In this bonus episode, we cover our normal three topics: a pro tip, a book recommendation, and a challenge. Our pro tip for the month is how to keep your wooden kitchen implements- cutting boards, knives, spoons, cheese presses, etc. appropriately oiled. The book for the month is "The Omnivore's Dilemma," by Michael Pollan. The challenge for the month is to eat an invasive species; don't worry, I give you some ideas on this one. Invasive species are probably going to be easier to find than you might think.

What truths does a secret hide? If the secret only hides itself, it can be used for good or ill. But sometimes, a secret can be used to reveal a greater truth. Such is the case with the secrecy that Jesus kept around his identity during his ministry. As Rev. Tom describes, Jesus did not seek the limelight as a healer. Many came to him to be healed, but this pointed the way towards Jesus' deeper ministry — the healing of people's spirits in selfless love. Not only did he quiet those whom he healed, but also those who would proclaim him king. To quote C. S. Lewis: "Enemy-occupied territory — that is what this world is. Christianity is the story of how the rightful king has landed — you might say, landed in disguise." As Rev. Tom notes, the works of the Christian community — if they follow the works of our Lord — are formed in a new Spirit that is "healthy, creative, caring, peaceful and generous." This Kingdom of God comes in secret, to subvert the ways of this world with the ways of love. If you are not familiar with the reasons for participating, here is a great article with “19 Reasons Why.” Michael Pollan, a long-time New York Times Magazine contributing writer and author of many books on food including The Omnivore's Dilemma, says this about the benefit of this change: “Even one meatless day a week - a meatless Monday, which is what we do in my household - if everybody in America did that, that would be the equivalent of taking 20 million mid-size sedans off the road.” And finally, here's a link to recipes to help support this change. The Peace and Justice Committee hopes you join us in this step of Environmental Justice for our planet. Every meatless meal makes a difference.

This episode kicks off with a chat about Michael Pollan’s Omnivore's Dilemma and the association with our upcoming guest, Angelo Garro of Omnivore products. We talk about salt as a critical ingredient in cooking and diet, one which often enhances a dish. The wines we taste today include the 2016 1881 Napa Cabernet Sauvignon, with a label displaying the map of Napa’s wine regions. The rich red wine bursts with depth, spice and energy. We also taste the JCB No 3 Pinot Noir, a blend of grapes from Burgundy and Sonoma that my co-host Jean-Charles Boisset says represents the best marriage of France and America, his homeland and his adopted country. This episode is made possible by Oakville Grocery, part of Boisset Collection, a portfolio of wineries and lifestyle destinations with strong historical and family roots. Born in Sicily to a family of cooks, Angelo Garro grew up around good food from a young age. While he’s a blacksmith by trade, he missed his family’s home cooking as he traveled the world. He launched his Omnivore line of salts, herb blends and sauce to reproduce those familiar flavors. His flavor boosters caught the attention of Alice Waters, who used his mixes, and author Michael Pollan, who accompanied him during foraging expositions, documenting the experience in the third chapter of The Omnivore’s Dilemma. Foraging was natural to Garro, as it was a skill he learned from his grandmother. Eventually, he launched a Kickstarter campaign, with German film director and friend Werner Herzog as narrator of his pitch video, and raised over $100,000 to launch the business in 2015. The Omnivore line also features hot sauces and a Sicilian savory flavor concentrate, all made with fresh local organic ingredients. Thanks for listening, and stay tuned for more shows in the coming weeks. Please share across your social media channels and subscribe to get each new episode directly to your podcast feed. As we see the amount of information and technology we have access to growing, we also gain a stronger view of universal human tendencies that are overarching in time and culture. One of those that is particularly fascinating is our desire to change consciousness, to alter our brain and our mood, whether it’s with drugs, food, or even activities like meditation and breathwork. That’s one of the many reasons the emerging research on psychedelic-assisted psychotherapy is so interesting, especially considering it was completely written-off for decades after getting a bad rap in the 60s, despite having shown therapeutic promise in the 50s. Today on The Doctor’s Farmacy, I’m joined by world-renowned author Michael Pollan to talk about the exciting reemergence of psychedelic therapy and the possibilities it holds for the future of healthcare. Michael Pollan is the author of the New York Times bestsellers Cooked, Food Rules, In Defense of Food, The Omnivore's Dilemma, The Botany of Desire, and his latest book How to Change Your Mind, which is all about the new science of psychedelics. Where do the most effective social change agents focus their efforts? Soupergirl founder Sara Polon and Community Wealth Partners CEO Amy Celep join hosts Billy and Debbie Shore to discuss their motivations and strategies for changing the world. Celep works at the systems level helping other organizations accelerate the pace of social change. She cites KaBOOM!, the national nonprofit dedicated to children’s play, as an example. “We helped [them] say, ‘what we need to do is not just build playgrounds and the infrastructure for play, we need to shift the cultural norm in this country,’” she explains. Polon started Soupergirl to shift the cultural norm through individual decisions. By using only plant-based ingredients sourced largely from sustainable local farms, she is giving consumers better choices that could help fix our broken food system. “Our mantra is changing the world one bowl of soup at a time,” she says. Both guests are story-tellers who changed careers in order to drive change. Formerly a stand-up comedian, Polon knew she wanted to shift to fixing the food system after reading Michael Pollan’s The Omnivore’s Dilemma. “We’re trying to be so careful about what we put in the soup. Knowing where the food comes from, who grew it, what’s the story of it… we work every day to make sure we stay true to those values,” she says. Celep was formerly a television news producer. “I wanted to tell stories, but the stories you tell on local news were not the stories I wanted to tell. I wanted to tell stories about people changing the world,” she says. Listen to these two dynamic, purpose-driven women share their stories about why and how they are changing the world. R

Michael Pollan is the author most recently of mega New York Times bestseller, How to Change Your Mind, and of seven previous books that became global phenomena, including Cooked, Food Rules, and The Omnivore's Dilemma. A longtime contributor to the New York Times Magazine, he also teaches writing at Harvard and the University of California, Berkeley where he is the John S. and James L. Knight Professor of Science Journalism. In 2010, Time magazine named him one of the one hundred most influential people in the world. In today's episode, we explore his lens on the writing life, then dive into his year's long investigative journey into the mysterious world of psychedelic molecules, like LSD, psilocybin (magic mushrooms), MDMA and something called "the toad." We talk about the fact, fiction, history, science and revolutionary clinical studies now underway, mostly from the lens of therapeutic outcomes. This conversation is not a permission-slip to experiment with any of what he talks about, nor an endorsement, so please do not take it as such. Rather, it is a balanced, non-hyperbolic or sensationalized conversation about a category of substances that are now at the cutting-edge of research in the treatment of mental conditions that afflict tens of millions of people.Check out offerings & partners: Camp Good Life Project – Join us for 3 ½ days of connection, discovery, rejuvenation and reinvention and for a limited-time, save $100. Jamie Moore is the Director of Sourcing and Sustainability at Eat'n Park Hospitality Group. Jamie quickly noticed a need to develop and maintain an innovative program that would separate Eat’n Park from their competitors. With this in mind, Jamie developed a local purchasing program called FarmSource. This program ensures that 20% of all site’s food supply is purchased in and around their communities. The FarmSource program has received national recognition in 2009 by the Glynwood Center for Connecting Communities, Farmers and Food.  Jamie Joins Sustainable Nation to Discuss: Implementing local and sustainable food programs in restaurants Developing relationships to advance sustainability initiatives Sustainability opportunities in the food service industry Advice and recommendations for sustainability leaders Jamie's Final Five Responses: What is one piece of advice you would give other sustainability professionals that might help them in their careers? Build upon things that you and always be someone that can educate versus again, I guess it's not educate, listen, and then hopefully return with something that you can educate someone on that made sense, but I think education is a big thing and listening is another. What are you most excited about right now in the world of sustainability? I'm excited about the local incubators that are starting to pop and new makers that are starting to enter the marketplace. What is one book you'd recommend sustainability professionals read? I loved Michael Pollan's Omnivore's Dilemma. That was a great book and I'll call it a textbook to some extent because I feel that it was written very similar to a textbook. He did a good job on about our food system. I felt that Omnivore's Dilemma was a great book for it. What are some of your favorite resources or tools that help you in the work that you do? It could be anything from websites, associations, technology, software programs, any type of resources? A new organization that I just joined is the IFT Institute of Food Technologists. It is an international organization that focuses on food scientists. I went to a local group here in Pittsburgh and I was blown away and these were people that are in the same space. Food safety is a big part of that equation. One of the things that I noticed of the people that were in attendance to this meeting or some of the same little small makers that I've run into the I've certified or inspected over the course of my time here doing what I do. I was very taken back that they were in that room. They were active. They were trying to understand science behind food, which was really cool. The IFT is what I would recommend. Where can our listeners go to learn more about you and the work that you're leading at Eat'n Park? We have a website. LCHF Family 021: Preparing for Curious or Concerned Family at Holiday Gatherings Released: November 2, 2017 We are coming up on that time of year when extended family gatherings will be the norm. These can often be difficult to navigate, but add in the fact that your family is on this wacko new way of eating, and you may find yourselves being grilled over your choice to eat low carb, high fat when you'd rather be getting caught up with your cousins. In this episode, Anne talks about dealing with these questions directly and remembering that family members wouldn't pester us if they didn't love us so dang much. As part of this, she reviews the basic science behind LCHF eating by addressing an article that warns against LCHF eating for teens, so that all the facts are refreshed in your mind before you have to face down Crazy Uncle George and his nonstop questions about whether you're killing your kids by not feeding them juice and bread. Previous episodes mentioned in the podcast: Episode 18: Talking to the Adults in Your Child's Life about LCHF Episode 13: Vinnie Tortorich Shares Insight for Student Athletes Episode 4: What to Expect in the Beginning (Not mentioned directly, but we cover the "side effects" that are either temporary or easily dealt with that are often portrayed as being a downside of switching to LCHF.) The SFGate article, as well as other articles from the same site talking about how healthy LCHF is and providing kid-friendly recipes for it. Ugh... I don't endorse any of those links. The point is to notice the cross-talk, not to actually do what they suggest. Much of it reflects a sorry misunderstanding of what low-carb eating should entail. But the celebrity author hasn't always been so obsessed with what people eat. "Before I started writing about food, my focus was really on the human relationship to plants," Michael tells us. "Not only do plants nourish us bodily—they nourish us psychologically.” Now he's researching flora with psychedelic properties for a new book. Part of the project covers recent experimental trials using psilocybin (a compound found in magic mushrooms) to treat cancer patients' anxiety about death. Plus: How much do you know about ayahuasca? Virginia farmer Joel Salatin has become one of the most well known names in the world of alternative farming after his notable presence in Michael Pollan's best-selling book The Omnivore's Dilemma and an important role as part of the popular documentary Food Inc. In February 2010, Joel was interviewed by Lauren Berlekamp of the Erie Wire. Joel spoke to Lauren about his unique and seemingly common-sense approach to farming, but more specifically, they spoke of the nutritional comparisons of his grass-finished beef vs. the more common grain-finished beef; they spoke of the politics and regulations surrounding the livestock sector in the United States and their impacts on smaller-scale producers; and they spoke of how Salatin's model of success, including his new relationship with a large American fast-food chain, is a replicable and financially rewarding model for farmers who seek to produce more responsible food. Also featured on the episode, a great talk delivered by Toronto's Judy Rebick. Rebick is the Canadian Auto Workers-Sam Gindin Chair in Social Justice and Democracy at Ryerson University and helped launch rabble.ca - an independent multi-media portal for Canadian and global perspectives. In November 2008, Rebick spoke at the annual convention of Canada's National Farmers Union and encouraged farmers there to take advantage of what she referred to as the 'perfect storm', whereby the dominant top-down social and economic models are collapsing - clearing the way, as she believes, for a bottom-up and community-centered approach to begin better serving our needs. Guests/Voices Joel Salatin, farmer/author, Polyface Farm (Swoope, Virginia) - Joel is an American farmer, lecturer, and author whose books include You Can Farm and Salad Bar Beef. Joel raises livestock using holistic methods of animal husbandry, free of potentially harmful chemicals. He believes that Polyface Farm arguably represents Americas premier non-industrial food production oasis. The Salatins strive to develop emotionally, economically, environmentally enhancing agricultural enterprises and facilitate their duplication throughout the world. Judy Rebick, canadian auto workers - sam gindin chair in social justice & democracy, Ryerson University (Toronto, ON) - Between 1990 and 1993 Judy Rebick was the president of the National Action Committee on the Status of Women. She later became the co-host of CBC Newsworld's prime time show Face Off and then worked on the show Straight from the Hip. She became a regular contributor to CBC TV's Sunday Report and CBC Radio and in 2001 helped launch rabble.ca - an independent multi-media news and discussion web site.

All creatures are defined ecologically by how they fit into a food chain. For humans, food industrialization has obscured this once-plain fact; most Americans are only dimly aware that their food represents their most profound engagement with the natural world. Michael Pollan, author of "The Botany of Desire" and "The Omnivore's Dilemma," both New York Times best sellers, conducted a series of personal explorations of the food chain: growing a genetically modified potato, tracing an organic TV dinner from grocery freezer to farm and buying and following a steer from insemination to steak. Pollan will tell these stories to tease out conclusions about what's gone wrong with the industrial food system and its implications for our health. He'll also explore healthier alternatives to industrial food. Recorded February 8, 2007.
