David is also the director of Jiro Dreams of Sushi, the acclaimed documentary capturing the idiosyncratic world of master sushi chef Jiro Ono. Our guest is Daisuke Nakazawa who is the owner and executive chef of the Michelin-starred Sushi Nakazawa. He opened Sushi Nakazawa in New York in 2013 and its success led to the opening of the second location in Washington, D.C., in 2017. He is also planning to open the third location in Los Angeles later this year. He is also the owner of Saito, an izakaya and sake bar in Manhattan's Nolita, which he opened in 2022. You may have seen Chef Nakazawa in the legendary documentary film “Jiro Dreams of Sushi” on Netflix. After completing the classic, extremely strict training under chef Ono, he moved to the U.S. and started a new chapter of his life. Hello and welcome to Your Favorite Movie. I'm your host Evan Kelly. I've always loved movies. I feel they have a unique power that isn't found in other types of media. So I've invited a few of my friends to come and talk about their favorite movies. My guest today is Joe Hicks, writer of the substack Inland Nobody. His current writings cover urban development and public policy with a special focus on the community of Galesburg, Illinois. But that hasn't always been the case. Listeners will certainly remember Joe as my creative partner for over two years on our flagship podcast Adequately Informed where we focused on good faith discussion of politics, policy, and culture. Joe's favorite movie is the 2011 documentary Jiro Dreams of Sushi. We are taken on an intimate journey behind the scenes to comprehend the day to day operations of octogenarian Japanese chef and restaurateur Jiro Ono, who runs the first sushi restaurant to ever receive three Michelin stars. The film also probes the man behind the fish, exploring his adult sons, his troubled upbringing, and his cooking techniques and philosophies.
Obsession... Sometimes this word can have a good connotation, and sometimes it is interpreted as an unfavorable trait. Personally, my thoughts are that inspiration can be gathered by studying others that are obsessed. It has been said that it is lonely at the top because most will never pay the price, but let us look at some that have been obsessed with their craft over the years so that we may draw inspiration for our endeavors. The drama and life lessons depicted in fiction on film of working in restaurants can look very realistic at times as in the John Favreau film "Chef" or it can be romatisized like it is in the Disney film "Ratatouille". Capturing the raw drama of restaurants happens artfully in the award winning documentary "Jiro Dreams of Sushi". However there are three films that have some very authentic looking scenes ranging from the expansive haute cuisine 3 star kitchens to the tight,every bit of space used in a casual bistro fighting for recognition. There are two themes that seem to exist more in restaurants than any other industry. Today's guest spent time working in Japan and brings his cultured view to hospitality. Andrew Benioff is the Founder and Managing Partner of the Llenrock Group. He's also the Founder of the Philadelphia Real Estate Council and the Independent Lodging Congress. Listen to this week's episode as he shares #hospitality insights with Dan Ryan today! Takeaways: Service is the act of serving, but hospitality is the feeling an empathic employee gives to a customer. It's difficult to have good hospitality without great service. Japanese culture is a mentality. A big part of it is the wellbeing of a group of people over an individual. In Japan, perfection is expected in your work. While it can be demanding, it brings out the best work in the person and allows them to achieve the highest goals they have. While perfection is expected in Japan, it's not always a good thing. It's ok to fail at something that is a new attempt. Failure can be a great teaching moment. Try to be flexible in your thinking. A new approach to a process might be an idea that can turn out to be helpful. Two things that hotels absolutely need to have: a shower with great water pressure and a comfortable bed. If a hotel has those two features all other issues are forgotten. Be patient and have an open mind. Try not to think that things need to go a certain way, it's almost more important to know what you don't want rather than to know what you want to do. This weeks episode we welcome on Travis Crickard, Program Specialist for Hockey Canada. Originally we had Travis on to talk about his Coach's Road but we get into some theoretical topics so we thought it would be a good fit for this week's episode! We get into Travis' career, the adjustments he and his team have made for COVID, the impact science has on his coaching, the experiences he had with the All Blacks and the Botany Swarm, the environment he creates for his players and much more! Overall its a great conversation with a lot of insights! Today, I'm excited to have my colleague, drummer, Tom Hipskind on to discuss performance preparation, the difference between finding a good school and trying to get into a famous school, transitioning into the professional world, how he prepared for his audition for Hamilton, and much more.Just before Covid hit, Tom finished up a 3.5 year run as the drummer for Hamilton (Chicago production). Tom has also performed with Mark O'Connor, Diane Delin, Steve Cole, and many more. Tom is an in-demand drum teacher. Sukiyabashi Jiro is a 10-seat restaurant located underground next to the entrance of a train station. In this episode of The Darkroom Podcast we spoke to the creator and director of Chef's Table, David Gelb, at his production studio Supper Club. We jump back into David's early passions for theatre and acting in high school and how his father's life in the classical music world became a steady inspiration for him. Having built a small team of friends to go shoot with in high school and college, David has a knack for finding and building talent, allowing him to work on a multitude of projects including Supper Club's latest non-fiction programming deal with Disney. David stepped into the spotlight in 2011 with his documentary Jiro Dreams of Sushi; highlighting the story of the “world's greatest sushi chef” Jiro Ono at his 10 person restaurant located in a Tokyo subway station. We hear how David took a camera and shot almost the entire movie by himself with a translator at his side and ultimately how his production methodology would set the stage for Chef's Table. We get a unique chance to hear about Anthony Bourdain's impact on David's work and how both Street Food and Chef's Table are a homage to Bourdain's legacy. As Netflix's first documentary series, Chef's Table has been a massive hit for the streaming platform and has now become the longest running original series after its renewal for seasons 7 and 8. David's raw passion and ability for storytelling has brought foreign cultures and cuisine to the homes of millions and we're excited to see what's to come. Enjoy!
