Why are we feeding our kids ultra-processed foods? In 1948, the childhood obesity rate was less than 1%, and food allergies, asthma, and autism were virtually non-existent. Discover the detrimental health consequences of the ultra-processed food diet in this podcast. When my father was a child in 1948, he recalls a different way of life. Sugary cereals like Fruit Loops, Captain Crunch, and Fruity Pebbles did not line the aisles of the grocery store. Children did not have mid-morning snacks at school and were told not to spoil their appetites by eating before dinner. Saturated fats were not demonized as they are today. Lard and tallow were found in every kitchen, and red meat was a dietary staple. Most people had gardens and relied on the skill of canning to get them through the winter. Obesity and chronic disease in childhood were uncommon, while childhood obesity, food allergies, asthma, and autism plague the children of today! The largest category of ultra-processed foods are snack foods. The problem with snacking is that you spike insulin every time you eat. Carbohydrates create the most significant spike in insulin. Not only are we snacking, but we're snacking on the worst foods! The pancreas is constantly working to pump out insulin to remove sugar from the blood. This eventually leads to insulin resistance, which is behind almost every chronic illness, including a fatty liver, high blood pressure, diabetes, obesity, inflammatory diseases, mood disorders, dementia, and more. In 1948, we did not have not have ultra-processed food calories. Today, 65% of the teenage diet comes from ultra-processed food calories. This number is around 50% for adults and 45% for toddlers. Seed oils, such as soy, corn, cottonseed, and canola, are the worst ultra-processed food ingredients. Around 25% to 30% of all our calories come from seed oils. Grain-based starches generate 220 billion dollars per year! Highly processed industrial starches such as modified food starch, modified cornstarch, and maltodextrin spike blood sugar—often higher than consuming sugar does!

Professor E.F. Ladd was North Dakota's food commissioner. Known as a determined enforcer of the state's pure food and drug laws, Ladd was a determined watchdog for the safety of North Dakotans. In October 1911, he visited the Fargo branch of Armour and Company and requested to purchase three pounds of lard. Instead, he was sold a pail containing two pounds and six ounces. North Dakota's pure food and drug law required that containers of lard contain one, three, or five pounds, or a multiple of those weights, and not a fraction. As a result of Ladd's purchase, North Dakota took Armour and Company to court.

This season has been about laying the foundation of a healthy lifestyle, covering everything from nutrition and exercise to stress management and reconnecting with nature.  If you're new to the podcast, I highly recommend diving into Episodes 3 to 10, where I discuss the core principles that guide everything we do here. One of the highlights of this season has been the incredible guests who've shared their expertise. For instance, in Episode 39 I had an eye-opening conversation with Dr. Sean Baker about the carnivore diet, and in Episode 43 I talked to former Navy SEAL Dr. Kirk Parsley about optimizing sleep.  Each episode offers something unique — whether it's practical tips or deep dives into the science behind health and wellness. I've also covered topics that are close to my heart, like why I transitioned away from keto after three years (Episode 11) and the importance of growing your own food (Episode 56). I've particularly enjoyed sharing my personal experiences, like how I maintain a strong and lean physique (Episode 12) and the wellness practices I've adopted to stay balanced amidst the chaos of modern life (Episode 58). These episodes aren't just about theory — they're about the actionable steps I've taken to align my lifestyle with the principles I believe in. In this podcast, we're going to talk about one of the worst foods you could eat, especially for liver health. There are generally very few symptoms of liver problems. When I had liver problems, I experienced right shoulder blade pain and pain beneath my right rib cage. It's a myth that liver damage is permanent. The liver is one of the only organs that can regenerate itself 100%. Another myth is that the liver is filled with toxins. The liver detoxifies poisons, it doesn't store them. The worst “food” or ingredient for your liver is seed oils. Seed oils are damaging, inflammatory, and high in omega-6 fats, specifically linoleic acid. Lard contains about 2.5% linoleic acid, and tallow only contains 0.7%. Corn oil contains 56.6% linoleic acid! Seed oils contain oxidized linoleic acid that can cause significant oxidative damage in the body, especially in the liver and the nervous system. The average diet is 25 to 30% seed oils, which is too much. Seed oils become lodged in our fat cells and the membranes surrounding the nervous system and can remain there for 2 to 3 years. Seed oils can't be used for energy. They inflame the liver and contribute to insulin resistance. You should avoid seed oils, including canola oil, soy oil, and cottonseed oil, which are commonly labeled as vegetable oil. Always check food labels and avoid seed oils and foods that contain them. Replace seed oils with oils high in omega-3 fatty acids rather than omega-6. Reduce your consumption of grain-fed animal products and look for grass-fed meats.
