Mulled fruit 250g frozen mixed berries 100g castor sugar 200ml water 2 cloves 1 cinnamon stick, split in half 150ml red wine 4 large pears 4 plumsPlace the berries, sugar, cloves, wine, cinnamon stick and water in a pan and simmer for 5 minutes. Remove the cloves and cinnamon and blend to a smooth sauce and pass through a sieve into another pan. Peel the pears and cut in half through the root. Remove core with a melon baller or teaspoon and place in the berry liquor. Cover with a sheet of parchment and simmer gently for 10 minutes. Cut the plums in half, remove the stone and add to the pan. Simmer until pears and plums are just done. Remove pears and plums and boil the liquor to reduce by half. Return the pears and plums to the pan and allow to cool. Chop into 1cm pieces. You'll have a bit more fruit than you need but it will keep for a couple of weeks in the fridge.Jelly 200ml of cooking liquor 2 leaves gelatine Soak the gelatine in cold water for 10 minutes. Heat the liquor and add the gelatine leaves. Pour into a dish, cool and chill until set. Coconut sponge 225g soft butter 225g castor sugar 4 eggs 200g self raising flour 20g cornflour ½ teaspoon baking powder 1 teaspoon vanilla extract 50g desiccated coconut soaked for 10 minutes in 150ml boiling water Beat the butter and sugar until pale and fluffy. Add the eggs one at a time. Sift the flour, cornflour and baking powder together and fold into the mixture. Add the coconut and vanilla. Pour into a prepared cake tin and bake at 180°c for about 40 minutes or until an inserted skewer comes out clean. Cool Will make a bit more than you need but will keep for a week or freeze the excess. Alternatively use a Madeira sponge. Vanilla custard 3 egg yolks 50g sugar 15g cornflour 250ml whole milk 100ml cream 1 teaspoon vanilla paste or extractWhisk the egg yolks, sugar and cornflour.Scald the milk, cream and vanilla and then pour over the egg mixture. Whisk and return to pan. Stir until the mixture coats the back of a spoon. Pour into a bowl and cover the surface with cling. Cool and then chill. Alternatively buy ready made custard. Orange and cinnamon cream 500ml double cream Zest and juice 1 orange 1 teaspoon cinnamon 1 tablespoon icing sugar Boil the orange juice, zest and cinnamon together until only a tablespoon of liquid remains. Cool. Whisk the cream and fold in the sugar and orange mixture. To Assemble – Fruit liqueur Edible gold glitter Cut the sponge into 1cm dice and place in the bottom of 6 individual trifle bowls or one big one. Drizzle over some fruit liqueur. Spoon over some of the fruit. Cut the jelly into cubes and spoon over the fruit. Top with custard. Pipe the cream over the top and spray with edible gold glitter.

This is the weekly columnWine for Christmas 12-20-2023If you are reading this column, there is a good chance wine will be part of your Christmas/holiday celebration. Observations:• The big meal is a hectic time. Likely lots of food, also lots of commotion and distractions. Don't waste your best wine on this event. Save your best for when it can be calmly appreciated and more of a focus of the meal.• Don't pour bottom-shelf, cheapest-you-can-find wine at the event either. There is plenty of good wine in the $12-25 range. If the party is large, open an assortment so the malbec maven, the pinot princess, the white zin aficionado, and the bubbly booster can enjoy what they enjoy.• Consider port or sherry as part of the event. Great end-of-the-day, mellow-out sipper. Also goes with Christmas sweets.• Go nostalgic—and this works well if there are drop-in visitors. Mulled wine. At its simplest, mulled wine is red wine combined with spices and sugar/honey, served warm.Like its summer counterpart sangria, marinating various ingredients is the secret: 24 hours-plus for sangria, five-plus hours for mulled wine. Both are ideal for making early so you can concentrate on everything else. Bonus: mulled wine adds splendid holiday aromas.Recipe:• 1 cup unfiltered apple juice• 1/4 cup pulpy orange juice• 1/2 cup water• 1 tsp ground ginger• 1 tsp ground allspice• 1/2 tsp ground cloves• 3 cinnamon sticks• 2/3 cup of brown sugar (or honey)• 1 Granny Smith apple, cored, thinly sliced, cut into bite-size pieces• Zest of one orange• Orange, sectioned, cut into bite-size pieces• One 750 ml bottle red wine (cab, merlot, zin, malbec)• 1/2 cup of brandy or cognacPut ginger, allspice, cloves in cheesecloth bag. Put ingredients except brandy/cognac in a crock pot. Heat five or more hours; the longer you heat, the more the flavors marinate and the better it tastes and smells.Add brandy when ready to serve.Double to serve more. Mulled wine means it's the damn season
Uncle Brad and Jules talk about Sangria and Mulled wine, which is especially perfect for the holidays but good any time of year (at least Sangria is, mulled wine can be tough when it's 90 degrees outside). Brad gives us the ancient and not-so-ancient history on Sangria while Jules tells us how to make a bloody rim to spook-ify your drinks. Sangria (a version, that tastes pretty pretty… pretty good) In a large pitcher or wine carafe add 1 bottle red wine ½ cup brandy ¼ cup cointreau 1.5 oz of simple syrup ½ apple, cored, thin sliced and cut into quarters ½ lemon thin slice, remove seeds if you can ½ orange thin slice… if you can't fit it all, you can use orange slice for garnish Stir and refrigerate for at least an hour to let flavors meld Fill a glass with ice and fill ¾ full with Sangria mix, top off with carbonated water, ginger ale, lemon-lime soda, or prosecco. Mulled wine Serves: 8-10 2 bottles red wine 3 oranges 2 Lemons 8-10 cloves 3-5 cardamom pods 1/2 cup sugar 1 cup brandy or cognac 3-4 cinnamon sticks 1 cup water to dilute Garnish: Fresh cranberries, star anise, and/or rosemary How to make it: Using a Y-peeler, remove the peel of both the lemons and orange and place in a pot. Juice the 2 lemons and 3 oranges, strain, and add to the pot. Add in sugar, water and spices. Place on medium heat until the sugar dissolves. Reduce to a simmer and add in wine and brandy. Stir together and let simmer, but do not boil. Option to remove from the heat and strain or keep on the stove at a light simmer and serve directly from the pot. Serve warm! It's been an uneven, up and down week for the podcast, but you know I'm here to deliver by hook or by crook, all that's going on in sports. On deck: (2:45) I'll get into how it has been a zany week for yours truly. Between releasing a podcast a day late, then getting a head cold that I'm fighting through on Tuesday. But that won't stop me from pumping out these podcasts on a bi-weekly and week to week basis. (4:15) The first few days of the Stanley Cup Playoffs have delivered some juicy storylines. The lower seeds of the Western Conference all get a leg up on their respective series. The Islanders had a tough loss as they did not get a call in overtime, which led to a game winning goal by Carolina. Are the Bruins facing a little pressure after their Game 2 loss to Florida? Then you have the Maple Leafs. A very discouraging loss as they avoid another major letdown of not getting out of the first round in almost two decades. (25:54) As for the NBA Playoffs, three series are pretty much afterthoughts as Denver, Philadelphia and Boston have commanding 2-0 series leads against Minnesota, Brooklyn and Atlanta, respectively. Memphis avoids an 0-2 deficit as they even the series vs. the Lakers last night. Can Dillon Brooks not say anything to "poke the bear"? Will the Clippers and Suns have length in their series? How will the Knicks and Cavaliers play out? Can the Bucks win without Giannis Antetokounmpo? The defending champion Warriors are down 0-2 vs. Sacramento. The big news was Draymond Green getting suspended for his actions stomping on the chest of Domantas Sabonis in Game 2. Was his act suspension worthy? Was it unfair? (38:37) There is a big return of a player who'll be reintroduced tonight in the MLB. That is a one, Fernando Tatis Jr. After injuries and a PED suspension, he'll take the field in Arizona tonight for the first time since 2021. How will he be received in his own locker room? What are the expectations coming into a team made for a World Series run? Max Scherzer was ejected from a game vs. the Dodgers because of a sticky substance on his hand and glove. Was it warranted considering he was cooperating the whole time? Clayton Kershaw hit the 200 win plateau for his career as he beat the Mets on Tuesday night. I'll go around the diamond to see what else is happening as we get close to completing the first month of the baseball season. (47:45) Dolphins QB Tua Tagovailoa recently addressed that he was mulling retirement due to the concussions he sustained last year in three separate games. How do you think the NFL's front office reacted to this? (52:51) There's a big time boxing match that'll take place on Saturday night between Gervonta 'Tank' Davis vs. Ryan Garcia. On Wednesday's Morning Focus, Alan was joined by Clare man David Graham and Wicklow native Eoghan O'Sullivan who are members of Mulled. The twosome recently won a prize for a Christmas song. The pair first met in 1999 while working in radio. They discussed their song called ‘A Perfect Christmas' which they were inspired to compose by Christmas songs that they heard when they were young. The pair spoke about writing the song several years ago and described the reaction the song has received which encouraged David and Eoghan to enter it into this contest.

How do you like them apples?Mulled cider Ingredients 1½ litres of dry cider 100ml Calvados 400ml apple juice 80g dark brown sugar 2 cinnamon sticks, broken in half 4 whole cloves zest 1 orange, pared into strips 1 tbsp allspice berries Add cider, Calvados, apple juice and sugar to a saucepan, gently heat, then add the orange zest and spices, simmer on a low heat for 20 mins. Americans love for apples, and apple cider was embraced just as graciously after it was introduced to the continent by the Europeans. Mulled cider is a traditional fall and winter drink made by heating cider to almost boiling and adding cinnamon, orange peel, nutmeg, cloves, and other spices and then simmering it. Just the scent of it steeping on the stove will warm the home and lift the spirits of everyone in it.
Welcome to September 30th, 2022 on the National Day Calendar. Today we celebrate fresh breath and a Fall tradition. While chewing gum may seem like a modern invention, it's actually been around for 9,000 years. The ancient Aztecs chewed something called chicle, although they had to follow certain rules of etiquette. Children and unmarried women could chew it in public, but everyone else had to chew it at home. Chicle became the main ingredient in chewing gum in the mid 1800s, but it wasn't until the early 1900s that gum became popular. That's when William Wrigley, Jr. launched an all out campaign, mailing free samples of his gum to every person in the phonebook. Apparently, this move paid off big! On National Chewing Gum Day, celebrate the freedom to chew wherever you please, though keeping it quiet is still appreciated. Wassail is an old Norse expression that literally means “be you healthy” Wassailing was an old English drinking ritual of warming cider with spices and other ingredients to ensure a good harvest of cider apples for the following year. Now that's thinking ahead. In ancient Roman times they mulled wine in the same way. Now that sounds like a good excuse for a drinking game. There are lots of recipes for hot mulled cider that include orange peel, cinnamon, nutmeg and cloves. Now that sounds like a recipe to chase away the cold. We typically make a Mulled wine each year for Thanksgiving and Christmas to share with the family. It can help you celebrate a live race you've run this winter or help you warm up after a run in particularly harsh winter conditions. We linked to a recipe online but did not share our recipe in that particular episode. This week, we feature our recipe with an option for reduced sugar. Ingredients (Serves 6-8 cups of wine) 1 - 750 ml bottles of a favorite red wine ( we selected a barrel-aged Cabernet Sauvignon 2 oranges- zest and juice of one and the other sliced in rounds to use for garnish 8 whole cloves 4 cinnamon sticks 2 whole nutmegs *Normally a cup of sugar and water are added to sweeten the recipe. To make a more healthful version, you can leave this out and drink it without sweetening or use agave nectar or honey to taste with each serving. Directions Pour wine into the instant pot or crock pot. Add the zest of the orange. Squeeze the juice of the orange into the wine and add the whole orange into the pot. Cook on low for two hours. Pour into mugs, stir in agave nectar or honey to sweeten, if desired, with a garnish of an orange slice and enjoy! Because of its history, this is a perfect cocktail to make in the fall to accompany a harvest ritual of ancestor worship. Enjoy while sipping by an outdoor fire, or pour some onto the earth as an offering and reflect on all that life has given you. Garnish with a cinnamon stick for added protection. (Serves 6) Energies: Spirituality, Wisdom, Immortality, Divination Ingredients1 (750-milliliter) bottle cabernet sauvignon1/2 cup pure honey4 ounces pomegranate juice3 whole star anise2 teaspoons ground cinnamon2 large blood orange peels4 ounces pomegranate liqueur1 cup apple juice1 red apple, sliced crosswise into 6 slices, for garnishDirections Combine all ingredients except apple slices in a large pot over medium-high heat. Bring to a boil, stirring constantly, then lower the heat to medium and simmer for 10 minutes. Pour into six mugs to share and garnish each with an apple slice.
