With a degree in Business Administration and a minor in Airline Travel, my guest aspired to become a travel agent. After receiving several rejection letters from airlines, she applied to Club Med. In 1989, she began her first season as a Traffic G.O. at Club Med Sandpiper in 1989, where she met her future husband. My guest today worked for Club Med from 1987 to 1990. She began her journey as a Hostess at Club Med Cancun and went on to work in stunning locations like Moorea, Guadeloupe, Paradise Island, Sandpiper, and aboard the Club Med 1 in 1990. A graduate of San Jose State University with a degree in Marketing and Communications, Tiffani first discovered Club Med during a summer break from college. Throughout the episode, you will be guided through the South Fork of the Snake, learning not only where and when to fish a double dry fly setup but also mastering the art of reading water and setting the hook. Whether you're an avid fly fishing enthusiast or a curious beginner, Scott's tips on drift boat fishing and exploring small creeks will equip you with the tools to enhance your fly fishing adventures. Episode Chapters with Scott Reimer on The Lodge at Palisades Creek 2:07 - Scott recalls his first encounter with fly fishing in the Black Hills of South Dakota, where he received his first fly rod at the age of four or five. Encouraged by his father, who was an avid fly fisherman, Scott honed his skills in the backyard with a makeshift target practice involving a piece of pipe cleaner and a trash can lid. 4:23 - Scott discusses the guiding season, which typically begins in April when he starts assisting at the fly shop and occasionally running trips, depending on the weather and interest from clients. The main focus of their guiding is on the South Fork of the Snake River, as they hold a permit that allows them to operate there exclusively due to Idaho's strict regulations. 6:34 - We discuss the geography of the area, noting the confluence of the South Fork and Henry's Fork, which marks the beginning of the main Snake River. Scott clarifies that American Falls is approximately 60 to 70 river miles from this confluence. 9:19 - Our chat delves into the impact of hatches on fishing success. Scott explains that fish behavior is closely tied to these natural events, influencing when and where they bite. While some hatches are predictable, others have become less prolific, affecting fishing strategies. 10:02 - Scott shares his journey and experiences as a guide at the lodge, where he has been working for 12 years. He recounts his early days on the river, starting with his first drift boat, an older Clackacraft he acquired at the age of 18. Despite its imperfect condition, with visible repairs and missing parts, it served its purpose and floated well. 12:06 - He discusses the various hatches that anglers eagerly anticipate throughout the fishing season. He mentions the early spring betas, noting that while trout don't often feed on them from the surface, streamer fishing can be effective during this period. As the season progresses into mid-June, anglers can expect a short but excellent green Drake hatch, primarily on the lower river. 13:11 - Scott explains his approach to determining fishing techniques, often starting with a dry dropper setup and adjusting based on fish activity. He shares a memorable experience from the previous season, where he successfully used double dry fly setups for several weeks following the salmon fly hatch, with fish heavily focused on caddis patterns. This technique involved using different sizes and patterns of caddis flies for effective fishing. 14:07 - We get into his double dry fly set up. Scott explains the strategy behind using a larger, more visible dry fly alongside a smaller, less visible one to keep track of potential bites while fishing from a boat. This setup helps maintain visibility and improve the chances of a catch. 18:09 - Scott talks about the logistics and characteristics of the sections near Palisades Dam. He explains that the fishing area is divided into four sections, covering approximately 66 river miles down to Menan. The colder waters from the dam influence the timing of hatches, with the upper section starting later than the lower sections. 19:40 - He shares some essential tips for fishing from a drift boat, especially focusing on the South Fork. As a rower, his primary role is to maintain the drift and guide anglers on when to recast. He advises keeping a 45-degree forward casting angle to maximize success, as casting behind the boat is less effective. Scott notes that on the South Fork, long casts are unnecessary because shorter casts near the boat can be just as fruitful. 21:11 - We discuss how the salmon fly hatch typically occurs in July, followed by the appearance of golden stones, which progress from the lower river upwards. Scott reminisces about a particularly good salmon fly hatch, recalling fishing well into August with these flies. As the season progresses, anglers can expect a variety of mayflies such as PMDs, sulfur duns, and mahogany duns, especially on overcast days. Towards the end of August, the unique mutant stonefly emerges which are best fished in the early morning. Scott shares the excitement of early morning fishing programs, where anglers start at dawn to target these skittering insects using patterns like Dornan's Water Walker. 23:16 - Scott shares insights into the best fishing practices, emphasizing the importance of water temperature and timing. He recommends fishing with stonefly nymphs, such as patched rubber legs, when water temperatures approach 50 degrees, just before the hatch. This period, often in June, is prime for targeting stonefly nymphs before the larger hatch in July. 28:20 - The conversation highlights the differences between the rivers, with the Henry's Fork experiencing hatches earlier due to its status as a tailwater. 32:30 - Scott shares that Henry Winkler and his wife Stacy are frequent visitors to the area, with Stacy often being guided by Scott himself. They fish separately to enjoy the prime position at the front of the boat, which is typically the best spot because guides naturally focus on the forward drift. This strategy gives the angler in the front the first opportunity at the catch, especially effective when using a double dry fly setup. 37:32 - Scott shares insights into techniques, particularly when navigating new water or changing conditions. He emphasizes the importance of adapting techniques based on the fish's behavior and water conditions. He advises getting the fly close to the bank, especially when fishing with a single dry fly, as fish might be hiding in submerged grass. However, after certain hatches, fish tend to move to seam lines, making a dry dropper setup more effective. Scott suggests adjusting your approach if fish are not biting, such as changing the depth or the type of flies used. He describes using a double dropper setup, with a big dry fly and a couple of feet to the first dropper, and even adding an unweighted pheasant tail nymph if necessary. He notes that fish behavior can change rapidly, sometimes overnight, requiring anglers to frequently modify their strategies to find success. 39:09 - Scott highlights the significance of local fly shops, such as the Swan Valley, for current fishing insights and guidance. 41:15 - We ask how anglers can avoid missing strikes when fishing with a nymph. Scott emphasizes the importance of setting the hook frequently, noting that "sets are free." He advises that if something seems suspicious with the dry fly, anglers should set the hook without hesitation. Treating the set like a recast means they won't lose much time, and although it might not always be a fish, there's always the possibility that it is. 44:40 - Scott shares his bucket list trips, highlighting New Zealand and Patagonia as top destinations for their exotic fishing opportunities, including the elusive peacock bass. 45:00 - The conversation shifts to Scott's personal experiences with steelhead fishing. He frequently spends time at the Clearwater and Salmon Rivers, with both offering unique challenges and rewards. 47:46 - We talk about the logistics and planning required if you're planning to fish during the prime salmon fly hatch season on the South Fork of the Snake River. Below are some key things to remember: Lodging Guest Advantage: Guests staying at lodges have booking priority. They can reserve trips up to a year in advance when they are checking out, ensuring their spot for the next season. Day Trip Bookings: While day trips are available, they typically fill in the gaps left by lodging guests. Booking for day trips usually opens in April, and availability is limited. Guide Preferences: Lodging guests have the flexibility to select their preferred guides. Day trip customers, however, might need to go with whichever guide is available at the time of their booking. 49:18 - Scott walks us through their lodge. The lodge is set on a 26-acre property featuring a private pond stocked with large trout, fed by a spring creek that runs through the grounds. Guests can stay in various cabins, including a unique cabin with a porch extending over the river, providing an exceptional view. They offer dining with breakfast and dinner, and guests have access to a dedicated staff ensuring a great experience with cocktails and excellent food. 53:08 - We ask some random questions such as his music preference, restaurant recommendations, among others. My guest today had an impressive career at Club Med, spanning from 1985 to 2000. His journey began as a 20-year-old Texas A&M university student on summer break, visiting Club Med Paradise Island as a G.M. and inspired by his uncle who worked for Club Med for seven years. His first season as a G.O. was at Club Med Paradise Island, where he specialized in Sailing and Windsurfing. Over the years, he took on roles including Chief of Sports, Public Relations, Annex Restaurant Manager, and ultimately, Chief of Village. His career led him to stunning destinations like Tahiti, Greece, Thailand, Turkey, Malaysia, and France. Who else could I be talking about?! Along the coast of Sinaloa in México, there are species of shorebirds with one of the longest migrations in the Western Hemisphere. One such species is the Western Sandpiper, here known as el playerito occidental, wants to eat. But wetland habitats where they find their food are affected by the shrimp farming industry. My Guest today worked for Club Med from 1987 to 1992 and his first season was as a Snorkeling and Picnic G.O. in Club Med Paradise Island. He worked in Club Med resorts such as Eleuthera, Sandpiper, Turks and Caicos, and Sonora Bay. When he applied for his dream job, his application was sent back to him from Club Med with the note, “Not interested”. My guest did not take this lying down and you will hear what he did to change their mind! Even after he stopped working for Club Med, he continued to visit Club Med on vacation and has visited over 20 resorts! From beautiful California, please help me welcome, Brian Cargille! Brian attended UC Irvine, obtained a degree in Economics, earned a Master's from Indiana University, and did graduate work at Stanford in Industrial Engineering. A male Buff-breasted Sandpiper courts a female on their breeding grounds far north of the Arctic Circle. He raises his wings, flashing their silvery-white undersides, as he sings his clicking serenade. These birds spend much of the year on grasslands in Argentina, migrating to the Arctic in late spring. In the lower 48, September is a good time to look for this long-distance traveler. During migration, they show a distinct preference for grassy expanses such as pastures and rice fields. She held other positions such as Fitness, Landsports, Sailing, Circus, Events and Animation, and Sports Manager. Before Club Med, she attended the University of New Haven and earned a Sports Management and Nutrition and Dietetics degree. While at university, she was on the track and field team, competing in the Pole Vault! Fun facts: She was born in Sydney, Australia, and moved to the United States in 2001. Her name means “laughter” in Aboriginal, and she has competed in American Jiu-Jitsu and Gymnastics. Please help me welcome, the one and only, Keira Mezei! Keira's journey to Club Med is unique. For much of her youth, Keira attended summer camp in the Poconos. She met her best friend there (who is from England) and when they both aged out of camp, they promised to meet in a different country around the world each year. Her friend came up with the idea to apply to Club Med to be able to work and travel at the same time. Keira also worked at the Club Med villages of Turks and Caicos and Sandpiper and has fond memories of her time there. Keira learned to sail in Club Med and became proficient at certain circus show acts such as Double Hammock, Lyra, Rings, and Chains. My guest today worked for Club Med from 2013 to 2019 and her first season was in Club Med Sandpiper as a Mini Club G.O. She later became a Costume Designer and worked in Turks and Caicos and Punta Cana. Before Club Med, she studied Art Education at Belmont University in Nashville, Tennessee where she is from. She was also an extra in various music videos filmed in Nashville and of course, I have to know what that was like! Lindsey's first season in 2013 at Sandpiper coincided with a Nike rental village, a Junior Tennis Player tournament, a “fake” G.O. wedding, a Make-A-Wish Foundation fundraiser, and a Rick Springfield rental village! Lindsey also might be only one of a few G.O.s to turn down the opportunity to work in Asia after their first season. Lindsey's stories range from appearing as an extra in the 2010 movie Country Strong, starring Gwyneth Paltrow to having an incident with six suitcases at Customs at Club Med Turks and Caicos in 2018 and so many more! Kara's Club Med journey began in Club Med Sandpiper in 2010 and ended in that same resort in 2017. Kara shares some of her many stories with us, starting as a choreographer to later pulling double duty as both a choreographer and Entertainment Manager in Yabuli and Dong'ao. Kara shares some of the cross-cultural adjustments she had to make while in China and recounts the story of meeting and falling in love with her husband, who was the Chief of Sports, in Dong'ao. Between contracts, Kara backpacked for eight months in Asia, Europe, the UK, and the United States. After her time in Club Med, Kara went on an eight-month road trip in a Subaru through the States, Mexico, and Canada. While in Club Med, she got certified in scuba and learned how to do the Spanish Web and Lyra. Despite Kara choosing 1984's Footloose over my beloved Center Stage as the better dance movie (smiley face emoji), Kara was extremely entertaining and knows how to tell a story! Today's guest was name-dropped in an earlier episode. Name-dropped? By whom? Well, her husband Marty of course! He came on the show and told us how they met so we will now get her version of the events! She was interviewed for Club Med by Kenton Smith and her first season was at the opening of Club Med Sandpiper in 1986 as a Baby Club G.O. She also worked at Punta Cana and Ixtapa and was a Mini Club and Aerobics G.O. and this is my favorite part, despite never having worked with kids or taught Aerobics!! Our HHH guest this week, the legendary Trey Foshee of George's at the Cove, has been in San Diego's restaurants for a long time. Actually, scratch that. He's been in one kitchen during the entire 27 years he's lived, cooked, and managed here, and that's in La Jolla at George's (and its related establishments). In an age where people hop around faster than you can post about a new job on Instagram, there's something to be said for digging in your heels and perfecting your craft, and, in turn, turning out a generation of decorated chefs whose careers started in your kitchen. That's exactly what Foshee has done. This year brings the 40th anniversary of the George's empire, one of the longest-running and consistently most delicious in town. We asked Foshee to come on the pod to talk about changes to the restaurant scene and its menus over time, what he's learned in the last few years during which he stepped out of the kitchen for the first time and into management, what working with his daughter is like, and to talk about the anniversary celebrations at the restaurant. About those celebrations, they are decidedly stacked with world-class talent, all of which began in Foshee's George's kitchen once-upon-a-time. Beginning in January, visiting chefs who once worked there will cook special supper club–style dinners on specific Wednesdays, with two seatings each night. Connor McVey, who went on to work in the Wolfgang Puck Universe; pastry chef Christine Rivera, who was at California Modern for a long time and helped open Sandpiper and now is the executive chef of The Bishop's School; barkeeps Stephen Kurpinsky and Sam Peters, who helmed the Georges-centric cocktail book Neighborhoods of San Diego; and Christopher Costa of Michelin three-star Meadowood are among the notable guest chefs. Foshee also dishes on his not-so-secret but still effective weapon (and that of chefs around the county): Chino Farm. “Coming to San Diego,” he says of his move to town over two decades ago, “[Chino Farm] was a really big part of it. I won't say it's the reason we came here, but it was a really big fringe benefit. It's one of the reasons why we looked at North County to settle down in, because it's on my way to work. I can just stop off at the farm, and having them in your backyard is just a really special thing.” We also get into some news: Las Ahumaderas, the famous adobada taco spot in Tijuana, opened in Chula Vista; so did Butcher's Plate in National City's Market on 8th; Ambrely Ouimette told us she pulled out of her partnership with Hasekura, the omakase-only spot that will be opening in Barrio Logan above Fish Guts. She says she's got “a full sushi restaurant” and no space, and is looking for takers…same with Hasekura, which now needs a chef; Downtown Chula Vista is hosting their annual Taste of Third event on March 21; and Oceanside's Northern Pine Brewing Co. opened an Idaho-inspired restaurant by the same name with a former Dija Mara chef at its helm.

Sophia graduated magna cum laude from UCLA with a degree in International Development Studies with a minor in Global Studies. Before her stint as a Resort Manager, she served as a Supervisor and Resident Manager for the Exclusive Collection in the French Alps at Club Med Valmorel and Val-d'isere. Sophia shares her captivating journey, including insights into the rigorous CDV selection process. She recounts the unforgettable night she was named Chef de Village in Club Med Punta Cana in March 2019, coinciding with International Women's Day, where her mother was secretly flown in for the announcement! I had the pleasure of working with my guest today during the 2004/2005 dream-team season with Hendel Duplessy in Club Med Cancun and he is the 11th guest from that season to be on the podcast. His first season was in Club Med Cancun in 2003 as a Snorkeling, Sailing, and Windsurfing G.O. He is from Virginia but has been living in beautiful Australia since 2006. Before Club Med, he went to the University of Colorado and studied Linguistics & French. He speaks twelve languages and also attended the University of Melbourne for Primary Education and is now a teacher. Please help me give a very warm welcome to Joseph Ramsey!! Joseph visited Club Med Eleuthera at the age of nine, and later, at thirteen, he became a teen club member during his vacation at Club Med Cancun. Joseph grew up sailing at Smith Mountain Lake, in the Roanoke Region of Virginia. He worked for Club Med from 2003 to 2005 in Cancun, Ixtapa and Sandpiper.
