Dr Andrea Salcedo Andrea Salcedo, DO, MPH, FACOG is a board certified obstetrician and gynecologist, wife, and mother of three young boys. She practices full scope obstetrics and gynecology at Loma Linda University Health, an academic medical center in Southern California. Her clinical practice is diverse, ranging from low risk women's health care to complex gynecologic and obstetric problems. A large part of her practice involves root-cause investigation into the development of gynecologic disease. Particularly, she focuses on metabolic health, as it relates to the development of uterine fibroids, endometrial polyps, and endometriosis. She has a special interest in using non-surgical strategies to treat endometriosis. Dr. Salcedo is a clinical researcher and published author in peer-reviewed academic journals. She has spoke at several conferences, including at the prestigious, Symposia for Metabolic Health, in San Diego and Boca, she is a clinical instructor for the Nutrition Network, and has been a featured on several podcasts. She also serves as an expert for the Osteopathic Medical Board of California. She is an active member of the Society for Metabolic Health Practitioners. She also has a YouTube Channel that promotes metabolic strategies to treating gynecologic problems, called Conscious Gynecologist. She also has an active telehealth practice where she consults on a metabolic approach to treating gynecologic diseases. She is fluent in English and Spanish. Maia Sutherland Maia Sutherland says: I am a life-long vegetarian turned carnivore. Now with far too much actual fuel going to my brain, I have become utterly obsessed with the topic and writing a book hoping to inspire people to spend parts of their life in ketosis and reduce their disharmonies. The intention of the book is that anyone from any country, religion, education and budget, can benefit from applying what is laid out inside it. Other than that, I am also studying with Dr Nasha Winters, mostly for my own understanding rather than as a potential job. I also make a superb line of unique jewellery often combining precious stones with 2000 year old beads and some gold! Since carnivore for the first time in my life I can sleep through the night, and do maths. I marvel at how it buffers mental states such as depression and anxiety. Perhaps because I have more mental energy to think, I am more angry, or perhaps that is the peri-menopause which is a whole other conversation. I am totally in love with the subject of health, and through keto, carnivore and low carb, my understanding has gone through a huge upgrade. Angela Stanton Angela A Stanton, PhD has earned her doctorate in NeuroEconomics (experimental neuroscience using economic models) and is also fMRI certified, having earned the following degrees: PhD Claremont Graduate University in Economics with dissertation in neuroscience; fMRI certification at Harvard University, Athinoula A. Martinos Center for Biomedical Imaging; MS in Management Science & Engineering, Stanford University; MBA at University of California, Riverside; BSc Mathematics, UCLA. Her doctoral research focused on understanding how human decision-making is influenced by neurotransmitter changes. She ran clinical trial experiments, gaining an appreciation of the role hormones play in emotional and physiological decisions. Graham Phillips Graham Phillips BPharm FRPharmS is a second generation community pharmacist. Gayle Gerry Gayle Gerry qualified in 1998. She spent her first 8 years in Accident & Emergency, and was also in the Army reserves as a Nursing officer. During this time she did operational tours to Kosovo, then was compulsory mobilised to Iraq in 2003 as a specialist A&E nurse based in the 200 bedded field hospital. The move to general practice was by accident when she met a GP who was desperate for a nurse. At this point she was looking to change career. She met a patient in 2012 who ended up putting this diabetes into remission, and her curiosity from this, led her to where she is today. She is an ambassador for the PHC. She has run group consultations for diabetes remission since 2019 both face to face and online, and is one of the organisers of the Primary Care Lifestyle conference, which she is now planning the 4th one. Netta Gorman Netta Gorman is the person behind Life After Sugar… because real life carries on even when you’re sugar free. Netta has been living happily free from sugar, flour and sweeteners since July 2015 (6 years now!). She spent most of her thirties and early forties struggling with chronic constipation and digestion issues but she never thought that her love for chocolate and desserts had anything to do with it. Doctors kept telling her to eat more fibre, but this was making things worse, not better. In July 2015, she got to a breaking point where her pain and suffering was so bad that she decided to do something she’d never tried before: cut out sugar, flour and sweeteners for a temporary period of just 2 weeks. And to her complete amazement, she felt so much better that she just carried on and never looked back! One thing that still amazes her is that her tastes changed, and now she doesn’t even *like* sweet tastes any more (whereas before, she was the world’s #1 sweet tooth). And most of all, the one word that sums up her life after sugar is “freedom” – freedom from cravings, from energy crashes, from that love-hate relationship with sugar, from all the health issues she had. And this is why she decided to help other people to get to this place of freedom and peace with food and with themselves, with the Life After Sugar Program. Dr Jim and Betsy Waller Dr Jim Waller moved to a low carb diet over 20 years ago, as part of a healthy lifestyle and because of his family history of significant cardiovascular disease. Dr Jim Waller is a retired colorectal surgeon. Betsy was in the Women’s Army Corp. She was then a Vocational Rehabilitation Counsellor and has lifelong interest in movement therapies, sports medicine, kinesiology and yoga. Betsy met Jim in 2020, 51 years after graduating the same high school class. They had both lost their spouses and they got together and are now married. Betsy thought she was eating healthily when she was stuck in the belief system that she now calls the “dark years”. What seemed logical kept her in lifelong restrictive eating patterns in order to subscribe to “calories in – calories out” with the belief that most meat is bad. With Jim's long experience of low carb she has learned to love beef and to focus on protein. Betsy discovered The Fabulously Keto Podcast in 2021 and is an avid listener. Using The Fabulously Keto Diet and Lifestyle Journal she continued to modify and use it as a consistent method to “assess, plan, implement and evaluate” Betsy subscribes to weighing daily. She plans Friday though Sunday as her best time periods to start and stop for weekly reflections. She may be moving from a lifelong abstainer to a moderator. She is also adopting a radical daily regime to end all showers and bathing with as much “cold” time to assist in her longevity habit. Introduce some exercise – walk every day or ride a bike, anything – exercise is better than any pill you can take.. Karen Gaul Karen Gaul says: I'm 71 years old & have been dieting since the age of 9! Yes 9 years old…hard to believe but true. My mum had taken me to our family GP with concerns about my development as I was somewhat bigger than my peer group. If more thought had been given then both mum & the GP would perhaps have realised I was at the start of puberty…earlier than most but true. My early puberty resulted in decades of see-saw dieting following in the footsteps of my mum who was a serial dieter…I hadn't known anything other than mum on a diet! Like so many I have a hundred & one reasons to diet & can probably tell you my weight at different stages of my life. However my dad dying with Alzheimer's in 2012 was a huge factor in my decision to not be in the same situation in my older years…at this stage I was almost 60! It was time to make changes in all aspects of my life including sleep nutrition movement & mindset. A lower carb way of life was part of those changes & today I feel amazing. But a diagnosis of cancer last year made me realise if I hadn't worked so hard my recovery post hysterectomy & subsequent treatment would have had a different outcome. Bitten Jonsson Bitten is a Registered Nurse since 1973, worked with addiction medicine since 1987 and sugar addiction since 1993. Developed a Holistic Addiction Treatment model, worked with group treatment for many years. She has been teaching and training professionals since 2012. Bitten is a recovering alcoholic and her understanding of addiction has been a 26 year journey. She started to learn about addiction in the 70s when she commenced her recovery from alcohol addiction. She fell in love with addiction medicine. She learnt that those recovering from drug and alcohol addiction who also smoke and eat junk food have a higher risk of relapsing. After this ‘light bulb' moment, she promptly quit smoking but would treat herself with chocolate and ice cream. She gained a lot of weight but she was also very tired. She was told she was a food addict and set out to learn more. She started a group in 1995 and helped those with food addiction deal with the addiction. The low carb movement started in 2005 in Sweden. Bitten was told she was mentioned in a book. The low carb sentiment is that if you stay low carb you can be healthy but it doesn't take into consideration that some are “Food Addicts”, who can stop eating the problematic foods but can't stay stopped. Drawing on her understanding of addiction, she was able to translate this to food and food addictions. Similarly to alcohol, social users of food can have a small piece of chocolate and then stop. Whereas harmful users of food are emotional eaters, comfort eaters. Food addicts have a different brain, they are biochemically unique. They don't respond biochemically the same way as social users and harmful users. They are the most sensitive people. Bitten developed a tool to differentiate between a harmful user and an addict. How much you eat and how often is not a criteria for addiction. She teaches, trains and certifies them in the sugar instrument. Understanding that addiction is chronic, progressive re-lapsable and deadly illness if you don't arrest it. You don't have a chance if you don't embrace that. First you have to understand the illness, then you have to rewire the brain. This is through eating the right types of food – such as the keto way of eating, with clean products, good foods, good fats and you have to figure out the fuel mix. Eating the right types of food minimises the chemical release in the brain. These brain chemicals, particularly those that release dopamine is important. Increasing tolerance to dopamine is built up over time with the types and amount of food that is eaten. You eat more and more even though you feel miserable. It gives an initial high then it makes you depressed, moody, sad, unpleasant, tired, nothing is fun and you lose all your energy. You are not clinically depressed, you have lost energy on a cellular level. Bitten says get the addiction under control first for at least two years before doing any therapy. Changing the way she eats, she has become less swollen and able to move more. She has increased her energy and feels better now she is 67 than in her fifties. Bitten is like a Ferrari, she has to fuel up. Food is her medicine and fuel. She makes sure she gets her nutritional needs met. Nicola Lock & Jackie Fletcher Nicola Lock was a medical secretary in the NHS for 15 years, primarily in Mental Health Services, and after having her children set up as a freelance medical transcriptionist which she has been doing for the last 20 years, mainly in private healthcare. Her interest in low carb began about 9 years ago after discovering Michael Mosley’s 8 week blood sugar diet. Over the years she had made several attempts at losing weight by following the recommended low fat, eat less/move more model, which either failed or, if she succeeded initially, she then put the weight back on and was back to square one. In the New Year of 2019 she decided to try a low carb/real food lifestyle in an attempt to lose the weight that she had once again put on over the Christmas period, and six months later had effortlessly lost about 2 stone (28 lb / 12.5 kg), which she has pretty much maintained since that time. Although she had no health issues that she was aware of, after becoming low carb she has noticed improvement in her skin as well as improved energy and mental wellbeing. Nicola has discovered an enthusiasm for learning more about this way of life and has been a member of Nutrition Network since July 2020. She has completed several of their courses including Nutrition Network Advisor, Obesity: Risks & Reversal, Ethics, Neurology and LCHF for Nurses. She is currently studying Metabolism and the Mind. Nicola has been an ambassador for the Public Health Collaboration since October 2020 and since June 2023 has been a health coach for The Lifestyle Club, which is an online programme providing education to empower people diagnosed with pre-diabetes and type 2 diabetes to potentially put their condition into remission through a real food lifestyle approach. And recently Nicola has become involved with another PHC project, Liberate, which is a programme designed to help people who feel addicted to ultra processed foods. Graham Phillips Graham Phillips BPharm FRPharmS is a second generation community pharmacist. Chris Hill I’m a retired school teacher (Spanish) and Senior Leader from the state secondary sector with over 35 years teaching experience, often by choice in highly deprived areas, but I have also worked in more affluent areas too. Whilst working in schools I became more and more concerned during the latter years about how I was seeing young people eat – breakfast was often a 2 litre bottle of coke or cans of energy drink and a family size pack of Haribo or a whole packet of chocolate biscuits. This would then result in many students having massive sugar highs which they freely acknowledged. This brought poor attention span, disruptive behaviour, inability to focus on work or listen and often a massive crash in energy leading to sleepiness and lack of a willingness to do anything. This was then compounded by poor sleep due to staying up late on computer games, social media or TV. Children are experiencing the worst health crisis we have ever come across and for the first time ever are likely to live a shorter lifespan than their parents. Rates of childhood obesity, type 2 diabetes, fatty liver disease, eating disorders and mental health problems are soaring in our children and yet no one seems to do anything about it. It’s time to put a halt to this and hence The Real Food Rebellion was born- a project that sits within the Public Health Collaboration charity. This programme is taught within the school curriculum as timetabled lessons in both Primary and Secondary sectors. We give students the knowledge to understand the difference between real food and ultra-processed food, how to read food labels correctly, how to eat and cook well on a budget and how to fight back against the tyranny of the big food companies and a government in their thrall. The pre-pilots for the first phase of the programme are currently running in a number of schools across the country and we are inviting schools to join us for the main Pilot Programme which will run in Summer 2025. I myself have struggled with an eating disorder from the age of 11 and now at age 61 am starting to feel the physical consequences of this. It stemmed from trauma, societal expectations and the incessant yoyo dieting treadmill. I wish I had known as a teen what the Real Food Rebellion is teaching children now – it could have meant a life free from food addiction and the ensuing misery it brings. If I can save just one child from a lifetime of unhealthy food and illness then that will mean more to me than all the thousands of children out there who have learnt Spanish from me at school! Bruce Schnaak Bruce Schnaak says: After 4 years of being on the carnivore diet, I found myself discussing the subject of my “high” blood lipids with my new PCP. Out of that meeting, I managed to get an order for a Coronary Calcium Scan (C AC) to settle the “dispute”. The scan came back and I scored a 65…which isn't a zero, but respectable for someone of the same age as the score. That news got overshadowed by the radiologist noting in the report about a “possible lytic lesion” on a vertebrae. Several different scans over the months (including a vague PET scan) led to an eventual needle biopsy of my T11 vertebrae where a diagnosis of Metastatic Melanoma was pronounced. I got a referral to an oncologist and treatment plans were soon discussed. Fortunately, I also am a patient of Dr. Robert Cywes and he recommended reaching out to MD Anderson Cancer Center and I was able to line up an appointment with them and elected to make monthly trips there for treatment. In the ensuing months I tightened up my eating by ensuring I maintained myself in a level of therapeutic ketosis…this was achieved by increasing fat and periodically using exogenous ketones. Extended fasts were also implemented around my infusions to drive my ketones even higher. After 3 months of treatment, my lesion was officially stable…although my radiology oncologist noted some shrinking. Another 3 months later I was declared NED (no evidence of disease). I completed my year of treatments 3 months ago and will continue to have monitoring scans quarterly. Now, things are getting back to normal. I'm confident my way of eating was likely the reason my cancer hadn't spread to many areas as is common with others with this diagnosis…in fact it was likely shrinking when discovered. That and the fact my “metabolic house” was in order enabled me to escape most of the negative side effects of treatment.. My goal now is to share my story with others and hope it inspires and emboldens. Dr Lily Johnston Dr. Lily Johnston, MD, MPH, is the associate medical director for Nexus Healthspan, and is board-certified in both vascular and general surgery. Dr. Johnston received her MD from the University of California, San Diego; she completed her residency in general surgery at the University of Virginia in Charlottesville, and then completed a fellowship in vascular surgery at the Mayo Clinic in Rochester, MN. Dr. Johnston also has a Masters in Public Health from the Johns Hopkins Bloomberg School of Public Health in Baltimore, MD. Dr Steve James Dr Steve James became internationally known during the COVID pandemic for his advocacy of personal choice regarding vaccination. His unwillingness to compromise with mandates meant that he was at the forefront of legal challenges to the government and seen as a key figure in protecting the jobs of tens of thousands of NHS staff who were going to be fired. He also saw that nearly all the patients in intensive care with COVID had poor metabolic health, and like those that used to be on his operating table in cardiac theatres, could have avoided admission. As an NHS Consultant with 25 years of experience he has specialised in a range of areas including critical care, high-risk and cardiac anaesthesia, exercise testing, fatigue and breathlessness. He has additional training in psychotherapy, exercise physiology, nutrition, breathwork, meditation and sleep medicine, which give him a unique mix of skills with which to deliver care. Maia Sutherland Maia Sutherland says: I am a life-long vegetarian turned carnivore. Now with far too much actual fuel going to my brain, I have become utterly obsessed with the topic and writing a book hoping to inspire people to spend parts of their life in ketosis and reduce their disharmonies. The intention of the book is that anyone from any country, religion, education and budget, can benefit from applying what is laid out inside it. Other than that, I am also studying with Dr Nasha Winters, mostly for my own understanding rather than as a potential job. I also make a superb line of unique jewellery often combining precious stones with 2000 year old beads and some gold! Since carnivore for the first time in my life I can sleep through the night, and do maths and I marvel at how it buffers mental states such as depression and anxiety. Perhaps because I have more mental energy to think, I am more angry, or perhaps that is the peri-menopause which is a whole other conversation. I am totally in love with the subject of health, and through keto, carnivore and low carb, my understanding has gone through a huge upgrade. She says: I recognised the importance of looking at cancer through a metabolic lens around 24 years ago, following several years working in orthodox medicine and running oncology clinics. Maia Sutherland Maia Sutherland says: I am a life-long vegetarian turned carnivore. Now with far too much actual fuel going to my brain, I have become utterly obsessed with the topic and writing a book hoping to inspire people to spend parts of their life in ketosis and reduce their disharmonies. The intention of the book is that anyone from any country, religion, education and budget, can benefit from applying what is laid out inside it. Other than that, I am also studying with Dr Nasha Winters, mostly for my own understanding rather than as a potential job. I also make a superb line of unique jewellery often combining precious stones with 2000 year old beads and some gold! Since carnivore for the first time in my life I can sleep through the night, and do maths and I marvel at how it buffers mental states such as depression and anxiety. Perhaps because I have more mental energy to think, I am more angry, or perhaps that is the peri-menopause which is a whole other conversation. I am totally in love with the subject of health, and through keto, carnivore and low carb, my understanding has gone through a huge upgrade. Doug Reynolds and Pam Devine When Pam Devine turned 47 she was super excited that she had found something that helped her to lose the weight that she had put on since turning 40. Up until that point no matter what she did she couldn't lose it. Pam felt she worked out more than many of the people she encountered during her workday and was getting super frustrated with her failure to keep her weight under control. Dr Louise Phillips Dr Louise Phillips MBBS (hons 1), FRACGP, Senior Lecturer UQ, Certified Medical Practitioner with the Nutrition Network. Dr Louise Phillips is an Australian GP with a passion for medical education, doctors' wellbeing, and metabolic health. 30 Day Carnivore Challenge In February we did a 30 day carnivore challenge. During the challenge I asked if anyone wanted to record a podcast episode. There were lots more people on the challenge and more were due on this recording but some had to drop out for various reasons, so instead of being 6 of us on the call, we ended up being just 4 of us.
