Back to Michigan for Part II of Whiskey Business! I have a great interview for you with Bill Welter, the owner of Journeyman Distillery in Three Oaks, Michigan. I got this interview the same day (in the same room) as the one from episode 46 with Marty Duffy. Bill's got some stories about starting out craft distilling in the early years, and we talk about Three Oaks, a beautiful little spot just two miles from Lake Michigan. Then I get a teensy bit political, but not in the way you're maybe thinking. It involves gospel music, beer, and home-baked cookies; how bad can that be? The Stone Fence Episode? Yeah, I'm up against it with this book project. I didn't get the "here's what it's like writing a book" episode done, but then I remembered that I had a recording of the rye whiskey and cider talk I took part in back in April down at Ploughman Cider in Gettysburg (Thanks, Ben!), so I'm finally uploading that. I did it with Dan Pucci, author of American Cider: a modern guide to a historic beverage. We talked about rye, cider, apples, agriculture, history...it was a wide-ranging presentation. It's two hours long, so maybe you want to go to the end first, because... There's a reminder about two Oktoberfest celebrations in central PA this weekend, Friday October 4th and Saturday the 5th for the Mifflinburg Oktoberfest, and the 5th is Bonshire Brew Works' Pigtoberfest! And on the 5th and 6th, it's the Dutch Fall Fest in Aaronsburg, right next door to good old Millheim: music, food, fun (no beer, but Elk Creek's less than a mile away). Finally, I sampled the Booker's Bourbon "Beam House Batch" 2024-02, and found it to be one of the better bottlings of Booker's I've had recently. The next episode will probably include interviews from a visit to Journeyman Distillery in southwest Michigan; I'm going out there to help judge their barrel-aged beer festival. Yesterday we cut the lawn and grilled out on the deck in our underoos. Today. . . we prepare for some overnight freezing and snow. Indiana’s bipolar weather is at it again. In this episode, I interview Bill Welter, the owner/operator at Journeyman Distillery, a business that he was propelled to start by his passion for golf, not to mention the country of Scotland and a young entrepreneur from Australia. His business owner journey began after high school graduation when he and his father took a trip to Scotland. They traveled the country and played its famous golf courses. Welter, an accomplished golfer, was about to start a full-ride scholarship in the sport at Missouri State. His love of Scotland continued after college so much that he chose to return with an overseas work visa and find employment in a restaurant during the evening while playing golf during the day. That was when he fell in love with the age spirit and a few years later ventured to Tasmania, Australia to work and study world-class distilleries in the Island south of Melbourne. Returning to the USA, he found an old factory and bought, after which he and his wife opened a distillery there (one of 250 in the US back then. 10 years later there are more than 3,000 of them) With 4 full-time employees, Bill literally chased cars down the road to get customers to come in, 80% of whom would then ask, “What beer do you sell here?” Now in 2020, they have 95 full-time employees with a total team of 150 in the peak season which is 15% of the small 1,000 person town they’re located at. In 2019, they saw 200,000 visitors come through their doors, hosted 110 weddings, have a successful restaurant, 11 rooms of accommodation, and a 30,000-foot padding green out the back paying homage to Bill’s continued passion for golf. With their products sold through most states in the US, and some export markets, they’re looking to add one or two more sites somewhere in the USA. Bill believes the hardest thing in growing a small business is access to capital and the advice he would give himself on day one is, “Don’t be so hard on yourself” It’s going to be quite a resourceful episode if you’re for some motivation to keep you going in your small business ownership journey, so don’t miss out! The importance of working on the “people” (employees) and always hiring the very best. Bill’s biggest mindset shift in his small business growth journey. The number one habit a small business owner should develop and maintain. Making hiring people easier through a suitable vetting process The value of spending a few minutes a week with the key employees. Networking to build beneficial relationships and how capital presents a challenge for small business owners who are starting out. We took a trip to Journeyman Distillery for the 2nd Annual Islay's Barrel Aged Brewfest and recorded the show on the road. One Well Brewing – Fat Man Tears Dougy Fresh, Pauly G. and Kluck spent an amazing afternoon with good friends and an abundance of beer at One Well Brewing in Kalamazoo, Michigan. Other friends making the voyage, Ryan Douglas, Jerry Huener, and Ernie sat with One Well’s, Carlos Guzman, for a day of beer and bonding as they learned more about this wondrous brewery. Couldn’t have picked a better spot to spend National Beer Day. Arriving just after lunch, the place was already packed as they quickly learned how much the surrounding community loved and supported this quickly expanding brewery. The child friendly atmosphere has something for everyone of all ages, from pinball and steel tip darts to video and board games, to make your experience at One Well unforgettable and a place you will want to return to as often as possible. Whether you’re a carnivore, vegetarian, or vegan, the menu is stuffed with delicious meals to pair with some fantastic craft beer. Jeremy Nicely of Evil Czech and Holly Cole of New Holland Brewing Company have visited us so often in Indy we kind of feel like family. So it was a must to finally travel to Mishawaka, Indiana and visit with Jeremy in his home at Evil Czech Brewery and Public House. We will be visiting New Holland this summer. Joining us on co-hosting duties this week is John Bahler of The Stampede String Band. We get down and dirty early in this one as we toast the start of the show with a lovely glass of whiskey from Journeyman Distillery which is always available at Evil Czech. Lots covered this week from hearing about Jeremy and Holly’s visit to Colorado for the World Cup of Beer 2016, upcoming events and brews, bad jokes, John’s first job shoveling shit, cannibal sandwiches, and Dougy Fresh realizes he was subjected to child exploitation and illegal child labor as a young boy. Many Evil brews were harmed in the making of this episode including: Luscious Mounds, a coconut, oatmeal milk stout and a delicious Farmhouse Black IPA. If you live in or around Indianapolis, you know the name Sahm, and you know it's synonymous with great food. But young Eddie Sahm didn't want to stop at just providing great food, he dove into the craft beer scene, found a great brew master, and opened Big Lug Canteen in Nora next to another Sahm's great, Rockstone Pizzeria. And along with some fantastic Big Lug brews and grub, for the whiskey lovers, they carry some of the finest of Journeyman Distillery. You feel like your part of the family when you're at Big Lug's and the crowd had just as much fun on this evening as we did. This week on Friday Night Blind Pig Confessions, Jordan and Dougie Fresh sit down in the depths of the Redemption Alewerks brewery with owner, Cameron Fila,and Brew Maestro, Dave Gohr. Not only is Redemption brewing up some of the best beers in town, they have a scrumptious food menu to delight your taste buds as well. (Be sure not to miss the smoked chicken.) A few brews in, counting apparently became a problem for us all, but we had a great time indulging ourselves with some magnificent ales and some humorous conversation. We learn about the passion and what makes these guys tick along with the history behind Redemption and what the future may hold. A pleasure this week to sit with Nick Yoder of Journeyman Distillery in Three Oaks, Michigan during their 4th Anniversary Party. Cowboy and Dougy Fresh could not have been more giddy on this trip. Spent the day before preparing by hitting some fine breweries in Michigan (one of Dougie's favorite, Right Brain Brewery, Jolly Pumpkin, Clam Lake Brewery, Greenbush Brewery). But we could not have had a better time on Saturday at Journeyman for the celebration. Still hard to believe they have only been around for four years and have such amazing spirits. A Journey here will not soon be forgotten. A beautiful old buggy whip factory, originally built by a staunch prohibitionist, EK Warren, set on a historic location with something to offer for every whiskey lover. We were able to enjoy some great live music from Brett Wiscons before sitting down with Nick to talk shop and share a glass of Last Feather Rye. Some special shout outs to our buddy Warren Kluck of Jason Lee and Kluck in the Morning Show, who was enjoying some great food and mixed drinks downstairs with the rest of our clan (Ryan Douglas, Jerry Huener, Jacilynn Ferris), as well as 18th Street Brewery and Central State Brewing in Indianapolis. I tend to think that in many cases you can…most especially in Gin and Rye Whiskey. We’ll talk with Nick Yoder from Journeyman Distillery in Michigan. · MGP Ingredients, in Lawrenceburg, Indiana is a commercial distillery which since 1941 has been offering alcohol for wholesale purchase. Some brands purchase spirits from MGP and bottle it under their own brand name, (sometimes barrel aging &/or other additional processes before bottling). · A Chicago man successfully filed a class-action lawsuit against Templeton Prohibition Era Rye Whiskey for deceptive practices. · Book of the Week: The Negroni, Drinking to La Dolce Vita, with Recipes & Lore by Gary ‘gaz’ Regan · Cocktail of the Week: Rosemary Salted Negroni: o Toast fresh Rosemary and Sea Salt in a pan until the Rosemary releases it fragrance. Discard Rosemary. o Using a sliver of Grapefruit, moisten the rim of an Old Fashioned glass. Dip glass into prepared Rosemary Salt to rim the glass. o Add ice to glass, (ideally one large hand cut ice cube). o In a mixing glass add: § 1 ¼ oz Gin, (I used Journeyman Distillery’s Bilberry Black Heart Gin) § 1 oz Sweet Vermouth, (I used Martinez Lacuesta from Spain § 1 oz Campari § Ice o Stir and strain into prepared glass · On the subject of Craft, during Tales 2015 distiller Chip Tate said during one of the seminars “I love Craft. What is it??!” He talks about how it started with beer and the eat local movements.
