Since it’s a new year, I’m already hard at work on achieving the goals that I set for myself, and my businesses in 2021. To offer your own advice, call Zak @ 844-935-BEST TRANSCRIPT: ZAK: It's Food Friday and today on the show a smorgasbord of cooking advice. ELI: My name's Eli Sussman. I'm talking to you from Brooklyn, New York and I'm one of the co-founders and chefs of Samesa Restaurant which is a Mediterranean restaurant. ZAK: Today's advice revolved around being resourceful in the kitchen and the first thing to consider, says Eli, is that recipes are meant to be fungible. ELI: You need to understand that it's not a legally-binding document. You can navigate away from that recipe. So think about ways that you can use what's in your cabinet and not have to rush out and buy 100-dollars of ingredients every time you want to make a recipe. So think about spice substitutions. If it calls for a certain, specific type of spice that you don't have on hand, google it, figure out what it may sort of taste like and see, ok, I don't have Aleppo flake which is something we use a lot in cooking at the restaurant. But ok, I can use chili flake and achieve a similar result. Ok, I don't have sea salt. Can I use regular salt? These are certain things you learn overtime while cooking...just what works as a good substitution. The recipe calls for brown rice. I don't have that but I do have, you know, spaghetti. Is it gonna be weird if I cook it and serve it over spaghetti? Or is it gonna be fine? Is it gonna be better? So there are all these different ways where you can tweak recipes and move to a place where you're actually using up the things that are in your cabinets as opposed to just always buying new stuff which leads to this scenario where you have so many things that you just have sitting around that you never end up using because you're afraid to experiment and use them in a way where you're substituting for a specific other items in recipes. ZAK: That's great. Do you have advice about how to use up the odd stuff in the kitchen? ELI: Yeah, totally. I think the best way to use up vegetables that are just sitting around in your fridge is to just do a stir-fry. And basically a stir-fry works in any ethnic style of cuisine that you like. If you're going for a Vietnamese, Italian, Indian root, whatever type of food you may feel comfortable cooking, or not, but just simply roasting some vegetables in a pan, getting the pan hot, sautéing them, letting them get some caramelization, break down a little bit. Covering them with a good amount of spice that you're comfortable with and then serving them just with either a grain that you have. Like that's a full meal. You don't need protein in every single meal and that's an awesome way to get rid of just vegetables that are just sitting around. And then if you have a lot of starches around, I love to cook potatoes and have them in my fridge as a building block to a meal. So a lot of people will peep and blanche potatoes right before the meal. But I say get a big bag of sweet potatoes or Yukon Golds. Two sort of things that cook very quickly and easily just by boiling them in water and are delicious on their own and then you can use them breakfast. You can turn that into a hash. You can put it in a salad and eat it cold for lunch and then for dinner, you can take those cold pieces of potato, toss them in a little bit of oil and roast in a pan or in the oven till they get crispy and then serve them with a piece of chicken. You don't beed to cook everything to order for every single meal that you have and that's a good way to get rid of a bunch of stuff. Her name is Anna Schaffner and she’s written a book called Exhaustion: A History, which traces the fascinating evolution of physical, psychological, and existential fatigue from the ancient Greeks to the modern day. SUFFERING I know. I am mentioning this word A LOT. It sounds so daunting, right? Well, here it goes. Deep breaths and a cup of tea would help here ;-) As I sat in the Tibetan Buddhist monastery, listening to the teachings and meditating from 5.30am to 9.30pm every day. All they were repeating was the word “suffering”. Being who I am (or more accurately, who I was) I was wondering, at least for the first day, why did I travel all the way to Nepal “in search for happiness” just to listen about the opposite; as if I wanted a prescription from the Buddhist monks and head back to London and order over the counter to consume it daily ;-) I see a lot of this attitude everywhere around me. In particular being a coach and people asking me for help. It's the fix, the strategy, something to give them to feel better. That’s the expectations we all have. We want the solution but are not willing to go through the process. As if we wanted a University degree without passing any of the exams (or at least sitting in classes to learn something and earn the degree). But it doesn't work like this. There is nothing anyone in this world can give us in order to receive happiness. What? How?? Why??? Because happiness is not a destination. And it doesn’t happen outside of you. Happiness is a state of mind. It's how you see things (perception), not how life supposedly treats you (something we state as a matter of fact when in reality it’s really and just all your 'perception' of that reality). In order to reach happiness, we must cultivate a happy mind. And the only way to do that is to stop our suffering from fear, anger, jealousy, insecurity, greed, attachment, feeling of loss, anxiety, depression.... you name it! I know it’s not easy, but you wouldn’t be here if you didn’t have those painful emotions and negative experiences. If this sounds like that's not you, that you don't suffer, I beg you to think twice. We learnt yesterday that Buddha who was happier than we can even imagine, went through the same. I even listen to my Buddhist monks who I study with, struggling with the same. Or the famous Buddhist nun Pema Chödrön, who admits in her live retreats how she loses her temper and shows aggression towards her little granddaughter... :) There is wisdom in admitting that you, like her, like me, like everyone else, suffer. Surrender to that truth. And sit with it for a while. There is no shame to admit this to yourself, there is no failure in recognizing it. There is truth to be told by you to you. And the reward starts exactly in that truth. The ticket to happiness is to start peeling our mind (thoughts and emotions as we like to call it) from the negative. In the same way as we would peel off layers of an onion. That part, deep inside the onion, is where your little Buddha nature sits. The rest is your polluted mind. By polluted mind I mean the thinking and behavior we are trained to execute. Great examples of this behaviors are judging (that includes commenting on someone else’s dress that’s out of fashion, you know!), labeling (putting others in boxes of definition), perceiving reality quite wrongly (my view is the ultimate true, a fact! And not considering for one moment that there are as many views as there are people on this Earth), being righteous (ego needs to win, no allowance of compassion and kindness and gentleness to step in), anger (reacting to someone else's “labeled as ‘bad’’ behavior, instead of not giving it so much power over our peace of mind), attachment (telling our partner that his lack of showing emotions in the way we ‘need’ it affects our happiness). The list goes on in eternity ;-) How do we go about getting rid of these emotions and how do we stop suffering? However, no matter who, or even how, I was helping, I always noticed the one single common denominator was that my passion for my work continued to flourish as I saw how many lives I was able to improve with my guidance and highly accurate predictions.  I was thrilled to learn in 1975 that I was one of only a handful of individuals to pass a screening test administered by the publication Modern People.
