Returning to Chicago after six months, he launched his acclaimed pop-up Wazwan before opening his first brick-and-mortar restaurant in 2021. Two years later, he transformed the space into two concepts Lilac Tiger, highlighting South Asian street food, and the Coach House, his fine-dining restaurant. He recently opened his newest endeavor, Mirra, where diners experience a blend of Indian and Mexican flavors. Zubair has garnered industry acclaim as a 2022 Jean Banchet Rising Chef of the Year and a two-time James Beard semi-finalists—first in 2023 as Best Chef Great Lakes, and then in 2024, as Emerging Chef of the Year.

Mirra Alfassa, known as The Mother, was a close spiritual collaborator of Sri Aurobindo, a key figure in the development and growth of the Sri Aurobindo Ashram and the later establishment of Auroville. Most certified divers began their pursuit as an extension of their leisure activities—certified on holiday, certified out of curiosity, certified by their choosing. Don Mirra became certified as part of his military training. What began as a mission-driven task has now evolved into a meditative, blissful, serene experience. Festa perché gli esiliati di Israele ritornano in patria con incontenibile giubilo... perché popoli e re si affrettano a raggiungere Gerusalemme dove cammineranno allo splendore della sua luce. E' festa per il Bambino Gesù che per mezzo dei doni a lui offerti dai Re Magi, oro, incenso e mirra, viene riconosciuto come vero Dio, vero Re e vero Uomo. E' festa per i nostri bambini che, come è tradizione, almeno in alcune Regioni, oggi sono fatti segno di maggiore attenzione... con regali e donativi che suscitano esplosioni di gioia... con tanti segni di affetto verso i generosi babbi natali...
