Podcast: A Chat with Preston Mohr, Director of the Wine Scholar Guild, on Enjoying French Wines

Living in France, it's hard to overestimate the prevalence and importance of wine. Not only is it a marker and reflection of the place where it's made, but it's an integral part of French culture and cuisine. It's a natural pairing with meals and accompanies almost every gathering with friends and family.I like wine, but like most people in France, I'm an amateur. I know what I like and what I don't like. But I'm taking more of an interest in wine to deepen my knowledge. So I'm fortunate to have friends like Preston Mohr, who's an expert on wine but also knows how to communicate and explain wine in simple terms, without any pretense, so we can all get more enjoyment out of it. I invited Preston into my Paris kitchen to talk about French wines — what to look for when buying French wine, how to order wine without feeling sheepish in a restaurant or café, and what to do if the wine you've been served isn't to your liking. (Which was discussed in the comments here.)We also chatted about how the French wine world has changed over the last few years, whether Beaujolais should be avoided, as well as his favorite wine bars in Paris.Originally from Minnesota, Preston has called Paris home for the last twenty years. He's the Managing Director of the Wine Scholar Guild, which connects wine lovers from around the world and offers certification programs for wine professionals and enthusiasts who want to learn more about wine, either in person, at one of 130 locations around the world, or online, at your own pace. In fact, I'm thinking of signing up! We had lunch today at Le Cornichon and tried to power through this giant platter of frites (that were very good), but only managed to make a good-sized dent in them. Next time…In the meantime, enjoy listening to my chat with Preston. -David Links* Wine Scholar Guild (website)* Preston Mohr on LinkedIn* Preston Mohr on InstagramSubscribe to my newsletter to get new podcasts, recipes, Paris restaurant tips, and more, sent right to your Inbox! Should you drink Champagne from a white wine glass or a flute? What is the ideal temperature range for serving Champagne? What might surprise you about the technical side of Champagne production? In this episode of the Unreserved Wine Talk podcast, I'm chatting with Christopher S. Ruhland, author of Press for Champagne: A Guide to Enjoying the World's Greatest Sparkling Wine. You can find the wines we discussed at https://www.nataliemaclean.com/winepicks   Giveaway Three of you are going to win a copy of his terrific book, Press for Champagne. To qualify, all you have to do is email me at natalie@nataliemaclean.com and let me know that you've posted a review of the podcast. I'll choose three people randomly from those who contact me. Good luck!   Highlights Why does Chris prefer using a white wine glass instead of the traditional elongated flute for Champagne? What's the problem with clear glass bottles for Champagne? What is the ideal temperature range for serving Champagne? Which point in history does Chris consider to be the most pivotal moment in the development of Champagne as we know it today? What might surprise you about the technical side of Champagne production? Which notable contributions have women made in Champagne history? What was the significance of the Champagne riots in 1911? How did the Champagne region recover after the World Wars, and what were the lasting effects on the industry? How does chalky soil contribute to the hallmark qualities of Champagne? What's the difference between the oxidative and reductive styles of Champagne? Why don't we hear more about reserve wines? What was it like to drink decades-old Champagne, and how are the bubbles affected by aging? What is dosage, and what is its role in Champagne production? How can you plan the best trip to make the most of the Champagne region?   Key Takeaways I'm all for the white wine glass for Champagne, Chris says, but I don't like flutes because you can't smell the wine. They're too thin to sense the aromas from the wine. I use tulip-shaped glasses and if you go to the Champagne region, you'll see these in use all over the place. Chris says that temperature affects the texture of the wine and the bubbles. You wouldn't want it colder than it gets in your refrigerator. The point is to start at a cold temperature. Chris says most people are surprised at how much work it takes to make a bottle of Champagne. It is very much a human-made product in that it requires a lot of separate steps done by hand.   About Christopher S. Ruhland Christopher S. Ruhland trained and worked as a lawyer for thirty years before becoming a mediator. He holds the Diploma in Wines & Spirits from the Wine & Spirit Education Trust and he has passed the French Wine Scholar, Bordeaux Master-Level, and Rhône Master-Level examinations given by the Wine Scholar Guild, all with Highest Honors. He is the author of the award-winning Press for Champagne: A Guide to Enjoying the World's Greatest Sparkling Wine and gives presentations about Champagne and teaches wine courses.       To learn more, visit https://www.nataliemaclean.com/318.

Did the Benedictine monk Dom Perignon invent Champagne? Why is Grand Cru Champagne not necessarily the best Champagne? What makes Champagne so versatile and food-friendly? In this episode of the Unreserved Wine Talk podcast, I'm chatting with Christopher S. What sparked Chris' interest in Champagne in particular? How did Chris' legal career and writing skills transfer over to writing about Champagne? How does Press for Champagne differ from other wine books in its approach and focus? Why does Champagne have a universal appeal, even for those who aren't wine enthusiasts? How did Champagne become the wine of celebration? What are some common myths about Champagne that Chris debunks in Press for Champagne? How has the "Champagne only comes from Champagne, France" campaign impacted consumer awareness and the global sparkling wine market? What are some of the ways popular culture has impacted certain brands of Champagne? Did the monk Dom Perignon invent Champagne? How has social media shaped our perception of Champagne? What is Chris's perspective on the pricing of Champagnes and how it affects accessibility?   Key Takeaways No, the Benedictine monk Dom Perignon did not invent champagne. Champagne wasn't even sparkling until after his death. But what is true, Chris explains, is he was a cellar master of the abbey and an important figure in Champagne wine production and in advancing its quality. People talk about Grand Cru champagne with reverence as if it's categorically better than champagne without that distinction. That's not true. You can find Grand Cru champagne, which is not very good. And then you have champagnes like Louis Roederer's Cristal and Dom Perignon that are not Grand Cru champagnes. With champagne, there is such variety and so many different styles that you really can drink it throughout an entire meal, and it can all work differently based on what you're eating.   About Christopher S. In 2019, however, he decided to take a sabbatical from his career and began formally studying wine, obtaining certifications in several wine courses in a short period (Professional Sommelier, WSET Level 3, Italian Wine Scholar at Wine Scholar Guild). In 2022, he started studying for the WSET Diploma certificate. Also, in 2022, Pablo became a VIA Italian Wine Ambassador. A successful athlete with great skill, ball control, and a powerful shot with both his right and left legs, Hernanes played for various teams both in Brazil (São Paulo), Italy (Lazio, Internazionale, and Juventus), and even China, as well as representing the Brazilian national team (2014 World Cup and 2008 Summer Olympics). He won titles wherever he went, such as the Brazilian Championship twice with São Paulo, the Italian Championship with Juventus, and the Coppa Italia with Lazio and Juventus. As for wine, Hernanes had no previous contact with it and was abstinent until 2010, when São Paulo sold him to Lazio in Italy. From there, a passion for wine completely took over Hernanes. When he moved to Internazionale Milan in the 2013/14 season, the midfielder began to take his passion seriously. Things progressed even further between 2015 and 2016 when the Brazilian transferred to Juventus. Upon arriving in Turin, Hernanes visited several wine regions and became enchanted by Monferrato. At the time, he didn't own a house in Italy and thought it would be the perfect place to establish his residence, so he started looking for something there. During these searches, he found Ca' del Profeta, which he purchased in 2015. In addition to the Ca' del Profeta winery, Hernanes also owns Ca' del Profeta Ristorante & Relais, a wine tourism destination, and a wine bistrot in Turin called Luogo Divino. Sandra Zotti's unofficial training as a wine expert began as a child thanks to her parents, two first-generation immigrants from Campania, Italy. Introduced to a biccherino di vino rosso by her parents, Sandra learned at an early age to enjoy half a glass of red wine at the dinner table while listening to Puccini play throughout the house, a family tradition that ignited her passion for wine and food. After a childhood full of culture and the arts, a career in the "finer things" seemed a natural step for Sandra. As a young woman in New York, Sandra trained with Kevin Zraly at his Windows on the World Wine School and studied at the American Sommelier Association, followed by a position as Director of Events for social media guru Gary Vaynerchuk's Wine Library in New Jersey. In 2015, Sandra helped to create and launch PerUs, one of Napa Valley's newest cult labels made by acclaimed winemaker and recipient of numerous 100-point scores, Russell Bevan. Sandra successfully completed the Introductory Examination into the prestigious Court of Master Sommeliers and is a Certified Italian Wine Specialist with the North American Sommelier Association. She is currently pursuing an Italian Wine Scholar Certification with the Wine Scholar Guild. "My love of wine is connected to my love of the arts," notes Sandra, who is also a gifted classical pianist having studied for three decades. Although his academic studies are in engineering, he talks about why his passion has always been customer service. Claudio has worked in sales for over two decades, cutting his teeth first at Limited Brands where he started as a part time stock associate and worked his way up Management. After having accomplished his goal in fashion sales, Claudio switched paths and moved onto wine and spirits distribution where he found the joy and love for wine. Working collaboratively with his wife, Perrine, and their small but mighty family of employees, Claudio oversees all aspects of sales, marketing, and customer experience for their wine shop locations in Atlanta. We talk a lot about how working for a growing company is a really beautiful experience because he gets to touch so many different aspects of it and watch them flourish. We also reflect on all the advancements they have made as a business throughout the pandemic to adjust to their customers' needs and to expand their online presence. As part of Perrine's ever-growing educational program, Claudio is also currently working on his Burgundy Master Level taught by the Wine Scholar Guild and is hopeful to finish by the end of this year. You can follow @perrineswine on social media, visit www.perrineswine.com to browse their wine selection, and you can always call the shop at 770-265-9795 to ask for Claudio. These sessions are recorded from Clubhouse and replayed here on the Italian Wine Podcast! Listen in on this series as Italian Wine Ambassadors all over the world chat with Stevie and their chosen wine producer. Which producer would you interview if you had your pick? About about today's guest host: He is the Director of Italian Wines for Horizon Beverage Company, and a Vinitaly Italian Wine Ambassador. He grew up in Italy and has worked and travelled in England, Italy and the US. He has been based in the US since 1999 and completed his wine studies at Boston University, International Sommelier Guild, WSET, Wine Scholar Guild and North American Sommelier Association. To learn more visit: @divinoboston (Instagram) @vinofilosofia (Twitter) Ciro Pirone About today's guest producer: Salvatore Avallone's father created Villa Matilde in the 1960's after spending over 10 years of painstaking research to locate and identify the few remaining grape vines of the original strain that made the famous Falernum wine of Roman times. His father, Francesco Paolo, was a lawyer, a lifelong student of the Roman Empire and a professor of Roman Law at the University of Naples. He and his friends from the Dept of Agriculture at the University of Naples conducted an “ampelographical” study of the vines in all the small farms in the Caserta region where the famed Falernum wines had been grown. But the phylloxera epidemic of the late 1800's had wiped out the vines – all but a very few. The friends discovered 15 vines – 10 red (Aglianico and Piedirosso) and 5 white (Falanghina). With this small but precious start, the Avallone family embarked on a journey to create a modern expression of the greatest wine of ancient Rome, the Falerno del Massico. By sheer dumb luck, each of us had a different expression of Xarel.lo. - Debbie had Cava, I had a still, Rick had an orange wine and Ignasi had a late harvest which made us all jealous!  The hour went fast and we learned so much. Wines from Anjou, a region in the Middle Loire Valley in France, were the absolute favorite of D’Artagnan the Gascon, the so-called 4th musketeer. Throughout Alexandre Dumas’s saga beginning with “The Three Musketeers” and ending with “The Man in the Iron Mask” the white wines are vaunted and revered, particularly by D'Artagnan. This episode explores the wines of Anjou, and the wines the 17th century musketeers actually might have been drinking. Then we take a small side trip to discover why, potentially, Alexandre Dumas was specific in naming the regional wines in his works. Katrin Naelapaa has been serving as Wines From Spain USA’s director since 2001. Born in Mexico City, and having studied in Madrid, Katrin was so deeply connected to the Spanish wine and food culture, she was fortunate to find a smooth transition to the wine world from her original career in International Banking. In this interview Katrin talks about how the Spanish wine scene, particularly in the United States, has changed significantly over the past two decades. Not only are more Spanish wines imported, but the vast variety of regional representations, as well as the integration of the food and cultural experiences, have created a stronger consumer interest in the genre. With this market growth came the need for more in-depth learning experiences with respect to Spanish wine. To answer that call, the Wine Scholar Guild has launched the Spanish Wine Scholar program. Katrin shares her excitement about this program, Wines From Spain’s involvement in its development, and why it’s important to both the wine professional and consumer.
