Hear how an award-winning Polish Grodziskie helped elevate Sketchbook from brewing in an alley to becoming an industry leader in sustainability.Sketchbook Brewing Company Managing Partner and Head Brewer Cesar Marron discusses his brewery's journey from humble alleyway origins to becoming an award-winning establishment with a strong emphasis on sustainability. He shares the exciting but stressful story of how he won the Sam Adams LongShot American Homebrew Contest before discussing the challenges of brewing traditional Polish Grodziskie beer, their innovative Community Supported Brewery program, and the impact of the temperance movement on beer laws and brewery culture in Evanston. Cesar also provides insights on Sketchbook's sustainability initiatives, including water conservation and eco-friendly packaging, and offers easy tips for how you can make your craft beer drinking habits more environmentally friendly. After the beer break, Cesar highlights a few of Sketchbook's beers, including their Grodziskie, a light and refreshing Polish-style smoked wheat beer; Snowy Owl Red Ale, featuring a combination of caramel malts with spicy notes from the rye, balanced with the citrus flavor of American Cascade and Amarillo hops; and Coastal West Coast IPA, their Midwestern homage to the West Coast, featuring Lake Michigan water, Midwest Cascade and Centennial hops, and barley grown and malted in Wisconsin. The discussion includes how they achieve smoky flavors in their beers and what makes the Snowy Owl Red Ale unique with its rye bitterness. About Sketchbook Brewing Co: Sketchbook Brewing Co. is a microbrewery located in Skokie, IL, with taprooms in Skokie and Evanston. The city of Grodzisk Wielkopolski was once a major center of brewing in 19th century Poland, but political unrest, world wars, communism, and then misguided capitalism all played parts in closing the previous chapter of the city's brewing history in the early 90's. But the rise of craft beer also led to a resurgence in interest for obscure styles like the smoked wheat beer that made the city famous, and by 2016 a new group of owners relaunched the original Grodzisk brewery (https://browargrodzisk.com) with a heartfelt mission—to share this homegrown Polish beer style with the world. In this episode, head brewer Marcin Ostajewski shares history and process for the style, as well as ways that modern brewers are keeping the style vibrant and alive through modern variations. Through the episode, Ostajewski discusses: rebuilding the historical grodziskie recipe through historical sleuthing and first hand reports cofermenting grodziskie with two ale yeasts over hundreds of generations brewing with tomyski hops working with a maltster to produce oak smoked wheat malt where the malt is dried through the smoking process rather than smoked after kilning using long mashes to insure success brewing grodziskie with aged hops for additional preservative qualities from beta acids polishing the beer's clarity to reduce potential foaming with the very high carbonation brewing modern flavored versions of grodziskie And more. Herlinda, Krzysztof and Marcin. Marcin Ostajewski from Browar Fortuna and Krzysztof Panek from Browar Grodzisk in Poland join Harry Duke and Herlinda Heras on Brew Ha Ha. Krzsyztof and Marcin have just arrived from Nashville, where they attended the World Beer Cup. Both of their breweries are located in western Poland, not far from Posnan. Browar Grodzisk is based in Grodzisk Wielkopolski and Browar Fortuna is in Miłosław. The Grodziskie style is Poland's own, originating in the town of Grodzisk. It is a unique beer, the only one in the world brewed with 100 % wheat malt, smoked with oak wood. The brewing process is difficult and long and it has to take its time. Grodziskie is light and refreshing, with a unique flavor among beers on the lighter side. Marcin tells about early 20th Century advertisements for this beer that refer to it as "Polish Champagne." There are samples of old Grodziskie ads here on Browar Grodzisk website. (This reminds me of Miller High Life, The Champagne of Bottled Beers, their old slogan. -cd) Visit our sponsor Victory House at Poppy Bank Epicenter online, for their latest viewing and menu options. Grodziskie Krzsyztof is quite serious about making Grodziskie as well as possible. He did extensive research in order to replicate the old equipment and he collected information from many people. The brewery fell into disuse after communism. Beginning in the 1990s, investors came in and closed breweries that were not cost-effective. Since lagers were in demand, beer consumers demanded that. Only later they were able to bring Grodziskie back when they re-founded the brewery. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. Click the logo to visit their website for up-to-date hours, menus, beers and more info. Marcin talks about their home brew competition. The only rule is that beers in competition can't use wild yeast, which would interfere with their brewing operation. The brewery will produce the winning recipe at the next year's festival. Krzsyztof describes how hard it was to find the right malt for Grodziskie. They found a malter just over the border in Czech Republic. The home brewing community developed in Poland during communism when there was not enough good beer available commercially. When they brought Grodziskie beer back into production, the home brewers society was an important source of recipes, yeast and information. Next they taste Komes, an idea that came from Krzysztof wondering what would happen if he took their award-winning Baltic Porter, and froze it. He kept it for 2 weeks in the deep freezer. Below the ice there was a condensed liquid, made of alcohol and all the flavor elements. They tasted it and decided it was extraordinary. Then they put it in whiskey barrels. After 4 or 5 years of the project, they have several hundred bottles. There isn't much of it, but now they do batches of about 1000 bottles.

Over the past couple of decades, brewers and beer historians have recreated a growing number of formerly lost beer styles, like Grodziskie, Merseburger, Horner Bier, and others. Many of those styles come from the traditional brewing regions in Europe. But almost any country with any brewing history at all has its own lost beer styles. Sometimes, those recipes are completely indigenous. Sometimes they were imported from other places and subsequently modified in the new country, becoming their own unique types of beer. Today I'm talking to Michael Stein, the author of a recent piece from our Source Material series, “A Lager Darkly — In Search of Culmbacher, One of America's Great, Extinct Beers,” published on March 17, 2021. In his story, Michael explores the largely forgotten Culmbacher beer, originally from what is now the German state of Bavaria, but which grew in popularity in the United States in the 19th century, apparently changing substantially in the New World.  As we discuss, Culmbacher was once very common in America, though it disappeared almost completely during Prohibition, and never regained its previous status. But as we hear in this episode, a recipe discovered in the Smithsonian's National Museum of American History has been re-brewed, allowing modern beer lovers to taste something that has been extinct for most of a century.

“If it’s a pain in the ass, we usually do it,” says Live Oak (https://liveoakbrewing.com) head brewer Dusan Kwiatkowski. Brewing the hard way has been a core tenet of the brewery since their start in the mid ’90s. While most breweries launched around the time focused on ales (to distinguish themselves from the “macro” beer of the time), Live Oak committed to craft lager from its earliest days. Its Czech-inspired pale lager, Pilz, has been one of their core beers for more than two decades. Today, Live Oak maintains that focus by pushing lager even further, through the pre-Prohibition-style pils they call Pre-War Pils, and by brewing and advocating for Grodziskie, which they brew as a lager with oak-smoked malt from a small Czech maltster. In this episode, Kwiatkowski discusses everything from the ways they’ve sourced ingredients for the Grodziskie to the process behind the cereal mash necessary with corn grits in the Pre-War Pils. Along the way, he discusses the impact of smoked malt in recipes, brewing Grodziskie as a lager rather than an ale, polishing pils so that it sparkles in the glass, spunding tanks for proper finishing, and more. Live Oak is fond of referring to its Austin, Texas, location as “Bamberg on the Colorado,” referencing the German city’s reputation for smoked beer from breweries such as Schlenkerla and Spezial. While smoked beer is a niche in today’s wider beer world, Live Oak’s passion and focus on the approach are second to none. *This episode is brought to you by: * G&D Chillers (https://gdchillers.com): As the brewing industry’s premier choice for glycol chilling, G&D Chillers has set the standard on quality, service, reliability and dedication to their customer’s craft. Stan Hieronymus knows a thing or two about hops Stan Hieronymus has forgotten more about the beer industry than most of us will ever know.  He's typically leaned on for his knowledge of hops, but his expertise extends to many other areas in craft beer.  Hieronymus relocated to the Atlanta area about 1 1/2 years ago and we bend his ear every chance we get.  He joined us in early 2018 (BGR #120) and we thought it was about time to have him on again for an update. Naturally, we talk a lot about hops in this episode.  We get the update on the hop harvest across Europe and the Pacific NW and discuss hop terroir, a topic that hasn't been mentioned often but is generating more buzz after recent tests.  Some yeast talk happens as well, and we talk about our latest obsession - kveik.  We hear about the durability of true kveik strains and how real Norwegian farmhouse brewers make their beer, and it's likely nothing like what you've had at your local brewery.  With Hieronymus's recent trip to South America, we hear about the craft beer scene there and what styles are popular.  Spoiler... haze is an international craze. "Session" is a new word to many a craft beer drinker's lexicon, but the idea of session beer far predates whatever new lingo is helping sell balanced, lower alcohol brews. You may have also seen the words "light," or "table" used in a similar context. Meaning: easy to drink, balanced, dare I say crushable? Some of you just cringed, I know, but it’s been hard going for anyone looking to sell these kinds of beers in our culture of extreme flavor and high alcohol and rarity. That is, until someone decided to pair it with IPA. They need a pitch, a hook, to get people interested in what really, for most people around the world, defines normal everyday great beer. I mean, you don’t see Pilsner Urquell going around pitching itself as light or sessionable. But this is America—it all needs a qualifier of some sort.  One brewery in Salem, Massachusetts has done more than just pitch their beer with the word "session" in the title—they’ve gone all in on the concept, referring to their entire portfolio as American Session Beer. Notch Brewing—under founder Chris Lohring—started out as a contract brand, largely because he couldn’t convince anyone that these styles would ever be in favor. That’s hard to imagine in 2017 when it seems every craft brewer is gunning for the easy-drinking Lager, Hoppy Pilsner, and Golden Ale. So he took a hard road, scraping together support from fellow brewers with capacity, building his brand and base, and finally, just last year, got the investment he needed to open his own small brewery with a taproom and take another step into the future of his idea.  Oh, and the beers are absolutely delicious.  When I was there recently, I had the Pilsner, which was clearly more refined and delicate than most you’ll have in the U.S., and we’ll dig in to the reasons why in this episode. I also had the smoked Grodziskie, which was layered and balanced and just sang on the palate. I also enjoyed his take on the hazy IPA which, when viewed through the lens of session beer, makes a whole lot of sense.
