Mulled fruit 250g frozen mixed berries 100g castor sugar 200ml water 2 cloves 1 cinnamon stick, split in half 150ml red wine 4 large pears 4 plumsPlace the berries, sugar, cloves, wine, cinnamon stick and water in a pan and simmer for 5 minutes. Remove the cloves and cinnamon and blend to a smooth sauce and pass through a sieve into another pan. Peel the pears and cut in half through the root. Remove core with a melon baller or teaspoon and place in the berry liquor. Cover with a sheet of parchment and simmer gently for 10 minutes. Cut the plums in half, remove the stone and add to the pan. Simmer until pears and plums are just done. Remove pears and plums and boil the liquor to reduce by half. Return the pears and plums to the pan and allow to cool. Chop into 1cm pieces. You'll have a bit more fruit than you need but it will keep for a couple of weeks in the fridge.Jelly 200ml of cooking liquor 2 leaves gelatine Soak the gelatine in cold water for 10 minutes. Heat the liquor and add the gelatine leaves. Pour into a dish, cool and chill until set. Coconut sponge 225g soft butter 225g castor sugar 4 eggs 200g self raising flour 20g cornflour ½ teaspoon baking powder 1 teaspoon vanilla extract 50g desiccated coconut soaked for 10 minutes in 150ml boiling water Beat the butter and sugar until pale and fluffy. Add the eggs one at a time. Sift the flour, cornflour and baking powder together and fold into the mixture. Add the coconut and vanilla. Pour into a prepared cake tin and bake at 180°c for about 40 minutes or until an inserted skewer comes out clean. Cool Will make a bit more than you need but will keep for a week or freeze the excess. Alternatively use a Madeira sponge. Vanilla custard 3 egg yolks 50g sugar 15g cornflour 250ml whole milk 100ml cream 1 teaspoon vanilla paste or extractWhisk the egg yolks, sugar and cornflour.Scald the milk, cream and vanilla and then pour over the egg mixture. Whisk and return to pan. Stir until the mixture coats the back of a spoon. Pour into a bowl and cover the surface with cling. Cool and then chill. Alternatively buy ready made custard. Orange and cinnamon cream 500ml double cream Zest and juice 1 orange 1 teaspoon cinnamon 1 tablespoon icing sugar Boil the orange juice, zest and cinnamon together until only a tablespoon of liquid remains. Cool. Whisk the cream and fold in the sugar and orange mixture. To Assemble – Fruit liqueur Edible gold glitter Cut the sponge into 1cm dice and place in the bottom of 6 individual trifle bowls or one big one. Drizzle over some fruit liqueur. Spoon over some of the fruit. Cut the jelly into cubes and spoon over the fruit. Top with custard. Pipe the cream over the top and spray with edible gold glitter.

Raspberry mousse Raspberry and elderflower puree 150g frozen raspberries 2 heads elderflower 75g castor sugar Place the raspberries and sugar in a pan and set over medium heat. Pick the flowers from the stems in clumps and add to the pan. Cook for 5 minutes then allow to cool for an hour. Remove most of the elderflower and blend the rest to a smooth puree. Pass through a sieve to remove the seeds. Custard Cream 3 egg yolks 50g castor sugar 10g cornflour 10g plain flour 150ml whole milk 100ml whipping cream 250ml double creamWhisk the yolks, sugar, flour and cornflour.Scald the milk and whipping cream and pour over the egg mixture, whisk well and return to the pan. Stir constantly on a medium heat until thick. Pour into a clean bowl, cover surface with cling and when cool enough chill in the fridge for a couple of hours. Whisk the double cream to stiff peaks. Fold into the custard. Fold in three quarters of the raspberry puree. Oaty crumble 200g porridge oats 40g butter 40g honey 40g light brown sugar 35g dates, finely chopped 45g hazelnuts, chopped 1 teaspoon vanilla extract Set oven to 160oc and line a tray with parchment paper. Melt the butter and honey together and mix into the oats with the dates, nuts and vanilla. Spread onto the tray and bake for about 20 minutes, turning over a couple of times, or until golden. Cool. You'll have more than you need for the recipe but it will keep for a couple of weeks in an airtight container and is good with fruit, yoghurt or icecream. To assemble - 100g madeira sponge 50ml elderflower cordial or liqueur 150g fresh raspberries Elderflower sprigs Cut the sponge into small dice and divide among 4 glasses. Drizzle the cordial or liqueur over the sponge. Spoon half the raspberry mousse into the bowls and top with the remaining puree. Add the remaining mousse and sprinkle over some of the crunchy oats. Garnish with the raspberries and elderflower sprigs.

Morning Focus was broadcasting live from Kilrush Town Hall. Firstly, Alan Morrissey was joined by Councillor Ian Lynch, who discussed a town meeting that took place on Monday, and Shauna Johnson from Johnson's Pub in Kilrush, who spoke about running a family pub and making time for volunteering with the RNLI. Alan was then joined by Judi Kinnane, who is all set to open a new café caller Jellyfish Marketplace in Kilrush. While Megan Nolán is also set to open a new business, called Oileán, a restraunt paying tribute to the Scattery Island aiming to use local suppliers as much as possible. Alan was also joined by Phil Crowley, events organiser and Brian Markham, operations manager at the Vandeleur Walled Gardens. Hazel Murray, a local artist also joined to chat to talk about her first exhibition. Afterwards, James and Gillian Hall joined Alan, as James Hall will have the honour of switching on the Christmas tree in St. Senan's Church in Kilrush this evening. For him and his partner Gillian, it will be a very poignant act due to the loss of their young son Adam, their only child, in January of this year. The Choir from Gaelscoil Uí Choimhín joined us for some Christmas music. Then it was time for this week's Ours To Protect, our weekly programme with Pat Flynn that looks at biodiversity and sustainability in Co. Clare. Suzanne and Kevin Murphy from Murphy's Kitchen and Cup of Scald chatted about their businesses and this weekend's farmers market. The Friday Panel brought the show to an end. Alan was joined by Niomh Madigan, a local businesswoman and community activist Paddy Cleary, a community activist & actor with Oakhill Players and Aisling Glynn, a Local Solicitor and chairperson of West Clare Mental Health Association who debated all the news of the week.

Kitchen fires started by cooking are the No. 1 cause of home fires. Learn more about keeping your home and your family safe from cooking fires. What's the main cause of fires when cooking? People leaving cooking food unattended. This can lead to frying grease igniting, cooktop flames getting out of control, or electric burners igniting potholders, towels, or paper that are close by. How can cooking fires be prevented? Set a timer when you start cooking something. This will remind you if you get distracted and help you remember to get food off the stove before a fire starts. What are some safety tips for kids in the kitchen? Keep an eye on children and don't leave them alone in the kitchen. Set up a 3-foot zone around anything that's cooking and keep your children or pets out of that area. The zone also prevents kids and pets from pulling the plugs on electric appliances or being near a boiling pot that might spill over. What do you do if your microwave catches on fire? If your microwave catches on fire, unplug it from the wall and don't open the door until the fire is out. What's the most common cooking injury? Scald injuries from hot liquids are the No. 1 injury when it comes to cooking. Be careful with hot coffee and hot liquids on the stove. What are some other tips for home fire safety? Make sure your smoke alarms are working. Test smoke alarms monthly and replace them every 10 years. Practice your home escape plan with your family. Pick an outdoor meeting spot if you need to leave your house. After you leave your house, don't go back in. Tell firefighters if someone or a pet is still inside.

Why did an advertisement for coffee prompt a nurse to contact the company to ask them to withdraw it? The answer is that the nurse in question has 20 years experience in burn care, and the advertisement — for the coffee chain Costa Coffee — showed a scene which, if replicated in real life, could cause serious injury.That nurse is called Kristina Stiles, and she's my latest guest on the show. I saw her post and was intrigued. After a brief introductory discussion, I realised that not only was this an opportunity to highlight how humans can underestimate risk but also to learn some fascinating techniques that are used to help prevent it. On the show, we talk about the risk of burns and scalds, what you can do to prevent them from happening and get practical advice on how to respond if they occur.For easy reference, the key lessons Krissie shares are: Most burn injuries happen in the home, so preventing burns is mainly preventing hot liquid scolds in our homes.Wherever you are working with boiling water, hot pants, hot oven doors, or running a hot bath, it's really important that you separate your young family members away from those areas.But if the inevitable does happen, it's 20 minutes of cool running water. The pantoum consists of a series of quatrains rhyming abab in which the second and fourth lines of a quatrain recur as the first and third lines in the succeeding quatrain; each quatrain introduces a new second rhyme (as bcbc, cdcd). Historical Events 1880 Birth of Reginald Farrer ("Fair-rur")(books by this author), the legendary English rock and alpine gardener, plant explorer, nurseryman, writer, and painter. A son of a wealthy family in the Yorkshire Dales, Reginald repeatedly referenced Yorkshire in his writing. Reginald was born with many physical challenges. He had a cleft palate, speech difficulties, and what Reg himself called a "pygmy body." He had many surgeries to correct his mouth, which meant he was homeschooled. But the silver lining of his solitary childhood was his connection to nature. Reginald found happiness among flora and fauna, and he particularly loved the rocks, ravines, and hills around his home. At 14, he created his first rock garden, which eventually became a Craven nursery specializing in Asian mountain plants. Every time Reginald went on expeditions, he sent new alpine plants and seeds to Craven. After college, Reginald became a devout Buddhist, and he liked to say that he found "joy in high places." The European Alps became a yearly touchstone. And although he saw some of the most incredible mountains vistas in the world - they held no sway with Reginald. For Reginald - it was always about the plants. Reginald wrote, It may come as a shock and a heresy to my fellow Ramblers when I make the confession that, to me, the mountains… exist simply as homes and backgrounds to their population of infinitesimal plants. Reginald's book, The Garden of Asia, launched his writing career and showed garden writers a new way to write about plants. The botanist Clarence Elliot observed, As a writer of garden books [Reginald] stood alone. He wrote… from a peculiar angle... giving queer human attributes to his plants, which somehow exactly described them. His passion for rock gardens was perfectly timed. The British gardening public latched on to rock gardening with a frenzy. Rockeries were in every backyard. Reginald's book My Rock Garden (1907)was an instant success and earned him the moniker Prince of Alpine Gardeners. In 1919, at the age of 40, Reginald took a trip to Myanmar. He would never see his beloved Yorkshire again. He met his end alone on a remote Burmese mountain. Most reports say he died of Diptheria, but the explorer and botanist Joseph Rock said he heard Reginald drank himself to death on the night of October 17th, 1920. And I thought of Reginald up on that mountain alone when I researched the etymology of the name of his nursery, Craven, which means defeated, crushed, or overwhelmed. Today Reginald is remembered in the names of many plants like the beautiful blue Gentiana farreri ("jen-tee-AYE-na FAIR-ur-eye"). And the Alpine Garden Society's most highly-prized show medal is the Farrer Medal, which honors the best plant in the show. It was Reginald Farrer who said, I think the true gardener is a lover of his flowers, not a critic of them. I think the true gardener is the reverent servant of Nature, not her truculent, wife-beating master. I think the true gardener, the older he grows, should more and more develop a humble, grateful and uncertain spirit. He also said, All the wars of the world, all the Caesars, have not the staying power of a lily in a cottage garden. 1918 On this day, Dora Hughes wrote an article for the New-York Tribune called, The Carrot Comes into its Own, (carrot cookbooks). She wrote, Time was when the carrot held high estate, for in the days of King Charles I, the ladies of the royal court used its feathery plumes in place of feathers for their adornment. Physicians prized the roots for their diuretic properties, from which came the general impression that eating carrots beautified the complexion and hair. Possibly the reason why carrots are not more often served is that, as a rule, they are prepared always in the same way. But one may serve carrots each day for a week and never have them twice in the same form. It is a pity that so few housekeepers seem to realize this. Then Dora offers up a diverse list of options for serving carrots: CRECY SOUP ("Chrissy") Crecy soup takes its name from the town in France where it was first made. MASHED CARROTS AND CARROT CAKES Carrots are excellent simply mashed and dressed with butter. CARROT CROQUETTES ("krow-kets") Carrot croquettes are made of mashed carrot and cracker crumbs, seasoned and mixed with egg. FRIED AND CANDIED CARROTS Fried carrots are prepared by cutting cooked carrots in long slices, dipping in egg and bread crumbs, and then brown in hot fat. Candied carrots: Butter a baking dish, lay in it slices of cold carrot.. sprinkle sugar ...and cinnamon or mace, add water or milk. FRENCH CARROTS AND PEAS Carrots and peas are a favorite French dish and their method is to cut the carrot in dice not much larger than the peas... heated together in a saucepan with oil for the dressing. SALAD OF CARROTS AND PEAS CARROT AND CELERY ON TOAST Carrot and celery make another good combination. Have an equal amount of each, the celery in thin slices and the carrot in small pieces. Boil the carrots till tender and drain. Scald the celery; mix the two and put to cook in a pint of milk. Thicken with a teaspoonful of cornstarch dissolved in a little cold milk, season with salt, pepper and butter and serve as soon as boiled. For a supper dish serve on toast. Her designs have a dramatic flare - no doubt thanks to her background in graphic design. There's a time in all our lives for small gardens. When I first lived at the cabin during the pandemic, I was quite content with a small kitchen garden on the deck compared to my wrap-around full-scale garden set up in the suburbs. What Isa shows us how to do is to embrace the smaller size but not sacrifice style. Isa's gardens are joyful, elegant, inviting, and exciting - and she has mastered creating outdoor living in small spaces for entertaining or relaxing. Now, if you don't even know where to start, never fear. Isa has a style quiz to help you pinpoint your own personal garden style. She also gets you thinking about your small space in new ways so that you can utilize all of the space - factoring in horizontal, vertical, and overhead spaces. Isa shows you some design tricks with pots and containers to create stunning planters, and she loves to tuck in succulents and grasses and all kinds of textures to add that drama - that graphic design approach - that Isa is known for. Botanic Spark 1864 Birth of Elizabeth Roberts MacDonald, Canadian poet, and short-story writer. She was a teacher at the School for Blind in Halifax. She's remembered for her 1906 collection of poems called Dream Verses and Others. Here's the last stanza from her poem A Song of Seasons, in which she praises the virtues of every season and then ends with these words: Sing a song of loving! Another day in the kitchen, another awesome recipe to share! This week we talk about a new movie, Loves Kitchen. It drives Adriane so crazy she branches out to her old baking skills and re-creates a main dish from the movie! Join us while we talk about different passions, a helpful plant by the name of yarrow, and bring back our sweet tooth! Sponge Cake: 2 lbs 4 oz Egg 1 lbs 8 oz White Sugar 1 lbs 8 oz Flour, sifted 8 oz Butter, melted .5 oz Vanilla This is the Sponge Method of cake baking so follow carefully: Scale all ingredients and keep at room temperature. Combine the eggs and sugar and warm to 110* using a water bath stirring to prevent clumping or cooking. This helps the foam create volume. With the whip, whip eggs on high speed until light and thick, this may take 10-15 minutes. Fold in sifted flour, do this by hand to prevent over-mixing gluten. Fold in melted butter slowly. Immediately pour into prepared pan and bake at 350 for about 15-20 minutes. Let cool before removing from pan. Creme Anglaise (Vanilla Custard) 12 Egg Yolks 8 oz White Sugar 1 quart Milk 1 Tbsp Vanilla Combine yolks and sugar in a stainless steel bowl, whipping until thick and light. Scald milk over a water bath stirring constantly and watching temperature. Very slowly pour milk into the yolk mixture while whipping. Set the bowl back over the water bath and heat slowly stirring constantly to avoid clumping or speaks. Stir until it thickens enough to coat the back of the spoon or until it reaches 185*. (Or a little less to avoid carry- over cook) Remove the bowl from the heat and set in a cool pan or refrigerator, add vanilla. This is a quick and easy berry filling using frozen berries, please keep this in mind if you are using fresh fruit or a compote! 5 lbs berries, frozen Water as needed 6 oz Sugar 6 oz water, cold 3 oz cornstarch Thaw berries and drain, reserving juice. Measure 12 oz of juice and water if needed. Stir in the first amount of sugar. Stir together a cornstarch slurry- cold water and cornstarch until dissolved. Bring the juice mixture to a boil, add cornstarch and return to boil to thicken. Stir in second amount of sugar also adding in salt, cinnamon, and lemon juice if you would like at this time. Pour syrup over drained berries and cool. Now that you have everything to layer a trifle, go for it! Start with cooled cake, add custard and then berries! Continue the process in any fancy container you like! Also loved in this recipe is a healthy portion of whipped cream! Teagasc's B&T advisor Tom Coll joins Ciarán Lynch on this week’s OviCast to discuss some issues with lameness appearing in flocks at present. Tom discusses how scald is the main problem in young lambs at the moment and what some of the predisposing factors are. He highlights the need for early intervention and discusses treatment options. Tom puts particular emphasis on the importance of good handling facilities in tackling some of these issues on farms. With many of his clients having invested in batch footbath facilities in recent years he finishes up discussing how this has helped reduce incidence of lameness in their flocks and some of the other benefits to this change.
