When customers walk into the quaint dining room of Tournesol Cafe & Bakery, they are immediately greeted by the aroma of fresh-baked breads and pastries. And whether they choose a raspberry croissant, chocolate éclair, or tres leches, the decision is bound to be a happy one. Carlos Sanchez is the owner, baker, and chef behind the charming Covington, Louisiana establishment – but he didn't start out to become a maker of culinary magic. Carlos was raised in Central America during an unstable time for his native El Salvador. In 1990, a raging civil war forced his emigration to the United States where he found work washing dishes in a Los Angeles restaurant. When his interest in cooking caught the owner's eye, Carlos' culinary career began. In 2003, he moved to New Orleans where he held such prestigious posts as sous chef to Dominique Rizzo at La Boulangerie, as well as head baker and sous chef of the Donald Link Group. Along the way, Carlos' work was awarded 2017 Best Baguette in New Orleans and 2018 Best Croissant in New Orleans by the Southern Food and Beverage Museum. In 2020, in the midst of the pandemic, Carlos fulfilled his dream of opening his own bakery in Covington. He joined us to talk about Tournesol, and the winding path that brought him there. In Part 1 of our series on water in the Central Valley of California we visited a town called East Orosi, which has been fighting for clean water for over 20 years. This week we turn our attention to their sewage system, which is also falling apart. Why has it been so difficult for East Orosi to get clean drinking water and fix its sewage problems?  To answer that question we take a look at the entities that run things like sewage and water in unincorporated towns all across California. They're called Community Utility Districts. Community Utility Districts are often one of the only forms of self governance in unincorporated towns. But they're staffed by volunteers, they're underfunded, and they're trying to share a vital resource, water, which is also slowly disappearing in the San Joaquin Valley.  We talk about the problems with Community Utility Districts and ways to save them.  Learn more about the story and find the transcript on radioproject.org. On June 10, in the working-class community of Curtis Bay in South Baltimore, over 50 residents, activists, and supporters from around the city marched through the streets of Curtis Bay to hold CSX Transportation accountable for polluting their community, homes, and bodies with toxic coal dust. Even after an expansive scientific study co-sponsored by the Community of Curtis Bay Association, the South Baltimore Community Land Trust, Johns Hopkins University, the University of Maryland, and the Maryland Department of Environment confirmed the presence of coal dust in the air of the South Baltimore community of Curtis Bay, CSX has denied culpability and called the study “materially flawed.” Residents say they're fed up with the company refusing to take responsibility for the coal dust, and with the city government for ignoring their cries for help for years, and they're not going to stay quiet.    “We got to stand together for Curtis Bay, for South Baltimore,” one resident and youth leader, Carlos Sanchez, told the crowd. “We have to remove CSX for the health of our communities.” With other locals watching from their porches, sidewalks, and storefronts, the crowd marched from the Curtis Bay Rec Center all the way up to the gates of the CSX terminal. There, they signed and delivered a giant “Eviction Notice” to CSX, a company that recorded over $10 billion in gross profits last year. The first thing you might realise during a MUSCLECARS set is the sheer musicality of the duo's selections. Vocals glimmer at the centre, unfolding into enchanting, soulful coos, while drums strike captivating rhythms and gilded synths reach towards the sky. It's a jazzy New York house sound mythologised by pioneers like Joe Claussell, Carlos Sanchez and Timmy Regisford (whose songs all make it to this RA Podcast). For years, New York natives Brandon Weems and Craig Handfield have run their Coloring Lessons party as a way to introduce a younger generation to this vital piece of dance music history. In a city that prides itself on fast walking, fast talking and, as of late, fast BPMs, their music is an invitation to ease into a more relaxing pace. This RA Podcast comes at a golden time for MUSCLECARS. “South Baltimore is a sacrifice zone,” Michael Middleton and Dr. Sacoby Wilson wrote in a guest commentary published in Maryland Matters this February. “The six communities that make up South Baltimore—Cherry Hill, Westport, Mt. Winans, Lakeland, Brooklyn, and Curtis Bay—rank in the top 3% of the state for environmental burden using a Maryland Department of the Environment (MDE) screening tool. Curtis Bay, the highest in the state, is Maryland's poster child for environmental injustice. Industrial areas near Curtis Bay house oil tanks, a wastewater treatment plant, chemical plants, landfills, the country's largest medical waste incinerator, and more. Heavy diesel trucks frequent residential streets. The Wagner's Point and Fairfield communities that were once Curtis Bay's neighbors to the east are gone. Those residents accepted buyouts to leave between the 1980s and 2011 after a series of chemical spills and accidents.” In this episode, we continue our “Sacrificed” series by focusing on communities in South Baltimore and a story that quite literally hits close to home, less than half an hour from where Max lives. Doctor Carlos Sanchez has an unusual and challenging caseload of patients. For one thing, they have scales, feathers, horns and fur, and can’t really say where it hurts. But it’s his job to oversee the medical care and treatment of more than a thousand animals (not including fish) as the head veterinarian at Portland’s Oregon Zoo. In our latest installment in our series on professions, we accompany Dr. Sanchez as he makes his daily rounds to check up on some of his favorite patients. He shares with us the special bond he has with them, the invaluable role zoo keepers play in their wellbeing and the fateful encounter he had as a young boy in Mexico City that would forever change his life.

More on Spencer Nelson: AW (AW), OTA (IUSS), EN (EOD) Nelson Spencer's Navy career was as unique as he was and not one that most sailors have the opportunity or fortitude to serve, not then (70s, 80s and 90s) and still not today (2023). He was afforded three (3) different platforms and ratings in his 20 year career. AW-Aviation Antisubmarine Warfare Operator, reflecting a specialization that was clearly born out of Cold War needs to monitor the activities of Soviet submarines. He was stationed in Lajes, Azores where the maritime patrol aircraft crews would gather intelligence by detecting, tracking, classifying, and analyzing both surface and subsurface contacts. OTA-Ocean Systems Technician Analyst, same premise and mission as the AW in him, but he got to do it from land based duty stations, Naval Facilities. He served at NOPF on Ford Island, HI. In 1990, more than 1/2 way thru his career he challenged the EOD physical fitness requirement because he exceeded the maximum allowable age limit, by almost a decade!!!!!! He "sailed" through the requirements and finally found his passion and jov of his career, EOD. He served with Mobile Unit 3 in San Diego until his retirement 26 years ago, 4/30/1997. He deployed on numerous occasions to regions you are all well to knowing of but had the biggest joy.

Welcome to September 29th, 2022 on the National Day Calendar. Today we celebrate Veterans of Foreign Wars and an iconic buzz. The VFW was founded in 1914 by veterans of the Spanish American War and soldiers who had served in the Philippines. The group was created to secure benefits and medical treatments for the sick and wounded veterans. The VFW also enabled veterans to help each other transition from the battlefield to normal life. The organization's motto is “No one does more for Veterans,” and it's easy to see why. No one understands a soldier better than someone who has served in the military. The individual posts also play a big role in their communities through fundraising and community service. On National VFW Day find out more about the organization that honors the fallen by helping the living.   When it comes to brand ambassadors, there are few more iconic than Juan Valdez. This fictional coffee farmer has been the face of the Coffee Growers of Colombia for over 6 decades. And for nearly 40 of those years, Carlos Sanchez portrayed the iconic spokesperson. The Colombian actor had actually been a coffee farmer in his youth, so he fit the role perfectly. With his wide brimmed hat and big smile, Juan Valdez became the center of a worldwide ad campaign that made the character nearly as popular as Colombian coffee itself. Sanchez retired from the role in 2006, but Juan Valdez lives on both as a spokesperson and as a chain of coffee shops.
