More about Dan Petroski: A decade into his publishing career at Time Inc., Dan Petroski took a moment to reflect and he jettisoned to Italy for a year. This blend really made the day with this great blend of fruit. Expressive aromas of blackberry, dark chocolate, and lightly toasted almonds with a hint of spices and vanilla. The dream of Valette began nearly two decades ago between two brothers. While enjoying a glass of wine on their father's porch overlooking the beautiful Alexander Valley vineyards of Sonoma County, Dustin Valette and Aaron Garzini envisioned opening a restaurant together which would provide a canvas for Sonoma County farmers, winemakers and artisans to showcase their craft. The restaurant would be located in Healdsburg, the heart of Sonoma County – and the location where their great-grandfather operated bakeries. Donald Patz of Secret Door Wines is our guest on California Wine Country with Steve Jaxon and Dan Berger today. He was last on CWC on this October 16, 2019 episode. Donald Patz was a founder and winemaker for the Patz and Hall label for many years, where there were two couples, four partners, making Cardonnay and Pinot Noir from 1988 to 2016. When Ste. Michelle winery in Washington state bought them, he continued working for them for one year, then became independent in 2017. He had a photo of a door in Beijing that he found suggestive and it became the brand and label for Secret Door. “It has been a wonderful transition …” to start again in the business. Today Dan Berger has once again brought a cellar wine to taste. It is a 2008 Shiraz from Maclaren Vale in Australia called D'Arenberg. The wine is called “The Dead Arm” because of the way they prune the vines, one arm of the vine does not produce fruit. All the tannins have resolved, it's 15% alcohol but that doesn't show very much. It is a substantial wine that would go well with BBQ meats. Secret Door Secret Door is 100% Napa Valley Cabernet. The sources are two vineyards, one in Stag's Leap and another in the eastern hills above Lake Hennessey. He makes them as single vineyard designates. This one is the Sage Ridge, from the mountainside vineyard up near Pritchard Hill. This is a particularly steep area, dry and hard to farm. It is a great place for Cabernet. There are aromatic plants, wild sage and pines, growing around and that gives the place a background aroma that comes through. Donald Patz created the three labels to differentiate them. This is Meritana Vineyards which focussess on Russian River Pinot Noir and Chardonnay. The vines were planted in 1967 and the vines are 50 years old, interplanted with other vines. Dan Berger says that the vines really show consistency and varietal characteristics after 20 years. Full malolactic, good structure, would go well with lobster. Dan Berger says that the Meritana label is promising.  Why the separate labels, Harry Duke asks? Donald Patz says it's because they are all truly different and made in different places. Meritana is all for Pinot Noir and Chardonnay while Secret Door is totally focussed on Cabernet. There are some advantages to this, including marketing, since some wine lists may more willingly show three different labels than three wines from the same. Dan Berger points out that in Burgundy, you make Pinot Noir and that's it. But in California you can be in different places and make the same varietal so your mind set is different. The Meritana wines are different than the ones he made at Patz and Hall. Chardonnay uses a lot less new oak, so the wines have a fresher feel, and he uses a lot more whole-clusters in the Pinot Noir which brings out an aromatic character that he likes. Recently I traveled into Alexander Valley and enjoyed some time with Nate Weis at Silver Oak's new state of the art winery .I was amazed at the entire estate and loved my time there.Today we have a new two part feature with Nate Weis and Silver Oak.First we will look at their website,and gather some history and great facts about the two featured wines from the fabled winery. Silver Oak began over a handshake between two friends with a bold vision: focus on one varietal, Cabernet Sauvignon, aged exclusively in American oak and worthy of cellaring for decades to come. Over the next two decades, Silver Oak grew in popularity. Our Napa Valley and Alexander Valley Cabernets sold quickly upon their release from the winery and became a sought-after staple on restaurant wine lists around the country. After selecting Daniel Baron to succeed him as winemaker in 1994, Justin retired, selling his share of Silver Oak to the Duncan family in 2001. In 2006, a fire destroyed our historic Oakville winery. It was a difficult and emotional event; but in hindsight, a blessing in disguise. When we regrouped on the morning of the fire, we knew we had to rebuild, and it wasn't long before the excitement of a new, state-of-the-art winery overcame our sense of loss. Today, we are applying this experience from our LEED Platinum Oakville winery toward a new winery in the Alexander Valley. Set amidst 70 acres of estate vineyards along the rolling foothills of the Mayacamas mountains, our new Alexander Valley winery – set to open for harvest 2017 – will push industry design and innovation standards through alternative energy sources, innovative water reuse systems and reclaimed building materials. Today, we farm more than 400 acres of vines in Napa Valley and Alexander Valley with a leading-edge approach toward precision viticulture, allowing us to give our vines exactly what they need, when they need it. All of our estate vineyards are certified under California's Sustainable Winegrowing program. In 2014, Nate Weis joined us as only the third winemaker in our 45-year history. Nate worked side-by-side with Daniel Baron, just as Daniel worked with Justin Meyer before his retirement. These overlapping tenures ensure the handing down of our commitment to continuous improvement and the wisdom that our best wines are still ahead of us. We have two great wines to discuss.starting with the 2014 Napa Valley Cabernet. The 2014 Napa Valley Cabernet Sauvignon has an opaque crimson color with a purplish hue. The alluring nose draws you in with notes of cassis, black cherry, pipe tobacco, salted caramel, cocoa beans and fresh strawberry. This full-bodied wine enters with a depth of flavor and offers mouth-coating, velvety tannins and flavors of cream soda and red fruit. Black currant and vanilla notes crescendo through the palate to the lengthy finish. This wine is drinkable upon release, but given proper cellaring conditions, can be enjoyed through 2040. we also will open the great Alexander Valley Cabernet from Silver Oak! Located 10 minutes east of downtown Healdsburg at 7300 Hwy 128 in Sonoma County, our new, state-of-the-art winery is now open for walk-in tastings, guided tours and food and wine pairings. Designed to “Frame the Vineyard”, the winery features panoramic views of the Alexander Valley bench and our surrounding 113 acre estate and 75 acres of prime Cabernet Sauvignon vineyard. Upon arrival, guests are welcomed at our modern barn-inspired tasting room adjacent to the iconic Silver Oak water tower. Bibiana González Rave, owner and winemaker of her own label Alma de Cattleya is our guest today, together with Robert Larsen and The Larsen Projekt. Robert has been on the show a few times before. Bibiana was born and raised in Medellin, Colombia, including during some of the most turbulent times there. She went to France to work and study, for 6 years. She came to California in 2004 and she started her brand in 2011 as a showcase of Sonoma and Napa Valley. She does it all, she is the winemaker, sales agent, general manager and also a mother of two. Dan has been writing about wine for more than 40 years, and very rarely does such an impressive wine come in “over the transom” like this one did. Their production is pretty small. They made 300 cases of Rosé, 1000 of SB. She wants to keep affordable price points. Cattleya is the name of an orchid which is the national flower of Columbia. In the name, she wanted to showcase her roots without using her personal name. She is the only Columbian winemaker in the world. They were not a wine making country, they are far from Chile and Argentina, they don’t have seasons, they are more tropical, and they don’t have seasons, so there is no production. That’s why she went to France for her training. Dan says that winemakers who trained in Europe are very respectful of acidity. The wines show a personality in their acidity, and a tiny sip is enough to sense what’s happening. Bibiana has brought a 2017 Chardonnay, Pinot Noir, a Sonoma red blend and a Napa Valley Cab. Each one was aged and barrelled for 15 months. Dan says the Chardonnay is not trying to emulate the richer styles of wine. It is more like a Chablis, with citrus tones and great acidity. Bibiana says the aging was in neutral oak. She loves the complexity from using different clones, Wente and Dijon clones. Dan says this is an astoundingly complex wine, but not in the usual sense. This is subtle complexity. They taste their 2017 Pinot Noir. They label it Sonoma County but it has some Sonoma Coast fruit in it. Dan says it needs to breathe, and it’s very young. It could stand three hours in a decanter. Great Burgundies are not released until they are three or three and a half years old. Bibiana has chosen to use the DIAM cork. These are almost the equivalent of screw caps, as far as security. The seal is excellent, there is no oxygen at all. There are ratings for these corks that measure their impermeability and all the French producers are adopting it. The last bottle Bibiana has brought is the only Napa Valley Cabernet that she makes. Since she trained in France, she knows the style. She wanted it to be priced below average for the region, so this is only $48. Dan detects wild cherries and tobacco flavors in it.

Dan Petroski was born and raised in Brooklyn, NY, and has the swagger and the accent to prove it. After attending Columbia University where he played football, Dan went to work for Time, Inc. While there, he earned his MBA from NYU and worked his way up the ranks towards a promising future in magazine publishing. A good chunk of his tenure at Time was spent managing advertising clients, which involved considerable schmoozing. This is how Dan learned wine, by walking his expense account through the lists of Manhattan’s top restaurants. When the Wall Street Journal tried to poach him, Dan took a moment to reflect. Deciding a change of life was in order, he jettisoned to Sicily for a year, where he interned at Valle dell’Acate. While Dan’s intention was to return to New York to sell wine, a harvest invitation from Andy Smith at DuMOL in 2006 was too good to pass up, and Dan left the city again, this time facing west. After harvest, Andy Smith hired Dan as Cellar Master at Larkmead. The following year, Dan was promoted to Assistant Winemaker, ultimately claiming the Larkmead Winemaker title in 2012. Before cementing his status as a Napa Valley Cabernet winemaker, in 2009 Dan launched a white wine only brand called Massican. Massican is Dan’s ode to the Mediterranean and his time spent living in Italy and drinking white wine. Dan is a gifted, instinctual winemaker, and his old world palate has guided his philosophy on wine. Dan’s approach and ability to craft wines as diverse as Cabernet Sauvignon and Tocai Friulano has earned him the recognition as San Francisco Chronicle’s Winemaker of the Year in 2017. While it doesn't have a huge marketing presence the name Dunn is sure to get the attention of Napa Valley Cabernet lovers. Randy Dunn made his first eponymous Howell Mountain cabernet sauvignon in 1979. Dunn cabernets today aren't all that different from earlier vintages. They eschew the trendy giant style that garners high scores from critics. This doesn't mean Dunn wines are thin by any means. The fruit from Howell mountain makes a wine that is tannic for sure, but once you get beyond that (or let the tannins settle with a bit of aging) the fruit is extraordinarily elegant and complex. Today, Mike Dunn makes the wine at Dunn and fosters his father's vision for this Napa icon.  At the same time Mike has started his own label, Retro. This brand lets Mike explore styles beyond the house style of Dunn with his delicious petite sirah.
