Delicious Cinema: French Cuisine on the Big Screen

Fabulously Delicious

In this week's delectable episode of Fabulously Delicious: The French Food Podcast, host Andrew Prior takes listeners on a cinematic journey celebrating the rich intersection of French cuisine and film. Timed to coincide with the glittering start of the Cannes Film Festival, this episode explores how French gastronomy has taken center stage in some of the most memorable food-focused films. From palace kitchens to rustic countryside fare, the episode dives into stories where food isn't just a background detail — it's a central character. First up is Haute Cuisine (Les Saveurs du Palais), a film inspired by Danièle Mazet-Delpeuch, the first female chef to cook for the French president. Andrew walks us through this sumptuous, real-life tale of culinary passion and political pressure, reflecting on the beauty of traditional regional cooking and its quiet power in even the most formal settings. With behind-the-scenes trivia and reflections on Catherine Frot's acclaimed performance, the film serves as a perfect entrée to the episode's theme: food as memory, resistance, and art. Then it's on to Le Chef (Comme un Chef), a rollicking comedy that pairs classic French cooking with modern chaos. Andrew explores the film's humor and heart, as well as the tug-of-war between culinary tradition and innovation. Featuring Jean Reno and Michaël Youn, Le Chef playfully pokes fun at molecular gastronomy while reaffirming the joy and timelessness of French cuisine. It's a reminder that behind every Michelin star is a lot of butter, a few egos, and a shared love of good food. And of course, no conversation about food in cinema would be complete without a nod to Babette's Feast, the Danish masterpiece that so perfectly embodies the spirit of French dining that it simply had to be included. Whether you're a film buff, a food lover, or a little bit of both, this episode is a feast for the senses. So pour a glass of wine, grab a chunk of baguette, and settle in for a fabulously delicious celebration of French cuisine on the big screen. In this deliciously cheesy episode, we shine a spotlight on Cabécou — a small but mighty goat cheese that's full of character and deeply rooted in French culinary history. Often no bigger than the palm of your hand, Cabécou hails from the picturesque regions of Nouvelle-Aquitaine and the Massif Central. But don't let its size fool you: this creamy gem has a rich past, a distinctive flavor, and a name steeped in the lyrical tones of the Occitan language. We'll explore Cabécou's fascinating origin story, tracing its roots back to the Middle Ages and the arrival of goats during the Arab invasion of southern France. You'll learn how its name — derived from “cabe” (goat) and “cou” (little) — offers a charming linguistic window into the local culture. Plus, we take a deep dive into the regions that nurture this cheese to perfection, from the wild, rugged landscapes of the Massif Central to the lush, goat-dotted pastures of Nouvelle-Aquitaine. Of course, no episode of Fabulously Delicious would be complete without a sensory journey. Andrew describes the texture, taste, and ideal season for enjoying Cabécou at its finest — think creamy, nutty, and tangy notes that intensify with age. Whether you're grilling it for a gooey treat, pairing it with walnuts and honey, or adding it to a simple cheese board, you'll be inspired to savor this French treasure in your own kitchen. So grab your baguette, pour a glass of wine, and join us on this mouthwatering journey through the hills and markets of southwest France. Whether you're a seasoned cheese lover or just beginning your French fromage adventure, this episode will leave you dreaming of your next bite of Cabécou. In this episode of Fabulously Delicious, The French Food Podcast, we set the table for one of France's most theatrical desserts: the Crêpe Suzette. A delicate pancake bathed in a luscious, citrusy, and buttery sauce, then flambéed with flair—this dessert is as much a visual performance as it is a culinary delight. But beyond the flame and flavor lies a mystery: who really invented it? Was it a young apprentice serving royalty, a Parisian actress with stage presence to spare, or a romantic royal rendezvous? Host Andrew Prior takes listeners on a journey through the tangled, tantalizing tales of Crêpe Suzette's origin. From Henri Charpentier's alleged kitchen mishap for the Prince of Wales, to the stage antics of actress Suzette Reichenberg and the culinary refinement of legendary chef Auguste Escoffier, this episode dives deep into competing claims, cultural context, and delightful drama. Even Larousse Gastronomique chimes in with its own skeptical take on the more romanticized versions. As always, Andrew spices up the storytelling with fascinating historical detail, a dash of wit, and plenty of gastronomic insight. Alongside the main origin stories, he shares how Crêpe Suzette evolved through time with creative variations across France—like the whisky-flambéed Micheline Crêpe from Bordeaux, or the fruity Laurette pancakes served with Bar-le-Duc jam. It's a delicious reminder that French cuisine is always reinventing itself while honoring tradition. Whether you're a fan of flambé, a French food lover, or just here for the stories behind the classics, this episode is your perfect serving of dessert history with a side of showbiz. So, pour yourself a glass of something bubbly and enjoy the magic behind one of France's most iconic sweets. Bon appétit! Looking to deepen your culinary journey beyond the podcast? Marie-Antoine Carême wasn't just any chef—he was the chef des rois et le roi des chefs (the chef of kings and the king of chefs). In this episode of Fabulously Delicious: The French Food Podcast, we delve into the life of this trailblazing culinary artist who revolutionised French cuisine during a time of great upheaval, from the French Revolution to the fall of Napoleon. Known for his towering pièces montées and meticulous codification of French sauces, Carême helped lay the foundations for haute cuisine as we know it. But Carême's talents weren't confined to the kitchen. He cooked for the likes of Napoleon, the future George IV of England, and Russian Tsar Alexander I, and spent significant time in the service of the famously strategic Talleyrand. Could it be that Carême's placement in such elite circles had more to do with politics than pastry? A new Apple TV series hints at a fascinating subplot: was Carême a spy? In this episode, we unpack the facts and the fictions. Was Carême truly passing secrets along diplomatic corridors under the guise of preparing extravagant banquets? Or is this just a delicious layer of historical speculation? While the evidence is far from definitive, the possibility adds an irresistible flavour to the story of a man who cooked for the most powerful men in Europe. Join us as we explore Carême's early life as an abandoned child in Paris, his rise through the culinary world, his groundbreaking contributions to French gastronomy, and the tantalising rumours that swirl around his legacy. Whether he was simply a chef or something far more mysterious, one thing is certain: Carême changed the way the world eats—and maybe, just maybe, the way it thinks. Revisit Macarons with Molly Wilkinson What's the difference between a macaron, macaroon, and Macron? Well, we are discussing this and so much more with our special guest today. Molly Wilkinson is a pastry chef trained at Le Cordon Bleu who left roles working in pastry shops in the USA to teach us pastry in her fabulous Versailles kitchen. That's why I like to call Molly the princess of pastry. Today's topic on Fabulously Delicious is one that Molly is pretty much an expert on. Molly told me when she was working in Patisseries she would be making thousands of macarons a day. Amazing! So we learn from Molly what is a macaron and what the difference between a macaron and a macaroon is. Also, what's in the macaron as well as Ladurée one of her favorite places to get macarons in Paris. Then we chat about meringues as well and which is the best for macarons, Italian, French or Swiss. The place Molly mentioned that she worked in first in Paris was La Fabrique á Gateaux - https://www.instagram.com/lafabriqueagateaux Molly's book is available on Amazon* via the link here. https://amzn.to/3KqzBHi Check out Molly via the below details. Remembering Forest Collins: The Spirit of Absinthe and Paris' Cocktail Scene Welcome to Fabulously Delicious, The French Food Podcast, where we explore the wonderful world of French cuisine, culture, and everything delicious. Today's episode is a special one—it's both a revisit and a tribute. This past week, the food and drink world lost an incredible voice, and I lost a friend and inspiration. Forest Collins, the brilliant mind behind the 52 Martinis blog and Paris Cocktail Talk podcast, sadly passed away. Forest was so much more than just a cocktail enthusiast. She was a passionate champion of Paris's vibrant drinks scene—not just the drinks themselves but the people, the stories, and the places that made it all come alive. I first met Forest in Paris years ago, long before I started this podcast. Her warmth, knowledge, and sheer love for what she did were unforgettable. She was a member of the World's 50 Best Bars Academy and served as President of the France chapter of Les Dames d'Escoffier, an organization devoted to women in the culinary and beverage industries. When I started Fabulously Delicious, Forest was one of the first people I reached out to as a guest. She was thrilled to join me to talk about Absinthe, a drink with as much intrigue and mystique as Forest herself. She didn't just share her expertise—she also generously connected me with other wonderful guests like Tanisha and Preston Mohr, further enriching this podcast. So, in memory of Forest and to celebrate her remarkable spirit, I wanted to revisit this fabulous episode. Together, we'll not only learn about the fascinating world of Absinthe but also get to know the extraordinary person Forest was. Baba au Rhum: A Boozy French Delight with Royal Roots In this episode of Fabulously Delicious, The French Food Podcast, we're exploring the delightful and decadent world of the Baba au Rhum. This classic French dessert, a soft, syrup-soaked cake, has become a favorite across France—and beyond! But there's much more to this boozy treat than meets the eye. With its roots in Central and Eastern Europe, and a name that means 'grandmother' in Slavic languages, Baba au Rhum has an unexpectedly international past. We'll trace the Baba's journey to France, thanks to an exiled Polish king with a sweet tooth and a clever pastry chef who transformed a dry cake into a dessert legend. This little cake was reimagined with a touch of French elegance, a dose of rum, and plenty of whipped cream, eventually finding a home in Paris at the famous Stohrer Pâtisserie, where it still delights dessert lovers today. Baba au Rhum has even found fame in Italy, especially in Naples, where it has become a local specialty. Italian pastry chefs took this dessert and added their own spin, creating the ‘babà' and later inspiring the ring-shaped Savarin cake in France. Both cakes highlight the versatility of the Baba's basic recipe, showing how one small cake can inspire so many delicious interpretations. Join us as we uncover the fascinating tale of the Baba au Rhum, from its royal beginnings to its modern-day charm. You'll discover the secrets behind its perfect texture, the best way to enjoy it, and why this little cake soaked in rum has captured the hearts—and taste buds—of dessert lovers around the world! Abbaye de Belloc - Cheeses of France Series Discover the unique story behind Abbaye de Belloc, a cherished semi-hard cheese from the French Pyrenees, crafted from the rare, rich milk of red-nosed Manech cows native to the Basque region. Regulated under France's prestigious AOC (Appellation d'Origine Contrôlée) laws, Abbaye de Belloc is a part of the Ossau Iraty family of cheeses, renowned for its nutty, caramelized flavors and dense, creamy texture. Each wheel represents a centuries-old tradition and the dedication of the Benedictine monks who perfected this cheese. In this episode, we journey to the Abbaye Notre Dame de Belloc, near the picturesque village of La Bastide Clairence, a gem of Basque heritage. Learn how the monks' devotion to labor and prayer inspired their cheesemaking methods, creating a cheese deeply tied to its place of origin. From WWII resilience to agricultural development in the 1960s, Abbaye de Belloc's production reflects a remarkable legacy preserved through local partnerships and modern support. Abbaye de Belloc's production uniquely blends regional history with culinary artistry. After the monks turned cheesemaking over to a nearby creamery in the 1990s, Habitat et Humanisme, a French nonprofit, stepped in to ensure the abbey remained a hub for cheesemaking and community service. Today, young interns continue the work, crafting and aging each wheel under the abbey's roof, honoring an ancient method while supporting affordable housing initiatives. Indulge in the flavors of Abbaye de Belloc as we explore its exquisite pairing options, from robust wines like Pinot Noir to earthy Shiraz, which enhance the cheese's caramelized richness and nutty character. In this episode, we'll explore how Champagne evolved from the still wines of ancient Rome to the sparkling effervescence loved worldwide. We'll look at the terroir of the Champagne region—its chalky soil, climate, and unique geography—which creates the ideal environment for cultivating grapes like Pinot Noir, Pinot Meunier, and Chardonnay. We'll also examine the story of the "accidental bubbles," once seen as a flaw but now the hallmark of Champagne's magic. The pioneering contributions of figures like Dom Pérignon, who refined the wine-making process, and Madame Clicquot, the Widow Clicquot who revolutionized Champagne production with the riddling method, are explored in detail. Their work, along with advancements in glassmaking and secondary fermentation methods, helped transform Champagne into a coveted product across European royal courts and beyond. This week, we focus on the life and legacy of Pierre Franey, a master of French cuisine who brought the flavors of Burgundy to kitchens across the world, including those in America. Born in the quaint village of Saint-Vinnemer in 1921, Pierre's passion for cooking was ignited by the rich culinary traditions of his homeland, and by the time he was just a teenager, he was already embarking on a journey that would take him to the heights of the culinary world. Pierre Franey's career is a remarkable tale of hard work, resilience, and a deep love for food. After honing his skills in some of Paris's most prestigious kitchens, Pierre crossed the Atlantic to work at the French Pavilion during the New York World's Fair. His talent quickly garnered attention, and he eventually rose to become a celebrated chef in the U.S., particularly known for his time as the executive chef at Le Pavillon, one of New York's most iconic French restaurants. Yet, it was his collaboration with Craig Claiborne of The New York Times that truly cemented Pierre's influence on American cuisine, with their partnership introducing French cooking to home kitchens across the country. Throughout his career, Pierre Franey's contributions to food went far beyond the kitchen. He was a pioneer in making gourmet French cuisine approachable for home cooks, through his popular column The 60-Minute Gourmet and his television shows. In this episode, we explore his journey from a small French village to becoming a household name in America, his influence on the way we cook and enjoy food, and the lasting impact he left on the culinary world.
