Sebastian La Rocca, who is the Argentina-born chef at the restaurant FYR in my hometown of Columbus, Ohio. It's a Latin American live fire restaurant that opened inside of a new Hilton Columbus Downtown Hotel right on High Street in the middle of the city in late 2022. I have known Sebastian for years from his work in Costa Rica, where he ran the restaurant at the El Mangroove Hotel in Guanacaste, and then opened up an open fire restaurant called Botanika outside of San José, which was one of New Worlder's Best New Restaurants when it opened. When he told me he was moving to Columbus I was completely surprised, but I immediately thought that it was one of the smartest decisions any chef I've ever met has made. I can tell just from my interactions with him over the past year that he is happier. He went to cook in a city that appreciates what he can do and not to win awards and recognition, though he is getting it anyway. It was a decision to move his family there so they could live a happier life. So many young chefs tell me they want to open in New York or somewhere because it is their dream. Really, that's your dream as a cook? Shouldn't it be to make good food that people enjoy and provides you a comfortable life? That can be New York or San Francisco or London or Tokyo, but it doesn't have to be. You can cook from anywhere. There are cities like Columbus everywhere. Why not open in Trujillo, Peru instead of Lima? Or Manaus instead of Sao Paulo? Every cook I know that's moved outside the centralized media market, outside of the industry bubble and found their place has been a thousand times happier and they are cooking better food for it. Fyr, Sebastian's restaurant, has been getting great reviews in local media and he has been bringing a lot of prominent Latin American chefs to Ohio to cook at the restaurant, such as Costa Rica's Pablo Bonilla and Panama's Mario Castrellón. It's kind of weird. These are guys I know from Latin America an have written about a lot that are suddenly in Columbus. It's kind of two worlds colliding for me.I grew up here and went to college here. It's basically all I knew until I was in my 20s. I've talked a lot on this podcast about growing up completely disconnected from where the food I ate was coming from. On the episode with Farmer Lee Jones, who runs Chef's Garden in northern Ohio, I talk about how there weren't any farms around. There were just corn and soy fields you drove past on the highway. And all of the restaurants were chains and concepts. I started writing about food in Ohio when I was 19, I think, and it wasn't really until then that I started questioning things. A culinary movement was just beginning there then, with Jeni's, now a well-known ice cream purveyor, opening in the North Market. There were a handful of fine dining restaurants that were being vocal about supporting local farms, and after I left it just kept kind of evolving. There are really great restaurants there now, both at the high and low end. My old neighborhood is full of Nepalese, Mexican and Salvadoran restaurants, and there has been a lot influence from North Africa and Southeast Asia elsewhere in the city. There are still too many concept restaurants for my taste, but there are more restaurants that are created organically and have creative food with good ingredients and nice drinks to balance it out. It's a very different place from where I grew up and it's because of people like Sebastian moving there and bringing new ideas.Read more at New Worlder.

Botanika je, kot kaže, tista pionirska naravoslovna disciplina, s katero je moderna, na eksperimentu in opazovanju utemeljena znanost v slovenskem kulturnem oziroma intelektualnem prostoru sploh dobila domovinsko pravicoVse premalo se zavedamo, da slovenske kulturne zgodovine še zdaleč ne ustvarjajo samo umetniki in humanisti ampak, seveda, tudi fiziki, kemiki, biologi in drugi naravoslovci. Med temi pa nikakor ne gre prezreti enega najzgodnejših, botanika Giovannija Antonija Scopolija, sicer zdravnika v idrijskem rudniku živega srebra. Scopoli, ki se je rodil leta 1723 – pred natanko tremi stoletji torej – v dolini Fiemme na južnem Tirolskem, je na Kranjskem služboval sredi 18. stoletja, med 1754 in 1769, v tem času pa je spisal Floro carniolico (1760), sploh prvo znanstveno delo o naravi v Sloveniji. Kar se je začelo razmeroma skromno, z eno samo knjigo, je že pol stoletja pozneje dobilo pomembno nadaljevanje oziroma nadgradnjo. Leta 1810 je bil namreč v Ljubljani – zahvaljujoč prizadevanjem Franca Hladnika, od čigar rojstva, mimogrede rečeno, prav letos mineva četrt tisočletja – ustanovljen Botanični vrt, danes najstarejša nepretrgano delujoča znanstveno-izobraževalna institucija pri nas. Očitno je torej, da je, zgodovinsko gledano, prav botanika tista pionirska disciplina, s katero je moderna znanost dobila domovinsko pravico na slovenskih tleh. Zato – pa tudi v spoštljiv spomin na oba letošnja okrogla jubilanta, na Scopolija in Hladnika – smo v tokratnih Glasovih svetov skušali orisati zgodovino botanike na Slovenskem in opredeliti njeno vlogo v kulturni oziroma intelektualni zgodovini našega prostora. Pri vsem tem sta nam bila v pomoč naša gosta pred mikrofonom, vodja Botaničnega vrta Univerze v Ljubljani, dr. Jože Bavcon, ter raziskovalka z iste institucije, dr. Olli und Carla besprechen in dieser inzwischen schon unglaublichen 25. Folge alles, was in den letzten Wochen so liegengeblieben ist und unbedingt erzählt werden muss. Und das hat mal wieder für eine ganze Folge gereicht.

Die Pflanzenwelt in Deutschland fiebert in diesen Tagen hin auf den 22. Oktober. Dann öffnet in Hamm in NRW die zweite Botanika ihre Türen. 70 AustellerInnen haben sich zu der Pflanzenmesse angekündigt.

Es wird herbstlich draußen. Morgens ist es länger dunkel und abends geht früher das Licht aus. Olli hat deshalb schon einmal die erste Pflanzenlampe rausgeholt. Carla schraubt weiter an der Optimierung ihrer Lichtverhältnisse im Büro. Gut ist eben nicht gut genug!

„Tu jest jak w raju” powtarzali wielokrotnie polscy botanicy pracując nad poznawaniem roślinności Tadżykistanu. Od słowa do słowa, doszli do wniosku, że można tę impresję zamienić na projekt naukowy. I tak powstał pierwszy pomysł poszukiwania Edenu z perspektywy botanicznej.Wśród tych naukowców był gość Radia Naukowego, prof. Arkadiusz Nowak, obecnie dyrektor Ogrodu Botanicznego PAN w Powsinie oraz Ogrodu Botanicznego - Centrum Zachowania Różnorodności Biologicznej PAN. - Słowa Księgi Rodzaju zamienialiśmy na pewne cechy roślinności – wyjaśnia prof. Nowak. Te cechy to np. dostępność roślin leczniczych, roślin jadalnych, drzewa, na które łatwo się wspiąć, do tego wystarczające ciepło pozwalające w komforcie być nago. Badacze brali również pod uwagę czynniki geograficzne i historyczne.- Uznaliśmy, że sprawdzimy tereny od Sycylii do Afganistanu. Na północy maksymalnie do brzegu Kaukazu i gór Elbrus. Na południu do Etiopii i pogranicza Somalii – wylicza prof. Nowak. Do współpracy zaprosili kolegów m.in. z Iranu i Armenii. Po dokładnych analizach ze wsparciem oprogramowania naukowcy uzyskali trzy typy roślinności, które najlepiej pasują jako archetyp Edenu. Na trzecim miejscu jest gaj granatu, dwa pierwsze na podium zajmują gaje pistacji, różniące się dominującym gatunkiem (szczegóły w podcaście). Zgadza się nawet wąż zagadujący do Ewy z drzewa. – Gospodarz, u którego spaliśmy na granicy z Afganistanem przestrzegał nas przed żmijami. Powiedziałem, że jesteśmy przygotowani, mamy wysokie buty. To nie o buty chodzi, te żmije, gur-za, atakują z drzew pistacji – opowiada prof. Nowak.Praca ukazała się "Regional Environmmental Change”. Jakie wzbudziła reakcje? – Zainteresowanie jest ogromne – mówi naukowiec. Prof. Nowak chciałby, aby botaniczny archetyp Edenu został odtworzony w Ogrodzie Botanicznym PAN w Powsinie. Taka „kopia zapasowa” w połączeniu z zabezpieczeniem w banku nasion jest potrzebna. Pistacjowe gaje w Azji Środkowej są zagrożone ze względu na postępujące zmiany klimatyczne i rosnące wraz z nimi ryzyko pożarów. Według wyliczeń za pół wieku gaje mogą zniknąć.W podcaście rozmawiamy również o tym, czym jest nowoczesna botanika, czym się różnią fartuchowcy od kaloszowców, ile gatunków roślin zna doświadczony profesor oraz czy to wypada zapomnieć nazwę, którą się samemu wymyśliło. Ela Tolstova je speváčka, skladateľka a manažérka kapely Tolstoys. Študovala na VŠMU, momentálne sa pripravuje na štúdium kompozície populárnej hudby na prestížnej BIMM Institute Berlin. Hudbu začala skladať už ako 16-ročná, následne založila kapelu Tolstoys. Ich debutový album Botanika získal ocenenie Debut roka na Radio_Head Awards 2017. Kapela za krátke obdobie svojho pôsobenia zaznamenala mimoriadny úspech. Má za sebou koncerty na festivaloch Pohoda, Grape, Colours of Ostrava, Waves Vienna alebo Eurosonic Noorderslag. Momentálne pripravujú druhý štúdiový album Mirror Me pod vedením berlínskeho producenta Drewa Deala. Napriek tomu sa Ela stretla s postojom, kedy jej nadšenie pre umenie ľudia podceňovali a niektorí jej učitelia ho dokonca označovali za "flákanie". "Povolanie umelca v sebe spája rôzne profesie dokopy. Ljubezen do rastlin ga je zaznamovala že v zgodnjem otroštvu. Botanika ni samo njegovo delo, postala je njegov način življenja. Prof. dr. Nejca Jogana s katedre za botaniko in fiziologijo rastlin, Oddelka za biologijo Biotehniške fakultete Univerze v Ljubljani danes najbolj poznamo po preučevanju tujerodnih invazivnih vrst, kar je tudi zelo zaznamovalo njegovo nadaljnje delo in raziskovanje. Bil je ustanovni član Botaničnega društva Slovenije in tudi dva mandata njegov predsednik. Zdaj je dejaven pri pripravi nove izdaje Male flore Slovenije ter druge izdaje Atlasa flore Slovenije. Je tudi kustos največje herbarijske zbirke pri nas, ki jo hrani Biotehniška fakulteta. Prof. dr. Nejc Jogan bo gost oddaje Razkošje v glavi. Pred mikrofon ga je povabila Petra Medved.
