How do you build a globally scaled seafood company rooted in ancient Japanese techniques, humane animal treatment, and radical transparency – all before the age of 26? Meet Saif Khawaja, the founder and CEO of Seremoni, a startup that's reinventing the seafood industry from the ground up. Launched in 2024, Seremoni is a vertically integrated company setting a new benchmark for quality and ethics in seafood by merging time-honored Japanese craft with cutting-edge technology. To bring his vision to life, Saif assembled a dream team: engineers from SpaceX, veterans from premium seafood brands, and small-scale fishermen from across the globe. His mission? To build a new kind of supply chain – one powered by empathy, precision engineering, and economic equity – and to make Michelin-quality seafood accessible to everyone. In this episode, Saif shares how a Wharton thesis and a philosophical reckoning ignited a radical idea. He walks us through the early days of grit and experimentation, the challenges of leading teams twice his age, and why he believes world-changing companies are often born from deep moral conviction, not spreadsheets. Show notes: 0:25: Saif Khawaja, Founder & CEO, Seremoni – Saif opens up about how reading Peter Singer's essay “If Fish Could Scream” profoundly impacted him and inspired the development of Seremoni and how his hands-on experience as a commercial fisherman exposed him to artisanal methods and the biology of how stress affects flavor and decomposition in fish. He talks about how the company's tools and robotics scale ikejime techniques in the U.S., pursuing vertical integration to ensure quality and pay fishermen more fairly, and how he convinced investors, chefs and retailers to buy into his vision. Saif also discusses his management of a growing team of over 30 people, and how he is building a values-driven movement that is guided by a strong moral compass. Brands in this episode: Seremoni, Ōra, Oishii

AI applications in vertical farming have the potential to usher in a new model that not only yields a high volume of quality product, but also offers a much smaller carbon footprint in terms of resources and the space necessary to deploy them. By incorporating AI, robotics and vertically stacked crops in controlled environmental conditions, the vertical farming model might be a gamechanger in the agricultural sector. Hiroki Koga, co-founder and CEO of Oishii, the company behind the world's largest indoor vertical farm, joins The Excerpt to share his insights into how AI is transforming farming potential. Y Combinator has become arguably the most powerful force in tech. It touts that five-and-a-half of the startups that have participated in it have become unicorns . . . which is at least double that of rival accelerators such as TechStars and 500 Global. But it started suffering from exactly the kind of corporate bloat that its founder Paul Graham abhorred. Current president and CEO Garry Tan—who also happens to be a YC alum—took over last January and promised to reclaim YC's roots and focus on serving early-stage founders. Here's Fast Company senior writer Ainsley Harris to help fill us in on the behind-the-scenes action. In theory, there are a lot of benefits to indoor farming . . . they often use 90% less water than traditional farms and can produce year-round crops, but we've also seen a whole bunch of companies like AeroFarms, AppHarvest, and others really struggle to make the unit economics work. We wanted to hear from Oishii cofounder and CEO Hiroki Koga. His luxury strawberries can be purchased at Whole Foods for $15. Here, he talks about the challenges of vertical farming, and explains why he recently raised a whopping $134 million to expand his operation.

I know, I too love the "Is It Cake!?" insanity and I'm so glad you're here to enjoy with us. We talk about our favorite restaurants, we talk Asian cuisine, we learn about what to expect from Oishii over the next year and also how Fat Ben got his nickname! Thanks for tuning in!
In this Best Possible Taste interview, Sharon Noonan talks to Ciara Troy, founder of Oishii Foods Ltd. Launched in 2006 by Ciara Troy, Oishii (meaning ‘delicious') Sushi is Ireland's leading artisan producer of a premium ready to eat sushi range. The business has weathered countless storms – challenges brought about by Brexit and Covid were quickly followed with rising raw material costs, supply chain issues and sky-high energy bills. However, Ciara and her team have demonstrated grit and resilience in protecting the business, focussing on growth, and improving efficiencies. This has resulted in an impressive 24 months of growth, with sales increasing by 130%. The business added more retail outlets to their distribution channels which generated new customers, not only nationwide in ROI but also across the border in Northern Ireland where Oishii sushi has been selling for more than 18 months. 20 years have passed since the horrendous events of 9/11. It feels like ages ago, and at the same time, just like yesterday. For most of us, thinking back on 9/11 brings back sad memories of a vulnerable time for our nation. However, for Arab-Americans, those feelings go even further because there is a clear delineation between life before and life after 9/11 in terms of how welcome and accepted they have felt by American society. In honor of the 20th anniversary of this landmark day, we invite Arab-American guests Anna Masad and Ziad Elsahili to discuss their memories of 9/11, and the impact that the consequent Islamaphobia ignited by that date has had on their lives immediately after the incident, as well as the continuing biases they face to this day. From being racially profiled at airport security because of their names to explicitly being called derogatory terms for cheap laughs, we discuss all the subtle and direct ways that being Arab in America is distinct from the experiences of those from other communities. On a more positive note, we end the episode by discussing ways in which we see hope for more acceptance of the diverse range of communities in the U.S. as a result of the more open conversations we as a nation are having around race relations, diverse perspectives, and generally thinking outside of oneself. ---- For those still reading, let's dedicate a moment of silence and respect to all those who have lost their lives, family, and friends on 9/11 and in the 20 year long war we're finally closing the chapter on. Thank you to all the heroes who have fought for, and continue to fight to keep our country and our allies safe. ------- Season 4 Partner - 5AM Ramen: Use our discount code: REALLYFROM5 at checkout on instantramen.jp to get 5% off your order + free worldwide shipping of premium, curated instant ramen shipped direct from Japan. Have you heard of the "lie flat" or "tang ping" movement in China? It's a movement among young people that first cropped up in April 2021 largely in reaction to China's infamous 9/9/6 culture (working from 9am-9pm, 6 days/week), and has since been reported on widely by western and eastern media. Young people are rejecting the ideas they've been sold on what makes for success and happiness - constantly hustling at work to move up the ladder (even at the expense of your personal life and mental well-being), marriage, family, owning property, etc. Instead, they favor living a life in which they are getting by, but not striving for much more. In this episode, we dissect what this movement is, we speculate about why it came to be and how prevalent it really is, and we relate the sentiment back to our own struggles in terms of the pressures facing the millennial and Gen Z generations of conforming to a traditional definition of success and happiness. We end the episode by postulating what our own definitions of happiness are. ------- Season 4 Partner - 5AM Ramen: Use our discount code: REALLYFROM5 at checkout on instantramen.jp to get 5% off your order + free worldwide shipping of premium, curated instant ramen shipped direct from Japan. Hiroki Koga, CEO, and co-founder of Oishii, shares his inspirational story on today's episode of Tech Talks Daily. Oishii is the company behind the world's largest indoor vertical strawberry farm, where Hiroki is on a mission to transform the future of farming/agriculture and make the most delicious and healthy produce available to everyone. With continued tech innovations, indoor vertical farming is becoming a more sustainable farming practice and a better way to cultivate fruits/vegetables at any time of the year with less land and water. Hiroki and his team have been able to marry ancient Japanese farming techniques with modern AI/ML technologies, which has allowed them to produce their Omakase Berry. A Japanese varietal is known for its sweetness, creamy texture, and aroma. The Omakase Berry is an example of cultivating tasty, nutrient-rich fruits while keeping sustainability a top priority. Hiroki shares the technology behind the vertical farming world, the precise technologies needed, and its potential in providing communities with hyper-local and organic fruits/vegetables with little to no carbon footprint. I also learned how Oishii incorporated AI and machine learning technologies with rigorous farming practices to develop a first-of-its-kind pollination method conducted naturally with bees.
We've spent a lot of time investigating our own perspectives of what it means to be Asian American. But what does being Asian American mean to other Asians across the world, and how does the larger Asian diaspora think of race and identity? We're joined this week by Cherrie from With Chinese Characteristics podcast to dive into this topic. We kick off the episode by asking Cherrie to explain her experience transitioning from the majority in China to a minority individual in the US. Along the way, we ask her to reveal the most amusing and the wackiest experiences she has had as an Asian American individual. We also look into how the disparate ethnic groups in China think of each other, and how socioeconomic divides reinforce divisions between and within ethnic groups. Join us at the close for the Fortune Cookie, where we ask Cherrie to spill the secrets on how Asians in Asia really perceive Asian Americans. You can listen to With Chinese Characteristics podcast on all major podcast networks! With Chinese Characteristics is a podcast where co-hosts Cherrie and Natalie discuss interesting topics involving China and Asian-Americans. ------- Season 4 Partner - 5AM Ramen: Use our discount code: REALLYFROM5 at checkout on instantramen.jp to get 5% off your order + free worldwide shipping of premium, curated instant ramen shipped direct from Japan. The idea of "saving face" is so foundational to Chinese and broader Asian culture that it's often difficult to accurately describe in English words and within a western context. Shame? Disgrace? The opposite of bringing honor to your family/community? How do you explain the importance and impact of such an underlying, community-first concept to a "me first" western society? In this episode we break down what "saving face" or avoiding "diu lian" (in Mandarin) means to us, how it's driven some of our big life decisions, and the amount of pride or disappointment those decisions have brought onto our families and communities. Though we don't agree with everything around the idea of saving face, we also discuss some positive elements of this concept that we think are valuable and that we would want to pass on to future generations. ------- Season 4 Partner - 5AM Ramen: Use our discount code: REALLYFROM5 at checkout on instantramen.jp to get 5% off your order + free worldwide shipping of premium, curated instant ramen shipped direct from Japan. Acupuncture, gua sha, ashwaganda - as a lot of East/South Asian medicine become more popularized in western society, we wanted to discuss what happens when East meets West. This week we discuss Chinese medicine, Ayurvedic medicine, and "traditional" aka western medicine with special guest, Dr. Sandeepa Mullady, an Indian-American neurologist who is trained in western medicine but who is very spiritually-centered and grew up seeing Ayurvedic doctors. We discuss how the thousand years-long practices from Eastern medicine are focused on preventative care, maintaining the balance of mind, body, and soul, whereas western medicine continues to make impressive technological advances but is largely focused on fixing what is already broken. How have these two sides of medicine started to integrate with each other, and what benefits can we gain from utilizing both? Listen in to find out! Note: Opinions of Dr. Sandeepa Mullady are her own and not affiliated with her place of work. ------- Season 4 Partner - 5AM Ramen: Use our discount code: REALLYFROM5 at checkout on instantramen.jp to get 5% off your order + free worldwide shipping of premium, curated instant ramen shipped direct from Japan. Dating can be a minefield of expectations, both from yourself and from your culture. This week we're exploring what it means to date outside the race, and why we would want to (hint, hint: societal pressures growing up telling us what was attractive played a huge part). While our parents had expectations of who we should be courting, the reality of not living in our motherland is that those expectations tended to fall really short. We dive into this and other ideals our parents had about who we should date based on their cultural upbringing. And we certainly brought our own glamorized images of our potential partners to the table, omitting many of the challenges that come with dating someone who comes from a different background. We look into these internal goalposts and how they influenced our desire to (or not to) date outside of the race. Lastly, listen to the end to hear about the most difficult cultural concepts we've had to explain to our partners in the closing Fortune Cookie. ------- Season 4 Partner - 5AM Ramen: Use our discount code: REALLYFROM5 at checkout on instantramen.jp to get 5% off your order + free worldwide shipping of premium, curated instant ramen shipped direct from Japan. We always like to end on a sweet treat, but why not dedicate an entire episode to one? This week we're talking about boba or bubble tea - the delicious dessert imported from our motherland Taiwan. Prepare for a history lesson, as we open the episode with a look into how boba came to be and how it found its way to the United States. As such a ubiquitous treat, we discuss how this tasty snack is actually entangled with Asian culture both here for Asian-Americans and in Asia where it originated. Of course with its rising popularity, many new shops have taken boba to the extreme - and we review all of these new fads. Finally, we share our favorite boba orders with you, listeners - try them out! ------- Season 4 Partner - 5AM Ramen: Use our discount code: REALLYFROM5 at checkout on instantramen.jp to get 5% off your order + free worldwide shipping of premium, curated instant ramen shipped direct from Japan. Welcome to Episode 85 of the Asian Hustle Network Podcast! We are very excited to have Hiroki Koga on this week's episode. We interview Asian entrepreneurs around the world to amplify their voices and empower Asians to pursue their dreams and goals. We believe that each person has a message and a unique story from their entrepreneurial journey that they can share with all of us. Check us out on Anchor, iTunes, Stitcher, Google Play Music, TuneIn, Spotify, and more. If you enjoyed this episode, please subscribe and leave us a positive 5-star review. This is our opportunity to use the voices of the Asian community and share these incredible stories with the world. We release a new episode every Wednesday, so stay tuned! The U.S. agriculture industry is constantly evolving as technological innovations continue to change the way we cultivate food, and shift consumers' attitudes on the importance of eating fresh and organic produce. Recently, indoor vertical farming has further proven its potential to support communities with hyper-locally grown produce while being rich in nutrients and taste. The first thing Hiroki Koga instantly noticed when he moved to the United States from Japan – where fruit such as strawberries are a delicacy – is that produce in the U.S. is less flavorful than what he was accustomed to growing up in Japan since the U.S. agriculture industry prioritizes yield and shelf life over taste and nutrition. Since then, Hiroki has made it his mission to bring the finest Japanese strawberries to the U.S. consumer market and founded Oishii – the company behind the world's largest indoor vertical strawberry farm and the Omakase Berry – in 2016 while he was pursuing his MBA at the University of California, Berkeley. With Hiroki's leadership and knowledge of ancient Japanese farming techniques, Oishii is the only player in the industry to produce pollinated fruit using AI and machine learning technologies at a commercial scale – considered the most sophisticated crops to grow indoors because of long cultivation cycles – while using zero pesticides to produce perfectly ripe, delicious strawberries year-round for consumers. Have you ever wondered what your college degree has done for you? Well, so have we! It has been such a contentious topic that we decided to turn it into an episode! This week we're talking all about college education - our personal experiences as well as our perspective on how our parents viewed it. We discuss the investment versus payoff of matriculating at a name-brand school, both from an undergraduate and graduate level. We also dive into what we actually got out of education, whether it's actual knowledge or just street knowledge. Finally, we take a look at popular new forms of education and how that could transform the traditional Asian studies pathway into something more. Sushi and sashimi are by now a global sensation and have become perhaps the best known of Japanese foods—but they are also the most widely misunderstood. Oishii: The History of Sushi (Reaktion Books, 2020) reveals that sushi began as a fermented food with a sour taste, used as a means to preserve fish. This book, the first history of sushi in English, traces sushi's development from China to Japan and then internationally, and from street food to high-class cuisine. Included are two dozen historical and original recipes that show the diversity of sushi and how to prepare it. Written by an expert on Japanese food history, Oishii is a must read for understanding sushi's past, its variety and sustainability, and how it became one of the world's greatest anonymous cuisines. In honor of 4th of July, we wanted to examine where we are as a nation and if there's still hope for all of us to come back together after a very divisive past 4+ years... We discuss an often underrepresented (up to half) of the country that self-identify as independents, moderates, and/or centrists, and how a lack of strong identification with either extreme of the political spectrum has left many of them feeling underrepresented by the two-party system. We also discuss some hot button current issues (further restrictions on voting, $15 minimum wage), and how there is a lot to agree on in terms of the problem and the desire to find a solution, but where we often get stuck is the *how* and a lack of a trust in our elected officials to properly execute on these visions. We end things by postulating on if we feel hopeful for our country coming back together in a less divisive way in the future (spoiler alert: we do, with time). As always, we are not proclaiming to be experts on these matters by any means, and we always welcome feedback, especially from those who are much more informed! All discussion is simply our personal opinion on these matters :) ------- Season 4 Partner - 5AM Ramen: Use our discount code: REALLYFROM5 at checkout on instantramen.jp to get 5% off your order + free worldwide shipping of premium, curated instant ramen shipped direct from Japan. Meet Joel Gaines. Listening to Joel's music is like tasting Gumbo for the very first time. There are so many delicious flavors happening all at once! A quarter cup of World music, blended with a pinch of Rock and a dash of Pop, and all held together with the main seasoning of Contemporary Jazz! The Japanese have a word that perfectly describes Joel's music and style. The word is Oishii, which means, "Delicious!" The keyboard virtuosity of Joel Gaines will quickly become evident, but what will come as a most pleasant surprise is the fact that Joel also has a warm and inviting vocal style, often compared to that of vocalist like Al Jarreau and Bobby McFerrin. Yes, Joel has toured around the world, accompanying musical giants such as Gladys Knight, Anita Baker, Ronnie Laws, Barry White, Chaka Khan, Donna Summer, Tony Orlando and Dawn, Melba Moore, The Platters, Sister Sledge, Bobby Vinton, The Temptations, Jean Carn, Billy Paul, Vesta Williams, Ali Woodson (former lead vocalist of The Temptations), Michael Wycoff, The Coasters, Cheryl Lynn has not surprisingly enjoyed working in the fields of Blues and Gospel, playing with the legendary Lowell Fulson, and the inspirational and dynamic Winans. And he currently plays keyboards for the legendary group known as The Jazz Crusaders but has made his rounds with world class jazz and smooth jazz artists such as Kenny G, Rick Braun, Brian Culberson, The Crusaders, Ronnie Laws, Jon Lucien, Bob Mamet, Eric Marienthal, Bryan Savage, Bennie Golson, Tootie Heath, Clifford Jordon, Bennie Maupin, Alphonse Mouson, Flora Purim, Karen Briggs, Eric Darius, and famed Jazz violinist, Noel Webb.
