oysters. Tom says it’s a little grassy and has some grapefruit. The 2016 Bien Nacido Pinot Noir is next. They also make several single vineyard Pinot Noir wines. The Bien Nacido vineyard is in northern Sonoma County. It is one of the only vineyards that is “own rooted” and they have to take careful precautions to prevent philoxera from spreading, as Tom explains. Vineyards that are not replanted with philoxera resistant rootstocks are succeptable to it. Very few people escaped having to replant. They have to wash their shoes and not use outside vehicles. (Philoxera is an aphid-like pest that eats the young root hairs thus killing the vine.) Nate takes care to specify that the vineyard does not have philoxera. Then it’s time for a Russian River single vineyard Pinot Noir called Last Stop, after a railroad terminal in Forestville. It will be released in 3 weeks. Barry thinks it could handle up to 15 years in the bottle. They finish with a Twomey. Nate Weiss mentions the winemaker, Erin Miller. They have many single vineyard releases in their wine club. David tells how Twomey was his grandmother’s maiden name, his dad’s middle name and his son’s middle name. Barry Herbst has lots of Silver Oak wines at Bottle Barn. The Twomey tasting rooms are on Westside Road outside Healdburg and in Calistoga. Their winery was founded in Oakville.

As winemaker for Silver Oak, Nate Weis is the steward for one of the most prominent and recognized brands of Cabernet in the US.  In this episode of the Inside Winemaking Podcast Nate shares how what may be considered an old-guard brand of California winemaking, Silver Oak, is actually on the cutting edge of innovation and is now the first wine producer to have taken an oak barrel cooperage in-house.  After rebuilding the Napa winery due to a fire in 2006, Silver Oak has drawn from its experience in winery  design and is now building its Alexander Valley facility with the goal of being LEED Platinum certified by its debut in 2017.  Part of Nate's role is to oversee winemaking for the Twomey brand, which was created to produce Merlot, but now has a full range of wines including Pinot noir from Willamette Valley in Oregon.   Those interested in working a harvest vintage in New Zealand are encouraged to apply to the Doug Wisor Memorial Scholarship, which provides funding and a job placement at Craggy Range Winery.  After working for Doug when he was in New Zealand, Nate now helps aspiring winemakers discover this opportunity to honor a man who was one of his own mentors.
