Chef Peter Garces didn't open By The Chef Pizza because he needed another job. He built it from the remains of a life that had been completely disrupted. Peter grew up in Brooklyn, where his earliest connection to food came from watching his mother cook. That sense of childhood wonder eventually became a serious culinary pursuit, taking him through culinary school, restaurant kitchens, and some of New York's most respected pizza operations. At Roberta's, he was unexpectedly left alone in front of a thousand-degree oven during a busy lunch rush—and made it through without burning a pie. At Apizza Regionale, the pressure nearly broke him, but it also sharpened his discipline. At Pizza Loves Emily, he saw pizza treated with the same creativity and seriousness as any other culinary craft. Then came Mama's Too. Peter became the primary pizzaiolo during a defining period for the restaurant. The pizzas photographed for its New York Times review were his, and when the review was published, the line wrapped around the block. One night, Peter trusted his instincts, ignored an instruction to limit the display, and filled the window with the full range of pizzas. Jerry Seinfeld walked in, discovered the vodka pie, and kept coming back. Peter finally felt like he belonged. Then his Brooklyn home burned down. The fire took nearly everything and forced him to leave the city that shaped him. When he arrived in Central Florida, his New York résumé did not automatically earn him respect, opportunity, or comparable pay. He had to begin proving himself all over again. With help from his parents, his lifelong friend and business partner Nigel Van Groningen, and the resources of Lakeland's Catapult business incubator, Peter launched a mobile pizza operation and quickly transformed it into a brick-and-mortar restaurant. Today, By The Chef Pizza represents far more than pizza. It carries the discipline Peter learned through martial arts, the knowledge passed down by mentors including Chef JJ Johnson, the experience earned inside demanding New York kitchens, and the belief his father placed in him when Peter needed it most. This episode is about family, fire, craft, resilience, fatherhood, and the difference between opening a restaurant and building a legacy. AI-powered research tools are changing how consumers shop for powersports vehicles, prompting dealers to spend more time explaining financing options and correcting misconceptions about rates, promotions and pricing. Consumers are increasingly arriving at dealerships with information gathered from online searches and AI platforms, creating both opportunities and challenges for finance managers, Fun Bike Center Motorsports Finance Manager Samer Fidy tells Auto Finance News during an episode of “The Roadmap” podcast. “They're coming to confirm the research that they've done online,” he says. At the same time, affordability remains a key factor in powersports financing decisions, with about 80% of the Lakeland, Fla., dealership's customers focused on monthly payments as they evaluate motorcycles, personal watercraft and side-by-sides, Fidy says. AI-driven shopping behavior The preparation consumers are doing is leading finance teams to engage earlier in the buying process, Fidy says. “The monthly payment is key [to] us closing the deal,” he says. While AI tools can help shoppers gather information quickly, they can also create confusion when consumers encounter financing offers, rates or promotions that do not apply to a specific brand, vehicle or lender, Fidy says. “The challenge is people are coming more prepared. They're coming with more knowledge, or they think they know more than we do.”  — Fun Bike Center Motorsports Finance Manager Samer FidyAffordability and financing options At the same time, longer loan terms, including 72- and 84-month financing options, continue to increase in powersports financing, particularly for higher-priced units such as personal watercraft, side-by-sides and premium motorcycles, Fidy says. Dealers now need to spend more time educating first-time buyers about credit, interest rates and financing structures, especially when a powersports purchase represents their first independent financing experience, he added. As AI adoption grows and consumers keep researching before entering a showroom, education is becoming a larger part of the sales and financing process, Fidy says. “I think this will be the new norm,” he says. “That's why it's important to educate your team on the importance of the dealership.”

Striding out from Surprise View, we set the historic context for the emergence of the walking guidebook – the earliest travellers seeking low-level views from Thomas West's formative Guide to the Lakes (1778), and the use of paid mountain guides, often shepherds, taking well-heeled visitors on mountain adventures. ‘Roving Laker' Harriet Martineau's Complete Guide to the English Lakes(1855) was among the first to speak to fell-walkers, Liz tells us, with an ascent description of Fairfield that was – like the woman herself – quietly revolutionary. On the long climb of Cat Gill we discuss the forgotten Victorian colossus of Keswick, Henry Irwin Jenkinson, who compiled the most authoritative guide of its era, his Practical Guide to the English Lake District (1872), in just seven winter months (he would go on to consult on mountain rescues, and organise the Latrigg Fell Mass Trespass of 1887). Entering the age of M. J. B. Baddeley, we turn to his evergreen (tiny type) Thorough Guide to The English Lake District – first published in 1880 and still selling nearly a century later. We consider the democratisation of travel, and walking, in the age of rail, and the changing nature of the guidebook, as fells received dedicated chapters and publishers augmented directions with maps. Atop breezy Walla Crag we talk about the contribution of The Rev. H. H. Symonds – committed to “rescuing scraps of natural beauty” – who published a kind of ‘campaigning guidebook' in his classic highbrow Walking in the Lake District (1933), and the very different books of his contemporary, outdoors advocate W. T. Palmer, who urged readers to get off the beaten track and take walking tours between youth hostels in his Penguin Guide, The Lake District (1939). Finally, on Falcon Crag, after a discussion of Walter Poucher's photographic guides, we arrive at the master himself, Alfred Wainwright, whose uniquely artisanal take on the format turned the guidebook into companionable pocket art. Back at Ashness Bridge, we reflect on the factors that make for the perfect guidebook – portable, easy to use, with an intuitive blend of text and imagery – and ask Liz to name her favourite guidebook; to consider where guidebooks go in the post-AW digital age; and to tell us why Steeple remains aloof in her 214 completer's list.

In this episode, Jennifer sits down with Thomas Brawner, owner and CFO of Alta Schoolhouse in Lakeland, Florida, to talk about what it really looks like to grow with intention. Thomas shares how he made the decision to overstaff his first location so he could create the space to focus on expansion, prepare for a second school, and keep the first one strong at the same time.   Their conversation gets into the real pieces behind that kind of growth: knowing your numbers, making smart tuition decisions, building a team that stays, and learning how to let go of the things that do not all have to stay on your plate. Thomas also talks about something a lot of owners overlook: how much first impressions matter, from your online presence to what families see before they ever walk through the door.
