Uncle B gives us the recipe for the classic(?) Gold Rush cocktail and goes into the history behind the drink, as well as a random jazz session of thoughts. Wild Mediterranean Bramble Ingredients: 45ml The Botanist gin. 20ml fresh lemon juice. 20ml simple syrup. 20ml Creme de Mure. Handful of wild rocket. Handful of nasturtium flowers and leaves. Nasturtium flower and leaf for garnish. The equipment: Glass: old fashioned glass/tumbler. Equipment needed: jigger, cocktail shaker, strainer and bar spoon. Making the cocktail: Combine all the ingredients together in your cocktail shaker. Add ice and give it a few hard shakes until the shaker is too cold to hold. Place a few ice blocks in your tumbler and, using the strainer, strain the liquid into the glass. Pour in the Creme de mure over the back of the cocktail spoon to gain a layered effect [see how to do it in the video], and then add a nasturtium flower as garnish. Suggested side bars: The Botanist Gin. The Botanist is an artisanal islay gin made by Bruichladdich Distillery. It is one of two gins made on Islay, and is distinctive for its 22 hand-foraged Islay botanicals that are added to nine core gin aromatics. Cocktail terminology used for this cocktail: Infuse: a way to impart flavour into a liquid by soaking herbs, spices or fruits in it for a period of time. Jigger: a conical measuring tool used to make single drinks. These are normally 45ml but can vary from 15ml to 60ml. Muddling: using a blunt tool, called a muddler, to mash fruits, sugar or herbs into a drink to impart it's flavours. Shaken: adding the cocktail mix and ice to a shaker and shaking it swiftly - this process chills the cocktail and is a more thorough method of mixing than stirring. Note that it can leave certain ingredients foamy and cloudy. Simple syrup: this basic ingredient of a variety of cocktails is essentially sugar dissolved in water. A botanical can also be added to it. Using simple syrups ensures that you won't have granules of sugar at the bottom of a cocktail glass. Bitters: used in cocktails like old fashioned Martinis, bitters is made of either glycerin or high-proof alcohol mixed with herb blend of leaves, roots, bark, herbs. etc.

Salad Dressings are super easy to make. You get to control the quality of the ingredients and it is fun way to play with flavors. Marie talks about two basic kinds of homemade salad dressings, vinaigrettes and creamy dressings. Vinaigrettes traditionally have a ratio of two parts oil to 1-part acid. I prefer a little less oil and most of my recipes are ½ cup oil to 1/3 cup acid. The acid can be vinegar (red wine, white wine, balsamic, apple cider, rice vinegar) or it can be citrus juice (lemon, lime, grapefruit, orange.) The oil can be olive oil, avocado, grape seed, walnut, almond. Simply mix oil and acid in a lidded jar or old dressing bottle with salt and pepper and shake well. This dressing will separate quickly. If you want your dressing to stay emulsified (mixed together) longer you want to add an emulsifier. Mustard and Mayonnaise are common emulsifiers in salad dressings. Mayo will keep the dressing emulsified longer than mustard, but will add creaminess to the vinaigrette. Sugar is another ingredient that can improve the dressing. It only takes a pinch of sugar or a couple of drops of honey or maple syrup to brighten a dressing. The next time you make a dressing mix it up without adding any sugar and taste it on a lettuce leaf. Then, add a pinch of sugar, mix well, and taste it again. See if you can taste the difference. Creamy dressings still follow the principle of mixing fat and acid. The acid comes from a variety of ingredients including buttermilk, sour cream, and yogurt. If you want your dressing to taste like store-bought, mayonnaise is an essential ingredient. If you are not seeking store-bought flavor, mayonnaise is an optional ingredient. The key to getting “Ranch” flavor is Dill. You need dill for it to taste like ranch. My favorite dressing is Blue Cheese. It is a family favorite as well. When making blue cheese dressing you want to make a salt and garlic paste. This allows the salt and garlic to mix evenly throughout the dressing. This video from Splendid Table shows the technique.   Buttermilk Ranch Dressing 1 Cup Buttermilk (Watch this video to learn how to make homemade buttermilk.) ¼ Cup Mayonnaise 1 teaspoon Coarse Sea Salt ¼ teaspoon Ground Black Pepper 1 Tablespoon Chopped Fresh Dill 1 Tablespoon Chopped Herbs (Thyme, Chives, Basil, Parsley all work well.) Combine all ingredients in a pint jar and stir well. It will keep up to 1 week in the refrigerator.)   Blue Cheese Dressing 1-2 Cloves of Garlic ½ teaspoon Coarse Sea Salt ½ Cup Sour Cream 1/3 Cup Blue Cheese Crumbles 4 teaspoons Fresh Lemon Juice from 1 Lemon Milk or Buttermilk to thin the dressing if you wish. Make a paste with the salt and garlic. Add the paste and the rest of the ingredients to a half-pint mason jar. Stir together. If the dressing is too thick add milk or buttermilk 1 Tablespoon at a time until it reaches the desired consistency.   You can find my Greek Salad Dressing recipe here.

I told you last week that I heard from the fine people at Johnnie Walker.  They are releasing just 39,000 bottles of Johnnie Walker Black The Director’s Cut in conjunction with the release of the film Blade Runner 2049, starring Harrison FordThe film is directed by  Denis Villeneuve who collaborated with Master Blender Jim Beveridge to create this wonderful variation on Johnnie Walker Black.  It’s absolutely delicious.  Smokey like the original, but a little richer, rounder and even a bit fruitier.  Its 49% ABV as opposed to the 40% of the original.  Johnnie Walker Black is a great scotch...a classic, and I really enjoy this riff on it. It comes in a really interesting futuristic bottle. The original Blade Runner Movie was based on the book by Philip K. Dick called: Do Androids Dream of Electric Sheep? So we’ll use that amusing name for our Cocktail of the Week! Do Androids Dream of Electric Sheep? 1 ½ oz Johnnie Walker Black Label The Director’s Cut, (or substitute Johnnie Walker Black Label) ½ oz Barrow’s Intense Ginger Liqueur ½ oz Grilled Pineapple Juice (Juice from slices of Pineapple that have been grilled on each side for 3 mintues.) ½ oz Fresh Lemon Juice ½ oz Honey Syrup (1:1) 1 Dash Fee Brothers Molasses Bitters (or substitute Angostura Aromatic Bitters). Freshly Ground Nutmeg Shake all ingredients except Nutmeg with ice.  Double strain into an Old Fashioned glass with one large ice cube.  Grate a small amount of Nutmeg on top.  Garnish with a wedge of grilled Pineapple, preferably skewered on a Hip-Stirrer Metal Robot Swizzle Cocktail Stirrer.   Industry news from Bar Institute: “This unrelenting hurricane season has already caused unspeakable damage from Texas to the Caribbean. Which according to their web site:  “This Council composed of professionals from across the industry and outside of the industry, will work towards implementing progressive initiatives and monitoring their progress over time. This process will be completely transparent, and each initiative will be documented and made viewable to the public”.   Paul didn’t attend Tales this year as far as I could tell and the 15th TOTC was awesome as always.  It was feeling like the healing was beginning.   Then last week, 9/22/17 the website Neat Pour broke the story that Paul would be returning to the organization.  Ann announced this to the Diversity Council in an email.  The Council was not consulted at all and in fact Diversity Council Co-chair Colin Asare-appiah publicly resigned his post immediately.   There was uproar and lots of posts on FB.  People were pissed off again.   Our friend Jackie Summers, member of USBG NY and proprietor of Sorel Artisinal Liqueur sits on the Diversity Council.   He posted a very detailed note late friday night/ saturday morning that begins “Time for some facts.  Hopefully this will add some clarity”.  I won’d read the entire post but it is clear that Paul’s reinstatement, just 7 months after the original incident was very disturbing to the Diversity Council as well as the community as a whole.   Later in Jackie’s post he says “While I consider whether or not to continue my own future involvement, my concern is that this sequence of actions may prove more divisive than the incident itself.”    As I said, all this happened on Friday.   One day later, on Saturday evening  9/23/17 the following email   Tales of the Cocktail Co-Founders Step Down   “Co-Founders, Ann and Paul Tuennerman, will be transitioning away from their roles in producing the world’s renowned cocktail event, Tales of the Cocktail, effective immediately.   Melissa Young, who has served as Director of Operations for the past nine years will assume the reigns of the operating company behind the event, MOJO911, LLC, as President.”   The press release goes on with a quote from Ann:   "We have devoted our professional careers to the hospitality industry even before the formation of Tales of the Cocktail and the New Orleans Culinary and Cultural Preservation Society).  Our goal has always been to create something lasting that can benefit the industry and the people of New Orleans well beyond our years. This allows that to continue," said Ann R. Tuennerman.)   There is another quote from Paul, but no mention of the controversy or the timing of this decision.   “It has been an honor to spend the last fifteen years working within the industry to create something extraordinary. I am fortunate in that I have had the opportunity to work alongside some amazing bartenders, spirit producers, authors, and educators, from around the globe. While Ann and I have mixed emotions, we are excited about the next chapter in our lives, and look forward to watching the event continue to evolve and flourish,” said Paul G. Tuennerman. So congrats and best of luck to Melissa Young.  She’s a super nice and smart lady and it will be very interesting to see what the future brings for TOTC as the baton is passed to the next generation!   Toast of the Week: May we get what we want, May we get what we need, But may we never get what we deserve.

Stir with ice. Top with Club Soda. Lemon garnish.

The book is filled with variations on the timeless Bloody Mary, plus history and tips for setting up for a Brunch party. There are ideas for Infused vodkas, like Cilantro, Bacon, Shiitake and more. Great book for getting ideas about upping your Bloody Mary game! At the Absolute Bloody Mary Bar there were four or so variations on the Bloody Mary. I choose a green one. There were tons of garnishes to choose from and customize your drink. There displayed them cleverly in hanging mason jars, with a little hand written chalk board behind each.
