As a result of trade, travel and migration, different cuisines have spread across the world. Many recipes, chefs and restaurants try to claim that their example of a particular culinary tradition is the most authentic. But is this a good thing? People care about authenticity because food traditions are closely linked to identity, particularly for migrant communities. Sociologist and professor of food studies, Krishnendu Ray, explains that home cooking is often the last way that communities can show their identity. British celebrity chef Jamie Oliver was accused of trying to take advantage of positive feelings about Jamaica. His ready meal product had a Jamaican name, but was unlike genuine Jamaican cooking. However, food consultant Sara Kay asks whether there are problems with the idea of authenticity. She highlights that these ideas often come from the expectations that majority cultures have about minority cultures and their food. These can be restricting – restauranteurs have complained that people expect Asian food to be cheaper than that from European cultures. Expectations can also give people a false idea of what is authentic. While large cities are full of eateries representing different countries – China, India, Italy, Mexico and more – these labels can oversimplify the reality of food from these countries. Stephanie Elizondo Greist was surprised by the difference between regional specialities in different parts of Mexico and what she ate growing up as a Mexican-American in Texas, but feels that both are authentic examples of Mexican food. A more controversial view of authenticity was stated by American Chef Andrew Zimmern, who claimed that he could bring Chinese dishes to Minnesota in a more authentic way than existing restaurants – many of which are owned by Chinese-Americans. Writer and food podcaster Ruth Tam points out that while these restaurants altered their menus to suit local tastes, so does Zimmern. So, while food and identity are closely linked, and failure to respect authenticity can cause offence, could there be problems with the whole idea of authenticity?

095 Discovering Wim Hof with Steph Ingram | The Wim Hof MethodIn this episode, we are joined by Steph Ingram, a children's Physiotherapist. She recently finished in the NHS and organized the well-being week for the staff as a leaving gift, which made her feel fantastic. Steph is currently taking some time off for herself to do some self-development. Today, Steph comes onto the show to share her experiences at the Wim Hof retreat and about people's well-being and mental health.Discovering Wim Hof[3:07]Steph used to do cold showers. She didn't know the science behind it or why she enjoyed them, but she always took one and would feel good about herself when she came out. She had a little look at Wim Hof's stuff and ended up signing into a summer retreat of his because she thinks you have to experience these things. The Retreat[6:26]She thought that the whole experience of the retreat was amazing. Steph thinks the ice baths are the biggest part of the Wim Hof method.Perfect Timing[12:22]You are allowed to take a specific time limit in ice baths. In three minutes, the body starts becoming hypothermic so two minutes is enough just for the health benefits of it. However, once you start going over that three-minute mark, that's when you know you're controlling the mind. The Breath[17:47]Steph thinks you must do any Wim Hof breath work because it reinforces that you are the driver of your vehicle and look after yourself. If something doesn't feel good, you bring it back or if you don't feel like it's enough, move forward. But at the end of the day, you are in charge.Canyoning[24:14]Canyoning used to be one of Steph's experiences available to her, but she never had the time to try it before. At one point, she saw a man in a river who couldn't swim but was floating, and it didn't stop him from going canyoning. If he can do it, why can't you?[28:04]Being in that sort of environment made Steph feel grounded in a way. Just being with nature and around that sort of natural beauty was just amazing for her.By listening to this episode, you will UNLOCK...What is the Wim Hof MethodHow the Wim Hof retreat can help you unlock your potentialHow the power of the breath & cold exposure can help battle mental healthConnect with Steph herehttps://www.linkedin.com/in/stephanie-ingram-6591471a2/Patreon thanks!Shout out to the amazing Patron supporters for keeping this podcast going; thank you Ant Howe, Jasmine Barnes, Chloe Wilmot, Sara Kay, Cheri Brenton, Steve McDermott, Chris Lovett & Rory Barnes! 092 Already Home with Dave Kibby | Non DualityThis week Dave Kibby joins the show to share a ‘radical non-duality message' that is extremely simple... the idea that there is only everything, "this," is all there is and we are already home. A wonderful and simple concept we all need to adopt in our lives."I was a seeker, looking for fulfilment, that intangible sense of ‘home' - I'd tried personal development, spiritual seeking and then one day, it all became clear...It's this, this is whats longed for already."Dave Kibby spent a decade as the MD of a catering equipment business but that was over 20 years ago and his work is very different now.His clients describe him as a ‘breath of fresh air,' they say he's ‘straight talking, yet kind,' and he's ‘contrary'. They describe him as an ‘outstanding coach, trainer and mentor.' He leaves a lasting impression, for sure."What seems to be missing, is something. It turns out that there isn't anything missing, there is only everything. Everything is home, it's everything you longed for, regardless of anything else."By listening to this episode, you can UNLOCK...The idea that you are "Already Home,"Why this is all there ever is...And that "There is only everything"It's a profound idea that has really inspired me to think about my own journey and actually what is it that I am seeking for, when actually all there ever is, is this. 091 How to do a TEDx with Chris Lovett (Part 2) | How to do a TED talk Do you love watching TED talks? Or maybe you are considering doing a TED talk? Welcome to part 2 of the mini-series of How to do a TEDx. In this episode, we are again joined by Chris Lovett, a TEDx speaker, author, disruptive thought leader, and executive coach specializing in simplicity, leadership, and careers. Chris is one of the UK's only minimalist motivational speakers, and he reveals the wonderful benefits of adopting a 'less is more approach in our personal and professional life. Today, Chris gives listeners advice on the intricacies of doing a TEDx and his own personal experiences with it.Just do it[6:55]Chris advises you to carry on even in the face of panic. Having a very elaborate plan for your presentation doesn't guarantee that nothing will go wrong. You have to deal with it and push through anyway.[8:59]Don't eat, don't do anything, don't engage with the audience, and don't say hello or ask how they're doing. Just go out and do your talk. Once it is done, you thank the audience and walk off. Just get straight with it.After-Talk Feeling[16:52]Chris says that there was a sense of relief and accomplishment when he walked off after he did his TED talk. He thought he did a good job. Not only was the TED complete but he got friendships off the back of it too, which he hopes last for a lifetime.Doing things differently[20:46]There isn't anything Chris would do differently next time he does a TED talk other than being a little braver and inviting more friends and family to come along. He thinks it's fine to present to strangers but there's something that throws him off when it's people he knows. What's next?[25:21]Chris teases a second book that will take all of its concepts from the talk and would give people more initiative and motivation.Watch Chris Lovett's TED talkYou can watch Chris Lovett's TEDx Less busy, more impact herehttps://www.ted.com/talks/chris_lovett_less_busy_more_impactAnd listen to Chris Lovett's interview about his book herehttps://kite.link/DISCOVERY-OF-LESS-WITH-CHRIS-LOVETTGo to https://www.lessisprogress.com/ to get your copy of Chris' book, Discovery of Less, and get started on living a healthy lifestyle and a mindset of a leader. You can also follow Chris on his socials:Twitter | Instagram | LinkedInPatreon thanks!Shout out to the amazing Patron supporters for keeping this podcast going; thank you Ant Howe, Jasmine Barnes, Chloe Wilmot, Sara Kay, Cheri Brenton, Steve McDermott, Chris Lovett & Rory Barnes! 090 How to do a TEDx with Chris Lovett | How to do a TED talk (PART 1)Do you love watching TED talks? Or maybe you are considering doing a TED talk? If so you are in the right place. In this episode, we welcome back Chris Lovett. Chris Lovett is a TEDx speaker, author, disruptive thought leader, and executive coach specializing in simplicity, leadership, and careers. Chris is one of the UK's only minimalist motivational speakers, and he reveals the wonderful benefits of adopting a 'less is more approach in our personal and professional life. Today, Chris helps listeners unlock their potential and achieve their life goals by doing less. In this episode, we discuss his experience of doing his first TEDX talk and we break down how to apply and do a TED talk. We cover many areas such as the application process, the preparation and coaching required to deliver a TED talk and Chris reveals what happens backstage during a TED talk.Considering doing a TED talk[5:18]After Chris completed his voyage of self-discovery, he told his friends about his experience and was urged that he write a book. At first, he refused, but as time passed and many others heard about his adventure, he ultimately did it. Learning has significantly influenced my desire to do TED and inspire others.[8:54]Chris chose TEDx Hult London since one of the presenters who inspired and supported his book spoke there. He put himself in a position to be receptive to opportunities, and opportunities presented themselves to him. He applied since they were seeking speakers, and he got the job.Face what makes you nervous[15:19]Chris has put himself forward for things that worry him the most, just to discover that they aren't all that scary once he's done them. Some boldness and an openness to the art of possibility.Delivering a TEDx talk[21:06]It may appear difficult, but the story is already there; Chris only needs to package it in a couple of minutes, add some humor and references, and generate a fantastic story.[25:06]Chris delivered his speech in the same manner that he authored his book. He also practised with his dog in the woods.Watch Chris Lovett's TED talkYou can watch Chris Lovett's TEDx Less busy, more impact herehttps://www.ted.com/talks/chris_lovett_less_busy_more_impactAnd listen to Chris Lovett's interview about his book herehttps://kite.link/DISCOVERY-OF-LESS-WITH-CHRIS-LOVETTGo to https://www.lessisprogress.com/ to get your copy of Chris' book, Discovery of Less, and get started on living a healthy lifestyle and a mindset of a leader. Sara Kay Godot! This my third video podcast, and this can also be found on YouTube channel: With Miska Podcast Episodes. https://youtu.be/cZKcrY901gQ I have known Sara for over 20 years! We went to the same theatre school in Miami, New World School of the Arts. When I started as a freshman she was already a sophomore. We watched all of each other's college plays, and saw each other every day at school. At one point I was also her roommate for a couple of months. Later we lost touch for few years. But since we both are now in LA, we have been able to reconnect, and we both have performed on each other's stand-up shows. After college Sara went to Chicago for several years where she did quite a variety of live theatre, but now she's in LA. She owns a psychology practice with her husband, produces stand-up shows, acts, auditions and also writes. She lives a full life and is fully back in action after taking a break from acting some years ago. A wonderful and warm talk! For episode three of series two, Rebecca spoke to wellbeing laughter yoga coach Sara Kay. She attended some of Sara's laughter yoga sessions over Zoom during lockdown and, well, they're genius. Laughter is of course, the best medicine, and we all know the difference it can make to our mood, but it perhaps isn't part of our everyday, as we're not always watching comedy, attending a show or having rib-tickling conversations with people. The beauty of laughter yoga is that you force yourself to laugh through various exercises, because your body doesn't know the difference between real and pretend laughter. So it's still just as effective, making for an excellent de-stressing activity. Dancing round her living room to Sara's sessions laughing her head off (and scaring her neighbours) was just what Rebecca needed in the middle of the pandemic.Sara herself got into laughter clubs and workshops after being on antidepressants, coming out as LGBTQ and ending her marriage. So learning this skill and becoming a coach was a huge turning point for her, helping her to better cope with everything life brings and becoming more resilient to challenges. She spoke beautifully about self-acceptance, the importance of ‘letting go' and embracing your inner child; and helping others to overcome obstacles, improve their self-esteem and enjoy their lives again.Follow Sara and Same Shit, Different Brain on social - and check out Sara's laughter advent calendar on YouTube:https://www.youtube.com/channel/UCBGG5sYNi8Qd1dhuDs_x1zwhttps://www.instagram.com/seriouslaughuk/?hl=enhttps://twitter.com/seriouslaughukhttps://www.instagram.com/sameshitdifferentbrain/?hl=enhttps://www.facebook.com/SameShitDifferentBrainPodcast
