On this episode of Taste Buds with Deb, host Debra Eckerling speaks with chocolatier and chocolate educator Ruth Kennison of The Chocolate Project.   Honey represents a sweet Jewish New Year! Why not kick off the calendar year by indulging in chocolate. Just make sure it's the good kind.   “When you're using really good chocolate, it just elevates everything,” explains Kennison, who turned a life-long love of chocolate into her fourth career.    “I thought I'd never had any artistic bone in my body; I was an organizer and a production assistant and all sorts of things,” she says. “And I realized, this form of art combines food, chocolate, and art.”   After her pastry certification and the decision to focus on chocolate, Kennison took a trip to Paris, which led to an origin trip to Mexico. There, Kennison met farmers, saw cacao trees and learned how chocolate was processed from bean to bar.    “Chocolate comes from a fruit [that] grows only 10 to 20 degrees above and below the equator … so it grows in West Africa, Asia, Central America, South America and Mexico,” she explains. “When you open it, [the] white stuff is fruit and it tastes like lychee, and then inside of it are the little cocoa beans that need to be fermented to be made into chocolate.”   The craft chocolate and bean-to-bar movement have made good chocolate more accessible than ever.    “Bean-to-bar makers [are] roasting the beans very low and slow, so you're getting the pure natural flavors of the bean, similar to wine,” she says. “And when that batch of cacao goes away, you'll never have that exact bar again.”   Once you have quality chocolate, there are plenty of things you can make. Kennison likes to use all parts of the cacao, which includes the cocoa nibs. For instance, Kennison loves vanilla soft serve ice cream with homemade caramel sauce, cocoa nibs, and sea salt. She also makes double chocolate chip cookies, and dark chocolate truffles, which you can adapt by adding different flavors.    “It can be a coffee chocolate truffle by steeping coffee in your cream,” she explains. “I just made a London fog truffle with Earl gray and vanilla.”   Ruth Kennison talks about her chocolate-centric career journey, the Jewish-chocolate connection, and the basics of the bean-to-bar movement. Preheat the oven to 200c. Add your ghee to a saucepan over medium-high heat and melt it down. Pour into your mixing bowl, add the 25g pistachio cream and stir together. Allow to cool for 10 minutes, it will be very hot.2. Add the sugar to a bowl, then add the egg and vanilla. Add the flour, baking powder and salt.3. Add the chopped pistachios and dark choc. Mix into the batter. Preheat the oven to 200c. Chill the batter for around 30 minutes, if not longer. Line a large tray (or two) with parchment paper and then scoop out 10 small balls of dough onto the tray, rolling them into neat balls then pressing down into a cookie shape, around 2cm thick.4. Bake for 12 minutes roughly until golden but they will still be very soft. Allow to set for 15-20 minutes before digging in! Episode #173 In this Fasting Q&A episode, Megan Ramos answers some of your fasting questions: Why is it that, when I am consistent with fasting and diet, my PMS and period symptoms (cramps, headaches, and backache) are lessened? Is it to do with insulin? (Jenna from Michigan) [01:30] I keep hearing mixed answers about fasting for PCOS. Some say it's really beneficial and then others tell me to eat 5-6 small meals a day and not to fast or have coffee on an empty stomach because of the cortisol response. Can you clarify please? I feel better when I fast. I'm still only fasting 14-18 hours per day and trying to stick to TRE but I'm afraid I'm making it worse with my cortisol response. Help! (Amy from South Dakota) [02:45] I've been trying to heal my PCOS with ADF for about six weeks now. I have started spotting occasionally and sometimes have shorter periods. Could this mean that my body is healing and trying to self-regulate and get my cycle back to normal? (Sarah from Maryland) [08:12] I take vitamin D daily because my levels were low a few years ago. They have since returned to normal. Since vitamin D is a fat-soluble vitamin, do I have to eat something with it on my fasting days or can I take it without and still get the benefit? (Beth from Nova Scotia) [09:47] Should you eat dark chocolate every day? I read a study that says, “The research findings suggest that eating 48g of 70% dark chocolate each day may help lower fasting glucose levels and reduce insulin resistance.” I've also heard that dark chocolate reduces LDL cholesterol. Do you agree with this? (Michelle from British Columbia) [12:17] I need some mindset help! I am 53 and spent most of my 40s gaining weight. I spent hours and hours every day unhappily thinking about my weight. My doctor told me about TFM and, after four months of TRE and 24,42, 48-hour fasting, I reached my goal weight. I was looking forward to the mind freedom but it's been nine months now and I am still consumed by thoughts about weight and fasting. I eat whole foods, little sugar and processed foods, and fast 24-48 hours three times a week with TRE the rest of the time. I just want the mental freedom that so many people talk about. Help! [14:46] I'm a 40-year-old female and have lost 53 pounds following different protocols but mostly intervals of OMADs 3-4 times a week and 2MADS for nearly two years. Recently, I've also added one 42-hour fast a week. I've noticed that I'm just not hungry. I end up eating based on the planned windows which are scheduled around workouts and a busy schedule. Should I wait for hunger and so extend my fasts further? I feel more like I *want* to eat than *need* to eat. (Michal from Israel) [18:25] I keep hearing that fasting is different for men and women and that women can actually gain weight if we fast at the wrong times. I am a 48-year-old woman. Ingredients:  Cake:  2 1/4 cup Plain Flour 2 1/3 cup Cocoa Powder 1 tsp Baking Powder 1 tsp Baking Soda 1 tsp Sea Salt Flakes 3 1/4 cup Caster Sugar 3 1/4 cup Brown Sugar 3/4 cup Buttermilk 3/4 cup Olive Oil 1.75 oz Baileys Original Irish Cream Liqueur  3 Large Eggs, room temperature 1 cup Boiling Water 1 tsp Instant Coffee Ganache: 1 1/4 cup 70% Dark Chocolate, chopped 1 1/4 cup Double Cream 1 tbsp Baileys Original Irish Cream Liqueur   pinch of Sea Salt Flakes Recipe: Cake: Preheat the oven to 320°F. Grease two 8-in cake tins with olive oil, then line with parchment paper. Sift and measure all the dry cake mix ingredients into a large bowl and stir together with a whisk to fully combine. Combine all the wet cake mix ingredients, except the water and coffee, into a large bowl and whisk together. Make the coffee in a cup with the measured boiling water and instant coffee. Pour that into the wet ingredients bowl and stir well. Then, add the dry mix to the wet mix and stir well with a whisk to combine. Divide the mixture evenly between the prepared tins. Bake for 30-35 minutes, or until a skewer inserted comes out clean. Remove from the oven and allow to cool in the tin for 20 minutes before flipping onto a wire rack. Allow to cool completely. Ganache:  To make the ganache, put the chocolate, Baileys and the salt in a large heatproof bowl. In a heavy based saucepan, heat the cream until steaming but not boiling. Then, pour the hot cream over the chocolate and leave to stand for 1 minute. Stir the ganache using a whisk until smooth and glossy. Let the ganache sit for 10 minutes to cool and thicken slightly. Place the cooled cake on a large plate with a lip. Spoon over enough ganache to cover the top. Place the next cake on top. Pour the remaining ganache all over the top of the cake. Use a spoon or a small offset palette knife to guide the ganache over and down the sides of the cake. Put the cake in the fridge for 30 minutes. Remove the cake from the fridge and, using a small offset palette knife or a spoon, scoop up the set ganache from the plate and spread over the sides to create a smooth finish. Product Safety Alert: UNREAL Club Size Bag Dark Chocolate Caramel Peanut Nougat BarsIt has come to the attention of the Gluten Intolerance Group that certain packages of UNREAL Club Size Bag Dark Chocolate Caramel Peanut Nougat Bars may pose a concern regarding product safety. Some packages of these bars have been found to list Organic Spelt Flour as an ingredient on the outer packaging, while the individually wrapped bars inside display the GFCO logo. After engaging with UNREAL, we have identified this discrepancy as a packaging error, where old outer packaging was used on a newly formulated product that has been GFCO-certified. Unreal assures GFCO that the product meets the GFCO certification standards and is certified. GFCO has not completed the testing to verify this.In an abundance of caution, the GFCO is issuing this safety alert to inform consumers. In a double boiler (a bowl set up over a saucepan of boiling water), melt thechocolate and stir in the almond butter and salt with a whisk until smooth. Removefrom heat and set aside.2. Lightly toast the almond slices in 1 teaspoon coconut oil until fragrant, or dry toast.3. In a food processor, mix the avocado, cocoa powder and maple syrup until smooth.Once the chocolate mixture has cooled slightly (but not solidified!), use a spatula toadd it to the food processor. Process until it is well-combined and starts to get verythick (as the chocolate cools).4. Scrape the mixture into an 8x8 parchment-lined or silicone pan with a spatula andsmooth the top. Sprinkle liberally with coarse sea salt, then press almonds into thetop. Place in the fridge and allow to cool for an hour.
